BANANA RUM VEGAN CHEESECAKE WITH MAPLE RUM SAUCE
This comes from Jolinda Hackett, who wrote for The Spruce Eats. Jolinda wrote, “This gourmet banana rum vegan cheesecake with maple rum sauce has several steps, but the bananas, pecan crust and rum sauce can all be prepared in advance. Then, the only thing left is to blend the vegan cream cheese and the other ingredients and bake. Easy! If you're looking for a gourmet vegan cheesecake recipe, this is the one to try.”
Ingredients
4 very ripe bananas
16 ounces nondairy cream cheese
3/4 cup firmly packed light brown sugar
3/4 teaspoon ground cinnamon
1/2 cup dark rum
2 tablespoons cornstarch
1/4 teaspoon salt
Prepared pecan pie crust (recipe follows)
Prepared maple rum sauce (recipe follows)
Toasted pecan halves for garnish
Preparation
Preheat the oven to 325 degrees.Place 4 large, very ripe, unpeeled bananas on a roasting pan and roast for 15-20 minutes, until bananas are soft and skin turns dark brown. Let bananas cool to room temperature in the pan in their skins.
Turn oven up to 400 degrees.
Peel the roasted bananas and remove any obvious strings. Puree bananas in a food processor until very smooth. Add nondairy cream cheese, brown sugar, cinnamon, rum, cornstarch and salt then pulse until smooth, scraping sides of bowl periodically. Do not overprocess or cream cheese will separate and curdle.
Pour the filling into the prepared pecan pie crust and bake at 400 for 10 minutes. Reduce temperature to 350 and bake another 35-45 minutes, until the top is the color of light brown sugar and center is set. A toothpick inserted in center should come out clean.
Let cheesecake cool to room temperature on a rack for at least 1 hour, then cover with plastic wrap and chill in refrigerator at least 3 hours, preferably overnight.
Drizzle with prepared maple rum sauce just before serving and garnish with extra toasted pecan halves.
PECAN PIE CRUST
Jolinda Hackett's pecan pie crust can be used for either cheesecake or as a regular pie crust.
Ingredients
1 cup pecan nut flour (see instructions below)
1/2 cup spelt flour (white or whole wheat )
1 tablespoon firmly packed light brown sugar
4 Tbsp vegan margarine, partially melted
1/8 teaspoon ground cardamom
1/2 teaspoon ground ginger
Pinch of sea salt
Preparation
Note: To make pecan nut flour, freeze the nuts overnight, then place in a food processor and pulse until finely ground. Freezing the nuts prevents them from turning into nut butter when you process them.pre-heat oven to 400 degrees.
Combine all ingredients in a bowl and mix until well combined and incorporated.
Press the mixture into a 9-inch springform pan and put in freezer for 5 minutes.
Bake for 8-10 minutes, until crust is a little dry and edges are light golden. Let cool completely before using in a recipe.
VEGAN MAPLE RUM SAUCE RECIPE
Jolinda wrote, “Use this vegan maple rum sauce recipe to drizzle on top of a banana rum cheesecake or on top of ice cream or chocolate brownies.Yum!”
Ingredients
1 cup real maple syrup (grade B organic is best in this recipe)
4 tablespoons Earth Balance vegan butter
Sea salt
1 tablespoon dark rum
Preparation
In a small saucepan, combine maple syrup, vegan butter, and sea salt to taste and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, stirring frequently, until sauce has thickened slightly, about 10 minutes.
Remove from heat and stir in rum, stirring carefully, as sauce will bubble up a bit. Let cool for a few minutes then taste and add more salt if necessary.
Cool to room temperature, then transfer to a squeeze bottle.If not using immediately, the sauce can be rewarmed by putting the bottle in a pan of hot water off the heat.
VEGAN LASAGNA
This comes from Lena Abraham on Delish, and begins, “A lasagna you can feel good about.”

Ingredients
For the Lasagna
1 box lasagna noodles
1 (14-oz) package firm tofu, drained
kosher salt
Freshly ground black pepper
1 tbsp. olive oil
1 large onion, chopped
3 garlic cloves, minced
2 tsp. dried oregano, divided
1 (8-oz) package baby bella mushrooms, sliced
2 (10-oz) packages frozen spinach, thawed and drained of excess liquid
For the White Sauce
1/4 c. olive oil
1/4 c. all-purpose flour
2 1/2 c. almond milk (or other non-dairy milk)
2 tbsp. nutritional yeast
1/2 tsp. garlic powder
kosher salt
Freshly ground black pepper
2 c. marinara
3 tomatoes, thinly sliced
1/4 c. thinly sliced basil, for garnish
Directions
Preheat oven to 350º. Bring a large pot of salted boiling water to a boil and cook lasagna noodles until al dente. Drain.
Wrap tofu in a clean kitchen cloth or paper towels and place on a large plate. Place a pan or heavy plate on top of tofu in order to press out as much liquid as possible. Let sit for at least 30 minutes. When drained, crumble with two forks and season with salt and pepper. Set aside.
In a large skillet over medium heat, heat oil. Add onion and garlic and season with salt, pepper, and 1 tsp oregano. Add mushrooms and cook until softened, 3 to 4 minutes. Stir in thawed and drained spinach until completely combined. Remove from heat and set aside vegetables.
Wipe out skillet and return to medium heat to make white sauce: Add olive oil and heat until shimmering but not smoking. Add flour and whisk to combine. Cook until lightly golden and nutty, 1 to 2 minutes. Whisk in nut milk until smooth. Stir in nutritional yeast and garlic powder and season with salt and pepper. Bring to a simmer and let cook until thickened, 8 to 10 minutes.
Build lasagna: In a large baking dish, spoon 1/4 c marinara into an even layer, then add a layer of noodles. Top with an even layer of vegetable mixture, tofu, marinara, and white sauce. Repeat until all ingredients are used, ending in marinara. Add a single layer of tomato rounds and season with salt, pepper and remaining oregano.
Bake 35 to 40 minutes, until tomatoes are cooked and lasagna is heated through. Remove from oven and let cool slightly. Garnish with basil and serve.
STUFFED SHELLS I

4 cups large curd cottage cheese
12 ounces mozzarella cheese, shredded
1/2 cup grated Parmesan cheese
2 eggs, lightly beaten
1 pinch garlic powder

1 teaspoon dried parsley
1 (26 ounce) jar spaghetti sauce
1/4 cup grated Parmesan cheese
Directions
Cook shells according to package directions. Place in cold water to stop cooking. Drain.
Mix together cottage cheese, mozzarella cheese, 1/2 cup Parmesan cheese, eggs, and garlic powder. Rub the dried herbs in the palms of your hands to pulverize them, and stir into the cheese mixture. Stuff mixture into the shells.
Spread 1/3 of spaghetti sauce in the bottom of a 15 x 10 inch pan. Place shells open side up, and close together in pan. Spread remaining sauce over top, and sprinkle with remaining 1/4 cup Parmesan cheese.
Bake at 350 degrees F (175 degrees C) for 25 to 35 minutes, or until bubbly. Let stand 10 minutes before serving.
FLOURLESS BLACK BEAN BROWNIES
This recipe comes from Kaleigh McMordie, MCN, RDN, LD, who, besides running her own site (Lively Table), writes on VeryWellFit.
For this recipe, Kaleigh wrote, “If you have a sweet tooth, you may be used to eating dessert most days. Sometimes fruit or a fruit salad will do for a light. Other days, you just need a brownie.
“Baked goods like brownies are often high in sodium, even though they don’t taste salty. Between leaveners like baking soda and baking powder, salted butter, and added salt, brownies and other baked goods can be sneaky sources of sodium! If you bake your own brownies at home, you can control the amount of sodium-containing ingredients for a better alternative.
“The secret to these flourless brownies is a can of low sodium black beans.Before you write them off, give them a try! Blending up black beans in a high-powered blender or food processor makes them nice and smooth, and when baked into brownies, gives them a nice chewy texture without any flour. They also add in extra fiber, iron, and folate.”

1/2 teaspoon baking powder
1 teaspoon vanilla
1/4 cup chopped dark chocolate, melted and slightly cooled
1/2 cup dark chocolate chips or chunks
Preparation
Heat oven to 350F. Line an 8x8" baking dish with parchment or spray with oil.
Blend all ingredients except for unmelted chocolate in a high powered blender until smooth, 1 to 2 minutes.
Stir in chocolate and pour into prepared pan. Bake 20 to 25 minutes.
Ingredient Variations and Substitutions
Use all chocolate chips if you don’t have a dark chocolate bar.
Cocoa powder, melted dark chocolate, and chocolate chips gives these brownies lots of rich chocolate flavor with a little boost from coffee granules.
If you don’t have the coffee granules don’t worry—you can leave them out and you’ll still have delicious chocolatey brownies!
Cooking and Serving Tips
Avoid over-cooking—the designated time should be just about enough, but you can check before removing from the oven. Brownies shouldn't be overly dry.
Store leftovers in the refrigerator and heat for 20 to 30 seconds in the microwave before serving.
CLASSIC BAKED MACARONI AND CHEESE
This comes from Alison Roman in The New York Times cooking e-newsletter. Alison wrote, “Think Stouffer's without the freezer. While it can be enjoyed straight from the pot, this macaroni and cheese has a slightly looser sauce than the stovetop variety to allow for thickening in the oven. Bread crumbs, while optional, make it truly spectacular.”

1 pound elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta

4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups whole milk
1 clove garlic, finely grated
1 teaspoon smoked or hot paprika
Freshly ground pepper
12 ounces sharp or white Cheddar cheese, grated

For the Topping (Optional):
1 cup coarse bread crumbs or panko
4 tablespoons melted butter or olive oil
1/4 cup finely grated Parmesan cheese (optional)

Preparation
Cook pasta in a large pot of salted boiling water until it’s barely al dente. (It should be more al dente than your average pasta: It’s going to continue to cook in the oven.) Drain and set aside.
Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping. Add garlic, paprika and season with salt and pepper. Bring to a simmer, whisking constantly and paying special attention to the edges of the pot to make sure the flour mixture is totally incorporated.
Add grated cheese and whisk to blend until the cheese is completely melted. (The sauce will seem thick at first and thin out as the cheese melts; it will thicken while it bakes.) Season with salt and pepper and add cooked pasta, stirring to coat well.
Heat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil (to catch any cheesy drips).
Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.
Transfer the macaroni and cheese mixture to a 2-quart baking dish and scatter bread crumbs, if using, evenly over the top. Place on prepared baking sheet and bake until macaroni and cheese is bubbling, thickened and creamy, and bread crumbs are evenly golden brown, 25 to 30 minutes. Let cool slightly before serving.

Note: Unfortunately, I'm no longer able to find a link for this, as well as the next two recipes from Jolinda. But it's yummy enough that I wanted to post it, and give a nod to Jolinda for coming up with this.

16 ounces nondairy cream cheese

Preparation
Preheat the oven to 325 degrees.Place 4 large, very ripe, unpeeled bananas on a roasting pan and roast for 15-20 minutes, until bananas are soft and skin turns dark brown. Let bananas cool to room temperature in the pan in their skins.

Jolinda Hackett's pecan pie crust can be used for either cheesecake or as a regular pie crust.
Ingredients
1 cup pecan nut flour (see instructions below)
1/2 cup spelt flour (white or whole wheat )
1 tablespoon firmly packed light brown sugar
4 Tbsp vegan margarine, partially melted
1/8 teaspoon ground cardamom

4 very ripe bananas
16 ounces nondairy cream cheese
3/4 cup firmly packed light brown sugar

Preparation

Preheat oven to 350º. Bring a large pot of salted boiling water to a boil and cook lasagna noodles until al dente. Drain.
Wrap tofu in a clean kitchen cloth or paper towels and place on a large plate. Place a pan or heavy plate on top of tofu in order to press out as much liquid as possible. Let sit for at least 30 minutes. When drained, crumble with two forks and season with salt and pepper. Set aside.
In a large skillet over medium heat, heat oil. Add onion and garlic and season with salt, pepper, and 1 tsp oregano. Add mushrooms and cook until softened, 3 to 4 minutes. Stir in thawed and drained spinach until completely combined. Remove from heat and set aside vegetables.
Wipe out skillet and return to medium heat to make white sauce: Add olive oil and heat until shimmering but not smoking. Add flour and whisk to combine. Cook until lightly golden and nutty, 1 to 2 minutes. Whisk in nut milk until smooth. Stir in nutritional yeast and garlic powder and season with salt and pepper. Bring to a simmer and let cook until thickened, 8 to 10 minutes.
Build lasagna: In a large baking dish, spoon 1/4 c marinara into an even layer, then add a layer of noodles. Top with an even layer of vegetable mixture, tofu, marinara, and white sauce. Repeat until all ingredients are used, ending in marinara. Add a single layer of tomato rounds and season with salt, pepper and remaining oregano.
Bake 35 to 40 minutes, until tomatoes are cooked and lasagna is heated through. Remove from oven and let cool slightly. Garnish with basil and serve.

FLOURLESS BLACK BEAN BROWNIES

If you don’t have the coffee granules don’t worry—you can leave them out and you’ll still have delicious chocolatey brownies!

Avoid over-cooking—the designated time should be just about enough, but you can check before removing from the oven. Brownies shouldn't be overly dry.

Desserts!
Is there anyone who hasn't occasionally wanted something a little snacky? Today's yummy post is for those who want that snakiness in the form of desserts. Today's six recipes include Dulce de Leche Banana Pie and Banana Rum Vegan Cheesecake with Maple Rum Sauce. Enjoy!
MAYAN SPICED CHOCOLATE PUDDING
This is from the April 2009 issue of Vegetarian Times, and begins, “We've provided instructions for having this pudding ready to eat in 30 minutes, but you could also just chill with plastic wrap pressed onto the surface.” Serves 4 in 30 minutes or less.

1 13.5-oz. can light coconut milk, divided
1/4 cup cornstarch
1/4 cup sugar
1/2 tsp. ground cinnamon
1/4 tsp. chili powder, plus more for garnish
1/8 tsp. salt
1 3-oz. bar vegan dark chocolate, chopped
1 tsp. vanilla extract
Whisk together 1/4 cup coconut milk and cornstarch in small bowl. Set aside.
Combine remaining coconut milk, sugar, cinnamon, chili powder, and salt in saucepan, and bring to a simmer over medium heat. Whisk 1/4 cup hot mixture into cornstarch mixture to form slurry.
Whisk slurry into hot mixture, and cook 3 minutes, or until thickened, whisking constantly. Remove from heat, and whisk in chocolate and vanilla.
Transfer to metal bowl, and set in larger bowl filled with ice and water. Whisk occasionally to cool. Serve sprinkled with pinch of chili powder.

CRANBERRY PIE

My dad loved to cook, and usually came up with decent recipes. He sent this one in a letter dated “18 No 79”. He wrote, “Here is a recipe for a pie. 1st the way it was in the paper and the way I made it.”
This pie can be made either with a single crust (above photo) or with a top and bottom crust (below). If making this with a top crust, poke several holes through the top crust to vent, then covering with foil for the first 10-15 minutes, then taking the foil off for the last 10-15 minutes. (If using only a bottom crust, foil around the edges where the crust shows would be preferable, again for the first 10-15 minutes.)

2 T cornstarch
1 C sugar
1/4 tsp. salt
1 1/4 C hot water
1 C raisins
1 T butter
2 C cranberries
Pie crust
Blend 1st four ingredients & cook in double boiler until thick. Add next 3 ingredients & cook 10 minutes. Put in pie shell & bake at 450 degrees for 20-30 minutes, covering pie with foil for the first 10-15 minutes. (Crust can be any kind you want, whether double crust or simply a bottom crust.)
VARIATION
2 Tbls cornstarch
3/4 C honey + 1/4 C molasses
1/4 tsp. salt
1 1/4 C hot water

1 1/2 C cranberries + 1 C canned cranberries (kind with berries in sauce)

1/3 cup plus 1 tablespoon shortening

1 can (13.4 oz) dulce de leche
3 ripe medium bananas
1 cup whipping cream
1/4 cup powdered sugar
1/2 cup semisweet chocolate chips
1 teaspoon vegetable oil
Instructions
Heat oven to 450°F. In medium bowl, mix flour and salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with water, 1 tablespoon at a time, tossing with fork until all flour is moistened and dough almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
On lightly floured surface, shape dough into a ball. Flatten ball to 1/2-inch thickness, rounding and smoothing edges. With floured rolling pin, roll dough into 11-inch round, rolling from center to edge. Fold dough in half; place in 9-inch glass pie plate. Unfold; gently press in bottom and up side of plate, being careful not to stretch dough.
Fold and roll edge of dough under, even with plate; flute edge. Prick bottom and side of dough generously with fork. Bake 9 to 12 minutes or until light golden brown. Cool completely, about 30 minutes.
Spoon contents of can of dulce de leche into center of cooled crust; gently spread to edge. Thinly slice bananas; arrange over dulce de leche.
In medium bowl, beat whipping cream and powdered sugar with electric mixer on high speed until stiff peaks form. Spread over bananas.
In small resealable freezer plastic bag, place chocolate chips and oil; seal bag. Microwave on High 30 seconds; knead bag to mix melted chips and unmelted chips. Microwave 15 to 30 seconds longer or until all chips are melted and smooth. Snip off tiny corner of bag. Pipe melted chocolate mixture over whipped cream. Store pie in refrigerator.

Dulce de leche is a traditional Spanish confection made from milk. It's a popular culinary reference to rich caramel flavors. Look for canned dulce de leche in the Hispanic section of the supermarket.

Preheat oven to 350 degrees F.
Butter and flour a 9-inch round and 3-inch deep cake pan. Line the bottom with parchment paper. Set aside.
Put the carrots into a large mixing bowl and set aside.
Put the flour, baking powder, baking soda, spices, and salt in the bowl of a food processor and process for 5 seconds. Add this mixture to the carrots and toss until they are well-coated with the flour.
In the bowl of the food processor combine the sugar, brown sugar, eggs, and yogurt.
With the processor still running drizzle in the vegetable oil. Pour this mixture into the carrot mixture and stir until just combined. Pour into the prepared cake pan and bake on the middle rack of the oven for 45 minutes. Reduce the heat to 325 degrees F and bake for another 20 minutes or until the cake reaches 205 to 210 degrees F in the center.
Remove the pan from the oven and allow cake to cool 15 minutes in the pan. After 15 minutes, turn the cake out onto a rack and allow cake to cool completely. Frost with cream cheese frosting after cake has cooled completely.
Cream Cheese Frosting:
8 ounces cream cheese
2 ounces unsalted butter, room temperature
1 teaspoon vanilla extract
9 ounces powdered sugar, sifted, approximately 2 cups
In the bowl of a stand mixer with paddle attachment, combine the cream cheese and butter on medium just until blended. Add the vanilla and beat until combined. With the speed on low, add the powdered sugar in 4 batches and beat until smooth between each addition.
Place the frosting in the refrigerator for 5 to 10 minutes before using.
Yield: approximately 2 cups
MAYAN SPICED CHOCOLATE PUDDING

1 13.5-oz. can light coconut milk, divided
1/4 cup cornstarch
1/4 cup sugar
1/2 tsp. ground cinnamon
1/4 tsp. chili powder, plus more for garnish
1/8 tsp. salt
1 3-oz. bar vegan dark chocolate, chopped
1 tsp. vanilla extract
Whisk together 1/4 cup coconut milk and cornstarch in small bowl. Set aside.
Combine remaining coconut milk, sugar, cinnamon, chili powder, and salt in saucepan, and bring to a simmer over medium heat. Whisk 1/4 cup hot mixture into cornstarch mixture to form slurry.
Whisk slurry into hot mixture, and cook 3 minutes, or until thickened, whisking constantly. Remove from heat, and whisk in chocolate and vanilla.
Transfer to metal bowl, and set in larger bowl filled with ice and water. Whisk occasionally to cool. Serve sprinkled with pinch of chili powder.

CRANBERRY PIE

My dad loved to cook, and usually came up with decent recipes. He sent this one in a letter dated “18 No 79”. He wrote, “Here is a recipe for a pie. 1st the way it was in the paper and the way I made it.”
This pie can be made either with a single crust (above photo) or with a top and bottom crust (below). If making this with a top crust, poke several holes through the top crust to vent, then covering with foil for the first 10-15 minutes, then taking the foil off for the last 10-15 minutes. (If using only a bottom crust, foil around the edges where the crust shows would be preferable, again for the first 10-15 minutes.)

2 T cornstarch
1 C sugar
1/4 tsp. salt
1 1/4 C hot water
1 C raisins
1 T butter
2 C cranberries
Pie crust
Blend 1st four ingredients & cook in double boiler until thick. Add next 3 ingredients & cook 10 minutes. Put in pie shell & bake at 450 degrees for 20-30 minutes, covering pie with foil for the first 10-15 minutes. (Crust can be any kind you want, whether double crust or simply a bottom crust.)
VARIATION
2 Tbls cornstarch
3/4 C honey + 1/4 C molasses
1/4 tsp. salt
1 1/4 C hot water
1 C raisins
1 T margarine
1 1/2 C cranberries + 1 C canned cranberries (kind with berries in sauce)

BANANA RUM VEGAN CHEESECAKE WITH MAPLE RUM SAUCE

Ingredients
4 very ripe bananas
16 ounces nondairy cream cheese
3/4 cup firmly packed light brown sugar
3/4 teaspoon ground cinnamon
1/2 cup dark rum
2 tablespoons cornstarch
1/4 teaspoon salt
Prepared pecan pie crust (recipe follows)
Prepared maple rum sauce (recipe follows)
Toasted pecan halves for garnish
Preparation
Preheat the oven to 325 degrees.Place 4 large, very ripe, unpeeled bananas on a roasting pan and roast for 15-20 minutes, until bananas are soft and skin turns dark brown. Let bananas cool to room temperature in the pan in their skins.
Turn oven up to 400 degrees.
Peel the roasted bananas and remove any obvious strings. Puree bananas in a food processor until very smooth. Add nondairy cream cheese, brown sugar, cinnamon, rum, cornstarch and salt then pulse until smooth, scraping sides of bowl periodically. Do not overprocess or cream cheese will separate and curdle.
Pour the filling into the prepared pecan pie crust and bake at 400 for 10 minutes. Reduce temperature to 350 and bake another 35-45 minutes, until the top is the color of light brown sugar and center is set. A toothpick inserted in center should come out clean.
Let cheesecake cool to room temperature on a rack for at least 1 hour, then cover with plastic wrap and chill in refrigerator at least 3 hours, preferably overnight.
Drizzle with prepared maple rum sauce just before serving and garnish with extra toasted pecan halves.
PECAN PIE CRUST

1 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water

1 can (13.4 oz) dulce de leche
3 ripe medium bananas
1 cup whipping cream
1/4 cup powdered sugar
1/2 cup semisweet chocolate chips
1 teaspoon vegetable oil
Instructions
Heat oven to 450°F. In medium bowl, mix flour and salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with water, 1 tablespoon at a time, tossing with fork until all flour is moistened and dough almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
On lightly floured surface, shape dough into a ball. Flatten ball to 1/2-inch thickness, rounding and smoothing edges. With floured rolling pin, roll dough into 11-inch round, rolling from center to edge. Fold dough in half; place in 9-inch glass pie plate. Unfold; gently press in bottom and up side of plate, being careful not to stretch dough.
Fold and roll edge of dough under, even with plate; flute edge. Prick bottom and side of dough generously with fork. Bake 9 to 12 minutes or until light golden brown. Cool completely, about 30 minutes.
Spoon contents of can of dulce de leche into center of cooled crust; gently spread to edge. Thinly slice bananas; arrange over dulce de leche.
In medium bowl, beat whipping cream and powdered sugar with electric mixer on high speed until stiff peaks form. Spread over bananas.
In small resealable freezer plastic bag, place chocolate chips and oil; seal bag. Microwave on High 30 seconds; knead bag to mix melted chips and unmelted chips. Microwave 15 to 30 seconds longer or until all chips are melted and smooth. Snip off tiny corner of bag. Pipe melted chocolate mixture over whipped cream. Store pie in refrigerator.

Directions

Preheat oven to 350 degrees F.
Butter and flour a 9-inch round and 3-inch deep cake pan. Line the bottom with parchment paper. Set aside.
Put the carrots into a large mixing bowl and set aside.
Put the flour, baking powder, baking soda, spices, and salt in the bowl of a food processor and process for 5 seconds. Add this mixture to the carrots and toss until they are well-coated with the flour.
In the bowl of the food processor combine the sugar, brown sugar, eggs, and yogurt.
With the processor still running drizzle in the vegetable oil. Pour this mixture into the carrot mixture and stir until just combined. Pour into the prepared cake pan and bake on the middle rack of the oven for 45 minutes. Reduce the heat to 325 degrees F and bake for another 20 minutes or until the cake reaches 205 to 210 degrees F in the center.
Remove the pan from the oven and allow cake to cool 15 minutes in the pan. After 15 minutes, turn the cake out onto a rack and allow cake to cool completely. Frost with cream cheese frosting after cake has cooled completely.
Cream Cheese Frosting:
8 ounces cream cheese
2 ounces unsalted butter, room temperature
1 teaspoon vanilla extract
9 ounces powdered sugar, sifted, approximately 2 cups
In the bowl of a stand mixer with paddle attachment, combine the cream cheese and butter on medium just until blended. Add the vanilla and beat until combined. With the speed on low, add the powdered sugar in 4 batches and beat until smooth between each addition.
Place the frosting in the refrigerator for 5 to 10 minutes before using.
Yield: approximately 2 cups

LEMON-DIJON SALAD OF WINTER VEGETABLES

It is full of flavor, freshness and color to spark even the grayest February day, and the snow pea greens add a breath of spring. These greens are sold in well-stocked markets. To save time, use a bag of fresh precut broccoli and cauliflower bud mix, available in the produce section of most markets, and blanch them at the same time. Ideally, however, you should blanch each vegetable separately. You will want to serve the vegetables cold and crisp, so plan ahead – even a day ahead – when preparing this dish.” Serves 4 to 6 in 30 minutes or less.

1/2 head cauliflower, cut into florets of uniform size
1 small crown broccoli, cut into florets of uniform size
12 prepeeled baby carrots
3 oz. sugar snap peas, optional
3 oz. snow pea greens, optional
1 Tbs. Dijon mustard
1 Tbs. fresh lemon juice
1 large clove garlic, minced
2 Tbs. olive oil
Salt and freshly ground black pepper to taste
1/2 bunch radishes, stemmed, and thinly sliced
3 scallions, ends trimmed, all white and about 2 inches of green, thinly sliced
1/2 bunch parsley, minced
Bring a large pot of water to a boil, and blanch cauliflower for 2 minutes. Drain well, and rinse cauliflower with cold water. Refill pot, blot drained cauliflower dry and roll florets up in a paper towel.
Place in a plastic bag, and refrigerate. Repeat procedure with broccoli.
Refill pot, and bring to a boil again. Place snow pea greens in a colander, and set aside in kitchen sink. Blanch carrots, and pour carrot water over greens to wilt slightly. Repeat cold water-blot-refrigerate treatment with carrots, sugar snap peas and snow pea greens, if using.
Meanwhile, 1 hour before serving, combine mustard, lemon juice and garlic in a large salad bowl. Whisk in olive oil, salt and pepper. Put all blanched and raw vegetables in bowl. Toss, season with salt and pepper again and serve.

QUICK GREEN CHILE SOUP-STEW

On those nights when we must eat now or our blood sugars will crash, try this. Its as fast as opening a few cans, but it is in fact uncannily good and healthful to boot. If youre serving it with the muffins above, put them in to bake, begin making the soup-stew, and all will be done by the time the muffins emerge from the oven. It is good, straightforward and unadorned, but you can serve it with any of the following options passed at the table: grated cheddar or Monterey Jack cheese or soy equivalents, low-fat sour cream or soy sour cream and minced cilantro.” Serves 6 to 8 in 30 minutes or less.

2 cups black beans, undrained
2 cups kidney beans, undrained
2 cups garbanzo beans, undrained

1 28-oz. can chopped tomatoes with juice
30 oz. enchilada sauce, preferably New Mexico-style green chile, mild, medium or hot
1 cup canned, unsweetened pumpkin
Salt and freshly ground black pepper to taste
Spray a large soup pot with nonstick cooking spray. Put beans, tomatoes and all liquid into pot, and heat over medium-high heat, stirring often.
When heated through, reduce heat to medium-low, and stir in enchilada sauce and pumpkin. Heat again, stir in salt and pepper and remove from heat. Ladle into large soup bowls, and garnish as desired.
Variation:
Omit pumpkin, using 1 large onion, diced, instead. Heat 1 tablespoon olive or vegetable oil in a large soup pot over medium-high heat, and when onion has softened, add 3 cloves garlic, chopped, and sauté for 2 minutes more. Drain the liquid from the tomatoes and the beans over the onions. When the liquid comes to a boil, add 1/4 pound fresh green beans, stemmed and sliced crosswise in 1/4-inch wide lengths, as well as 1 large yam or sweet potato, peeled and diced into 1/3-inch cubes. You may also use or substitute several small scrubbed but unpeeled, diced Yukon Gold potatoes. Reduce heat to low, and cook, partially covered, for 10 to 12 minutes, or until potatoes and green beans are tender. Add all canned beans, tomatoes, and green enchilada chile sauce. Heat through, and serve.

1/4 cup unsweetened cocoa powder
1/4 cup vegan semisweet chocolate chips, such as Sunspire
3 Tbs. sugar
1 Tbs. instant decaffeinated coffee granules
Pinch ground nutmeg
1 tsp. vanilla extract
Whisk together 1/2 cup soymilk and cornstarch in small bowl. Set aside.
Combine remaining 11/2 cups soymilk, cocoa, chocolate chips, sugar, coffee and nutmeg in large saucepan. Warm over medium heat until chocolate chips have melted. Whisk in cornstarch mixture, and cook 10 minutes over medium-low heat, or until pudding thickens and begins to boil. Remove from heat, and stir in vanilla.
Divide pudding among 4 custard cups. Chill well before serving.

This comes from the February 2004 issue of Vegetarian Times, and begins, “With both raw and barely cooked ingredients, this sprightly, very lightly dressed salad contrasts textures and seduces both eye and palate. It is full of flavor, freshness and color to spark even the grayest February day, and the snow pea greens add a breath of spring. These greens are sold in well-stocked markets. This salad is a good first course for almost any meal. To save time, use a bag of fresh precut broccoli and cauliflower bud mix, available in the produce section of most markets, and blanch them at the same time. Ideally, however, you should blanch each vegetable separately. You will want to serve the vegetables cold and crisp, so plan ahead – even a day ahead – when preparing this dish.” Serves 4 to 6 in 30 minutes or less.

1/2 head cauliflower, cut into florets of uniform size
1 small crown broccoli, cut into florets of uniform size
12 prepeeled baby carrots
3 oz. sugar snap peas, optional
3 oz. snow pea greens, optional
1 Tbs. Dijon mustard
1 Tbs. fresh lemon juice
1 large clove garlic, minced
2 Tbs. olive oil
Salt and freshly ground black pepper to taste
1/2 bunch radishes, stemmed, and thinly sliced
3 scallions, ends trimmed, all white and about 2 inches of green, thinly sliced
1/2 bunch parsley, minced
Bring a large pot of water to a boil, and blanch cauliflower for 2 minutes. Drain well, and rinse cauliflower with cold water. Refill pot, blot drained cauliflower dry and roll florets up in a paper towel.
Place in a plastic bag, and refrigerate. Repeat procedure with broccoli.
Refill pot, and bring to a boil again. Place snow pea greens in a colander, and set aside in kitchen sink. Blanch carrots, and pour carrot water over greens to wilt slightly. Repeat cold water-blot-refrigerate treatment with carrots, sugar snap peas and snow pea greens, if using.
Meanwhile, 1 hour before serving, combine mustard, lemon juice and garlic in a large salad bowl. Whisk in olive oil, salt and pepper. Put all blanched and raw vegetables in bowl. Toss, season with salt and pepper again and serve.

QUICK GREEN CHILE SOUP-STEW

On those nights when we must eat now or our blood sugars will crash, try this. Its as fast as opening a few cans, but it is in fact uncannily good and healthful to boot. If youre serving it with the muffins above, put them in to bake, begin making the soup-stew, and all will be done by the time the muffins emerge from the oven. It is good, straightforward and unadorned, but you can serve it with any of the following options passed at the table: grated cheddar or Monterey Jack cheese or soy equivalents, low-fat sour cream or soy sour cream and minced cilantro.” Serves 6 to 8 in 30 minutes or less.

2 cups black beans, undrained
2 cups kidney beans, undrained
2 cups garbanzo beans, undrained
2 cups black-eyed peas, undrained
1 28-oz. can chopped tomatoes with juice
30 oz. enchilada sauce, preferably New Mexico-style green chile, mild, medium or hot
1 cup canned, unsweetened pumpkin
Salt and freshly ground black pepper to taste
Spray a large soup pot with nonstick cooking spray. Put beans, tomatoes and all liquid into pot, and heat over medium-high heat, stirring often.
When heated through, reduce heat to medium-low, and stir in enchilada sauce and pumpkin. Heat again, stir in salt and pepper and remove from heat. Ladle into large soup bowls, and garnish as desired.
Variation:
Omit pumpkin, using 1 large onion, diced, instead. Heat 1 tablespoon olive or vegetable oil in a large soup pot over medium-high heat, and when onion has softened, add 3 cloves garlic, chopped, and sauté for 2 minutes more. Drain the liquid from the tomatoes and the beans over the onions. When the liquid comes to a boil, add 1/4 pound fresh green beans, stemmed and sliced crosswise in 1/4-inch wide lengths, as well as 1 large yam or sweet potato, peeled and diced into 1/3-inch cubes. You may also use or substitute several small scrubbed but unpeeled, diced Yukon Gold potatoes. Reduce heat to low, and cook, partially covered, for 10 to 12 minutes, or until potatoes and green beans are tender. Add all canned beans, tomatoes, and green enchilada chile sauce. Heat through, and serve.

CREAMY DARK CHOCOLATE PUDDING

2 cups plain soymilk, divided
2 Tbs. cornstarch
1/4 cup unsweetened cocoa powder
1/4 cup vegan semisweet chocolate chips, such as Sunspire
3 Tbs. sugar
1 Tbs. instant decaffeinated coffee granules
Pinch ground nutmeg
1 tsp. vanilla extract
Whisk together 1/2 cup soymilk and cornstarch in small bowl. Set aside.
Combine remaining 11/2 cups soymilk, cocoa, chocolate chips, sugar, coffee and nutmeg in large saucepan. Warm over medium heat until chocolate chips have melted. Whisk in cornstarch mixture, and cook 10 minutes over medium-low heat, or until pudding thickens and begins to boil. Remove from heat, and stir in vanilla.
Divide pudding among 4 custard cups. Chill well before serving.

SWEET POTATO & BLACK BEAN ENCHILADAS
This comes from the December 2011 issue of Vegetarian Times, page 59. The recipes starts off, “Right from the start, the originality and flavor profile of this recipe made it a standout for VT taste testers. 'My wife and I eat this dish a lot in the fall and winter months. We make it when we're having guests (vegetarian and not) because we know everyone will enjoy it,' explains James McNulty. 'It can be made the night before and it travels well, so it's great for a potluck or a holiday party.'” Serves 8 (makes 16 enchiladas)

Sauce
1 15-oz. can tomato sauce
1 3/4 cups low-sodium vegetable broth
1 tsp. ancho chile powder
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. dried oregano
1/2 tsp. chipotle chile powder
Filling
1 Tbs. extra virgin olive oil
1 small onion, diced (1 cup)
1 1/2 lb. sweet potatoes, peeled and diced (3 cups)
1 15-oz. can diced tomatoes, drained
1 16-oz. jar prepared medium salsa
2 cloves garlic, minced (2 tsp.)
1 chipotle chile in adobo sauce, drained and minced
1 15-oz. can black beans, rinsed and drained
1 12-oz. round queso fresco, divided
Enchiladas
extra virgin olive oil, for brushing baking dish
16 6-inch corn tortillas, warmed
2 limes, cut into wedges
1 avocado, sliced
1/2 cup sour cream, for garnish
Cilantro sprigs, for garnish, optional
To make Sauce: Bring all ingredients to a simmer in saucepan over medium heat. Whisk to combine, then remove from heat. Season with salt and pepper, if desired.
To make Filling: Heat oil in separate saucepan over medium heat. Add onion, and sauté 3 to 5 minutes, or until soft. Add sweet potatoes, tomatoes, salsa, garlic, chipotle chile, and 1/2 cup water; bring to a boil. Reduce heat to medium-low, and simmer 30 to 40 minutes, or until sweet potatoes are soft. Mash mixture with potato masher until combined. Add black beans, and cook 5 minutes. Stir in half of queso fresco, and remove from heat.
To assemble Enchiladas: Preheat oven to 350ºF. Brush 13- x 9-inch baking dish with oil. Spread 1/2 cup Sauce in bottom of dish. Fill tortillas with Filling. Roll, and pack close together seam-side down in baking dish. Top with remaining Sauce and queso fresco. Bake 15 minutes.
Adjust oven to broil. Broil Enchiladas 5 minutes, or until cheese is browned and bubbly. Let rest 10 minutes before serving. Garnish with lime wedges, avocado slices, sour cream, and cilantro sprigs, if using.

VEGAN BROWN RICE JAMBALAYA WITH TOMATO SAUCE
This comes from Jolinda Hackett, the Vegetarian Food expert for About.com. She writes, “Jamabalaya is one of those dishes that is greater than the sum of its parts. The seasonings and the lengthy cooking time really combine to make something special; it's not just rice and tomato sauce! This vegetarian and vegan jambalaya recipe (with whole grain brown rice instead of regular white rice) makes a huge pot, about 14 servings, so plan on inviting some friends over for dinner or having lots of leftovers. Jambalaya is a great choice if you're cooking in bulk, because it's so easy. Once the rice is cooking, you just leave it alone for nearly an hour, so you'll have plenty of time to prepare a gorgeous homemade dessert.” She recommends a Banana Rum Cheesecake with Maple Rum Sauce, which follows the Jambalaya recipe.

Ingredients
3 tbsp vegan margarine
1 medium yellow onion, chopped
1 green bell pepper, chopped
2 stalks celery, chopped
3 cloves garlic, minced
3 cups vegetable broth

1 cup tomato sauce
2 cups brown rice, uncooked
2 bay leaves
2 tsp. thyme
2 tsp. cayenne
2 tsp. Cajun seasoning
Salt and pepper, to taste
Preparation
In a large soup or stock pot, melt the margarine over medium-low heat, then add the onion, bell pepper, celery, and garlic. Cook for about 15 minutes, until soft.
Add all of the remaining ingredients and bring to a boil. Once boiling, reduce the heat to low, cover, and allow to simmer for about 45-50 minutes.After 45-50 minutes, check the pot. You may need to add a little more liquid and cook for 5-10 more minutes, until rice is well cooked. Taste and adjust seasonings, to taste.
Makes about 14 servings, so plan on having leftovers if you're not feeding a crowd! Fortunately, the leftovers keep well.
Recipe variations: For a spicier jambalaya, slice up one fresh green jalapeno when cooking and add it along with the other vegetables. For extra flavor, if you happen to have some on hand, you can toss in a handful of fresh herbs - either cilantro or parsley - at the very last minute.
BANANA RUM VEGAN CHEESECAKE WITH MAPLE RUM SAUCE
This is also from Jolinda Hackett, who writes, “This gourmet banana rum vegan cheesecake with maple rum sauce has several steps, but the bananas, pecan crust and rum sauce can all be prepared in advance. Then, the only thing left is to blend the vegan cream cheese and the other ingredients and bake. Easy! If you're looking for a gourmet vegan cheesecake recipe, this is the one to try.”
Ingredients
4 very ripe bananas
16 ounces nondairy cream cheese
3/4 cup firmly packed light brown sugar
3/4 teaspoon ground cinnamon
1/2 cup dark rum
2 tablespoons cornstarch
1/4 teaspoon salt
Prepared pecan pie crust (recipe follows)
Prepared maple rum sauce (recipe follows)
Toasted pecan halves for garnish
Preparation
Preheat the oven to 325 degrees.Place 4 large, very ripe, unpeeled bananas on a roasting pan and roast for 15-20 minutes, until bananas are soft and skin turns dark brown. Let bananas cool to room temperature in the pan in their skins.
Turn oven up to 400 degrees.
Peel the roasted bananas and remove any obvious strings. Puree bananas in a food processor until very smooth. Add nondairy cream cheese, brown sugar, cinnamon, rum, cornstarch and salt then pulse until smooth, scraping sides of bowl periodically. Do not overprocess or cream cheese will separate and curdle.
Pour the filling into the prepared pecan pie crust and bake at 400 for 10 minutes. Reduce temperature to 350 and bake another 35-45 minutes, until the top is the color of light brown sugar and center is set. A toothpick inserted in center should come out clean.
Let cheesecake cool to room temperature on a rack for at least 1 hour, then cover with plastic wrap and chill in refrigerator at least 3 hours, preferably overnight.
Drizzle with prepared maple rum sauce just before serving and garnish with extra toasted pecan halves.
PECAN PIE CRUST
Jolinda Hackett's pecan pie crust can be used for either cheesecake or as a regular pie crust, and can be viewed online here.
Ingredients
1 cup pecan nut flour (see instructions below)
1/2 cup spelt flour (white or whole wheat )
1 tablespoon firmly packed light brown sugar
4 Tbsp vegan margarine, partially melted
1/8 teaspoon ground cardamom
1/2 teaspoon ground ginger
Pinch of sea salt
Preparation
Note: To make pecan nut flour, freeze the nuts overnight, then place in a food processor and pulse until finely ground. Freezing the nuts prevents them from turning into nut butter when you process them.pre-heat oven to 400 degrees.
Combine all ingredients in a bowl and mix until well combined and incorporated.
Press the mixture into a 9-inch springform pan and put in freezer for 5 minutes.
Bake for 8-10 minutes, until crust is a little dry and edges are light golden. Let cool completely before using in a recipe.
VEGAN MAPLE RUM SAUCE RECIPE

1 cup real maple syrup (grade B organic is best in this recipe)
4 tablespoons Earth Balance vegan butter
Sea salt
1 tablespoon dark rum
Preparation
In a small saucepan, combine maple syrup, vegan butter, and sea salt to taste and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, stirring frequently, until sauce has thickened slightly, about 10 minutes.
Remove from heat and stir in rum, stirring carefully, as sauce will bubble up a bit. Let cool for a few minutes then taste and add more salt if necessary.

SAMOSA STUFFED PEPPERS
This comes from the March 2014 issue of Vegetarian Times, page 71. It starts off, “The filling for these stuffed peppers tastes a lot like samosas, small Indian turnovers. STORE/SERVE: If making ahead, skip final baking step. Cool stuffed peppers, cover tightly with foil, and refrigerate up to three days or freeze up to three months. Thaw, if necessary, then cover with foil, and finish baking as in step 3.” Serves 8.

4 large red bell peppers, halved
2 Tbs. vegetable oil
1 large onion, chopped (2 cups)
4 tsp. curry powder
1 Tbs. garam masala
2 tsp. grated fresh ginger
1 cup basmati rice
1/4 cup red lentils, rinsed and drained
1/2 tsp. salt
1 1/2 cups cooked chickpeas or 1 15-oz. can chickpeas, rinsed and drained
2 large carrots, finely diced (1 cup)
1 cup green beans, coarsely chopped
1/2 cup raisins or dried currants, optional
1/2 cup unsalted peanuts or cashews, coarsely chopped
Preheat oven to 350°F. Place halved bell peppers cut side down in two large baking dishes. Cover with foil, and bake 25 minutes, or until peppers begin to soften.
Heat oil in large saucepan over medium heat. Add onion, and sauté 3 to 5 minutes. Add curry powder, garam masala, and ginger, and cook 1 minute. Stir in rice, lentils, salt, and 4 cups water. Add chickpeas, carrots, green beans, and raisins (if using). Cover, and bring to a boil. Reduce heat to medium-low, and simmer 15 minutes, or until most of liquid is absorbed, stirring once or twice. Remove rice mixture from heat, stir in peanuts, and season with salt, if desired.
Flip bell pepper halves. Fill each with 3/4 cup rice mixture. Re-cover baking dishes, and bake 15 minutes. Uncover, and bake 5 to 10 minutes more.

Ingredients
1 cup real maple syrup (grade B organic is best in this recipe)
4 tablespoons Earth Balance vegan butter
Sea salt
1 tablespoon dark rum
Preparation
In a small saucepan, combine maple syrup, vegan butter, and sea salt to taste and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, stirring frequently, until sauce has thickened slightly, about 10 minutes.
Remove from heat and stir in rum, stirring carefully, as sauce will bubble up a bit. Let cool for a few minutes then taste and add more salt if necessary.
Cool to room temperature, then transfer to a squeeze bottle.If not using immediately, the sauce can be rewarmed by putting the bottle in a pan of hot water off the heat.
SAMOSA STUFFED PEPPERS
This comes from the March 2014 issue of Vegetarian Times, page 71. It starts off, “The filling for these stuffed peppers tastes a lot like samosas, small Indian turnovers. STORE/SERVE: If making ahead, skip final baking step. Cool stuffed peppers, cover tightly with foil, and refrigerate up to three days or freeze up to three months. Thaw, if necessary, then cover with foil, and finish baking as in step 3.” Serves 8.

4 large red bell peppers, halved
2 Tbs. vegetable oil
1 large onion, chopped (2 cups)
4 tsp. curry powder
1 Tbs. garam masala
2 tsp. grated fresh ginger
1 cup basmati rice
1/4 cup red lentils, rinsed and drained
1/2 tsp. salt
1 1/2 cups cooked chickpeas or 1 15-oz. can chickpeas, rinsed and drained
2 large carrots, finely diced (1 cup)
1 cup green beans, coarsely chopped
1/2 cup raisins or dried currants, optional
1/2 cup unsalted peanuts or cashews, coarsely chopped
Preheat oven to 350°F. Place halved bell peppers cut side down in two large baking dishes. Cover with foil, and bake 25 minutes, or until peppers begin to soften.
Heat oil in large saucepan over medium heat. Add onion, and sauté 3 to 5 minutes. Add curry powder, garam masala, and ginger, and cook 1 minute. Stir in rice, lentils, salt, and 4 cups water. Add chickpeas, carrots, green beans, and raisins (if using). Cover, and bring to a boil. Reduce heat to medium-low, and simmer 15 minutes, or until most of liquid is absorbed, stirring once or twice. Remove rice mixture from heat, stir in peanuts, and season with salt, if desired.
Flip bell pepper halves. Fill each with 3/4 cup rice mixture. Re-cover baking dishes, and bake 15 minutes. Uncover, and bake 5 to 10 minutes more.
