Breakfast

Is there anything better than having breakfast for dinner? Hmmmm....it depends. But if you really would like to give it a try (or simply have something different for breakfast over the weekend), check out these six breakfast recipes, including a Spinach & Cheddar Frittata or Challah French Toast. BREAKFAST BURRITO

Ingredients

2 teaspoons canola oil

1/2 small red onion, diced (1 cup)

1 red bell pepper, seeded and diced

1 cup drained, rinsed canned black beans, preferably low-sodium

1/4 teaspoon chili flakes

Salt and freshly ground black pepper

4 eggs and 4 egg whites

1/3 cup (about 1 1/2 ounce) shredded pepper Jack cheese

Nonstick cooking spray

4 (10 inch) whole wheat tortillas (burrito size)

1/4 cup reduced fat-free sour cream or 2 percent plain Greek yogurt

1/4 cup salsa

1 large tomato, (4 ounces) seeded and diced

1 small avocado (4 ounces), cubed

Hot sauce

Directions

Heat the canola oil in a large nonstick skillet over a medium-high heat. Cook the onions and peppers until onions are softened and peppers are slightly charred, about 8 minutes. Add black beans and red pepper flakes and cook until warmed through, another 3 minutes. Season with salt and pepper and transfer to a dish.

Whisk together the eggs and egg whites then stir in the cheese. Spray the skillet with cooking spray, and reheat the skillet over a medium heat. Reduce heat to low and add eggs, scrambling until cooked through, about 3 minutes. Spread each tortilla with 1 tablespoon each sour cream (or yogurt) and salsa, then layer with 1/4 of the black bean mixture, 1/4 of the scrambled eggs, some diced tomato and 1/4 of the avocado. Season, to taste, with hot sauce. Roll up burrito-style and serve.

APPLESAUCE PANCAKES

This comes from Betty Crocker, and begins, “Enjoy these delicious pancakes flavored with applesauce and made with Bisquick® mix. Perfect when you want your breakfast to be ready in 15 minutes.”

Ingredients

2 cups Original Bisquick™ mix

1 cup sweetened applesauce

1/2 cup milk

1 teaspoon ground cinnamon

2 eggs

Directions

In medium bowl, stir all ingredients with wire whisk or fork until blended.

Brush griddle or skillet with vegetable oil or spray with cooking spray; heat griddle to 375°F or heat skillet over medium heat.

For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook until edges are dry. Turn; cook other sides until golden brown.

SPINACH & CHEDDAR FRITTATA

This is from Weight Watchers, and begins, "This tiny ingredient list is loaded with shortcuts (shredded cheese, prewashed spinach), making it extra easy to drop this frittata into your weekly meal rotation. Did we mention it also reheats well? Try this recipe with a combination of greens and cheeses: Arugula and shredded mozzarella or baby kale and pepper Jack would be delicious."

Ingredients

4 sprays cooking spray

6 large eggs

1 cup fresh spinach, baby leaves, chopped

2 Tbsp uncooked scallions, finely chopped

1/4 tsp table salt

1/8 tsp black pepper

1/2 cup 50% reduce fat sharp cheddar cheese, shredded

Directions

Preheat the oven to 400°F. In a large bowl, whisk the eggs. Stir in the spinach, scallions, salt, and black pepper.

Coat a 12-inch ovenproof nonstick skillet with cooking spray. Heat the skillet over medium. Pour the egg mixture into the skillet and cook until partially set, about 5 minutes.

Sprinkle the cheese over the eggs. Place the skillet in the oven. Bake until the cheese softens and the eggs firm up, about 5 minutes. Let stand for 1 minute. Cut the frittata into 8 wedges. Serve warm. Or let cool, then wrap the wedges individually or store in a sealed container and refrigerate.

Serving size: 2 wedges

CARAMELIZED BANANA NUT OATMEAL

Ingredients

1 cup water

1/2 cup rolled oats

olive oil spray

1/2 medium banana, sliced

1 tablespoon walnut pieces

1/8 - 1/4 teaspoon cinnamon, depending on taste

Preparation

In a small saucepan, bring water to a boil. Stir in oats and reduce heat to low. Simmer until oats are cooked, 3 to 5 minutes.

While oats are cooking, spray a small non-stick skillet with olive oil. Add sliced bananas in a single layer and cook over medium heat until caramelized, about 3 minutes per side.

Spoon oatmeal into a bowl and top with caramelized bananas and walnuts. Sprinkle with cinnamon.

Ingredient Variations and Substitutions

You can use any kind of nuts, or leave them out, but keep in mind that walnuts provide heart-healthy omega-3s.

This recipe will also work with steel cut or quick-cooking oats, but stay away from instant oats, as they usually contain added sodium.

Cooking and Serving Tips

To make this recipe even easier, cook up a batch of oatmeal on a Sunday to keep in the refrigerator. That way it is already cooked and ready to go in the morning—you just have to add the bananas!

To increase the protein in this recipe, cook the oats in skim milk or soy milk instead of water, or add a dollop of Greek yogurt to the finished recipe.

WHOLE30 VEGGIE-PACKED BREAKFAST FRITTATA

Ingredients

2 tablespoons extra-virgin olive oil

1 small green bell pepper, diced

1 small red bell pepper, diced

1/2 small red onion, thinly sliced

2 cups packed baby spinach

1/4 cup sun-dried tomatoes (not packed in oil), chopped

1 clove garlic, sliced

10 large eggs, beaten

Kosher salt and freshly ground black pepper

Hot sauce, for serving

Directions

Preheat the oven to 375 degrees F.

Heat the oil in a medium oven-safe nonstick skillet over medium-high heat. Add the bell peppers and onion and cook, stirring occasionally, until softened, 6 to 7 minutes. Add the spinach, sun-dried tomatoes and garlic and cook, stirring frequently, until the spinach is just wilted and still vibrant green, about 1 minute.

Reduce the heat to low and add the eggs, 1 teaspoon salt and a few grinds of black pepper. Stir gently to distribute the vegetables. Bake until the eggs are set, 13 to 15 minutes.

Let stand for 5 minutes, then slice into 6 pieces. Serve with hot sauce. Refrigerate in an airtight container for up to 1 week.

CHALLAH FRENCH TOAST

This yumminess is from Ina Garten on the Food Network.

Ingredients

6 extra-large eggs

1 1/2 cups half-and-half or milk

1 teaspoon grated orange zest

1/2 teaspoon pure vanilla extract

1 tablespoon good honey

1/2 teaspoon kosher salt

1 large loaf challah or brioche bread

Unsalted butter

Vegetable oil

To serve:

Pure maple syrup

Good raspberry preserves (optional)

Sifted confectioners' sugar (optional)

Directions

Preheat the oven to 250 degrees F.

In a large shallow bowl, whisk together the eggs, half-and-half, orange zest, vanilla, honey, and salt. Slice the challah in 3/4-inch thick slices. Soak as many slices in the egg mixture as possible for 5 minutes, turning once.

Heat 1 tablespoon butter and 1 tablespoon oil in a very large saute pan over medium heat. Add the soaked bread and cook for 2 to 3 minutes on each side, until nicely browned. Place the cooked French toast on a sheet pan and keep it warm in the oven. Fry the remaining soaked bread slices, adding butter and oil as needed, until it's all cooked. Serve hot with maple syrup, raspberry preserves, and/or confectioners' sugar.
