If you love Mexican Food, today's post is sure to please. Check out the Vegetarian Enchiladas, the Cafe de Olla, and the rest of today's yumminess. Enjoy!

MEXICAN PASTA

This is from allrecipes, and was submitted by someone named Mimi. The recipe begins, "Mexican pasta is a great vegetarian dish with a kick!"

Prep Time: 5 minutes; Cook Time: 15 minutes; Total Time: 20 minutes; Serves: 4

To view this online, go to https://www.allrecipes.com/recipe/21518/mexican-pasta/.

Ingredients

1/2 pound seashell pasta

2 tablespoons olive oil

2 onions, chopped

1 green bell pepper, chopped

1/2 cup sweet corn kernels

1 (15 ounce) can black beans, drained

1 (14.5 ounce) can peeled and diced tomatoes

1/4 cup salsa

cup sliced black olives

1-1/2 tablespoons taco seasoning mix

salt and pepper to taste

Directions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

While pasta is cooking, heat olive oil over medium heat in a large skillet. Cook onions and bell pepper in oil until lightly browned, about 10 minutes.

Stir in corn and heat through. Stir in black beans, tomatoes, salsa, olives, seasoning mix, and salt and pepper and cook until thoroughly heated, about 5 minutes.

Toss sauce with cooked pasta and serve.

CRISPY POTATO QUESADILLAS

This is from Kristina Felix in The New York Times cooking enewsletter. For this recipe, Kristina wrote, "Despite what many people think, quesadillas don’t always have cheese. In Mexico City, you can order a “quesadilla sin queso” with a variety of fillings, highlighting the regional debate around what constitutes a true quesadilla. This version embraces both worlds: It contains cheese, but it’s melted into a hearty potato and pea filling that makes these quesadillas more satisfying as a complete meal. The quick slaw on top, inspired by curtido (a vinegary cabbage salad popular throughout Central America), balances the richness of the quesadillas and provides a nice spicy crunch. If you have any slaw left over, it keeps for up to four days in the refrigerator and is versatile enough to serve with plain rice or grilled meat or fish throughout the week."

Prep Time: 10 minutes; Cook Time: 25 minutes; Total Time: 35 minutes; Yield: 4 servings

To view this online, go to https://cooking.nytimes.com/recipes/1026918-crispy-potato-quesadillas. While you're at it, if you haven't already signed up for The New York Times cooking enewsletter, I highly recommend doing so. Great recipes, guides, and more.

Ingredients

Kosher salt

1 pound potatoes, unpeeled but scrubbed clean

1 cup peas, frozen or fresh (6 ounces)

2 cups shredded semi-soft cheese, such as Monterey Jack or Cheddar

1-1/2 tablespoons avocado or vegetable oil

8 (7- to 8-inch) flour tortillas

1/4 medium green cabbage, thinly sliced (about 4 cups)

2 carrots, grated

1/2 red onion, thinly sliced

1 jalapeño or serrano, diced (seeded for less spice, if desired)

1 lime, juiced

3 tablespoons white or apple cider vinegar

1-1/2 teaspoons sugar

Sour cream or Mexican crema, optional, for serving

Preparation

Heat oven to 400 degrees.

Fill a medium pot with water; add 2 tablespoons salt and set it to boil on high. Cut potatoes into 1-inch chunks and place them in the pot as you go. Once the water is boiling, lower the heat slightly to maintain a rolling boil and cook potatoes for 5 to 7 minutes, until easily pierced with a fork. Add the peas and cook for 3 minutes more. Drain the vegetables, return them to the pot, add the cheese and mash until fully combined. Add more salt to your taste.

Add the oil to a baking sheet and spread it around evenly using one side of a flour tortilla, then repeat with another until you have 4 tortillas lightly oiled on one side, evenly arranged on the baking sheet (it’s okay if they overlap a bit.)

Divide the mash among the tortillas. Top each with a second tortilla and press down until the filling almost spills out. Flip the quesadillas so the other side gets oiled.

Bake for 8 minutes, flip the quesadillas over, and bake for another 8 minutes until browned and crispy. They may puff up, which is great.

Meanwhile make the topping. Combine the cabbage, carrots, red onion, jalapeño, lime juice, vinegar, sugar and 1-1/2 teaspoons salt. Toss the slaw with your hands and taste to adjust for vinegar, salt or sugar until the slaw is to your liking.

To serve, quarter the quesadillas with a sharp knife and top with slaw and a dollop of sour cream, if using.

VEGETARIAN MEXICAN INSPIRED STUFFED PEPPERS

This is from Allrecipes. It begins, "This vegetarian stuffed peppers recipe is not too spicy, but it is packed with flavor. My kids loved it! For variety, add corn or other vegetables, or switch to other canned tomato varieties. Follow the boiling method prior to baking if you don't want a crispy bell pepper. If you have small peppers, use more of them for this recipe. They taste great with a dollop of sour cream on top."

Prep Time: 15 minutes; Cook Time: 40 minutes; Total tTime: 55 minutes; Yield: 4 stuffed peppers

To view this online, go to https://www.allrecipes.com/recipe/231514/vegetarian-mexican-inspired-stuffed-peppers/.

1 tablespoon salt

4 large green bell peppers - tops, seeds, and membranes removed

1 tablespoon olive oil

1/2 cup chopped onion

2 cups cooked rice

1 (15 ounce) can black beans, drained and rinsed

1 (14.5 ounce) can chili-style diced tomatoes

1 teaspoon chili powder

1 teaspoon garlic salt

1/2 teaspoon ground cumin

1/2 teaspoon salt

1 (8 ounce) package shredded Mexican cheese blend (such as Sargento® Authentic Mexican)

Directions

Preheat the oven to 350 degrees F (175 degrees C).

Bring a large pot of water and 1 tablespoon salt to a boil. Add green bell peppers and cook until slightly softened, 3 to 4 minutes; drain and arrange cut-side up in a 9x9-inch baking dish.

Heat olive oil in a skillet over medium heat. Add onion; cook and stir until softened, 5 to 10 minutes.

Transfer cooked onion into a large bowl; add rice, black beans, and tomatoes. Stir in chili powder, garlic salt, cumin, and 1/2 teaspoon salt until well combined. Fold in 1-1/2 cups Mexican cheese blend. Spoon rice mixture evenly into bell peppers; sprinkle with remaining Mexican cheese blend.

Bake in the preheated oven until cheese is melted and bubbling, about 30 minutes.

VEGETARIAN ENCHILADAS

This comes from the Food Network. The recipe begins, "These easy-to-make enchiladas are filled with beans, spinach and cheese for a plant-forward take on a Mexican classic. Serve them with rice on the side."

Active Time: 35 minutes; Total Time: 1 hour 40 minutes; Yield: 6 servings (2 enchiladas each), Level: Easy

To view this online, go to https://www.foodnetwork.com/recipes/food-network-kitchen/vegetarian-enchiladas-3364279.

Ingredients

Sauce:

2 tablespoons vegetable oil

1/2 small onion, diced

2 cloves garlic, chopped

2 teaspoons ancho chile powder

1 teaspoon ground cumin

Large pinch cayenne pepper

One 15-ounce can tomato puree

Kosher salt

Filling and Topping:

One 10-ounce package frozen chopped spinach, thawed

One 15-ounce can pinto beans, strained and rinsed

4 ounces shredded Cheddar (about 1-1/2 cups)

4 ounces shredded pepper Jack cheese (about 1-1/2 cups)

1/2 cup sour cream

3 scallions, sliced

Kosher salt

Twelve 6-inch corn or flour tortillas

Juice of 1/2 a lime

Special equipment: a 9-by-13-inch baking dish

Directions

Preheat the oven to 350 degrees F.

For the sauce: Heat the oil in a large skillet over medium heat. Add the onions, and cook, stirring frequently, until soft and translucent, about 5 minutes. Add the garlic, chile powder, cumin and cayenne, and continue to cook, stirring, until the spices are toasted, about 1 minute. Add 2 cups water, the tomato puree and 1/2 teaspoon salt, and bring to a simmer. Continue cooking until the sauce reduces and thickens slightly (it should be looser and thinner than marinara sauce), 15 to 20 minutes. Set aside to cool slightly.

For the filling: Squeeze all the excess moisture out of the spinach. Put it into a large bowl with the pinto beans, and squeeze with your hands to combine and smash up the beans a little. Add half of both the Cheddar and the pepper Jack, half of both the sour cream and the scallions and 1 1/4 teaspoons salt, and stir to combine.

Spread about 1/2 cup of the tomato sauce in the bottom of a 9-by-13-inch baking dish. Lay the tortillas out on a work surface, and spread 1 side of each with about 1 teaspoon of tomato sauce. Put about 1/4 cup of the filling across the middle of each tortilla. Roll each up, then shingle them in 2 even rows in the baking dish. Pour the remaining sauce over the top of the rolled tortillas, and sprinkle with the remaining cheeses. Cover the baking dish loosely with foil, and bake until the cheeses are melted and the filling is hot, about 30 minutes. Uncover, and continue baking to heat completely through, about 10 minutes more.

For the topping: Whisk together the remaining sour cream, the lime juice and a pinch of salt in a small bowl. Drizzle the mixture over the baked enchiladas, and sprinkle with the remaining scallions.

Mexican Recipes

If you love Mexican food, today's post is sure to please. Check out the Bean and Cheese Burritos, the Vegetarian Enchiladas, and the rest of today's yummy recipes. Enjoy!

VEGAN BLACK BEAN ENCHILADAS

This is from Emily Weinberger at the Food Network, and begins, "These vegan enchiladas are loaded with flavor and great for the entire family. Made with frozen corn, black beans and canned tomatoes, the filling couldn't be easier. As it simmers, it becomes rich and thickened with just a hint of smoke (thanks to the addition of some chipotle in adobo). We doubled down on the vegan Cheddar, rolling some up with the filling in corn tortillas, and also layering it on top of the casserole so it bakes to ooey-gooey-tangy perfection. A final sprinkle of cilantro, avocado and radishes adds freshness and crunch."

Active Time: 25 minutes; Total Time: 50 minutes; Yield: 4 to 6 servings; Level: Easy

To view this online, go to https://www.foodnetwork.com/recipes/food-network-kitchen/vegan-black-bean-enchiladas-13516031.

Ingredients

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

2 cloves garlic, minced

1 small onion, chopped

Kosher salt and freshly ground black pepper

1 tablespoon tomato paste

One 15-ounce can diced tomatoes

1 canned chipotle in adobo, chopped, plus 1 teaspoon adobo sauce

One 15-ounce can black beans, drained and rinsed

1 cup frozen corn

10 corn tortillas

One 19-ounce can vegan red enchilada sauce

16 slices vegan Cheddar (about 12 ounces)

Fresh cilantro leaves, chopped avocado, sliced radishes and hot sauce, for topping

Directions

Preheat the oven to 400 degrees F.

Heat the olive oil in a large skillet over medium-high heat. Add the chili powder, cumin, garlic, onion, 1 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until the onion is softened, 5 to 6 minutes. Add the tomato paste and cook, stirring to combine, until the tomato paste is a deep brick red, 3 to 4 minutes. Add the diced tomatoes and chipotle with the adobo sauce and cook, stirring occasionally and mashing the tomatoes with a wooden spoon, until the sauce is thickened and reduced by a quarter, about 6 minutes. Add the beans, corn, 1/2 teaspoon salt and a few grinds of pepper and cook just until the beans and corn are warmed through, 3 to 4 minutes.

Microwave the tortillas so they are just warmed and more pliable, about 30 seconds. Spread 1/2 cup of the enchilada sauce on the bottom of a 13-by-9-inch baking dish. Pour the remaining enchilada sauce into a large shallow bowl or pie dish.

Dip each tortilla into the bowl of enchilada sauce to lightly coat. Place 1 slice of Cheddar inside each tortilla and fill with 2 heaping tablespoons of the black bean mixture. Fold the tortillas over the filling and transfer to the baking dish. Pour the remaining enchilada sauce over top of the tortillas and lay the remaining 6 cheese slices on top down the middle.

Bake until the cheese has melted and is turning brown in spots and the edges of the tortillas start to crisp, 15 to 20 minutes. Garnish with cilantro, avocado, radishes and hot sauce.

BLACK BEAN FAJITA SKILLET

This is from Carolyn Hodges, M.S., RDN at Eating Well, and begins, "You can often find presliced and ready-to-cook fresh vegetables in your grocer's produce section. Use these to your advantage to cut down on dinnertime prep. Here, presliced fajita vegetables are sautéed with canned black beans and Southwest seasoning for a quick and easy Tex Mex-inspired meal. Plus, this recipe requires just three ingredients, not including basics like salt, pepper and oil. You can easily take your bowl up a notch by adding some cheese, sour cream or another tasty topping."

1 (15-ounce) can no-salt-added black beans, rinsed

1/4 teaspoon salt

1/4 cup coarsely shredded Cheddar cheese (1 ounce; optional)

Directions

Heat oil in a large skillet over medium heat. Add fajita vegetables and sauté until tender, about 10 minutes.

Stir in black beans, seasoning and salt; cook, stirring, until heated through, about 1 minute.

Divide the vegetables and beans between two bowls and top each with 2 tablespoons cheese, if using.

MEXICAN PASTA

This is from allrecipes, and was submitted by someone named Mimi. The recipe begins, "Mexican pasta is a great vegetarian dish with a kick!"

To view this online, go to https://www.allrecipes.com/recipe/21518/mexican-pasta/.

Ingredients

1/2 pound seashell pasta

2 tablespoons olive oil

2 onions, chopped

1 green bell pepper, chopped

1/2 cup sweet corn kernels

1 (15 ounce) can black beans, drained

1 (14.5 ounce) can peeled and diced tomatoes

1/4 cup salsa

cup sliced black olives

1-1/2 tablespoons taco seasoning mix

salt and pepper to taste

Directions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

While pasta is cooking, heat olive oil over medium heat in a large skillet. Cook onions and bell pepper in oil until lightly browned, about 10 minutes.

Stir in corn and heat through. Stir in black beans, tomatoes, salsa, olives, seasoning mix, and salt and pepper and cook until thoroughly heated, about 5 minutes.

Toss sauce with cooked pasta and serve.

BEAN AND CHEESE BURRITOS

This is from Kay Chun in The New York Times cooking enewsletter. For this recipe, Kay wrote, "Mexican refried beans are a cinch to make at home on a weeknight thanks to some staple pantry items and a few basic fresh ingredients. Buttery canned pinto beans are perfect in this dish, breaking down into a creamy, silky mixture. (Black beans would also work great.) While the beans are often fried in lard or bacon drippings, this vegetarian version builds flavor with caramelized onion, bell pepper, garlic and smoked paprika instead. Pico de gallo adds a touch of tang to counter the rich beans. Pan-frying the wrapped burritos guarantees a golden, irresistibly crispy exterior and an interior that oozes with melted cheese."

Time: 40 minutes; Yield: 6 burritos

To view this online, go to https://cooking.nytimes.com/recipes/1022532-bean-and-cheese-burritos.

Ingredients

4 tablespoons safflower or canola oil

1/2 cup finely chopped yellow onion (from 1/2 medium onion)

1/2 cup finely chopped green bell pepper (from 1/2 pepper)

Salt and black pepper

2 garlic cloves, minced

2 (15-ounce) cans pinto beans, 1/2 cup of bean liquid reserved and the rest drained

1/2 cup store-bought or homemade pico de gallo or salsa

1/4 teaspoon smoked paprika

6 (9- to 10-inch) flour tortillas

2 cups shredded sharp Cheddar (8 ounces)

Sour cream and hot sauce, for serving

Preparation

In a large nonstick skillet, heat 2 tablespoons of the oil over medium. Add onion and bell pepper, season with salt and pepper, and cook, stirring occasionally, until light golden and tender, about 8 minutes. Stir in garlic until fragrant, 1 minute. Add pinto beans, pico de gallo, smoked paprika, reserved bean liquid and 1/2 cup of water, and bring to a simmer. Cook, stirring and mashing occasionally with a potato masher or the back of a spoon, until liquid is absorbed and mixture is thick, about 8 minutes. Season with salt and pepper. Transfer refried beans to a bowl, and wipe out skillet.

Spread 1/2 cup of the refried beans in the center of each tortilla and top each with ⅓ cup of the cheese. Fold the short sides of the tortilla over the filling; fold the bottom of the tortilla up and over the filling and tightly roll.

In the skillet, heat 1 tablespoon of the oil over medium. Add 3 burritos seam side down and cook until golden, turning occasionally, 3 to 5 minutes. Transfer to serving plates and repeat with the remaining 1 tablespoon oil and 3 burritos. Serve warm with sour cream and hot sauce on the side.

EGG AND CHEESE QUESADILLA

This recipe is from Ali Slagle in The New York Times cooking enewsletter. For this yummy recipe, Ali wrote, "With its soft, gooey inside and toasted outside, this egg and cheese quesadilla is as satisfying to eat as it is fun to make. The trick is to use the barely set eggs and melted cheese to secure the fillings to the tortilla, so that when it’s time to flip, the whole quesadilla cleanly moves together. As the tortilla toasts, add another round of cheese and sprinkle some on the perimeter so it melts into a crisp, brown, lacy edge. If you’d like to add chopped vegetables like peppers, onions or kale, sauté them in the butter before adding the eggs."

Ready in 10 minutes; Yield: 1 serving

To view this online, go to https://cooking.nytimes.com/recipes/774974663-egg-and-cheese-quesadilla. While you're at it, if you haven't signed up for The New York Times cooking enewsletter, I highly recommend doing so. Great recipes, guides, and more.

Ingredients

2 large eggs

Salt

1/2 tablespoon unsalted or salted butter

Scant 1/2 cup grated Cheddar or Mexican cheese blend (scant 2 ounces)

1 (8-inch) flour tortilla

Preparation

In a small bowl, beat the eggs and a pinch of salt with a fork until homogenous.

In a medium nonstick skillet — one that snugly fits your tortilla — melt the butter over medium heat. Add the eggs and swirl the pan so the eggs fill the skillet. Using a spatula, pull the eggs in toward the center and, while holding the spatula in place, tilt the pan so that the egg runs to the empty skillet. Repeat this until the surface is nearly set but still shiny, about 1 minute.

Sprinkle evenly with half of the cheese, then top with the tortilla and press to adhere. Put your hand in the middle of the tortilla. Flip the skillet so the tortilla is now on your hand, egg-side up. (Keep your arm away from the hot skillet, but otherwise nothing scary will happen because everything is adhered to the tortilla.) Place the tortilla, egg-side up, back in the skillet.

Sprinkle the remaining cheese on one half of the eggs, making sure to sprinkle some on the edge to crisp. Cook over medium until the tortilla is golden brown underneath, just a minute. Fold the tortilla in half, slide onto a plate, sprinkle with salt and cut into wedges.

Ingredients

Drinks

Most of us have our go-to Drinks. Whether it's coffee or tea in the morning, or even throughout the day, or soda, water, we usually go through the same drinks.

However, it's kind-of nice to add a few new drinks to the mix. To that end, check out the Lizard Lounge Tea, the Cafe de Olla, or the Ginger Tea, as well as the rest of today's offerings. Enjoy!

PEACH TEA

This is from Vallery Lomas at The New York Times cooking enewsletter. For this recipe, Vallery wrote, "Sweetened with peaches, freshly puréed or from store-bought juice, this beverage tastes extra refreshing in warm weather. The fruit complements strongly brewed tea, and a little lemon juice further accentuates the peach flavor and helps balance the natural sweetness, which you can bolster with sugar if you’d like."

Total Time: 15 minutes; Yield: About 6 cups

To view this online, go to https://cooking.nytimes.com/recipes/1022399-peach-tea. While you're at it, if you haven't already signed up for The New York Times cooking enewsletter, I highly recommend doing so. Great recipes, guides, and more.

Ingredients

8 black tea bags, preferably Lipton

2 pounds ripe peaches (6 to 8), peeled, pitted and coarsely chopped, or 2 cups peach juice (see Tip)

1 tablespoon fresh lemon juice, plus more if needed

1 cup ice, plus more for serving

Granulated sugar, if needed

Fresh peach slices, for serving

Preparation

In a tea kettle or medium saucepan over high heat, bring 4 cups water to a boil. Remove from the heat and add the tea bags. Allow the tea to steep for 5 minutes.

While the tea steeps, purée the peaches, if using fresh fruit. Pulse in a food processor or blender until very smooth. You should have 2 cups.

Gently squeeze the concentrated tea from the bags and discard the bags. If using puréed peaches, pour the tea into the blender, add the lemon juice and purée until smooth. Transfer to a pitcher. If using peach juice, transfer the tea to a pitcher, and stir in the peach juice and lemon juice.

Add the ice to the pitcher, then taste. If it’s too sweet, add more lemon juice, a couple of teaspoons at a time. If it isn’t sweet enough, stir in sugar, 1 tablespoon at a time, until dissolved. Refrigerate until the tea is chilled throughout. Serve in a large glass filled with ice and garnished with peach slices.

Tip

Be sure to use peach juice that is 100 percent juice and has no added sugar, such as Ceres brand.

GINGER TEA

This tea is very spicy—if it tastes too strong, dilute it with more hot water and honey. Traditional advice is not to drink more than 2 cups of ginger tea a day unless you are using it as a treatment for a bad chest cold.”

LIZARD LOUNGE TEA

My oldest son spent several summers traveling the country, both singly and with friends. Several times, he wound up at the Rainbow Gathering, where he hooked up with a larger group of friends. Most of them had grown up in hot areas of the country, so they nicknamed themselves lizards; their area of the camp site was the lizard lounge. They would cook up their version of iced tea, which they would barter for other commodities. They were frequently asked what their secret ingredient was.

This is a scaled down version. I found that cranberry or cranberry-apple herb tea works very nicely with this, but any herbal tea can be used.

Ingredients

1/2 gallon apple cider

4 – 5 herbal tea bags

Directions

Place cider in a large pan or teakettle and bring to a boil. Place herbal tea bags into a large container and pour the boiled cider over the tea bags. Let steep for 15-30 minutes and cool. Very good.

STRAWBERRY SMOOTHIE

This is from Martha Rose Shulman in The New York Times cooking enewsletter. For this yumminess, Martha wrote, "This will taste like a strawberry shake if you use a banana that is truly ripe. Frozen strawberries will lend it a shake-like texture."

Total Time: 5 minutes; Yield: One 16-ounce or two 8-ounce servings

This was featured in "Want More Fruit? Get Out the Blender," and can be viewed online at https://cooking.nytimes.com/recipes/1012542-strawberry-smoothie. While you're at it, if you haven't already signed up for The New York Times cooking enewsletter, I highly recommend doing so. Great recipes, guides, and more.

Ingredients

1 medium-size or large, ripe banana

1 heaped cup fresh or frozen hulled strawberries

1 cup milk

1 teaspoon honey

1/2 teaspoon vanilla extract (optional)

2 to 3 ice cubes

Preparation

Place all of the ingredients in a blender and blend until smooth. Serve right away.

Tip

Advance preparation: Smoothies should be made and drunk right away. This will thicken and lose flavor if it sits.

MEXICAN PASTA

This is from allrecipes, and was submitted by someone named Mimi. The recipe begins, "Mexican pasta is a great vegetarian dish with a kick!"

If you have small peppers, use more of them for this recipe. They taste great with a dollop of sour cream on top."

STRAWBERRY LASSI

This is from Zaynab Issa in The New York Times cooking enewsletter. For this recipe, Zaynab wrote, "Strawberry lassi is a popular variation of lassi, the yogurt-based blended beverage with origins in the Punjab region of the Indian subcontinent. This refreshing drink is made with frozen strawberries instead of ice to add flavor while keeping it cool. Sugar is the traditional sweetener in lassi, but the maple syrup here adds a subtle earthiness and dissolves quickly while blending. South Asian dahi (yogurt) is ideal for achieving the drink’s characteristic tart creaminess, but plain whole-milk yogurt will also work well. (Greek yogurt and skyr can be too thick for lassi.)"

Prep Time: 5 minutes; Cook Time: 5 minutes; Total Time: 10 minutes; Yield: 4 servings

This was featured in "Nothing Quenches Thirst Like a Lassi," and can be viewed online at https://cooking.nytimes.com/recipes/1026600-strawberry-lassi. 4 green cardamom pods, cracked open, seeds only (see Tip)

1-1/2 cups/about 8 ounces frozen whole strawberries

Preparation

Add yogurt, maple syrup, salt, cardamom and strawberries to a blender. Blend, gradually increasing the speed, until smooth. For a thinner consistency, blend in 1 tablespoon of water at a time.

Pour into glasses and serve immediately.

Tip

You can also substitute 1/8 teaspoon ground cardamom for the cardamom seeds.

ST. PATRICK'S DAY MINT SHAKES

This is from the Food Network, and begins, "Milk shakes, like other simple concoctions, are only as good as their ingredients, so use high-quality ice cream and vanilla extract. Prep Time: 5 minutes; Total Time: 5 minutes; Servings: 1

To view this online, go to https://www.allrecipes.com/pumpkin-cream-cold-foam-recipe-11803001.

Ingredients

1/4 cup heavy whipping cream

2 tablespoons 2% reduced-fat milk

2 tablespoons vanilla syrup

1 tablespoon canned pumpkin puree

1/8 teaspoon pumpkin pie spice, plus more for dusting

Directions

Place heavy cream, milk, vanilla syrup, pumpkin puree, and pumpkin pie spice in a small measuring cup or jug. Using a handheld milk frother, froth until thick and creamy, about 1 minute.

Pour desired amount of Pumpkin Cream Cold Foam over your iced drink of choice. Dust with additional pumpkin pie spice. Serve immediately.

Recipe Tip

If you don't have a handheld frother, you can use a blender, immersion blender, or mini food processor, but results can vary. If you want to make cold foam often at home, it's worth investing in a handheld frother for the best results.

GINGER TEA

This comes from Vegetarian Times (posted on MAY 9, 2017), and begins, “Ginger is Mother Nature’s protective cloak, shielding us from sickness on winter days. This tea is very spicy—if it tastes too strong, dilute it with more hot water and honey. Traditional advice is not to drink more than 2 cups of ginger tea a day unless you are using it as a treatment for a bad chest cold.”

WHIPPED COFFEE

This recipe is from Vaughn Vreeland in The New York Times cooking enewsletter. For this recipe, Vaughn wrote, "This Instagram-famous drink, known as whipped coffee or dalgona coffee, is made by whipping instant coffee with sugar and water, resulting in a butterscotch-hued foam that’s spooned over milk. While it seems like a trend, many have been making whipped coffee for years. In India and Pakistan, whipped coffee has long been a popular home brew, known as phenti hui. In Greece, the frappé is dalgona’s older, frothier sibling. And, more generally, there are versions that are shaken with egg whites and served with condensed milk."

Yield: 1 drink

To view this online, go to https://cooking.nytimes.com/recipes/1021005-whipped-coffee. While you're at it, if you haven't already signed up for The New York Times cooking enewsletter, I highly recommend doing so. Great recipes, guides, and more.

Ingredients

2 tablespoons granulated instant coffee (regular or decaffeinated)

1-1/2 teaspoons granulated sugar, plus more to taste

2 tablespoons hot water

Ice, as needed

Milk, as needed

Preparation

Combine granulated instant coffee, sugar and hot water in a medium bowl.

Whip by hand using a whisk or with a mixer until the mixture turns from foamy to frothy to creamy.

Spoon the fluffy mixture over milk in a glass filled with ice. (You could also spoon it over warm milk for a hot drink.) Gently combine and serve.

LONDON FOG

This is from Yolanda Gutierrez at AllRecipes. For this yummy (and interesting) recipe, Yolanda wrote, "London fog is a creamy, frothy Earl Grey tea latte with a hint of vanilla. Sprinkle lavender over the top, if you like."

Prep Time: 5 minutes; Cook Time: 5 minutes; Total Time: 10 minutes; Servings: 1

To view this online, go to https://www.allrecipes.com/london-fog-recipe-11729062.

Ingredients

3/4 cup water

1 Earl Grey teabag

3/4 cup milk

3/4 tablespoon vanilla syrup, such as Torani®

1 teaspoon lavender (optional)

Directions

Bring water to a boil. Remove from heat and add tea bag; steep for 5 minutes.

Meanwhile, heat milk in a microwave-safe cup until hot, 1 to 2 minutes. Add vanilla syrup. Froth milk with a frother or immersion blender until milk is foamy.

Pour tea into a cup; carefully pour foamy milk over the top. Sprinkle lavender over foam.

Cook’s Note

I froth milk 1/4 cup at a time, pouring over tea 3 times.

WATERMELON GINGER BEER

This is from Nicole Taylor in The New York Times cooking enewsletter. The recipe begins, "The recipe for this batch drink, from Nicole Taylor’s book, “Watermelon and Red Birds,” includes the juice from a red-fleshed watermelon, ideally from one with seeds. (They can be hard to find; seedless melons work too.) If you own a juicer, proceed with the seeds and all and don’t worry about straining. Watermelon is over 90 percent water and is a nutrient-dense food. This drink can serve as an everyday accompaniment at breakfast, lunch, dinner or with a snack."

Total Time: 10 minutes; Yield: 4 drinks

This was featured in "Building a Juneteenth Menu for the 21st Century, One Recipe at a Time," and can be viewed online at https://cooking.nytimes.com/recipes/1023219-watermelon-ginger-beer.

Ingredients

2 tablespoons fresh fennel fronds (optional)

Filtered water

6 cups (1-inch) cubed red watermelon (from about 3 pounds watermelon)

2 cups ginger beer, homemade or store-bought (see Tip)

Preparation

Divide the fennel fronds, if using, between two ice cube trays. Fill with filtered water and freeze until solid, 4 to 8 hours.

Meanwhile, place the watermelon in a blender or food processor and blend until smooth. Scrape the sides of the blender or food processor using a rubber spatula and blend again.

Place a fine metal sieve over a large bowl and strain the pureed watermelon through the sieve. (This should yield 2 to 3 cups of juice). Store in the refrigerator until ready to serve; it will keep in the refrigerator in an airtight container for up to 3 days.

To serve, fill four highball glasses or rocks glasses with the ice cubes. Stir the watermelon juice and add 1/2 cup to each glass. Top off with 1/2 cup ginger beer.

Tip

Unlike ginger ale, ginger beer is fermented. It’s nonalcoholic and has a spicy kick and tends to have more flavor than the soft drink. If buying ginger beer from the store, try finding the options from Barritt’s or Bruce Cost.

VEGETARIAN MEXICAN INSPIRED STUFFED PEPPERS

If you have small peppers, use more of them for this recipe. They taste great with a dollop of sour cream on top."

Prep Time: 15 minutes; Cook Time: 40 minutes; Total tTime: 55 minutes; Yield: 4 stuffed peppers

1 (8 ounce) package shredded Mexican cheese blend (such as Sargento® Authentic Mexican)

1 cup milk

1 teaspoon honey

1/2 teaspoon vanilla extract (optional)

HOMEMADE GINGER TEA

This is from Jolinda Hackett on The Spruce Eats. Jolinda wrote, “Wondering how to make a simple and easy homemade ginger tea? Why go out and buy stale old tea bags when you can easily make your own fresh and homemade ginger tea at home using fresh ginger? Treat yourself to a cup of piping hot ginger tea, a healthy drink that's great for digestion.

”Here's how to make the tastiest and most soothing and healing ginger tea you've ever had! There's really no comparison.

“This healing ginger tea recipe actually comes from the raw food and natural health retreat center I used to work at in Thailand, where we served it to our guests bright and early every single morning, seven days a week. The secret to the perfect healing ginger tea? Lots and lots of fresh ginger, simmered for a long time to bring out the flavor, and the lime, which compliments the ginger perfectly, and plenty of natural agave nectar or honey for a refined sugar-free sweetener (or you might prefer it unsweetened, depending on your health goals - It's still delicious, I promise!). Try this simple ginger tea for an immune system boost or for an invigorating way to start the morning.

Prep Time: 5 minutes; Cook Time: 10 minutes; Total Time: 15 minutes; Yield: 2 servings of ginger tea

To check this out online, click here.

Ingredients

About 2 inches of fresh raw ginger (use more or less, depending on how strong you want it!)

1-1/2 to 2 cups water

1 to 2 tablespoons honey (or agave nectar, to taste)

Optional: 1/2 lime (juiced, or to taste)

Directions

First, prepare the fresh ginger by peeling it and slicing it thinly to maximize the surface area. This will help you make a very flavorful ginger tea.

Boil the ginger in water for at least 10 minutes. For a stronger and tangier tea, allow to boil for 20 minutes or more, and use more slices of ginger. You really can't over do it, so feel free to add as much ginger and simmer it for as long as you want.

Remove from heat and add lime juice and honey (or agave nectar) to taste.

The secret to making a really flavorful ginger tea is to use plenty of ginger-more than you think you will need-and also to add a bit of lime juice and honey to your ginger tea. You will also probably want to add more honey than you think you will need as well.

Enjoy your hot ginger tea! A homemade ginger tea is excellent in soothing stomach aches and in aiding digestion.
