Halloween is tomorrow! Yay! To get in the mood, here are six autumn/Halloween-ish recipes, including Pumpkin Parfaits with Oat Crunch and Harvest Corn Custards. Enjoy!
CRANBERRY TART WITH NUT CRUST
This is from The Kitchn, one of my favorite email newsletters. Serves 6. Makes one 9-inch tart.
To view online, click here.
Ingredients
For the pie:
4 cups (16 ounces) fresh (or defrosted) whole cranberries
2/3 cup granulated sugar
2/3 cup golden syrup
Zest of 1/2 unwaxed lemon
For the crust:
1 cup unbleached all-purpose flour
3/4 cup nut flour
1/4 cup powdered sugar
1/2 teaspoon salt
4 ounces (1 stick) unsalted butter, cut into small pieces and chilled
1 to 3 tablespoons cold water
Directions
In a medium sauce pan, combine the sugar and golden syrup over medium heat. Stir until the sugar dissolves and the mixture is bubbling. Add the cranberries and lemon zest and turn over several times to coat evenly with the sugar mixture. Remove the pan from the heat and set aside to cool to room temperature.
Prepare the dough: If using a food processor, combine the dry ingredients in the processor bowl and pulse to combine. Drop in the butter pieces and pulse several times until the consistency of oatmeal. If preparing by hand, combine the dry ingredients in a large mixing bowl. Add the butter pieces and cut in with two knives or a pastry blender until the mixture is the consistency of oatmeal.
Continue preparing the dough by adding the water one tablespoon at a time until the dough just barely comes together in a ball. Turn the dough out onto the counter and gather up and shape into a disk. Wrap tightly in plastic wrap. Chill in the refrigerator for at least 30 minutes.
Unwrap the dough and place on a lightly floured surface. Roll out to a rough 9-inch circle. Carefully transfer to a 10-inch tart pan with removable bottom. Press the dough into the pan and then form a lip around the edge by turning the pan while gently pinching the lip between your left thumb on the outside and right thumb and forefinger on the inside. Chill the prepared pan for 10-15 minutes.
Preheat the oven to 375°F.
When ready to bake, remove the prepared pan from the refrigerator and prick the bottom a few times with the tines of a fork. Line the bottom of the tart shell with pie weights or a layer of parchment paper and uncooked beans. Bake for 10 minutes or until crust begins to show some drying and browning.
Remove the tart shell from the oven and pour the cool cranberry mixture into the shell, spreading it out from the middle so as not to drip on the lip of the crust. Drizzle any remaining sugar mixture from the pan throughout the shell, again avoiding the lip of the tart.
Bake for another 30 minutes, or until crust deepens in color and the filling is bubbling. Cool on a wire rack. Carefully remove the outer ring, and serve while still warm, or at room temperature. Top with a scoop of ice cream, or a dollop of cream.

PUMPKIN GNOCCHI WITH BROWNED BUTTER AND SAGE
(GNOCCHI DI ZUCCA)
This comes from Danette St. Onge, who writes for The Spruce Eats. She wrote, “A tempting, toothsome fall dish, these homemade gnocchi can be made with either butternut squash or pumpkin (or any other rich, sweet winter squash). They are classically served with a very simple sauce of browned butter and sage (burro e salvia), but really you can serve them with any sauce you'd like -- simpler ones will work better, as the gnocchi themselves are so flavorful.” Yields 4 to 6 servings.
Unfortunately, the link I had for this recipe no longer works. Hopefully, I'll be able to run across it.
Ingredients
For the Gnocchi:
1 1/2pounds raw butternut squash or pumpkin
2 large eggs, lightly beaten
1 teaspoon fine sea salt
1 1/2 cups unbleached all-purpose flour
For The Butter and Sage Sauce:
4 tablespoons unsalted butter
4-6 small fresh sage leaves, washed and dried
Freshly grated pecorino (optional)
Directions
For the gnocchi:
Preheat the oven to 350 degrees Fahrenheit.
Cut the squash into large chunks (about 3 to 4 inches in size), retaining the rind, and scoop away the seeds and strings with a spoon. Place the squash pieces on a lightly greased baking sheet. Bake (still in the rind) until tender enough to be pierced with the tines of a fork, about 30 to 35 minutes. Remove from the oven and let cool. When cool enough to handle, scoop the flesh out of the rind, into a fine-mesh strainer placed over a large bowl. Set aside until the squash has cooled completely and is thoroughly drained of excess liquid.
Transfer the squash to a large mixing bowl and mash with a wooden spoon or potato masher. If there are still large chunks, you can use a handheld immersion blender, blender, or food processor to quickly puree it until smooth. Add the eggs and salt and stir to combine. Then add the flour, a little bit at a time, stirring after each addition until evenly incorporated.
Bring a large pot of salted water to boil over high heat. Meanwhile, start forming the gnocchi: using a teaspoon, scoop up a small amount of the dough, then use your fingers (or another small spoon) to shape each small, round gnocco. If using spoons, you can use the shape of the spoons themselves to form small quenelles, or you can make them smaller and ball-shaped. If you wish, you can also use the tines of a fork to press the traditional gnocchi grooves into each ball, but that is optional.
When the water is boiling, gently drop the gnocchi in at the same time. When they start to float (after just a few minutes, but timing will depend on the size of your gnocchi), they are done -- remove them with a slotted spoon.
About 16 gnocchi should be enough to serve 4 people as a "primo" (pasta course that will be followed by a main dish) or 24 if it's the main dish itself.
For the sauce:
While the gnocchi are cooking, gently brown the butter in a small, heavy-bottomed saucepan. Be careful not to burn it, as there is a fine line between "browned" butter and burnt butter! Add the sage leaves – whole if small enough, or coarsely chopped if large – and stir to coat well and flavor the butter, about 1 minute.
Serve each dish topped with browned butter and sage and a sprinkle of freshly grated pecorino, if desired. A dry white wine would pair well with this meal.

Last Minute Holiday Foods
Since Christmas is tomorrow, I'd better post more sides for the holiday meal. Check out the Onion Supreme, the Egg Nog Pumpkin Pie, or any of the other meatless holiday recipes today. Enjoy!
Note: I'll be taking tomorrow off to spend with family. (Not to worry, it's a small gathering.) I'll be back on Thursday with more yummy recipes to help you through the last week of the year.
SPICE TEA
I used to make this every year for Christmas presents. It's easy to make and tastes yummy. Gift wrap in a decorative tin or in a bag, then placed into a mug.
Ingredients
8 oz loose tea
3 orange peels
1-1/2 – 2 sticks cinnamon
2 T chopped cloves
Directions
Cut orange peels into small pieces. Bake at 350 degrees for 15 minutes, stirring occaionally. Let cool, add to loose tea, along with broken cinnamon sticks & cloves. Store in tight containers.
ROSE HIP MARMALADE
This recipe is from friends of the family, an Episcopal priest and his wife. Both were involved in the civil rights movement. He past away several years ago, but I still remember them fondly.
Ingredients
3 lbs. rose hips
1 large lemon
2 large oranges
6 C sugar
4 C boiling water
Directions
Remove stem & flower area ends from rose hips. Cut each berry in half. Cover with boiling water; simmer for 30 minutes. Rub through sieve or food mill. Add to pulp juice of lemon & oranges, coarsely ground-up rind of oranges, & sugar. Boil about 20 minutes. Pour into jelly glasses. When cool, cover with paraffin.
ONION SUPREME
My dad came for a week at Christmas, 1987. He fixed this to go with Christmas dinner, along with several other veggies. The day I drove him to Tampa International to fly back to New York, we went for coffee at a shop in the airport. When I asked for a copy of this, he grabbed a paper napkin and wrote down the recipe. It’s a great way to fix onions; I’ve always had onions in things, but never as a side dish. However, this is incredibly easy, as well as fantastic.
Ingredients
2 leeks (discard green), sliced thin
3 – 4 yellow onions, sliced thin
4 bunches scallions (discard green), sliced thin
20 small white onions
1 stick butter or margarine
1 1/2 C half & half
2 cloves garlic, sliced thin
Directions
Melt butter over low heat and sauté leeks, scallions, garlic, and yellow onions for 45 minutes. Meanwhile, cook white onions in enough water to just barely cover. Add white onions (after 45 minutes) to skillet and pour in half & half. Cook over low heat for 10 minutes more & serve.
CRANBERRY PIE

My dad sent this in a letter dated "18 Nov '79". He wrote, "Here is a recipe for a pie. 1st the way it was in the paper and the way I made it."
Note: This can be made either with or without a top crust. The original recipe was for a one-crust pie, without top crust.

Ingredients
2 T cornstarch
1 C sugar
1/3 tsp salt
1 1/4 C hot water
1 C raisins
1 T butter
2 C cranberries
Pie crust
Directions
Blend 1st four ingredients and cook in double boiler until thick. Add next 3 ingredients and cook 10 minutes. Put in pie shell and bake at 450 degrees for 20-30 minutes, covering pie with foil for the first 10-15 minutes. (Crust can be any kind you want.)

Pie crust
Directions
Make as above.
EGG NOG PUMPKIN PIE
Ingredients
1 C canned eggnog
1 egg
18 oz. can pumpkin pie filling
9" pie crust
Diretions
Preheat oven to 450 degrees. In large bowl, combine egg nog, egg & pie filling; blend well. Pour into crust. Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees; bake 50 minutes longer or until knife inserted near center comes out clean. Garnish with whipped cream.
PEANUT BUTTER PIE

I drove cab for several years. This was given to me by one of my fares, a divorced man with custody of his two kids. It took three trips to get the recipe, including the amounts. I increased the amounts of the peanut butter and sugar from 1/3 C.
Ingredients
1/2 C peanut butter (note)
8 oz. cream cheese (note)
1/2 C confectioner’s sugar
8 oz. tub cool whip (note)
graham cracker crust
Directions
Mix peanut butter, sugar, cream cheese & cool whip together, pour into crust, refrigerate or freeze for 1 hour.
NOTE: The peanut butter should be creamy. The cream cheese can be low fat, but should NOT be fat-free; the pie won’t taste (or set up) right. The cool whip can be low fat, too.

Ingredients
2 large eggs
1/3 cup sugar
1/3 cup all-purpose flour
1/8 tsp. salt
2 cups low-fat milk
1 1/2 tsp. vanilla extract
1 Tbs. honey
Orange or red and yellow food coloring, such as Wilton or Seelect
1 oz. chopped semisweet chocolate or 3 Tbs. chocolate chips
1 cup whipping cream
Ground nutmeg, for sprinkling
Directions
Whisk together eggs and sugar in heat-proof bowl until smooth and light-colored. Whisk in flour and salt.
Bring milk to a boil in saucepan. Whisk 1/4 cup boiling milk into egg mixture. Whisk in 1/2 cup milk, then gradually whisk in remaining milk. Return mixture to saucepan, and cook 2 minutes over medium heat, or until thickened, whisking constantly. Reduce heat to medium-low, and cook 1 minute more. Remove from heat, and whisk in vanilla.
Scoop 1 cup custard into bowl, and whisk in honey. Add food coloring to achieve bright-orange color.
Transfer remaining custard to separate bowl, and whisk in chocolate until melted. Cover both custards with plastic wrap pressed directly onto surface to prevent skin from forming. Cool.
Once cooled, whisk both custards until smooth.
Beat whipping cream with electric mixer until stiff peaks form. Whisk 1/2 cup whipped cream into chocolate custard.
Spoon 2-1/2 Tbs. honey custard into 6 small glasses, pressing down to remove any air pockets. Layer 1/4 cup chocolate custard atop honey custard in each glass, and smooth with spoon. Top each serving with 3 Tbs. whipped cream and a sprinkling of nutmeg.

Sides
While I did post several sides on Tuesday, I figured that since Christmas is this Sunday, I'd better post more sides for the holiday meal. Check out the Onion Supreme, the Egg Nog Pumpkin Pie, or any of the other meatless recipes today. Enjoy!
Note: I'll be taking tomorrow off to spend with family. (Not to worry, it's a small gathering.) I'll be back on Monday with more yummy recipes to help you through the last week of the year.
SPICE TEA
I used to make this every year for Christmas presents. It's easy to make and tastes yummy. Gift wrap in a decorative tin or in a bag, then placed into a mug.
Ingredients
8 oz loose tea
3 orange peels
1 1/2 - 2 sticks cinnamon
3 - 4 yellow onions, sliced thin
4 bunches scallions (discard green), sliced thin
20 small white onions
1 stick butter or margarine
1 1/2 C half & half
2 cloves garlic, sliced thin
Directions
Melt butter over low heat and sauté leeks, scallions, garlic, and yellow onions for 45 minutes. Meanwhile, cook white onions in enough water to just barely cover. Add white onions (after 45 minutes) to skillet and pour in half & half. Cook over low heat for 10 minutes more & serve.

1 egg
18 oz. can pumpkin pie filling

For the pie:
4 cups (16 ounces) fresh (or defrosted) whole cranberries
2/3 cup granulated sugar
2/3 cup golden syrup

Hopefully, I'll be able to run across it...

NO-BAKE YOGURT AND COOL WHIP PIE
This is from Jolinda Hackett on The Spruce Eats. She wrote, "If you're looking for an easy no-bake dessert, this Cool Whip pie recipe is the one to try. It will be a welcome treat on a hot summer evening and can be the prettiest dessert at the next cookout; it's also the perfect recipe to get the kids involved as there is no stovetop or oven required. This pie is completely customizable since you can choose the yogurt flavor, matching it to whatever fruit happens to be in season. Consider strawberry or peach slices, cherry halves, mandarin orange segments, or whole blueberries, raspberries, or blackberries. It's also a healthier dessert option so you can enjoy a piece of pie without all of the guilt.
"This recipe comes together quickly, calling for just a container of Cool Whip, flavored yogurt, a ready-made graham cracker crust, and some fresh fruit. Just keep in mind the pie will have to firm up in the freezer for about 2 hours before serving."
Prep Time: 5 minutes; Cook Time: 0 minutes; Freeze Time: 2 hours; Total Time: 2 hours 5 minutes; Makes 8 servings
To view this online, go to https://www.thespruceeats.com/cool-whip-pie-recipe-3376704.
Ingredients
8 ounces whipped topping
18 ounces yogurt, any flavor
1 prepared graham cracker crust
Fresh fruit (e.g., berries, peaches, oranges), for garnish
Directions
Gather the ingredients.
In a mixing bowl, thoroughly combine the Cool Whip and yogurt until smooth.
Pour the yogurt and Cool Whip mixture into the pie crust. Freeze until firm, about 2 hours.
Remove the pie from the freezer approximately 20 minutes before serving.
Slice the fruit if necessary and top the pie with the fruit.
Cover and refrigerate any leftover pie, or freeze for later.
Tips
Cool Whip is sold frozen and will need to be defrosted beforehand. This can be done in the refrigerator, microwave, or in cold water. Thawing in the refrigerator will take some planning as it needs to sit in the fridge for about 5 hours (or overnight). The microwave method is simple, but you will need to pay close attention; remove the lid and microwave on the defrost setting for 30 seconds, stir, and repeat until smooth. A third method is to place the tub in a bowl filled with cold water and let it sit for 30 to 40 minutes.
To give the pie a more sophisticated look, arrange the fruit slices on top before you fully freeze the pie. Depending on the weight of the fruit, you might want to freeze the pie for an hour before adding the slices or whole fruit so they don't sink into the yogurt mixture.
What Is Cool Whip Made Of?
Cool Whip is made from water, hydrogenated vegetable oil, corn syrup, skimmed milk, and natural and artificial flavors, as well as other additives. If you'd rather not use this whipped topping, you can substitute with whipped cream.
Recipe Variations
Although a store-bought graham cracker crust is convenient, it is easy to make your own graham cracker crust or a sugar-free graham cracker crust.
Instead of a graham cracker crust, you can use a cookie crust. Vanilla cookies go nicely with a lemon yogurt filling, or a chocolate cookie crust pairs well with coconut flavored yogurt topped with coconut flakes.
This light pie is fairly low in calories for a dessert, but if you'd like to reduce the fat and calories, this recipe can be made with reduced-fat or no-sugar varieties of Cool Whip, yogurt, and graham crackers.
STRAWBERRY PIE

Several summers ago, my daughter and I checked out a local fruit stand and came away with a quart of strawberries. They were on sale for $3 for a quart, so how could we pass them up?
Of course, then we had to decide what to do with all these yummy strawberries. And what better use for them than in a pie? So, here goes what I made.

Ingredients
1 quart strawberries
1 C sugar
3 Tablespoons corn start
3/4 cup hot water
1 pie crust
Directions
Preheat oven to 325 degrees. Place pie crust in an ungreased pie pan. Using a fork, pierce crust a couple of times (though don't go overboard), and bake for 10 - 15 minutes, or until lightly brown.
Note: If you're using a store-bought pie crust, bake until brown according to the package directions.
Wash strawberries. Cut up half of the berries (about 1 pint) and arrange in pie crust. You don't need to cut the strawberries too small; maybe in half or, for larger strawberries, in fourths.
Mash the remaining berries and place in a medium saucepan. Pour sugar over the strawberries in the pan and combine. Cook over medium heat and bring to a boil, stirring frequently.
In a small bowl, whisk hot water and cornstarch together, then stir into boiling strawberry mixture. Reduce heat, then simmer until mixture has thickened, about 10 minutes, stirring constantly. Pour thickened mixture over berries in pie crust. Chill for several hours before serving. Oh, and be sure to share!
MANGO PIE
This is from Kanta and Hrishikesh Kirway, and adapted by Samin Nosrat in The New York Times cooking enewsletter. Samin wrote, "When Hrishikesh Hirway was a kid, his parents, who immigrated to the United States from Maharashtra, in western India, began hosting Thanksgiving. The meal soon evolved into a hybrid of a traditional Thanksgiving and an Indian potluck. “Out of that cultural mash-up, my mom started making this mango pie,” he said. She’d gotten the idea from other Indian aunties in the States, but their versions weren’t as good. “They weren’t making it with the best kind of mango,” Hirway explained. “The Alphonsos have a stronger, more intense flavor.” That Alphonso flavor shines as brilliantly as the pie’s bright filling, made tangy and rich with the addition of cream cheese and whipped cream. And the salty, crumbly graham cracker crust is the perfect foundation for the golden cloud of custard that sits atop it. It’s so satisfying that you'll catch yourself cutting sliver after mouthwatering sliver of pie."
Yield: 2 9-inch pies; Time: 50 minutes, plus 5 hours' chilling

Ingredients
For the graham-cracker crust:
2-1/2 cups finely ground graham-cracker crumbs
1/3 cup plus 1 tablespoon granulated sugar
1/4 teaspoon ground cardamom
1 large pinch sea salt
9 tablespoons unsalted butter, melted
For the mango custard:
3/4 cup cold water
1/2 cup granulated sugar
2 tablespoons plus 1/4 teaspoon powdered gelatin (2-1/2 packages at 2-1/2 teaspoons per pack)
cup heavy whipping cream, chilled
4 ounces cream cheese, at room temperature
1 30-ounce can Alphonso mango purée (3-1/4 cups)
1 large pinch sea salt
Preparation
Stir crumbs, sugar, cardamom and salt together in a medium bowl. Add butter, and stir with a fork until evenly combined.
Pour half the crumb mixture into a 9-inch round metal pie pan, and spread evenly. Press down with fingers, a metal measuring cup or a second pie pan to compact the crumbs as much as possible across the bottom and up the sides of the pan into an even crust. (The more compressed the crust, the less it will crumble.) Repeat to form the remaining crumb mixture into a crust in a second pan.
Heat oven to 325. Transfer both crusts to freezer, and chill for 15 minutes. Bake until golden brown, about 12 minutes. Transfer to a wire rack to cool completely.
Place 3/4 cup cold water in a large bowl. In a small bowl, stir together 1/4 cup sugar with the gelatin; sprinkle mixture evenly over the surface of the cold water. Let sit a few minutes to bloom.
In the meantime, whip the cream and remaining 1/4 cup sugar together until medium-stiff peaks form. Set aside.
In a small saucepan over medium-low heat, warm 1 cup of the mango purée to body temperature (stir to make sure you are just warming it and not bringing it to a boil). Pour warmed mango purée over gelatin mixture, and whisk until well combined. Gelatin should dissolve into mango completely. Gradually whisk in remaining mango purée.
Use a rubber spatula to beat the cream cheese in a medium bowl until it is soft and smooth, then add to mango mixture along with a large pinch of sea salt. Use an immersion blender to blend until completely smooth, tipping the bowl to make sure you’ve incorporated everything well. Gently tap the bowl on the counter once or twice to pop any air bubbles. Use the spatula to gently fold about 1/4 of the mango mixture into the whipped cream, then fold cream into the larger amount of mixture until no streaks remain.
Divide custard between cooled crusts. Use a rubber spatula to smooth out the filling. Refrigerate 5 hours or overnight until firm and chilled. Serve chilled.
Tip
You can find Alphonso mango purée — which is a variety, not a brand — at most Indian grocery stores. If you don’t have an immersion blender, use a food processor or a countertop blender to blend the custard mixture.

More Sides
While I did post several sides yesteray, I figured that since Christmas is this Saturday, I'd better post more sides for the holiday meal. Check out the Onion Supreme, the Egg Nog Pumpkin Pie, or any of the other meatless recipes today. Enjoy!
SPICE TEA
I used to make this every year for Christmas presents. It's easy to make and tastes yummy. Gift wrap in a decorative tin or in a bag, then placed into a mug.
Ingredients
8 oz loose tea
3 orange peels
1 1/2 - 2 sticks cinnamon
2 T chopped cloves
Directions
Cut orange peels into small pieces. Bake at 350 degrees for 15 minutes, stirring occaion-ally.
3 - 4 yellow onions, sliced thin
4 bunches scallions (discard green), sliced thin
20 small white onions
1 stick butter or margarine
1 1/2 C half & half
2 cloves garlic, sliced thin
Directions
Melt butter over low heat and sauté leeks, scallions, garlic, and yellow onions for 45 minutes. Meanwhile, cook white onions in enough water to just barely cover. Add white onions (after 45 minutes) to skillet and pour in half & half. Cook over low heat for 10 minutes more & serve.

Halloween Recipes
Halloween is Sunday!

Hopefully, I'll be able to run across it...

Unfortunately, the link I had for this recipe no longer works. Hopefully, I'll be able to run across it...
