I absolutely adore chili. I probably got hooked on it as a kid, due, in large part, to my dad's chili. Unfortunately, Dad's chili isn't posted here, as it has meat in it. (It's the second one listed here.) Guess I'll have to experiment with it and try coming up with a vegetarian version of his chili!
In the meantime, here are today's six vegetarian chili recipes, including Hearty Veggie Chili and Black-Eyed Pea Chili. Enjoy!

WEEKNIGHT TWO-BEAN CHILI
This comes from the Food Network kitchen, and starts out, “This 30-minute weekenight dinner is a vegetarian chili that tastes like it's been slow simmered for hours. The hint of Chinese five-spice powder is a nice spice surprise. If you serve it over spaghetti, it turns into Cincinnati-style chili. (1 serving of Cincinnati-style chili equals 3/4 cup chili + 2 ounce (dry) cooked whole-wheat spaghetti.)”

ULTIMATE VEGAN CHILI
This comes from the February 2010 issue of Vegetarian Times, page 51. It begins, “This chili is made with a base of seitan and mushrooms for a rich, thick dish that is, for lack of a better word, meaty! In lieu of chili beans such as Bush's Best Chili Beans, you can substitute or 1 can each black beans, kidney beans, and pinto beans, partially drained. If you like your chili three-alarm hot, add an extra chipotle chile or two.” Serves 8.
