Monday Recipes

It's Monday: the beginning of the work week, and time to start off another week of yummy vegetarian food. Here are today's six vegetarian recipes to help you through the day, including Sweet Potato Soufflé, Black Bean Veggie Burgers and, for that sweet tooth, Buck-eyes. Enjoy!

TUSCAN TOMATO BURGERS

This was in an old Weight Watchers email. The Weight Watchers PointsPlus was 3 per serving. Makes 2 servings.

1 tomato, coarsely chopped

1 Tbsp chopped fresh basil

1 Tbsp balsamic vinegar

2 frozen Boca All American Flame Grilled Burgers

2 Tbsp shredded part-skim mozzarella cheese

4 C torn salad greens

Combine tomatoes, basil and vinegar. Cook burgers as directed on package; top with cheese. Cover; cook 1 min. or until cheese is melted. Place salad greens on 2 plates; top with cheeseburgers and tomato mixture.

SWEET POTATO SOUFFLE

This is my mom’s recipe. Mom used to make this for holiday meals or if she was fixing ham for Sunday dinner. There was seldom any leftover soufflé.

Not to worry: since this is a vegetarian blog, I'm not going to suddenly post meat here. I'm just sharing a memory for decades past. Feel free to fix it whenever you want something a little festive.

4 – 5 sweet potatoes

1 egg

1 small can pineapple

1 C nuts

2 T orange juice concentrate

1/2 tsp. salt

Cinnamon

dash pepper

1/2 C brown sugar

9 large marshmallows

Peel & dice sweet potatoes, place in pan of water, and cook until tender. Mash & add other ingredients except marshmallows. Put in square pan, cut in 9 squares & place 1 marshmallow in each square. Bake at 350 degrees for 10 minutes.

BUCK-EYES

My mom made these and passed them out for Christmas presents in 1989. It’s amazing that any of them made the trip home; they are incredibly good.

As with Mom's recipe for Sweet Potato Souffle, this recipe can also be found in my e-cookbook Off the Wall Cooking.

1 lb. butter or margarine, room temperature

2 – 3 lbs. confectioner’s sugar

1 tsp. vanilla (opt.)

2 lb. peanut butter, room temperature

2-12 oz. packages of chocolate chips

1/2 bar paraffin (4 oz.)

Mix butter and peanut butter. Add vanilla. Blend well. Mix in confectioner’s sugar. Roll into small balls and refrigerate several hours.

Melt chocolate chips and paraffin in top of double boiler.

With toothpicks in each peanut butter ball, dip ball into melted chocolate, leaving spot on top of peanut butter balls undipped, then place on wax paper to harden. Try not to eat in one sitting!

GOURMET GREEN BEANS

This is from Publix Supermarket's April 2006 issue of Aprons

2 (12-ounce) bags fresh snipped green beans (snapped, if desired)

1 (8-ounce) package sliced baby portabella mushrooms

3/4 cup water

2 tablespoons garlic butter

1 tablespoon sesame seeds

1 teaspoon seasoned salt

Place beans, mushrooms, and water in microwave-safe bowl. Cover and microwave on HIGH 12–14 minutes, stirring once, until crisp tender.

Preheat large sauté pan on medium-high 2–3 minutes. Place butter in sauté pan and swirl to coat. Add sesame seeds and heat 1–2 minutes, stirring often, until lightly browned.

Drain beans and mushrooms and add to sauté pan. Sprinkle with seasoned salt. Reduce heat to medium, cover, and cook 6–8 minutes, stirring occasionally, until desired tenderness. Serve.

BLACK BEAN VEGGIE BURGERS

This recipe begins, “Hearty, tasty and inexpensive, these black bean burgers taste great grilled or baked in the oven.”

Ingredients

1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces

1/2 onion, cut into wedges

3 cloves garlic, peeled

1 egg

1 tablespoon chili powder

1 tablespoon cumin

1 teaspoon Thai chili sauce or hot sauce

1/2 cup bread crumbs

Directions

If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F, and lightly oil a baking sheet.

In a medium bowl, mash black beans with a fork until thick and pasty.

In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.

In a small bowl, stir together egg, chili powder, cumin, and chili sauce.

Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.

If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

VEGAN LENTIL BURGERS

This comes from the Food Network Kitchen, and begins, “These burgers are packed with flavor, fiber and protein while still being low in fat. We love them grilled, but you can also pan-fry them: Heat 1 tablespoon grapeseed oil in a large nonstick skillet over medium-high heat and fry patties until well browned, about 2 minutes per side. (Remember: The extra oil will alter the calorie and fat totals.)”

Total: 2 hr 10 min; Prep: 20 min; Inactive: 1 hr Cook: 50 min; Yield: 6 servings; Level: Intermediate

Ingredients

3/4 cup brown lentils, rinsed, strained and picked through

1 3/4 cups plus 1 tablespoon low-sodium vegetable broth or water

2 teaspoons extra-virgin olive oil

1 large red onion, half finely chopped and half thinly sliced

Juice of 1/2 lemon

Kosher salt

8 ounces fresh baby spinach

2 large cloves garlic, minced

Freshly ground black pepper

1/2 teaspoon ground cumin

1 cup whole-wheat breadcrumbs

1/2 cup walnuts, toasted and finely chopped

Cooking spray

6 whole-grain vegan hamburger buns

Baby arugula, basil, roasted red bell peppers and spicy mustard, for serving, optional

Directions

Bring the lentils and 1 3/4 cup of the broth to a boil in a medium saucepan over high heat. Reduce heat to medium-low, partially cover and simmer until the lentils are fully softened and the liquid is absorbed, about 30 minutes. Transfer to a medium bowl with the remaining 1 tablespoon broth and mash well with a potato masher. Set aside.

Heat the oil in a large nonstick skillet over medium heat. Add the chopped onion, lemon juice and 1/4 teaspoon salt and cook, stirring, until softened, about 6 minutes. Add the spinach, garlic, 1 1/2 teaspoons black pepper and cumin and stir until the spinach is wilted, about 3 minutes.

Add the spinach mixture, breadcrumbs, walnuts and 3/4 teaspoon salt to the lentils and mix thoroughly. Cover and refrigerate for at least 1 hour or overnight.

Preheat the grill to medium-high. Form the mixture into six 4-inch patties and spray with cooking spray on each side. Grill until nice grill marks form, about 3 minutes per side. Place the patties in the buns with the sliced onion and other toppings, as desired, and serve.

Thursday Recipes

Here are six recipes to help you through the day, including Buck-Eyes and Garden Vegetable and Tempeh Saute. Enjoy!

CHOCOLATE TRUFFLES

I got this from my oldest son and daughter-in-law for Christmas, 2002. They are so good…These, the buck-eyes, and a pot of coffee…Heaven…

This recipe (as well as the Buck-Eyes) can be found in my e-cookbook Off the Wall Cooking.

8 oz. fine semi-sweet chocolate, broken into small pieces

1 C heavy cream

cocoa powder for dusting (see note)

Put the cream & chocolate into a pan & heat on low until the chocolate has melted. Stir the mixture until smooth & glossy, then pour into a bowl & chill in the fridge for several hours or overnight. Take spoonfuls of the mixture and, wearing gloves, roll between your hands into a ball. Place each truffle into a tray of SIFTED cocoa powder and shake around until well coated.

NOTE: Mary adds: “I’ll warn you, this process is very messy but WELL worth it. Also, some chopped pecans to roll them around in was really good. I’m sure you can think of all sorts of cool variations; I bet some grated orange peel or ginger would be good, too…” Also, “for the cayenne ones, I used a mixture of cocoa, cinnamon and cayenne.”

Very yummy, very addicting.

BUCK-EYES

My mom made these and passed them out for Christmas presents in 1989. It’s amazing that any of them made the trip home; they are incredibly good.

1 lb. butter or margarine, room temperature

2 – 3 lbs. confectioner’s sugar

1 tsp. vanilla (opt.)

2 lb. peanut butter, room temperature

2-12 oz. packages of chocolate chips

1/2 bar paraffin (4 oz.)

Mix butter and peanut butter. Add vanilla. Blend well. Mix in confectioner’s sugar. Roll into small balls and refrigerate several hours.

Melt chocolate chips and paraffin in top of double boiler.

With toothpicks in each peanut butter ball, dip ball into melted chocolate, leaving spot on top of peanut butter balls undipped, then place on wax paper to harden. Try not to eat in one sitting!

HOT AND SOUR SOUP

This comes from Publix Supermarket's Aprons. Makes 6 servings.

1/4 cup green onions (2 – 3 onions)

1 (28-ounce) can chop suey vegetables (drained)

4 1/4 cups water

1 cup sliced fresh mushrooms

1/2 cup hoisin sauce

1 tablespoon miso paste

1/2 cup shredded carrots

2 teaspoons chili bean sauce

1 tablespoon vegetable base

1/4 cup Oriental salad dressing

2 tablespoons cornstarch

Wash onions and remove any wilted portions. Chop enough green onions into 1/4-inch pieces to measure 1/4 cup, including up to half of green tops. Discard tops or reserve for another use. Set aside.

Open can of vegetables and drain liquid by squeezing lid against vegetables. Set aside.

Place in large saucepan: 4 cups water, onions, vegetables, mushrooms, hoisin sauce, miso paste, carrots, bean sauce, vegetable base and salad dressing. Bring to boil on medium-high heat. Place 1/4 cup water and cornstarch in 2-cup measuring cup. Stir together until creamy. When boiling, stir in cornstarch mixture. Reduce heat to low and simmer 10 minutes. Serve.

CURRIED POTOATOES

This is from the June 2008 Vegetarian Times, page 80. The recipe begins, “Serve this dish on its own or with steamed rice.”

1 1/2 Tbs. vegetable oil

2 medium onions, diced (3 cups)

3 cloves garlic, minced (1 Tbs.)

4 large Yukon gold potatoes, peeled & cut into chunks

3 carrots, peeled & cut into 2-inch pieces (1 cup)

3 Tbs. Madras curry powder

1 15-oz. can black beans

3 medium tomatoes, coarsely chopped (1 1/2 cups)

1 cup low-sodium vegetable broth

2 jalapeno chiles, seeded and finely chopped (1/4 cup)

1 tsp. balsamic vinegar

Heat oil in large skillet over medium heat. Add onions and garlic & cook 5 – 7 minutes, or until onions are soft and translucent. Stir in potatoes, carrots and curry powder and cook 4 minutes.

Add beans and their liquid, tomatoes, broth, jalapeno chiles, vinegar an 1 cup water; season with salt and pepper. Cover and simmer 45 minutes or until potatoes are flaky amd carrots are cooked through, stirring occasionally.

Per serving: 282 cal; 9 g protein; 4 g total fat (0.5 g sat. fat); 55 g carb; 0 mg cholesterol; 499 mg sodium; 10 g fiber; 9 g sugars; vegan

ASIAN-FLAVORED QUINOA SALAD

This was in an old Weight Watchers email. The Weight Watchers PointsPlus was 6 per serving. Serves 4.

1 1/2 C canned chicken broth or water

3/4 C uncooked quinoa (+)

1 Tbsp rice wine vinegar

2 Tbsp orange marmalade

2 tsp dark sesame oil

1 Tbsp fresh, minced ginger root

1 tsp kosher salt

1 C trimmed & halved sugar snap peas (*)

1 C shredded carrots (*)

1 C shredded red cabbage (*)

1 small sweet red pepper, thinly sliced (*)

3 Tbsp fresh, chopped cilantro

2 TBSP thinly sliced scallions (*)

1 Tbsp toasted sesame seeds

In small saucepan, combine broth & quinoa; bring to boil over high heat. Reduce heat to low; cover & simmer for 10 minutes.

Meanwhile, to make dressing, in small bowl, whisk together vinegar, marmalade, oil, ginger, & salt; set aside.

After quinoa has cooked for 10 cooked for 10 minutes, toss in snap peas to partially steam them; cover & simmer until most of liquid has been absorbed, about 5 – 6 minutes.

Remove pan from heat & stir in carrots, cabbage, peppers, & dressing; mix to thoroughly combine. Garnish with cilantro, scallions & sesame seeds. Serve warm, room temperature, or chilled. Yields about 1 heaping cup per serving. Serves 4.

+ If quinoa is not “pre-rinsed,” rinse in colander before cooking to remove its outer coating.

Anything marked with an asterisk (*) is a filling food.

GARDEN VEGETABLE AND TEMPE SAUTE

2 cups frozen stir-fry pepper blend

1 teaspoon minced garlic

1-2 teaspoons olive oil

1 package (8 ounces) tempeh, cut into 1/2-inch cubes

1 cup tomato juice

2 tablespoons tamari soy sauce

1 medium zucchini, sliced

2 cups (4 ounces) sliced mushrooms

1 teaspoon dried basil leaves

1 teaspoon dried oregano leaves

1/4 teaspoon cayenne pepper

2 medium tomatoes, cut into wedges

Salt, to taste

Directions

Saute pepper blend and garlic in oil in large skillet 2 to 3 minutes. Add tempeh and cook 5 minutes.

Stir in remaining ingredients, except tomatoes and salt; heat to boiling. Reduce heat and simmer, covered, until vegetables are tender, about 5 minutes.

Add tomato wedges; cook, covered, until softened, about 5 minutes. Season to taste with salt.

Friday Recipes

It's Friday, time to get ready for the weekend. Here are six vegetarian recipes to help you through the weekend, including Sweet Potato Soufflé (great for next weekend's Easter dinner) and Corn and Black Bean Taquiots. Enjoy!

ROASTED CARROT AND RED LENTIL RAGOUT

This is from Molly O’Neill in The New York Times cooking e-newsletter. Molly wrote, “Somehow, over the centuries, the word ragout (which in 17th-century France meant anything that stimulated appetite) has come to signify a dish of sturdy consolation. Nearly any simmered food, be it meat, vegetable, fish or fowl, can be called a ragout, although in France, it is generally assumed that the main ingredients will be of a uniform chunk cut into slightly smaller than bite-size pieces. This spicy carrot and lentil ragout can be served first as a main course and later extended with coconut milk or chicken broth to make a soup. Serve it over rice to temper the heat.”

Yield: 6 servings; Time: 1 hour 15 minutes.

Ingredients

1 1/2 pounds carrots, peeled

5 tablespoons olive oil

2 1/2 teaspoons kosher salt

Freshly ground black pepper to taste

1 medium onion, sliced thin

3/4 teaspoon ancho chili powder

3/4 teaspoon chipotle chili powder

1/8 teaspoon cayenne pepper

1 cup red lentils

5 cups chicken stock

Preparation

Preheat the oven to 450 degrees. Lay the carrots in a roasting pan and toss with 3 tablespoons oil. Season with 1 1/2 teaspoons salt and a few grinds of pepper. Roast for 20 minutes. Turn the carrots, add the onion and roast 15 minutes, until the carrots are brown and tender. When carrots are cool enough, cut them in 1/4-inch dice.

Warm 2 tablespoons oil in a saucepan. Add the carrot-and-onion mixture, the chili powders and the cayenne pepper. Cook, stirring, for 1 minute. Stir in the lentils. Add the stock and simmer, stirring occasionally, for 20 to 25 minutes, until the lentils are falling apart. Season with remaining salt and pepper to taste. Serve with rice, or as a thick soup.

PINEAPPLE FRIED RICE

This is from Vegetarian Times, and begins, “The Hawaiian answer to the stir-fry, this dish is exotic, colorful, and bursting with flavor. To fill out the dish with more veggies, add 1/2 cup thinly sliced shiitake mushrooms along with the onions and garlic, and 1/2 cup peas just after the carrots.” Serves 6.

Ingredients

2 1/4 cups low-sodium vegetable broth, divided

1 cup long-grain brown rice

1 1/4 cups diced fresh pineapple, divided

1 Tbs. low-sodium soy sauce or tamari

1/2 tsp. red pepper flakes

2 Tbs. toasted sesame oil

1/2 cup diced yellow onion

6 cloves garlic, minced (2 Tbs.)

1 small carrot, finely diced (1/2 cup)

1/2 cup finely diced red bell pepper

5 green onions, thinly sliced (1/3 cup)

Instructions:

Bring 2 cups broth and rice to a boil in medium saucepan over medium heat. Cover, reduce heat to medium-low, and simmer 40 minutes, or until all liquid is absorbed and rice is tender.

Blend 1/2 cup pineapple, remaining 1/4 cup broth, soy sauce, and red pepper flakes in blender until smooth. Set aside.

Heat oil in skillet over medium-high heat. Add onion and garlic; sauté 3 minutes. Reduce heat to medium, add carrot and bell pepper, and sauté 3 minutes more. Add remaining 3/4 cup diced pineapple, and cook 3 minutes. Add cooked rice to skillet, and cook 5 minutes, stirring frequently. Add blended pineapple mixture, and cook 3 minutes more, or until liquid is absorbed. Stir in green onions; season with salt and pepper, if desired.

ROSEMARY, OLIVE OIL AND ORANGE CAKE

This comes from Yotam Ottolenghi in The New York Times cooking e-newsletter. Yotam wrote, “This is a very light cake, similar to a lemon drizzle but with a ton more flavor. The rosemary and orange add delicious floral notes. A fluted Bundt pan looks especially nice. Prepare the crystallized rosemary sprigs at least 6 to 8 hours (or the day before) before serving the cake, which will keep in a sealed container at room temperature for up to three days.”

Yield: 10 servings.

Ingredients

For the Crystallized Rosemary:

10 small rosemary sprigs, no more than 1 inch each in size (see note)

1 egg white, lightly whisked

2 teaspoons granulated or superfine sugar (caster sugar)

For the Cake:

About 2 tablespoons unsalted butter, softened, for greasing the pan

2 cups all-purpose flour (plain flour), more to flour the pan

3/4 cup extra-virgin olive oil

1/2 cup plus 1 teaspoon superfine sugar (caster sugar)

1 tablespoon finely grated orange zest (from about 1 1/2 oranges)

1 1/2 tablespoons packed finely chopped rosemary leaves

2 large eggs

1/2 cup sour cream

2 teaspoons baking powder

1/4 teaspoon salt

For the Orange Icing:

1 1/2 tablespoons freshly squeezed orange juice

2 1/2 teaspoons freshly squeezed lemon juice

1 3/4 cups sifted confectioners’ sugar, or 1 1/2 cups sifted icing sugar

Preparation

At least 6 hours before you plan to ice the cake, prepare the crystallized rosemary: Brush rosemary on all sides with a little of the egg white and then dip it in the sugar, so the needles are lightly coated on all sides. Set aside on a wire rack to dry. Repeat with remaining rosemary.

Make the cake: Heat oven to 325 degrees Fahrenheit. Generously grease a 9-inch/23-centimeter Bundt pan with half the butter and refrigerate for 10 minutes. Butter again, generously, and then flour it, tapping away the excess.

Put olive oil, superfine sugar, orange zest and chopped rosemary leaves in the bowl of an electric mixer fitted with the whisk attachment. Whisk on medium speed until combined, then add eggs, one at a time. Whisk for another minute, until thick, then add sour cream and mix until combined on low speed. Scrape down the sides of the bowl and the whisk.

Sift flour, baking powder and salt together into a small bowl. Add the dry ingredients to the olive oil mixture and mix until combined. Increase speed to high and whisk for 1 minute.

Scrape batter into the Bundt pan and smooth the top with a small spatula. Bake for 30 to 35 minutes, or until cake is cooked and a skewer inserted into the middle comes out clean. Remove from oven and let cool for 10 minutes before inverting onto a serving plate. (You may want to trim the cake at this stage, if it rises unevenly, to allow it to sit flat on the plate.)

Prepare the icing: In a small bowl, whisk together orange juice, lemon juice and confectioners’ sugar until smooth. When the cake has cooled, drizzle icing on top, allowing it to drip down the sides of the cake, then top with the crystallized rosemary and serve.

CORN AND BLACK BEAN TAQUITOS

This begins, “Minimum prep and bake time makes homemade taquitos a healthy "fast food" for busy days. Couple with a side salad for a balanced meal.”

Ingredients

8 low carb tortillas

15 oz. black beans, drained

1 cup fresh spinach, chopped

1/2 cup frozen corn

1 cup shredded Monterey jack cheese

3 TBSP salsa

2 TBSP lime juice

1/2 tsp cumin

Pepper to taste

Directions

Preheat oven to 400 degrees F.

Slightly mash beans with a fork. Add all ingredients together and mix well.

Spoon 3 – 4 TBSP of mixture into the center of each tortilla. Tightly roll and place on greased baking sheet. Spray the taquitos with olive oil or coconut oil cooking spray.

Bake 15-20 minutes or until taquitos are lightly brown and crisp.

Monday Recipes

It's Monday: the beginning of the work week, and time to start off another week of yummy vegetarian food. Here are today's six vegetarian recipes to help you through the day, including Sweet Potato Soufflé, Black Bean Veggie Burgers and, for that sweet tooth, Buck-eyes. Enjoy!

BLACK BEAN VEGGIE BURGERS

This recipe begins, “Hearty, tasty and inexpensive, these black bean burgers taste great grilled or baked in the oven.”

Ingredients

1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces

1/2 onion, cut into wedges

3 cloves garlic, peeled

1 egg

1 tablespoon chili powder

1 tablespoon cumin

1 teaspoon Thai chili sauce or hot sauce

1/2 cup bread crumbs

Directions

If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F, and lightly oil a baking sheet.

In a medium bowl, mash black beans with a fork until thick and pasty.

In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.

In a small bowl, stir together egg, chili powder, cumin, and chili sauce.

Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.

If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

SWEET POTATO SOUFFLE

This is my mom’s recipe. Mom used to make this for holiday meals or if she was fixing ham for Sunday dinner. There was seldom any leftover soufflé.

Not to worry: since this is a vegetarian blog, I'm not going to suddenly post meat here. I'm just sharing a memory for decades past. Feel free to fix it whenever you want something a little festive.

4 – 5 sweet potatoes

1 egg

1 small can pineapple

1 C nuts

2 T orange juice concentrate

1/2 tsp. salt

Cinnamon

dash pepper

1/2 C brown sugar

9 large marshmallows

Peel & dice sweet potatoes, place in pan of water, and cook until tender. Mash & add other ingredients except marshmallows. Put in square pan, cut in 9 squares & place 1 marshmallow in each square. Bake at 350 degrees for 10 minutes.

BUCK-EYES

My mom made these and passed them out for Christmas presents in 1989. It’s amazing that any of them made the trip home; they are incredibly good.

1 lb. butter or margarine, room temperature

2 – 3 lbs. confectioner’s sugar

1 tsp. vanilla (opt.)

2 lb. peanut butter, room temperature

2-12 oz. packages of chocolate chips

1/2 bar paraffin (4 oz.)

Mix butter and peanut butter. Add vanilla. Blend well. Mix in confectioner’s sugar. Roll into small balls and refrigerate several hours.

Melt chocolate chips and paraffin in top of double boiler.

With toothpicks in each peanut butter ball, dip ball into melted chocolate, leaving spot on top of peanut butter balls undipped, then place on wax paper to harden. Try not to eat in one sitting!

GOURMET GREEN BEANS

This is from Publix Supermarket's April 2006 issue of Aprons

2 (12-ounce) bags fresh snipped green beans (snapped, if desired)

1 (8-ounce) package sliced baby portabella mushrooms

3/4 cup water

2 tablespoons garlic butter

1 tablespoon sesame seeds

1 teaspoon seasoned salt

Place beans, mushrooms, and water in microwave-safe bowl. Cover and microwave on HIGH 12–14 minutes, stirring once, until crisp tender.

Preheat large sauté pan on medium-high 2–3 minutes. Place butter in sauté pan and swirl to coat. Add sesame seeds and heat 1–2 minutes, stirring often, until lightly browned.

Drain beans and mushrooms and add to sauté pan. Sprinkle with seasoned salt. Reduce heat to medium, cover, and cook 6–8 minutes, stirring occasionally, until desired tenderness. Serve.

PEACH AND RASPBERRY CRUMBLE

This is from Diabetes Self-Management

Yield: 6 servings.

Prep time: 15 minutes. Baking time: 30-35 minutes.

Butter-flavor cooking spray

1 can (15 oz) sliced peaches in juice, drained

1 package (12 oz) unsweetened frozen raspberries, thawed

1 C quick-cooking oats, uncooked

2 Tbs brown sugar

1 1/2 tsp cinnamon

3 Tbs reduced-calorie stick margarine, melted

2 Tbs honey

Preheat oven to 350 degrees. Coat 8”X8” baking pan with cooking spray. Arrange peach slices evenly in bottom of the pan. Sprinkle raspberries evenly over peaches. Set aside. In bowl, combine oats, brown sugar, and cinnamon and mix with fork, breaking up brown sugar clumps. Add margarine & honey; stir to combine. Sprinkle topping over fruit. Bake uncovered for 30 – 35 minutes, or until fruit is bubbly. Portion into 6 equal servings. Serve alone or over low-fat, no-sugar-added vanilla ice cream.

TUSCAN TOMATO BURGERS

This was in an old Weight Watchers email. The Weight Watchers PointsPlus was 3 per serving. Makes 2 servings.

1 tomato, coarsely chopped

1 Tbsp chopped fresh basil

1 Tbsp balsamic vinegar

2 frozen Boca All American Flame Grilled Burgers

2 Tbsp shredded part-skim mozzarella cheese

4 C torn salad greens

Combine tomatoes, basil and vinegar. Cook burgers as directed on package; top with cheese. Cover; cook 1 min. or until cheese is melted. Place salad greens on 2 plates; top with cheeseburgers and tomato mixture.

Another Snacky Day

It's been less than a week since I posted "I Want Something Snacky!" But somehow, it seems that I'll run across a zillion recipes that are part of a theme. Okay, maybe only a dozen or two recipes, but you get the idea.

That said, here are six more snacky recipes to try out. Enjoy!

BUCK-EYES

My mom made these and passed them out for Christmas presents in 1989. It’s amazing that any of them made the trip home; they are incredibly good.

This is one of the recipes in my e-cookbook Off the Wall Cooking.

1 lb. butter or margarine, room temperature

2 lb. peanut butter, room temperature

2-3 lbs. confectioner’s sugar

1 tsp. vanilla (opt.)

2-12 oz. packages of chocolate chips

1/2 bar paraffin (4 oz.)

Mix butter & peanut butter. Add vanilla. Blend well. Mix in confectioner’s sugar. Boil into small balls & refrigerate several hours. Melt chocolate chips & paraffin in top of double boiler. With toothpicks in each peanut butter ball, dip ball into melted chocolate, leaving spot on top of peanut butter balls undipped, then place on wax paper to harden. Try not to eat in one sitting!

APPLE CRISP

This comes from a long-since-forgotten-emailing-list.

4 large apples

1/2 cup brown sugar

1 cup flour

3/4 cup white sugar

1 tsp. cinnamon

1/4 tsp. salt

2 Tbs. melted butter

1 egg

1/2 cup water

Preheat oven to 375 degrees. Peel, core & slice the apples. Put apples in a bowl & mix in 1/2 cup brown sugar. In a separate bowl, using a fork, mix together 1 cup flour, 3/4 cup sugar, 1 teaspoon cinnamon, & 1/4 teaspoon salt. In another bowl, beat together 1 egg, 2 tablespoons melted butter & 1/2 cup water. Add them to the dry ingredients. This is the topping. Put apples in baking dish & pour topping over them. Bake for 30 - 40 minutes. When done, apples should be soft & topping golden and crisp. Remove from oven & let cool.

MINI APPLE PIES

Another recipe from a long-since-forgotten-emailing-list. Preparation time: 15 minutes; Serves: 4

4 ramekins (small glazed ceramic serving bowls)

2 large tart-sweet apples (I use ones that are half green half red)

2 Tablespoons arrowroot or cornstarch or 1 Tablespoons flour

1-2 Tablespoons vegan margarine (I use Earth Balance)

2 Tablespoons maple syrup or agave nectar

apple pie spice

1/4 cup rolled oats

2 Tablespoons flour

raw sugar

The ingredient amounts are approximations, I just guess as I go!

Cut apples into 1/2 " dice and place into a bowl. Add 2 Tablespoons arrowroot, a few big shakes of pie spice & the liquid sweetener. Mix until evenly coated and pack down into ramekins leaving 1/2" from top.

In a bowl mix oats & margarine until combined add flour. Mixture should look like crumbly oats, if too dry add more margarine.

Distribute between ramekins, lightly packing on top, sprinkle with sugar.

Bake at 350 degrees F for 30 minutes. The top will give when pressed, & you will see bubbling.

HOME-STYLE GINGERBREAD

I'm not sure who posted this on About.com. It begins, “This wonderful ginger and cinnamon-scented cake is sure to bring a smile to your face, and it's the perfect dessert for a cold winter weekend. Top this warm gingerbread with a generous dollop of fresh sweetened whipped cream and sprinkle with a little cinnamon.”

2 1/3 cups all-purpose flour

1/3 cup granulated sugar

1 cup molasses

3/4 cup hot water

1/2 cup butter, room temperature

1 large egg

1/2 teaspoon salt

1 teaspoon baking soda

1 teaspoon ground ginger

1 teaspoon ground cinnamon

Grease & flour 9-inch square baking pan or spray with baking spray with flour. Heat oven to 325°. Combine all ingredients in mixing bowl; beat on low speed of electric mixer until ingredients are combined. Scrape sides of the bowl & increase mixer speed to medium; beat for about 3 minutes longer. Pour the batter into the prepared baking pan.

Bake for 45 to 55 minutes, or until a cake tester or toothpick inserted into the center of the cake comes out clean.

Cut into squares and serve with freshly whipped cream.

To serve leftover gingerbread, warm slightly in the microwave for about 15 to 20 seconds.

Note: This gingerbread freezes well: cut into squares and wrap individually. Thaw & warm in the microwave just before serving.

ORANGE BREAD

This came from a long-since-forgotten-emailing-list.

1 c. sugar

1/2 c. oil

2 tbsp. milk

2 eggs

1 1/2 c. flour

1 tsp. baking powder

1/2 tsp. salt

1/2 c. fresh or frozen orange juice.

Glaze

2 tbsp. orange juice

1/4 c. sugar

Mix together. Pour into greased loaf pan. Bake 350 degrees 50-55 min.

While cake is still warm, make glaze: Mix 2 tbsp. orange juice and 1/4 c. sugar. Pour over warm cake.

DUMP CAKE

1 (21 oz) can cherry pie filling

1 (15 oz) can crushed pineapple

1 (18 oz) pkg. yellow cake mix

8 oz. chopped walnuts

1/2 C. butter (melted)

In a 9x13 pan mix cherry pie filling and pineapple. Sprinkle dry cake mix over pineapple and cherry mixture, stir until just combined. Then sprinkle walnuts over top. Drizzle top with melted butter. Bake at 350 for 35-40 minutes or until golden brown.

Christmas Eve Food

Tomorrow is Christmas, and, if you're like me, you might be looking for one or two more recipes to add to tomorrow's main meal. Here are a few possibilities. Enjoy!

EGGNOG CHOCOLATE CHIP COFFEE CAKE

Years ago, there was a show on (I think) The Food Network called Breaking Bread with Father Dominic. It's no longer on TV, but you can find his cookbooks and info here and here. YIELD: 1 coffee cake.

Dough:

3 cups all-purpose flour

1/3 cup sugar

2 envelopes FLEISCHMANN’S RapidRise Yeast

1 teaspoon salt

3/4 cup eggnog

1/4 cup water

1/2 cup butter or margarine

2 large eggs

3/4 cup semisweet chocolate morsels

Chocolate Nut Topping:

1/2 cup butter

2/3 cup all-purpose flour

2/3 cup sugar

2 teaspoons ground cinnamon

1 cup semisweet chocolate morsels

1 cup chopped pecans

In a large bowl, combine 1 cup flour, sugar, undissolved yeast, & salt. Heat eggnog, water & butter until very warm (120 to 130 degrees). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs & 1 cup flour; beat 2 minutes at high speed. Stir in chocolate morsels and remaining flour to make a soft batter. Transfer batter from bowl to greased 9-inch tube pan. Cover; let rise in warm, draft-free place until doubled in size, about 1 hour.

Uncover dough; sprinkle evenly with Chocolate Nut Topping. Bake at 400 degrees for 20 to 25 minutes or until done. Cool in pan for 10 minutes. Remove from pan; cool completely on wire rack.

Chocolate Nut Topping:

In medium bowl, cut butter into flour until crumbly. Stir in sugar, cinnamon, chocolate morsels and pecans.

UPSIDE-DOWN CHERRY COBBLER

This comes from Carroll Pellegrinelli, About.com's Deeserts and Baking expert. Carroll wrote, “Enjoy this recipe for Upside-Down Cherry Cobbler. It's made with canned cherries or with a cherry pie filling option.” Serves 6 – 8.

Ingredients

1 cup flour

1-1/2 cup sugar, divided

1 teaspoon baking powder

1/4 teaspoon salt

1 tablespoon butter, melted, melted

1/2 cup milk

15 ounce can pitted cherries

Preheat oven to 400 degrees F. Grease 8x8 square or equivalent pan. In medium bowl with a wire whisk, stir together flour, 1/2 cup sugar, baking powder & salt. Stir in 2 teaspoons melted butter & milk. Combine completely. Pour batter into prepared pan.

Drain canned cherries reserving juice. Add cherries to bowl. Stir in sugar. Heat, not to boiling, 1/2 cherry juice either using microwave or stove. Mix hot juice & 1 teaspoon butter with cherry mixture. Pour mixture over batter in pan. Bake for 40 to 45 minutes. Cobbler crust will rise up through cherry mixture.

Serve with whipped or ice cream.

Note: *Replace canned cherries and 1 cup sugar with 21 ounce can of cherry or other fruit pie filling.

BAKED MACARONI AND CHEESE

This is from an old Weight Watchers' email. Serves: 8; 5 Points (old points value).

12 oz uncooked macaroni, elbow-type

1/2 cup fat-free sour cream

12 oz fat-free evaporated milk

8 oz low-fat cheddar or Colby cheese, shredded

1 Tbsp Dijon mustard

1/4 tsp table salt

1/4 tsp black pepper

1/8 tsp ground nutmeg

2 Tbsp dried bread crumbs

2 Tbsp grated Parmesan cheese

Preheat oven to 350ºF.

Cook pasta according to package directions without added fat or salt; drain & transfer to a large bowl. While pasta is still hot, stir in sour cream; set aside.

Heat milk in small saucepan over medium heat until tiny bubbles appear just around the edges. Reduce heat to low, add cheese & simmer until cheese melts, stirring constantly with wire whisk, about 2 minutes; remove from heat & stir in mustard, salt, pepper & nutmeg.

Add cheese mixture to pasta; mix well. Transfer to a 4-quart casserole dish. Combine bread crumbs & Parmesan cheese; sprinkle over pasta. Bake until top is golden, about 30 minutes. Yields about 1 cup per serving.

APPLE CRISP

CUBAN BLACK BEANS

This comes from a long-since-forgotten-emailing-list. Serves: 3 – 6

Ingredients (use vegan versions):

1 lb black beans rinsed NOT soaked

2 teaspoons cumin

1 tablespoon chili powder

1 teaspoon cinnamon

cayenne pepper to taste

1/2 to 1 yellow onion - depends on how much you like

Directions

Rinse black beans. Don't soak them.

Mince as much onion as you like finely, then caramelize it in a few table spoons of oil. I like to burn a bit of the onions to give a smoky flavor. Add all spices & stir for about 30 seconds over medium heat.

Add beans & stir for a minute or so. You want the beans to absorb that flavor. Add about 6 cups of water & turn heat to medium. Cover loosely & cook for about 2 hours or until done. Check water level occasionally. Add salt when tender. The best way to serve this is over rice with a vinaigrette made from minced onion, parsley or cilantro, vinegar, salt pepper, & oil.
