Monday Recipes

It's Monday, time to get the week started. I hope you had a good weekend. Mine seemed 'way too short, but then, therer's always next weekend.

In the meantime, we still need to eat. Here are six vegetarian recipes to get your week started, including Sweet and Spicy Tofu With Soba Noodles and Peach Tea. Enjoy!

BROCCOLI CHEDDAR CREAMY BEANS

This is from Laurel Randolph at Simply Recipes. For this recipe, Laurel wrote, "All I want once winter arrives is cozy. A cozy cup of hot tea, a cozy blanket, a cozy mystery. This applies to food, too. I just want comforting, warming dishes that I can feel from my mouth to my toes—soups, stews, roasts, and the like. The only problem? These dishes tend to take time to cook and develop their flavors.

"And while I’m in a cozy state of mind during the winter months, I’m also busy. While slowly cooking a pot roast all day can be a nice activity, I’m not always free to indulge in that much lazy kitchen time. That got me searching for a dish that still feels comforting, filling, and warming without the time commitment."

Ingredients

1 tablespoon olive oil

3 to 4 garlic cloves, minced

2 (15-ounce) cans cannellini beans, rinsed and drained

3/4 cup vegetable or chicken broth

1 (10 to 12-ounce) bag frozen chopped broccoli or broccoli cuts

4 ounces (1 packed cup) grated sharp cheddar cheese, plus more for garnish

1/2 teaspoon kosher salt, or to taste

1/2 teaspoon freshly ground black pepper, or to taste

Directions

Place a medium pot over medium heat and add the olive oil. Once hot, add the garlic and cook until fragrant but not browned, about 30 seconds.

Add the beans and broth and bring to a simmer. Mash about 1/4 of the beans using a masher or wooden spoon. Add the broccoli, stir, and cover with a lid. Cook, stirring a few times, until the beans and broccoli are tender, 3 to 6 minutes (chopped broccoli will take less time, and broccoli cuts will take longer).

Remove the lid and turn the heat to low. Add half of the cheese, stirring until it melts. Add the remaining cheese and stir until melted. Add salt and pepper to taste. Serve topped with a sprinkle of extra cheese.

Easy Upgrades

I love the simplicity of this dish, but it’s easy to amp up the flavors a bit without adding time spent. I’ll often add a teaspoon or two of white miso to give the beans more umami flavor—in fact, I tend to add miso to all of my beans. Just be sure to taste before adding any salt since miso is salty. My husband tends to add hot sauce, which is a solid move.

For cheesier beans, use more cheese (duh) or swap for extra sharp cheddar. I also like to add a teaspoon or two of nutritional yeast, which adds a delicious nacho-esque flavor.

SUMMER PARTY SALAD

This is from Everyday Diabetic Recipes, and begins, "We all love having several easy salad recipes to make during the summer, but this salad, is not only easy. It's gorgeous! Plus, whether you use it as an appetizer with pita chips, or as a side dish for the main course, everyone is going to love our Summer Party Salad! It's full of vibrant colors, and so much yummy flavor that no matter how you serve this up, it's going to disappear nearly as quickly as it took to throw together."

Ingredients

1/3 cup extra virgin olive oil

4 tablespoons lime juice

3 cloves garlic, minced

2 tablespoons finely chopped cilantro

1/4 teaspoon salt

1/2 teaspoon black pepper

1 (15-ounce) can chick peas, rinsed and drained

1 (15-ounce) can black beans, rinsed and drained

1-1/2 cup cherry tomatoes, cut into quarters

1 cup frozen corn, thawed

1 cup chopped cucumber

1/2 cup thinly sliced scallion

Directions

In a medium bowl, whisk olive oil, lime juice, garlic, cilantro, salt, and pepper; set aside.

In a large bowl, combine remaining ingredients. Pour dressing over salad and toss until evenly coated.

Refrigerate 1 hour or until ready to serve.

BAKED MACARONI AND CHEESE

This was submitted by Meredith at allrecipes. It starts off, "This easy mac and cheese is baked in the oven for a quick meal. A friend of mine sent me this recipe when I got my first apartment because she knew I hated cooking! It's easy to make and tastes great!"

Prep Time: 10 minutes; Cook Time: 35 minutes; Total Time: 45 minutes; Servings: 6; Yield: 1 (2-quart) casserole

Ingredients

1 (12 ounce) package macaroni

2 cups milk

1 large egg

2-1/2 cups shredded Cheddar cheese

2 tablespoons butter, melted

salt and pepper to taste

Directions

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.

Boil macaroni in a large pot of salted water until barely done, about 5 minutes. Drain and set aside.

Whisk milk and egg together in a large bowl; stir in cheese and butter.

Place par-boiled macaroni in the prepared baking dish. Pour milk mixture over macaroni, season with salt and pepper, and stir until combined. Press mixture evenly into the baking dish.

Bake, uncovered, in the preheated oven until top is browned, 30 to 40 minutes.

Serve hot and enjoy!

SWEET AND SPICY TOFU WITH SOBA NODDLES

For this yummy recipe, Sarah wrote, "If you don’t cook tofu often (or even if you do), this unfussy tofu dish is for you: There’s no flour-dredging or shallow-frying, and no marinating at all. As long as you pat the tofu dry (a bit fussy, but not by much), the vegetable oil’s high smoke point will yield crisp edges, while the sesame oil imparts flavor, putting you well on your way to making tofu taste great. What’s more, a ginger-and-garlic-laced soy sauce coats noodles and tofu alike, giving you chopstick after chopstick of toothsome pleasure. Serve these warm or cold, and be generous with the cool, crispy vegetables on top, especially for summer picnics where you can stretch this to serve 6 or even 8 as a side."

Ingredients

1-1/2 (14-ounce) packages firm tofu, drained

2 tablespoons canola oil

2 tablespoons sesame oil

1 (8-ounce) package all-buckwheat soba noodles

4 garlic cloves, smashed

1 (1-inch) piece ginger, peeled and thinly sliced

1 small bunch green onions, white and green parts separated, cut into 2-inch matchsticks

1/3 cup soy sauce or tamari

3 tablespoons dark brown sugar

1 teaspoon black pepper

Pinch of red-pepper flakes

4 mini or 1 large, thin-skinned cucumber, thinly sliced

4 radishes, thinly sliced

Handful of cilantro leaves, for serving

1 lime, cut in wedges, for serving

Preparation

Drain the tofu in a colander, or dry on paper-towel lined plate while you prep the remaining ingredients, about 10 minutes. Meanwhile, bring a small pot of water to a boil for the soba noodles.

Cut tofu into 1-inch cubes. Heat a cast-iron skillet over medium-high heat. Add the vegetable oil and 1 tablespoon of the sesame oil. When the oil shimmers, add the tofu in a single layer, in batches if needed and cook until golden on all sides, turning as needed when the tofu releases easily from the pan, about 8 to 10 minutes total. Lift the tofu out of the pan with a spatula and transfer to a new paper-towel-lined plate.

Meanwhile, cook the soba in boiling water for 5 to 8 minutes (or according to package directions), until just al dente, stirring frequently. Drain and rinse in cold water until the noodles no longer feel sticky.

Add garlic, ginger and whites of the onions to the skillet, along with the remaining tablespoon sesame oil, reduce the heat to medium, and cook until the oil is fragrant, stirring constantly, about 1 minute.

Add cooked and drained soba noodles to the pan, along with soy sauce, sugar, black pepper, red pepper and reserved green onions; toss together until the noodles are coated. Gently toss in the tofu until all the pieces are covered in the sauce.

Remove from the heat, and sprinkle cucumber, radish and cilantro on top. Serve warm or at room temperature, with lime.

PEACH TEA

This is from Vallery Lomas at The New York Times cooking enewsletter. For this recipe, Vallery wrote, "Sweetened with peaches, freshly puréed or from store-bought juice, this beverage tastes extra refreshing in warm weather. The fruit complements strongly brewed tea, and a little lemon juice further accentuates the peach flavor and helps balance the natural sweetness, which you can bolster with sugar if you’d like."

Total Time: 15 minutes; Yield: About 6 cups

Ingredients

8 black tea bags, preferably Lipton

2 pounds ripe peaches (6 to 8), peeled, pitted and coarsely chopped, or 2 cups peach juice (see Tip)

1 tablespoon fresh lemon juice, plus more if needed

1 cup ice, plus more for serving

Granulated sugar, if needed

Fresh peach slices, for serving

Preparation

In a tea kettle or medium saucepan over high heat, bring 4 cups water to a boil. Remove from the heat and add the tea bags. Allow the tea to steep for 5 minutes.

While the tea steeps, purée the peaches, if using fresh fruit. Pulse in a food processor or blender until very smooth. You should have 2 cups.

Gently squeeze the concentrated tea from the bags and discard the bags. If using puréed peaches, pour the tea into the blender, add the lemon juice and purée until smooth. Transfer to a pitcher. If using peach juice, transfer the tea to a pitcher, and stir in the peach juice and lemon juice.

Add the ice to the pitcher, then taste. If it’s too sweet, add more lemon juice, a couple of teaspoons at a time. If it isn’t sweet enough, stir in sugar, 1 tablespoon at a time, until dissolved. Refrigerate until the tea is chilled throughout. Serve in a large glass filled with ice and garnished with peach slices.

Tip

Be sure to use peach juice that is 100 percent juice and has no added sugar, such as Ceres brand.

BROCCOLI NOODLES AND CHEESE CASSEROLE

This is from allrecipes and submitted by "MessyChef", who wrote, "This is a quick and easy recipe if you are in a hurry – just noodles, broccoli, cottage cheese and Cheddar. My daughter loves it. It's always a hit."

1 (16 ounce) package egg noodles

1 head broccoli, cut into florets

2 cups cottage cheese

2 cups shredded Cheddar cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Steam broccoli until bright green and tender, 5 to 10 minutes. Combine broccoli, pasta and cottage cheese in 2 quart baking dish; mix well.

Sprinkle pasta mixture with Cheddar cheese and bake for 8 to 10 minutes, until cheese is bubbly.
