Last Minute Holiday Foods

Since Christmas is tomorrow, I'd better post more sides for the holiday meal. Check out the Onion Supreme, the Egg Nog Pumpkin Pie, or any of the other meatless holiday recipes today. Enjoy!

Note: I'll be taking tomorrow off to spend with family. (Not to worry, it's a small gathering.) I'll be back on Thursday with more yummy recipes to help you through the last week of the year.

SPICE TEA

I used to make this every year for Christmas presents. It's easy to make and tastes yummy. Gift wrap in a decorative tin or in a bag, then placed into a mug.

Ingredients

8 oz loose tea

3 orange peels

1-1/2 – 2 sticks cinnamon

2 T chopped cloves

Directions

Cut orange peels into small pieces. Bake at 350 degrees for 15 minutes, stirring occaionally. Let cool, add to loose tea, along with broken cinnamon sticks & cloves. Store in tight containers.

ROSE HIP MARMALADE

This recipe is from friends of the family, an Episcopal priest and his wife. Both were involved in the civil rights movement. He past away several years ago, but I still remember them fondly.

Ingredients

3 lbs. rose hips

1 large lemon

2 large oranges

6 C sugar

4 C boiling water

Directions

Remove stem & flower area ends from rose hips. Cut each berry in half. Cover with boiling water; simmer for 30 minutes. Rub through sieve or food mill. Add to pulp juice of lemon & oranges, coarsely ground-up rind of oranges, & sugar. Boil about 20 minutes. Pour into jelly glasses. When cool, cover with paraffin.

ONION SUPREME

My dad came for a week at Christmas, 1987. He fixed this to go with Christmas dinner, along with several other veggies. The day I drove him to Tampa International to fly back to New York, we went for coffee at a shop in the airport. When I asked for a copy of this, he grabbed a paper napkin and wrote down the recipe. It’s a great way to fix onions; I’ve always had onions in things, but never as a side dish. However, this is incredibly easy, as well as fantastic.

Ingredients

2 leeks (discard green), sliced thin

3 – 4 yellow onions, sliced thin

4 bunches scallions (discard green), sliced thin

20 small white onions

1 stick butter or margarine

1 1/2 C half & half

2 cloves garlic, sliced thin

Directions

Melt butter over low heat and sauté leeks, scallions, garlic, and yellow onions for 45 minutes. Meanwhile, cook white onions in enough water to just barely cover. Add white onions (after 45 minutes) to skillet and pour in half & half. Cook over low heat for 10 minutes more & serve.

CRANBERRY PIE



My dad sent this in a letter dated "18 Nov '79". He wrote, "Here is a recipe for a pie. 1st the way it was in the paper and the way I made it."

Note: This can be made either with or without a top crust. The original recipe was for a one-crust pie, without top crust.



Ingredients

2 T cornstarch

1 C sugar

1/3 tsp salt

1 1/4 C hot water

1 C raisins

1 T butter

2 C cranberries

Pie crust

Directions

Blend 1st four ingredients and cook in double boiler until thick. Add next 3 ingredients and cook 10 minutes. Put in pie shell and bake at 450 degrees for 20-30 minutes, covering pie with foil for the first 10-15 minutes. (Crust can be any kind you want.)

Variation

Ingredients

2 T cornstarch

3/4 C honey + 1/4 C molasses

1/4 tsp salt

1 1/4 C hot water

1 C raisins

1 T margarine

1 1/2 C cranberries + 1 C canned cranberries (kind with berries in sauce)

Pie crust

Directions

Make as above.

EGG NOG PUMPKIN PIE

Ingredients

1 C canned eggnog

1 egg

18 oz. can pumpkin pie filling

9" pie crust

Diretions

Preheat oven to 450 degrees. In large bowl, combine egg nog, egg & pie filling; blend well. Pour into crust. Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees; bake 50 minutes longer or until knife inserted near center comes out clean. Garnish with whipped cream.

PEANUT BUTTER PIE



I drove cab for several years. This was given to me by one of my fares, a divorced man with custody of his two kids. It took three trips to get the recipe, including the amounts. I increased the amounts of the peanut butter and sugar from 1/3 C.

Ingredients

1/2 C peanut butter (note)

8 oz. cream cheese (note)

1/2 C confectioner’s sugar

8 oz. tub cool whip (note)

graham cracker crust

Directions

Mix peanut butter, sugar, cream cheese & cool whip together, pour into crust, refrigerate or freeze for 1 hour.

NOTE: The peanut butter should be creamy. The cream cheese can be low fat, but should NOT be fat-free; the pie won’t taste (or set up) right. The cool whip can be low fat, too.

Drinks - Double-Post Tuesday

Besides being Taco Tuesday, it's also Double-Post Tuesday. Today's double post deals with drinks, to give you a little variety in that field. Check out the Classic Strawberry Smoothie, the Watermelon Punch, and the rest of today's yummy drinks. Enjoy!

RUMPLEMAYER’S HOT CHOCOLATE

This is from Molly O’Neill in The New York Times cooking e-newsletter. Molly wrote, “Hot chocolate is traceable to the Aztecs, who regarded the dark and bitter drink as a sacred brew. The hot cocoa that Columbus offered his patrons tasted “bitter, scummy and peppery,” according to Chantal Coady's account in “The Chocolate Companion,” which explains, no doubt, why they disliked it intensely. Sometime later, Cortez offered the same beverage to Charles V and his courtiers and succeeded in capturing their imagination with the addition, Ms. Coady writes, of some sugar and vanilla. This version, adapted from Rumplemayer's, a now-closed New York restaurant once known for its hot chocolate and pastries, falls into the latter camp; it is rich, sweet and smooth. It calls for real semisweet chocolate (we bet a mix of semisweet and bittersweet would be delightful, too) so there's none of the chalky aftertaste hot cocoa often leaves behind. A dollop of whipped cream and a sprinkle of cinnamon, if you wish, take it over the top.”

Yield: 4 servings; Time: 2 minutes.

Ingredients

4 cups milk

6 tablespoons sugar

7 ounces semisweet chocolate, chopped

1 cup heavy cream (optional)

Ground cinnamon, for garnish (optional)

Preparation

Combine the milk, sugar and chocolate in a large saucepan. Heat, stirring frequently, until the chocolate is melted and the mixture comes to a simmer.

Meanwhile, whip the heavy cream to soft peaks. Ladle the hot chocolate into 4 mugs, top with whipped cream and sprinkle lightly with ground cinnamon. Serve immediately.

CHERRY SMOOTHIE

This comes from Yishane Lee in the July 2012 issue of Runner’s World, page 48. I couldn’t find a link for it…

Ingredients

1 cup pitted cherries

3/4 cup plain yogurt

2 tablespoons honey

3/4 cup ice

Preparation

Place ingredients in blender and blend. Yum!

CLASSIC STRAWBERRY SMOOTHIE

This is from MyDailyMoment, and begins, “Whether you've got a busy morning and need a meal on the go, or you're looking for a way to give the kids their morning boost of protein and vitamins, this classic strawberry smoothie is a healthy dish in a cup.”

Ingredients

8 strawberries, hulled

1/2 cup skim milk

1/2 cup plain yogurt

3 tablespoons white sugar

2 teaspoons vanilla extract

6 ice cubes, crushed

Directions

In a blender combine strawberries, milk, yogurt, sugar and vanilla. Toss in the ice. Blend until smooth and creamy. Pour into glasses and serve.

WATERMELON PUNCH

Years ago, I was a bride’s maid at a friend’s wedding. A friend of the couple held the reception dinner; this punch was served with the hors d’oeuvres. I’ve added ginger ale to the recipe; it’s good either way.

Ingredients

1 watermelon

1 T honey

6 oz. can orange juice, undiluted

2 liter bottle ginger ale

Directions

Put watermelon (excluding rind and seeds) in a blender—and blend. Pour juice through a strainer into a large bowl. Add orange juice and honey, stir, and add ice. Add ginger ale just before serving.

LIZARD LOUNGE TEA

My oldest son spent several summers traveling the country, both singly and with friends. Several times, he wound up at the Rainbow Gathering, where he hooked up with a larger group of friends. Most of them had grown up in hot areas of the country, so they nicknamed themselves lizards; their area of the camp site was the lizard lounge. They would cook up their version of iced tea, which they would barter for other commodities. They were frequently asked what their secret ingredient was.

This is a scaled down version. I found that cranberry or cranberry-apple herb tea works very nicely with this, but any herbal tea can be used.

1/2 gallon apple cider

4 – 5 herbal tea bags

Place cider in a large pan or teakettle and bring to a boil. Place herbal tea bags into a large container and pour the boiled cider over the tea bags. Let steep for 15-30 minutes and cool. Very good.

Sides

While I did post several sides on Tuesday, I figured that since Christmas is this Sunday, I'd better post more sides for the holiday meal. Check out the Onion Supreme, the Egg Nog Pumpkin Pie, or any of the other meatless recipes today. Enjoy!

I used to make this every year for Christmas presents. It's easy to make and tastes yummy. Gift wrap in a decorative tin or in a bag, then placed into a mug.

8 oz loose tea

3 orange peels

1 1/2 - 2 sticks cinnamon

2 T chopped cloves

Directions

Cut orange peels into small pieces. Bake at 350 degrees for 15 minutes, stirring occaionally. Let cool, add to loose tea, along with broken cinnamon sticks & cloves. Store in tight containers.

Drinks

As hot as August tends to be (at least here in Florida), staying hydrated is so important. Therefore, today's post deals with drinks to help keep you hydrated, and includes Vietnamese Iced Coffee and Cafe de Olla. Enjoy!

HEALTHY TRIPLE-LAYER SMOOTHIE

Ingredients

3 cups banana chunks, frozen

1 20-oz. can pineapple chunks, juice reserved

1/2 cup kale or spinach leaves

1/2 cup raspberries

1 cup blueberries

Instructions

Add 1 cup of the frozen banana chunks and 1 cup of the pineapple chunks to a blender and blend until smooth. Divide evenly among 3 glasses.

Blend together another cup of the frozen banana chunks, 1/2 cup of the pineapple chunks, and the kale or spinach. Add some pineapple juice, if needed, to keep things moving. Carefully add to the glasses, trying not to mix the colors.

Blend together the remaining cup of frozen banana chunks with the raspberries and blueberries. Add some pineapple juice, if needed. Carefully pour into the glasses and serve immediately.

STARBUCKS CARAMEL FRAPPUCCINO COPYCAT

This is from Kiley Heidtbrink at AllRecipes. Kiley wrote, "This is my version of Starbucks Caramel Frappuccino! It's easy to make at home by blending coffee with milk, caramel sauce, and ice. Top each glass with whipped cream and drizzle more caramel sauce on top. Serve with a straw."

Prep Time: 5 minutes; Total Time: 5 minutes; Servings: 2

Ingredients

2 cups ice

1 cup strongly brewed black coffee, cooled

1 cup low-fat milk

1/3 cup caramel sauce

3 tablespoons white sugar

Directions

Blend ice, coffee, milk, caramel sauce, and sugar together in a blender on high speed until smooth.

Pour into two 16-ounce glasses.

Tips

You can make strong coffee by using 2 tablespoons ground coffee beans per 1 cup water in your coffee maker.

CAFE DE OLLA

The recipe for this yummy coffee is from the December 2012 issue of Vegetarian Times, page 47. It starts off, “Literally 'coffee from the pot,' this recipe offers a simple way to make coffee for a crowd, with a spiced twist that no one can resist.” Serves 8 in 30 minutes or less.

Ingredients

4 cinnamon sticks

4 star anise

4 allspice berries

4 whole cloves

1/2 cup packed dark brown sugar or 4 oz. piloncillo (Mexican raw sugar cones)

2 cups medium grind, dark roast coffee beans

2 cups low-fat milk

1 cup coffee liqueur, such as Kahlúa, optional

Directions

Lightly crush cinnamon sticks, star anise, allspice, and cloves with mortar and pestle. Place in resealable plastic bag, and pound with rolling pin. Transfer to large saucepan, and add sugar and 8 cups water. Bring mixture to a boil, and simmer until sugar dissolves. Remove from heat, add coffee, and let steep 5 minutes.

Meanwhile, warm milk in small saucepan, and whisk until frothy.

Strain coffee through fine sieve or coffee filter into pitcher. Stir in coffee liqueur (if using). Serve with frothed milk.

VIETNAMESE ICE COFFEE

This is from Kay Chun in The New York Times cooking enewsletter. Kay wrote, "This popular coffee drink requires only three ingredients: coffee, water and condensed milk. Traditionally, a Vietnamese press is used to make the coffee, but this recipe calls for a simple pour-over cone. (If you don't have a coffee cone, you can substitute brewed espresso for the coffee.) Vietnamese iced coffee is normally made one serving at a time, but for ease, this recipe makes a batch that will serve about four. Be sure to use a boldly flavored dark roast coffee, since the condensed milk and ice will dilute the drink."

Yield: 4 servings (about 2 1/2 cups); Time: 10 minutes

Ingredients

1 cup finely ground dark roast coffee, such as French roast

3 cups boiling water

1/2 cup sweetened condensed milk

Preparation

Place coffee grounds in a heatproof container. Slowly pour boiling water over the grounds in a circular motion to evenly saturate. Do not stir; let steep 5 minutes.

Line a coffee cone with a paper filter and place the cone over another heatproof container.

Slowly pour the steeped coffee through the filter, allowing all the liquid to drip through completely. (You should have about 2 cups of strong coffee. See Tip.) Discard the filter and coffee grounds. Stir the condensed milk into the coffee until well blended.

Fill 4 glasses with ice cubes. Divide the coffee mixture among the glasses and serve immediately, or transfer to the refrigerator, where it will keep, covered, up to 3 days. Serve over ice.

Tip

The brewed coffee can be made a few days in advance and kept chilled in the fridge.

Drinks - Double-Post Tuesday

Besides being Taco Tuesday, it's also Double-Post Tuesday. Today's double post deals with yummy drinks, and includes Cafe De Olla and Spice Tea (which, incidently, makes a nice holiday gift!). Enjoy!

CLASSIC HOT CHOCOLATE

This is from Melissa Clark on The New York Times cooking e-newsletter. Melissa wrote, “This is a dark, rich and classic hot cocoa that’s perfect for any snowy afternoon. Nondairy milk can be substituted for whole milk here, though you might have to reduce the sugar, since some brands are sweetened. Also bear in mind that the higher the cocoa percentage of the chocolate you use, the less sweet the drink will be. Add the sugar gradually, tasting as you go: Hot cocoa sweetness is a very personal thing.”

Ingredients

1/4 cup unsweetened cocoa powder, preferably Dutch-processed

3 cups whole milk

4 1/2 ounces chopped bittersweet chocolate or 3/4 cup bittersweet chocolate chips

1 to 3 tablespoons granulated sugar

Tiny pinch of fine sea salt

1 teaspoon vanilla extract

Whipped cream or marshmallows, for serving

Preparation

Fill a small pot with 1/3 cup water and bring to a boil. Whisk in cocoa; it may clump, which is O.K.

Reduce heat to medium and whisk in milk, whisking around the sides of the pan to help dissolve all the cocoa.

When milk simmers, whisk in the chocolate, 1 tablespoon sugar and a tiny pinch of salt, and reduce heat to low. Whisk until chocolate is melted and very smooth. Taste and add more sugar if you like. Turn off heat and whisk in vanilla.

Serve topped with whipped cream or marshmallows.

CARROT CAKE SMOOTHIE

This was in an article titled "Vision Quest, Recipes for Eye Health" in the July 2020 issue of Taste for Life (page 14).

I had picked up a copy of Taste for Life at Rollin' Oats, a Florida health food store with two locations (Tampa and St. Petersburg). Since I live close to the St. Pete store, I try to go there as often as possible (though not often enough, as far as I'm concerned). If you're ever in the area, I highly suggest giving them a try.

This recipe has a prep time of 10 minutes and serves 1

Ingredients

1 Tbsp shelled walnuts

2/3 cup canned unsweetened full-fat coconut milk

3/4 tsp vanilla extract

1/2 tsp ground cinnamon

1/8 tsp sea salt

8 drops liquid stevia

1 Tbsp shredded carrot

1 cup ice cubes

Directions

Add walnuts to a blender and pulse until powdery.

Add coconut milk, vanilla extract, cinnamon, salt, and stevia to blender and process until smooth. Add shredded carrot and pulse a couple times until finely chopped.

Add ice cubes and pulse until thick and creamy, tamping down as necessary.

Pour into a glass and serve immediately.

Kitchen note: Coconut, walnuts, cinnamon, and a hint of carrot make this kept smoothie taste like cake. If you want to have your cake for breakfast and eat it too, this smoothie is the way to go.

SORREL DRINK

This is from the June 20008 issue of Vegetarian Times, page 78. The recipe reads, “Red hibiscus flowers are a common ingredient in ruby-hued herbal tea bags, such as Celestial Seasonings' Red Zinger.”

Ingredients

Sorrel Drink:

3 C dried sorrel or red hibiscus flowers, or 5 Red Zinger tea bags

1 4-inch cinnamon stick

10 whole cloves

1/4 tsp. crushed allspice

2 3-inch pieces peeled fresh ginger

Simple Syrup:

1 C sugar

1 C water

Ingredients

To make Sorrel Drink: Bring all ingredients & 4 cups water to a boil in saucepan. Reduce heat to medium-low & simmer 10 minutes. Cool, strain & chill.

To make Simple Syrup: Bring sugar & water to a boil in small saucepan. Stir to dissolve sugar & simmer 1 minute. Cool.

Pour Sorrel Drink over ice. Serve with pitcher of Simple Syrup for guess to sweeten drinks to taste.

I used to make this every year for Christmas presents; it was quite popular. Unfortunately, life got a little hectic...As simple as this is, though, I may be reigniting this as a present!

8 oz loose tea

3 orange rinds/peels

1 1/2-2 sticks cinnamon

2 T chopped cloves

Directions

Cut orange peels into small pieces. Bake at 350 degrees for 15 minutes, stirring occaionally. Let cool, add to loose tea, along with broken cinnamon sticks & cloves. Store in tight containers.

LIZARD LOUNGE TEA

My oldest son spent several summers traveling the country, both singly and with friends. Several times, he wound up at the Rainbow Gathering, where he hooked up with a larger group of friends. Most of them had grown up in hot areas of the country, so they nicknamed themselves lizards; their area of the camp site was the lizard lounge. They would cook up their version of iced tea, which they would barter for other commodities. They were frequently asked what their secret ingredient was.

This is a scaled down version. I found that cranberry or cranberry-apple herb tea works very nicely with this, but any herbal tea can be used.

Ingredients

1/2 gallon apple cider

4 – 5 herbal tea bags

Directions

Place cider in a large pan or teakettle and bring to a boil. Place herbal tea bags into a large container and pour the boiled cider over the tea bags. Let steep for 15-30 minutes and cool. Very good.

CAFE DE OLLA

The recipe for this yummy coffee is from the December 2012 issue of Vegetarian Times, page 47. It starts off, “Literally 'coffee from the pot,' this recipe offers a simple way to make coffee for a crowd, with a spiced twist that no one can resist.” Serves 8 in 30 minutes or less.

4 star anise

4 allspice berries

4 whole cloves

1/2 cup packed dark brown sugar or 4 oz. piloncillo (Mexican raw sugar cones)

2 cups medium grind, dark roast coffee beans

2 cups low-fat milk

1 cup coffee liqueur, such as Kahlúa, optional

Lightly crush cinnamon sticks, star anise, allspice, and cloves with mortar and pestle. Place in resealable plastic bag, and pound with rolling pin. Transfer to large saucepan, and add sugar and 8 cups water. Bring mixture to a boil, and simmer until sugar dissolves. Remove from heat, add coffee, and let steep 5 minutes.

Meanwhile, warm milk in small saucepan, and whisk until frothy.

Strain coffee through fine sieve or coffee filter into pitcher. Stir in coffee liqueur (if using). Serve with frothed milk.

I can almost hear someone thinking, Drinks? Are you kidding? You're posting drinks?

Yes, today's post deals with drinks, since having the same-old-same-old can get pretty boring. Today's drinks include Fuzzy-Navel Smoothies and Spice Tea. Enjoy!

CREAMY VEGAN HOT CHOCOLATE

This came from Genevieve Ko at The New York Times cooking e-newsletter. Genevieve wrote, "For a vegan hot chocolate that rivals even the creamiest dairy-laden variety, add a few tablespoons of nut butter like almond, sunflower or peanut to the nondairy milk, chocolate chips and cocoa powder. Whisking is also essential here; nondairy products tend to contain stabilizers that keep them emulsified, so they can separate when boiled. If you keep whisking the mix as it heats and remove it from the stove when it’s nice and steaming, but before it boils, you’ll end up with perfectly smooth hot chocolate. Don’t worry if it breaks: You can simply blend it with a whisk or immersion blender over low heat to bring it back together."

1/3 cup vegan semisweet chocolate chips (about 2 ounces)

Sides

While I did post several sides on Tuesday, I figured that since Christmas is tomorrow, I'd better post more sides for the holiday meal. Check out the Onion Supreme, the Egg Nog Pumpkin Pie, or any of the other meatless recipes today. Enjoy!

SPICE TEA

I used to make this every year for Christmas presents. It's easy to make and tastes yummy. Gift wrap in a decorative tin or in a bag, then placed into a mug.

Ingredients

8 oz loose tea

3 orange peels

1 1/2 - 2 sticks cinnamon

2 T chopped cloves

Directions

Cut orange peels into small pieces. Bake at 350 degrees for 15 minutes, stirring occaion-ally. Let cool, add to loose tea, along with broken cinnamon sticks & cloves. Store in tight containers.

ROSE HIP MARMALADE

This recipe is from friends of the family, an Episcopal priest and his wife. Both were involved in the civil rights movement. He past away several years ago, but I still remember them fondly.

Ingredients

3 lbs. rose hips

1 large lemon

2 large oranges

6 C sugar

4 C boiling water

Directions

Remove stem & flower area ends from rose hips. Cut each berry in half. Cover with boiling water; simmer for 30 minutes. Rub through sieve or food mill. Add to pulp juice of lemon & oranges, coarsely ground-up rind of oranges, & sugar. Boil about 20 minutes. Pour into jelly glasses. When cool, cover with paraffin.

ONION SUPREME

My dad came for a week at Christmas, 1987. He fixed this to go with Christmas dinner, along with several other veggies. The day I drove him to Tampa International to fly back to New York, we went for coffee at a shop in the airport. When I asked for a copy of this, he grabbed a paper napkin and wrote down the recipe. It’s a great way to fix onions; I’ve always had onions in things, but never as a side dish. However, this is incredibly easy, as well as fantastic.

Ingredients

2 leeks (discard green), sliced thin

3 - 4 yellow onions, sliced thin

4 bunches scallions (discard green), sliced thin

20 small white onions

1 stick butter or margarine

1 1/2 C half & half

2 cloves garlic, sliced thin

Directions

Melt butter over low heat and sauté leeks, scallions, garlic, and yellow onions for 45 minutes. Meanwhile, cook white onions in enough water to just barely cover. Add white onions (after 45 minutes) to skillet and pour in half & half. Cook over low heat for 10 minutes more & serve.

CRANBERRY PIE



My dad sent this in a letter dated "18 Nov '79". He wrote, "Here is a recipe for a pie. 1st the way it was in the paper and the way I made it."

Note: This can be made either with or without a top crust. The original recipe was for a one-crust pie, without top crust.



Ingredients

2 T cornstarch

1 C sugar

1/3 tsp salt

1 1/4 C hot water

1 C raisins

1 T butter

2 C cranberries

Pie crust

Directions

Blend 1st four ingredients and cook in double boiler until thick. Add next 3 ingredients and cook 10 minutes. Put in pie shell and bake at 450 degrees for 20-30 minutes, covering pie with foil for the first 10-15 minutes. (Crust can be any kind you want.)

Variation

Ingredients

2 T cornstarch

3/4 C honey + 1/4 C molasses

1/4 tsp salt

1 1/4 C hot water

1 C raisins

1 T margarine

1 1/2 C cranberries + 1 C canned cranberries (kind with berries in sauce)

Pie crust

Directions

Make as above.

EGG NOG PUMPKIN PIE

Ingredients

1 C canned eggnog

1 egg

18 oz. can pumpkin pie filling

9" pie crust

Diretions

Preheat oven to 450 degrees. In large bowl, combine egg nog, egg & pie filling; blend well. Pour into crust. Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees; bake 50 minutes longer or until knife inserted near center comes out clean. Garnish with whipped cream.

PEANUT BUTTER PIE



I drove cab for several years. This was given to me by one of my fares, a divorced man with custody of his two kids. It took three trips to get the recipe, including the amounts. I increased the amounts of the peanut butter and sugar from 1/3 C.

Ingredients

1/2 C peanut butter (note)

8 oz. cream cheese (note)

1/2 C confectioner’s sugar

8 oz. tub cool whip (note)

graham cracker crust

Directions

Drinks

Today's post deals with drinks, since not only do we need to eat, we also need something to drink. Check out the Homemade Ginger Tea, the Cafe de Olla, and the other drink recipes in today's post. Enjoy!

SPICE TEA

I used to make this every year for Christmas presents; it was quite popular. Unfortunately, life got a little hectic...As simple as this is, though, I may be reigniting this as a present!

This, as well as other yummy recipes, can be found in my e-cookbook, Off the Wall Cooking.

Ingredients

8 oz loose tea

3 orange rinds/peels

1 1/2-2 sticks cinnamon

2 T chopped cloves

Directions

Cut orange peels into small pieces. Bake at 350 degrees for 15 minutes, stirring occaionally. Let cool, add to loose tea, along with broken cinnamon sticks & cloves. Store in tight containers.

When making one serving, place one teaspoon of tea into a tea ball (also called a tea infuser) and let the tea steep in a cup of freshly boiled water for 2 - 5 minutes. If you're making a pot of tea, add 1-2 tablespoons of the loose tea into the tea ball and let it steep in the pot of freshly boiled water for a little longer than 5 minutes. Enjoy!

HOMEMADE GINGER TEA

Ingredients

About 2 inches of fresh raw ginger (use more or less, depending on how strong you want it!)

1 1/2 to 2 cups water

1 to 2 tablespoons honey (or agave nectar, to taste)

Optional: 1/2 lime (juiced, or to taste)

Directions

First, prepare the fresh ginger by peeling it and slicing it thinly to maximize the surface area. This will help you make a very flavorful ginger tea.

Boil the ginger in water for at least 10 minutes. For a stronger and tangier tea, allow to boil for 20 minutes or more, and use more slices of ginger. You really can't over do it, so feel free to add as much ginger and simmer it for as long as you want.

Remove from heat and add lime juice and honey (or agave nectar) to taste.

The secret to making a really flavorful ginger tea is to use plenty of ginger-more than you think you will need-and also to add a bit of lime juice and honey to your ginger tea. You will also probably want to add more honey than you think you will need as well.

Enjoy your hot ginger tea! A homemade ginger tea is excellent in soothing stomach aches and in aiding digestion.

LIZARD LOUNGE TEA

My oldest son spent several summers traveling the country, both singly and with friends. Several times, he wound up at the Rainbow Gathering, where he hooked up with a larger group of friends. Most of them had grown up in hot areas of the country, so they nicknamed themselves lizards; their area of the camp site was the lizard lounge. They would cook up their version of iced tea, which they would barter for other commodities. They were frequently asked what their secret ingredient was.

This is a scaled down version. I found that cranberry or cranberry-apple herb tea works very nicely with this, but any herbal tea can be used.

Ingredients

1/2 gallon apple cider

4 – 5 herbal tea bags

Directions

Place cider in a large pan or teakettle and bring to a boil. Place herbal tea bags into a large container and pour the boiled cider over the tea bags. Let steep for 15-30 minutes and cool. Very good.

PUMPKIN SPICE LATTE

This is from OneGreenPlanet, under the title “How to Make Your Own Pumpkin Spice Latte Without Nasty Ingredients”, by Heather McClees. Heather wrote about the benefits of making this, rather than buying it at your local coffee shop, and ends with, “Now, see how easy that was? This natural, vegan version won’t only taste better but it’s also cheaper, friendlier to your body, and it’s cruelty-free. Enjoy at breakfast with some pumpkin waffles or muffins and even brew some to enjoy with these Clean Eating Chocolate Chip Pumpkin Bars for dessert!”.

Ingredients

1/2 cup of unsweetened non-dairy milk (check labels to ensure they include no carrageenan)

2 tablespoons of pure pumpkin puree (organic is best)

dash of pumpkin pie spice

natural sweetener like pure stevia, which is sugar-free and chemical-free (or your choice sweetener)

dash of alcohol-free vanilla extract

4-6 ounces of hot, brewed coffee (preferably organic and espresso strength)

Directions

Brew your coffee if you haven’t already.

Grab a small pot and add the milk, pumpkin, vanilla, and pumpkin pie spice. Bring to a low heat and stir together.

Let the mixture warm on the stove for a minute or two just until the milk is warm.

Pour into a large coffee mug, add the coffee and stevia, and stir together.

Enjoy as it is, or add a dollop of soy or coconut whipped cream if you wish.

Add a touch of pumpkin spice as a garnish or a fresh cinnamon stick.

CHERRY SMOOTHIE

This comes from Yishane Lee in the July 2012 issue of Runner’s World, page 48. I couldn’t find a link for it…

Ingredients

1 cup pitted cherries

3/4 cup plain yogurt

2 tablespoons honey

3/4 cup ice

Preparation

Place ingredients in blender and blend. Yum!

CAFE DE OLLA

The recipe for this yummy coffee is from the December 2012 issue of Vegetarian Times, page 47. It starts off, “Literally 'coffee from the pot,' this recipe offers a simple way to make coffee for a crowd, with a spiced twist that no one can resist.” Serves 8 in 30 minutes or less.

Halloween Recipes - and Spice Tea

It's almost Halloween...Where has the time gone? (If you're like me, this year can't end soon enough!)

That said, here are five recipes to help get you into the mood for Halloween and the holiday season (including Spooky Ghost Cupcakes and Gingerbread), and Spice Tea to chase it with. Enjoy!

SPICE TEA

This comes from my e-cookbook, titled Off the Wall Cooking, found on Amazon.com. I used to make this every year for Christmas presents. Nice-tasting, and everyone seemed to enjoy getting this.

Ingredients

PUMPKIN CAKE ROLL WITH CREAM CHEESE FILLING

This comes from Diana Rattray, who wrote for The Spruce Eats. She wrote, “This pumpkin cake roll recipe is filled with a cream cheese filling. Keep one of these pumpkin rolls frozen, in slices, and bring some out when guests drop in. Ingredients

3 large eggs

1 cup sugar

2/3 cup pumpkin

1 teaspoon lemon juice

3/4 cup all-purpose flour

1 teaspoon baking powder

2 teaspoons cinnamon

1 teaspoon ginger

1/2 teaspoon nutmeg

1/2 teaspoon salt

Filling:

8 ounces Cream cheese, softened

4 tablespoons Butter, softened

1 cup confectioners' sugar

1/2 teaspoon vanilla extract

Preparation

In large bowl, combine eggs and sugar, beating with an electric mixer until thick and light yellow in color. Add pumpkin and lemon juice, mixing until blended.

In separate bowl, combine flour, baking powder, spices and salt. Add to egg mixture, mixing well. Spread batter into greased and waxed-paper lined 10-by-15-inch jelly-roll pan.

Bake at 350 ° for 15 minutes. Remove from oven. Cool for 15 minutes.

Place cake on clean tea towel sprinkled liberally with powdered sugar. Cool 10 minutes longer. From 10- inch side, roll cake up in towel. Set aside.

While cake is cooling in towel, prepare filling. Beat together cream cheese and butter; stir in powdered sugar and vanilla and blend until smooth.

Unroll cake. Evenly spread filling over cake. Roll up cake (without the towel). Wrap in plastic wrap. Cover and chill at least 1 hour. Slice before serving. Keep leftover slices refrigerated. This pumpkin roll freezes well, and makes about 10 servings.

SPOOKY GHOST CUPCAKES

Ingredients

For the cupcakes:

1/2 cups sugar

3/4 cups unsweetened cocoa powder

1 1/2 teaspoons baking soda

3/4 teaspoons baking powder

3/4 teaspoons salt

3/4 cups buttermilk, room temperature

3 tablespoons vegetable oil

2 large eggs

3/4 cup warm water

1 teaspoon pure vanilla extract

Seven Minute Frosting:

3/4 cups sugar

1 tablespoon light corn syrup

2 tablespoons water

3 large egg whites

1/2 teaspoon pure vanilla extract

mini & regular chocolate chips for the face!

Instructions

For the Cupcakes:

Preheat oven to 350F. Line cupcake tins with liners, set aside.

In a large bowl, whisk together the sugar, flour, cocoa powder, baking soda, baking powder and salt.

Make a small well in the middle of the bowl and add the buttermilk, oil, eggs, water and vanilla. Whisk the wet ingredients together and then incorporate the dry until smooth and lump-free.

Fill cupcake liners 2/3 of the way full and bake for 20-23 minutes. Allow cupcakes to cool while you make the frosting.

Place egg whites in the clean bowl of a stand mixer with a whisk attachment. In a small saucepan with a candy thermometer attached, combine the sugar, corn syrup and water.

On medium-high heat cook the sugar mixture until boiling. At that point- turn the mixer on medium high speed to get the egg whites to soft peaks. When the sugar mixture has reached 230F, slowly pour it down the side of the bowl in a steady stream while the mixture continues to run.

Beat on medium-high for about 7 minutes or until the bottom of the bowl is cool to the touch and stiff glossy peaks have formed. Add the vanilla right before you finish beating the frosting.

Pipe frosting onto the cupcakes right away (it gets a bit firm otherwise.) and decorate with the chocolate chips!

PUMPKIN MUFFINS

This comes from G.E. Appliances. Yields 12 muffins.

Ingredients

1 cup brown sugar

1/2 cup sugar

1/2 cup butter, softened

1 egg, beaten

3/4 cup canned pumpkin

1/4 cup walnuts or pecans, chopped

2 cups all-purpose flour

1/4 teaspoon baking soda

1 teaspoon cinnamon

1 tablespoon baking powder

3/4 teaspoon salt

1/2 cup milk

Preparation

Preheat oven to 375 degrees F.

Grease or spray a standard sized muffin pan with non-stick cooking spray.

Cream butter and sugars with a mixer on medium speed until fluffy. Beat in egg. Add pumpkin and nuts.

Mix dry ingredients together well and add to pumpkin mixture in thirds, alternating with milk. Blend just enough to mix ingredients.

Spoon into prepared muffin pan and bake for 20 minutes.

GINGERBREAD

This recipe is from a no-longer-remembered emailing list. I have a sneaking suspicion that whoever sent it to the list got it from ARM & HAMMER, since it mentions A&H baking soda. The recipe begins, "Sweeten the season with our gingerbread. This simple recipe is the perfect holiday dessert, especially when topped with yogurt or fresh fruit. Just grab a fresh box of ARM & HAMMER® Baking Soda- an important ingredient for great baking and prepare a treat for the whole family." The person who sent it to the emailing list ends this with, "I LIKE MINE TOPPED WITH A DOLLOP OF COOL WHIP!"

Ingredients:

1 1/2 cups sifted all-purpose flour

1 teaspoon ARM & HAMMER® Baking Soda

1 teaspoon ground ginger

1/4 teaspoon salt

1/3 cup vegetable shortening

1/2 cup sugar

1 egg

1/2 cup light molasses

3/4 cup boiling water

Directions

Sift together flour, Baking Soda, ginger and salt. Using an electric mixer, cream shortening in large bowl until fluffy. Add sugar gradually, beating after each addition. Beat in egg thoroughly; blend in molasses. Gradually stir dry ingredients into creamed mixture. Beat thoroughly. Stir in water. Turn into greased and floured 8-inch square baking pan. Bake in a 350-degree oven 40 minutes, or until toothpick inserted in center of cake comes out clean. Cool in pan 10 minutes; remove from pan and cool on rack. Makes one 8-inch square cake. Cut into 16 servings.

GINGERBREAD CUPCAKES WITH CARDAMOM CREAM CHEESE FROSTING

This comes from Brett Moore, who wrote for The Spruce Eats. He wrote, "I love the taste of warm gingerbread, especially around the holidays. Cardamom is a wonderfully fragrant spice that goes well with gingerbread. If you don't care for cardamom, you can substitute allspice or cinnamon. Reprinted with permission from The Spice Kitchen: Everyday Cooking with Organic Spices by Katie Luber and Sara Engram (McMeel 2009)." Prep Time: 15 minutes; Cook Time: 20 minutes Makes 12 cupcakes

Ingredients:

8 tablespoons (1 stick) unsalted butter, at room temperature

1/2 cup firmly packed brown sugar

1/2 cup molasses

1 egg

1/2 teaspoon vanilla

1/2 cup boiling water

1 teaspoon baking soda

1 1/2 cups all-purpose flour

2 teaspoons ground cinnamon

1 teaspoon ground ginger

1 teaspoon ground cloves

1 teaspoon dried lemon zest

1/4 teaspoon salt

Cardamom Cream Cheese Frosting

8 ounces cream cheese, at room temperature

1 1/2 cups confectioners’ sugar

1/2 teaspoon vanilla

1 tablespoon fresh lemon juice

2 teaspoons dried lemon zest

1 teaspoon ground green cardamom

Preparation:

Preheat the oven to 350°F and grease 12 standard-size muffin cups or line them with paper cups. Cream the butter and brown sugar in a large mixing bowl until light and fluffy. Beat in the molasses, egg, and vanilla. In a small bowl, stir together the boiling water and the baking soda until dissolved. Stir the baking soda water into the molasses mixture.

Sift together the flour, cinnamon, ginger, cloves, lemon zest, and salt into a small bowl. Whisk the flour mixture into the molasses mixture until the batter is combined.

Spoon the batter into the prepared muffin cups. Bake the cupcakes until a toothpick inserted in the center of one or two of the cupcakes comes out clean, about 20 minutes.

While the cupcakes are baking, make the frosting. Cream together the cream cheese and the sugar in a medium mixing bowl until light and fluffy. Beat in the vanilla. Add the lemon juice, lemon zest, and cardamom and beat until fluffy and smooth. Chill the frosting in the refrigerator until ready to use.

Remove the cupcakes from the oven and allow them to cool for 5 minutes before removing them from the pan. Place the cupcakes on a rack to cool for 30 minutes. Spread the cream cheese frosting generously over the cooled cupcakes.

Drinks

I'm thirsty!

That seems to be a common refrain this time of year, when the weather is warming up. Here are six drink recipes to help you through the day, including Apple Cider Floats and Ginger Tea. Enjoy!

CHAI LATTE MILKSHAKE

This comes from an old Weight Watchers emailing list, and begins, “Whip up this sweet, slightly spiced treat in minutes. It's a perfect refresher for drop-in summertime guests.”

Ingredients

1/4 cup General Foods International Sugar Free Chai Latte, powder

1 cup fat-free vanilla ice cream

2 cup fat-free skim milk

Directions

Place all ingredients in bowl of a blender; blend on high until smooth.

Pour into 2 glasses and serve. Yields about 3/4 cups per serving.

PINK LADY PUNCH

Not sure where this one came from, though I'm thinking maybe from one of my mother's cookbooks that she bought to raise funds for some group or other.

Ingredients

4 C cranberry juice

1 1/2 C sugar

4 C pineapple juice

2 qts. chilled ginger ale

Directions

Add sugar to cranberry juice. Stir until sugar dissolves. Add pineapple juice. Chill. Pour into punch bowl & add ginger ale.

GINGER TEA

This comes from Vegetarian Times (posted on MAY 9, 2017), and begins, “Ginger is Mother Nature’s protective cloak, shielding us from sickness on winter days. This tea is very spicy—if it tastes too strong, dilute it with more hot water and honey. Traditional advice is not to drink more than 2 cups of ginger tea a day unless you are using it as a treatment for a bad chest cold.”

Ingredients

12 thin slices fresh ginger, pounded with mortar or rolling pin

1 Tbs. honey

Preparation

Put ginger and 3 cups water in small saucepan, and bring to a boil. Reduce heat to medium-low, and simmer 20 to 25 minutes.

Strain out ginger slices and discard or reserve for another use. Stir in honey, and serve hot. Tea can be reheated, if necessary.

GREEN TEA, BLUEBERRY, AND BANANA SMOOTHIE

This recipe was found in an article on Prevention, titled “11 Recipes with Fresh Blueberries.” Click here to see the article and all twelve recipes.

SERVINGS: 1

Ingredients

3 tbsp water

1 green tea bag

2 tsp honey

1 1/2 C frozen blueberries

1/2 med banana

3/4 C calcium fortified light vanilla soy milk

Directions

Microwave water on high until steaming hot in a small glass measuring cup or bowl. Add tea bag and allow to brew 3 minutes. Remove tea bag. Stir honey into tea until it dissolves.

Combine berries, banana, and milk in a blender with ice crushing ability.

Add tea to blender. Blend ingredients on ice crush or highest setting until smooth. (Some blenders may require additional water to process the mixture.) Pour smoothie into tall glass and serve.

APPLE CIDER FLOATS

This is from Lauren Miyashiro on Delish. The recipe begins, “You'll want to float away with these apple cider floats!”

1/2 c. caramel sauce

1/2 c. cinnamon-sugar

2 c. apple cider, warmed

Vanilla ice cream, for serving

cinnamon sticks

Whipped cream, for serving

Apple slices

Directions

Pour caramel in a small dish. Dip the top of each mug in the caramel to rim the cup. Then dip the caramel rim in cinnamon-sugar.

Ladle apple cider into each mug then add a scoop of ice cream to each. Top with whipped cream and garnish with apple slices and cinnamon stick.

Drizzle more caramel over the whipped cream and serve immediately.

Most of them had grown up in hot areas of the country, so they nicknamed themselves lizards; their area of the camp site was the lizard lounge. They would cook up their version of iced tea, which they would barter for other commodities. They were frequently asked what their secret ingredient was.

This is a scaled down version. I found that cranberry or cranberry-apple herb tea works very nicely with this, but any herbal tea can be used.

Ingredients

1/2 gallon apple cider

4 – 5 herbal tea bags

Directions

Place cider in a large pan or teakettle and bring to a boil. Place herbal tea bags into a large container and pour the boiled cider over the tea bags. Let steep for 15-30 minutes and cool. Very good.

SPICE TEA

I used to make this every year for Christmas presents; it was quite popular. Unfortunately, life got a little hectic...As simple as this is, though, I may be reigniting this as a present!

Ingredients

8 oz loose tea

3 orange rinds/peels

1 1/2-2 sticks cinnamon

2 T chopped cloves

Directions

Cut orange peels into small pieces. Bake at 350 degrees for 15 minutes, stirring occaionally. Let cool, add to loose tea, along with broken cinnamon sticks & cloves. Store in tight containers.

When making one serving, place one teaspoon of tea into a tea ball (also called a tea infuser) and let the tea steep in a cup of freshly boiled water for 2 - 5 minutes. If you're making a pot of tea, add 1-2 tablespoons of the loose tea into the tea ball and let it steep in the pot of freshly boiled water for a little longer than 5 minutes. Enjoy!

CHERRY SMOOTHIE

Ingredients

1 cup pitted cherries

3/4 cup plain yogurt

2 tablespoons honey

3/4 cup ice

Preparation

Place ingredients in blender and blend. Yum!

STRAWBERRY FROSTY

This was in a Weight Watchers' email several years ago. The program has changed, but I'm using the values from when this was sent.

This begins, “Our Strawberry Frosty is much less fattening than typical fast-food shakes — and it's just as creamy!”

Ingredients

1 cup fat-free vanilla frozen yogurt

1 cup unsweetened frozen strawberries

1/2 cup fat-free skim milk

1 tsp vanilla extract

1 Tbsp strawberry jam

Directions

Combine ingredients in a blender; blend until thick and frothy. Yields about 1 cup per serving.
