Drinks

There are times when we could use something other than the same-old-same-old to drink. To that end, here are six drinks to help you through the day, including Cafe De Olla, Homemade Ginger Tea, and Apple Cider Floats. Enjoy!

CHOCOLATE AVOCADO SMOOTHIE

This is from Christel Oerum on DiabetesStrong. Christel wrote, “Avocado and chocolate are a killer combination in this easy chocolate avocado smoothie with coconut milk recipe! This recipe is low-carb, gluten-free, and vegan!”

Ingredients

1/2 ripe avocado

3 tbsp. cocoa powder

1 cup full fat coconut milk

1/2 cup water

1 tsp. lime juice

pinch mineral salt

6-7 drops liquid Stevia

Fresh mint (for decoration)

Instructions

Add all of the ingredients to a blender. Chopping the ingredients beforehand will help the blender process everything better.

Blend on high speed until smooth and creamy. You can adjust the taste to your liking by adding more avocado for creaminess or liquid Stevia for more sweetness.

Serve immediately with fresh mint and a straw.

You can store this smoothie in the refrigerator for up to 2 days.

APPLE CIDER FLOATS

This is from Lauren Miyashiro on Delish. The recipe begins, “You'll want to float away with these apple cider floats!”

Ingredients

1/2 c. caramel sauce

1/2 c. cinnamon-sugar

2 c. apple cider, warmed

Vanilla ice cream, for serving

cinnamon sticks

Whipped cream, for serving

Apple slices

Directions

Pour caramel in a small dish. Dip the top of each mug in the caramel to rim the cup. Then dip the caramel rim in cinnamon-sugar.

Ladle apple cider into each mug then add a scoop of ice cream to each. Top with whipped cream and garnish with apple slices and cinnamon stick.

Drizzle more caramel over the whipped cream and serve immediately.

HOMEMADE GINGER TEA

Ingredients

About 2 inches of fresh raw ginger (use more or less, depending on how strong you want it!)

1-1/2 to 2 cups water

1 to 2 tablespoons honey (or agave nectar, to taste)

Optional: 1/2 lime (juiced, or to taste)

Directions

First, prepare the fresh ginger by peeling it and slicing it thinly to maximize the surface area. This will help you make a very flavorful ginger tea.

Boil the ginger in water for at least 10 minutes. For a stronger and tangier tea, allow to boil for 20 minutes or more, and use more slices of ginger. You really can't over do it, so feel free to add as much ginger and simmer it for as long as you want.

Remove from heat and add lime juice and honey (or agave nectar) to taste.

The secret to making a really flavorful ginger tea is to use plenty of ginger-more than you think you will need-and also to add a bit of lime juice and honey to your ginger tea. You will also probably want to add more honey than you think you will need as well.

Enjoy your hot ginger tea! A homemade ginger tea is excellent in soothing stomach aches and in aiding digestion.

LIZARD LOUNGE TEA

My oldest son spent several summers traveling the country, both singly and with friends. Several times, he wound up at the Rainbow Gathering, where he hooked up with a larger group of friends. Most of them had grown up in hot areas of the country, so they nicknamed themselves lizards; their area of the camp site was the lizard lounge. They would cook up their version of iced tea, which they would barter for other commodities. They were frequently asked what their secret ingredient was.

This is a scaled down version. I found that cranberry or cranberry-apple herb tea works very nicely with this, but any herbal tea can be used.

Ingredients

1/2 gallon apple cider

4 – 5 herbal tea bags

Directions

Place cider in a large pan or teakettle and bring to a boil. Place herbal tea bags into a large container and pour the boiled cider over the tea bags. Let steep for 15-30 minutes and cool. Very good.

CAFE DE OLLA

The recipe for this yummy coffee is from the December 2012 issue of Vegetarian Times, page 47. It starts off, “Literally 'coffee from the pot,' this recipe offers a simple way to make coffee for a crowd, with a spiced twist that no one can resist.” Serves 8 in 30 minutes or less.

Ingredients

4 cinnamon sticks

4 star anise

4 allspice berries

4 whole cloves

1/2 cup packed dark brown sugar or 4 oz. piloncillo (Mexican raw sugar cones)

2 cups medium grind, dark roast coffee beans

2 cups low-fat milk

1 cup coffee liqueur, such as KahlĂșa, optional

Directions

Lightly crush cinnamon sticks, star anise, allspice, and cloves with mortar and pestle. Place in resealable plastic bag, and pound with rolling pin. Transfer to large saucepan, and add sugar and 8 cups water. Bring mixture to a boil, and simmer until sugar dissolves. Remove from heat, add coffee, and let steep 5 minutes.

Meanwhile, warm milk in small saucepan, and whisk until frothy.

Strain coffee through fine sieve or coffee filter into pitcher. Stir in coffee liqueur (if using). Serve with frothed milk.

COCOA JAVA

This recipe, from My Food and Family, begins, "You'll need just five minutes and three ingredients to make this tasty coffee drink. Share it with your family for a special treat!"

Drinks

It might seem strange having a post dealing with drinks. But then, it's easy to get bored with the same-old-same-old, whether it's food or drinks (or anything else).

WIth that in mind, check out the Cocoa Java, the Classic Hot Chocolate, the Homemade Ginger Tea, and the rest of today's yummy drinks. Enjoy!

CHAI LATTE

This is from Meghan Splawn in thekitchn. For this yumminess, Meghan wrote, "I fell in love with the idea of chai through the cartons of this drink mix from the grocery store. The milky sweetness partnered with the astringent black tea drew me in, but the warm spices that lingered between sips kept me drinking. It wasn’t long before the sweetness of those chai drink mixes became too much for me and I started experimenting with chai lattes at home.

"This chai latte gives you complete control over your chai latte experience, from the tea and the spices, to the sweetener and type of milk. All you need is to brew, steep, sweeten your tea, and then froth your milk. The result is a creamy cup of black tea subtly spiced and fragrant with cinnamon, black peppercorns, and ginger, and just the right amount of sweetness, so near perfect that you’ll skip the coffee shop chai (or the carton) and come home to make a pot of this at tea time."

Ingredients

2 cinnamon sticks, broken into pieces

2 teaspoons whole black peppercorns

10 whole cloves

6 green cardamom pods, cracked

4 cups water

1 (2-inch) piece fresh ginger, thinly sliced

2 tablespoons loose-leaf black tea, or 6 black tea bags

1/2 cup sweetener, such as brown sugar, honey, or maple syrup (optional)

3 cups cold whole milk, coconut milk, or other non-dairy milk

Equipment

Wooden spoon or rubber spatula

Pitcher or teapot

Instructions

Toast the spices. Place the cinnamon, peppercorns, cloves, and cardamom in a small saucepan over medium heat and toast, shaking the pan occasionally, until fragrant, 3 to 4 minutes.

Brew the tea. Add the water and ginger and bring to a simmer. Simmer for 5 minutes.

Steep the tea. Remove from the heat and add the loose-leaf tea or tea bags. Cover and steep for 10 minutes.

Sweeten the tea. While the tea is still warm, add the sweetener and stir until combined or dissolved.

Strain the tea. Strain the tea through a fine-mesh strainer into a pitcher or teapot. Discard the spices and tea leaves. Store in the refrigerator for future use, or keep it warm while you froth the milk.

Froth the milk. For whole milk, froth the milk by shaking it in a jar or by whisking it vigorously over medium-high heat. For non-dairy milks, use an immersion blender to froth before heating.

Heat the milk. Heat the frothed milk in a small saucepan over low heat until warm.

Serve. Pour 3/4 cup of the warm tea base into each mug. Add 1/2 cup of warmed milk and stir to combine. Top with a heaping spoonful of milk froth.

Recipe Notes

Make ahead: The tea base can be made up to 5 days in advance and stored in an airtight container in the refrigerator. Gently reheat before frothing the milk.

Nondairy milk can be substituted for whole milk here, though you might have to reduce the sugar, since some brands are sweetened. Also bear in mind that the higher the cocoa percentage of the chocolate you use, the less sweet the drink will be. Add the sugar gradually, tasting as you go: Hot cocoa sweetness is a very personal thing.”

1/4 cup unsweetened cocoa powder, preferably Dutch-processed

3 cups whole milk

4 1/2 ounces chopped bittersweet chocolate or 3/4 cup bittersweet chocolate chips

1 to 3 tablespoons granulated sugar

Tiny pinch of fine sea salt

1 teaspoon vanilla extract

Whipped cream or marshmallows, for serving

Preparation

Fill a small pot with 1/3 cup water and bring to a boil. Whisk in cocoa; it may clump, which is O.K.

Reduce heat to medium and whisk in milk, whisking around the sides of the pan to help dissolve all the cocoa.

When milk simmers, whisk in the chocolate, 1 tablespoon sugar and a tiny pinch of salt, and reduce heat to low. Whisk until chocolate is melted and very smooth. Taste and add more sugar if you like. Turn off heat and whisk in vanilla.

Serve topped with whipped cream or marshmallows.

RUMPLEMAYER’S HOT CHOCOLATE

This is from Molly O’Neill in The New York Times cooking e-newsletter. Molly wrote, “Hot chocolate is traceable to the Aztecs, who regarded the dark and bitter drink as a sacred brew. The hot cocoa that Columbus offered his patrons tasted “bitter, scummy and peppery,” according to Chantal Coady's account in “The Chocolate Companion,” which explains, no doubt, why they disliked it intensely. Sometime later, Cortez offered the same beverage to Charles V and his courtiers and succeeded in capturing their imagination with the addition, Ms. Coady writes, of some sugar and vanilla. This version, adapted from Rumplemayer's, a now-closed New York restaurant once known for its hot chocolate and pastries, falls into the latter camp; it is rich, sweet and smooth. It calls for real semisweet chocolate (we bet a mix of semisweet and bittersweet would be delightful, too) so there's none of the chalky aftertaste hot cocoa often leaves behind. A dollop of whipped cream and a sprinkle of cinnamon, if you wish, take it over the top.”

7 ounces semisweet chocolate, chopped

1 cup heavy cream (optional)

Ground cinnamon, for garnish (optional)

Preparation

Combine the milk, sugar and chocolate in a large saucepan. Heat, stirring frequently, until the chocolate is melted and the mixture comes to a simmer.

Meanwhile, whip the heavy cream to soft peaks. Ladle the hot chocolate into 4 mugs, top with whipped cream and sprinkle lightly with ground cinnamon. Serve immediately.

Most of us would get tired eating the same ol' thing every day. So why would drinks be any different?

Here are six drink recipes to help you through the day, including Ginger Tea, Cocoa Java, and Starbucks Caramel Frappucchino Copycat. Do I have your attention yet? Enjoy!

SINGLE-SERVE PUMPKIN SPICED LATTE

This yumminess is from Folgers. Prep Time: 5 minutes; Cook Time: 1 minute; Servings: 1; Difficulty: Easy

CREAMY GOLDEN MILK SMOOTHIE

This is from Minimalist Baker, and begins, "If you’re into golden milk, this smoothie is a must-try! It requires 7 wholesome ingredients (you likely have on hand right now), 1 blender, and 5 minutes to make. Let’s do this!"

Okay, I'd never heard of golden milk until I stumbled across this, as well as the link above (golden milk), but now I'm intrigued, as I'm sure you are, too.

Anywho, the recipe goes on, "The base of this smoothie is frozen banana for natural sweetness and a creamy texture. We tested other fruits and nothing quite worked. But if you’re trying (or prefer) to avoid banana, we include another option in the notes!

"For anti-inflammatory, antioxidant, and digestion benefits, we included plenty of fresh ginger and ground turmeric. Black pepper boosts the absorption of turmeric, so we added that as well. And don’t forget cinnamon for more natural sweetness and warmth.

"Coconut milk keeps things super creamy, and as an optional touch, we threw in some fresh carrot juice to balance the banana flavor and provide an even more intense orange (golden) hue."

Ingredients

Smoothie

1 cup banana* (ripe, sliced, and frozen)

1 cup light coconut milk or almond milk (or store-bought // use full-fat coconut for creamier smoothie)

1/2 tsp ground turmeric (preferred flavor over fresh)

1 Tbsp fresh ginger (plus more to taste)

1 Dash ground cinnamon

1 Dash black pepper

1 Dash ground nutmeg

1 Dash ground clove and cardamom (optional // for more warmth + spice)

1/4 cup fresh carrot juice* (optional // for color, added sweetness + balances banana flavor // or sub 1 small carrot!)

For Serving (optional)

1 Tbsp Hemp seeds

Directions

Add banana, coconut milk, turmeric, ginger, cinnamon, black pepper, and nutmeg to a high-speed blender and blend on high until creamy and smooth. If including, add cardamom, clove, and fresh carrot juice at this time (optional).

If too thick, thin with more coconut milk or water. If too thin, thicken with ice (or more frozen banana, though it will add more sweetness).

Taste and adjust flavor as needed, adding more cinnamon for warmth, black pepper for spice, ginger for “zing,” turmeric for earthiness / more intense color, or banana for sweetness. Adding carrot juice will also add sweetness and more intense orange/yellow hue.

Divide between serving glasses and enjoy immediately. Keep leftovers in the refrigerator for 24 hours. Freeze leftovers by pouring into an ice cube tray and use for future smoothies (either this smoothie or others you’d like to infuse with a golden milk flavor).

Notes

*If you’re trying to avoid/sub banana, we’d recommend using the recommended amount of carrot juice, swap the banana for the same amount of cauliflower, and add some vanilla protein powder for sweetness.

*Make carrot juice in a juicer, buy at the store, or add 1 raw or cooked carrot to the smoothie to a similar effect.

*Nutrition information is a rough estimate based on full recipe calculated with light (canned) coconut milk and without optional ingredients.

GINGER TEA

This comes from Vegetarian Times (posted on MAY 9, 2017), and begins, “Ginger is Mother Nature’s protective cloak, shielding us from sickness on winter days. This tea is very spicy—if it tastes too strong, dilute it with more hot water and honey. Traditional advice is not to drink more than 2 cups of ginger tea a day unless you are using it as a treatment for a bad chest cold.”

Preparation

Put ginger and 3 cups water in small saucepan, and bring to a boil. Reduce heat to medium-low, and simmer 20 to 25 minutes.

Strain out ginger slices and discard or reserve for another use. Stir in honey, and serve hot. Tea can be reheated, if necessary.

STARBUCKS CARAMEL FRAPPUCCINO COPYCAT

This is from Kiley Heidtbrink at AllRecipes. Kiley wrote, "This is my version of Starbucks Caramel Frappuccino! It's easy to make at home by blending coffee with milk, caramel sauce, and ice. Top each glass with whipped cream and drizzle more caramel sauce on top. Serve with a straw."

We're always so busy figuring out what to eat, and how to fix that, that we sometimes forget about what to drink. No problem. Here are six yummy drinks that you can fix any time of day, including Cafe de Olla and Lizard Lounge Tea. Enjoy!

COCOA JAVA

HUCKLEBERRY ORANGE ICED MILK

This comes from Vegetarian Times (May 2005 issue, page 87), and begins, "Huckleberries are a close relative of blueberries. Wild Maine blueberries are a perfect substitute. Makes 2 quarts ice milk." Makes 8 servings

Ingredients

2 1/2 cups of granulated sugar or rice syrup

1 cup orange juice

2 cups fresh or frozen huckleberries or wild blueberries

3 cups whole milk

Preparation

Heat sugar and orange juice in saucepan over medium heat until boiling. Add lemon and orange zests. Stir until sugar is dissolved, remove from heat and chill mixture.

Combine orange juice mixture, berries and milk, pour into ice cream machine and freeze according to manufacturer’s directions. Or pour mixture into glass baking dish, and freeze. When frozen, scrape into work bowl of processor or blender, and process until smooth. Refreeze. Process again, and freeze until serving time.

Ingredients

About 2 inches of fresh raw ginger (use more or less, depending on how strong you want it!)

1 1/2 to 2 cups water

1 to 2 tablespoons honey (or agave nectar, to taste)

Optional: 1/2 lime (juiced, or to taste)

Directions

First, prepare the fresh ginger by peeling it and slicing it thinly to maximize the surface area. This will help you make a very flavorful ginger tea.

Boil the ginger in water for at least 10 minutes. For a stronger and tangier tea, allow to boil for 20 minutes or more, and use more slices of ginger. You really can't over do it, so feel free to add as much ginger and simmer it for as long as you want.

Remove from heat and add lime juice and honey (or agave nectar) to taste.

The secret to making a really flavorful ginger tea is to use plenty of ginger-more than you think you will need-and also to add a bit of lime juice and honey to your ginger tea. You will also probably want to add more honey than you think you will need as well.

Enjoy your hot ginger tea! A homemade ginger tea is excellent in soothing stomach aches and in aiding digestion.

EASTERN SUNRISE SMOOTHIE

It seems that bottled smoothies have hit it big in stores over the past few years. And while many of them are, no doubt, good, and even healthy, there's nothing that quite compares with fresh-made smoothies. The only thing holding one back are one's imagination and the fruits available.

The fruits used in in this smoothie are from the eastern U.S.: orange juice and strawberries from Florida, cranberries from Massachusetts. Top that off with a beautiful pink color. It’s a yummy way to start the morning.

1 C orange juice

1/2 C yogurt

4-6 frozen strawberries

1 T wheat germ

1/2 C frozen cranberries

Blend juice & berries. Add yogurt & wheat germ & blend about 15 seconds more.

CAFE DE OLLA

The recipe for this yummy coffee is from the December 2012 issue of Vegetarian Times, page 47. It starts off, “Literally 'coffee from the pot,' this recipe offers a simple way to make coffee for a crowd, with a spiced twist that no one can resist.” Serves 8 in 30 minutes or less.

4 cinnamon sticks

4 star anise

4 allspice berries

4 whole cloves

1/2 cup packed dark brown sugar or 4 oz. piloncillo (Mexican raw sugar cones)

2 cups medium grind, dark roast coffee beans

2 cups low-fat milk

1 cup coffee liqueur, such as KahlĂșa, optional

Lightly crush cinnamon sticks, star anise, allspice, and cloves with mortar and pestle. Place in resealable plastic bag, and pound with rolling pin. Transfer to large saucepan, and add sugar and 8 cups water. Bring mixture to a boil, and simmer until sugar dissolves. Remove from heat, add coffee, and let steep 5 minutes.

Meanwhile, warm milk in small saucepan, and whisk until frothy.

Strain coffee through fine sieve or coffee filter into pitcher. Stir in coffee liqueur (if using). Serve with frothed milk.

LIZARD LOUNGE TEA

My oldest son spent several summers traveling the country, both singly and with friends. Several times, he wound up at the Rainbow Gathering, where he hooked up with a larger group of friends. Most of them had grown up in hot areas of the country, so they nicknamed themselves lizards; their area of the camp site was the lizard lounge. They would cook up their version of iced tea, which they would barter for other commodities. They were frequently asked what their secret ingredient was.

This is a scaled down version. I found that cranberry or cranberry-apple herb tea works very nicely with this, but any herbal tea can be used.

1/2 gallon apple cider

4 – 5 herbal tea bags

Place cider in a large pan or teakettle and bring to a boil. Place herbal tea bags into a large container and pour the boiled cider over the tea bags. Let steep for 15-30 minutes and cool. Very good.

Besides being Taco Tuesday, it's also Double-Post Tuesday. Today's double post deals with drinks.

Why drinks? Well, most of us get tired eating the same thing, day in and day out. Same with drinks. That said, check out the Orange Dream Shakes, the Raspberry Basil Iced Tea, and the rest of today's drinks. Enjoy!

STRAWBERRY ORANGE SMOOTHIE

This is from American Heart Association, and begins, "This fruit-filled, four-ingredient smoothie makes for a quick and easy satisfying snack, dessert, or breakfast. Frozen berries give it a frothy texture."

Makes 2 servings; Serving Size: 1 cup

Ingredients

10 frozen, unsweetened strawberries

1 cup fat-free, plain yogurt

1/2 cup 100% orange juice

1/2 teaspoon stevia sweetener

OR

In a food processor or blender, process all the ingredients until smooth.

RASPBERRY BASIL ICED TEA

This is from American Heart Association, and begins, "Refresh with this simple and deliciously fruity tea."

Ingredients

8 cups unsweetened decaffeinated iced tea

2 cups raspberries (washed)

8 fresh basil leaves (washed)

no-calorie sweetener (granulated, 6 packets)

Directions

In a 2-quart pitcher, combine tea, raspberries, basil and no-calorie sweetener. Gently stir and refrigerate overnight.

Add ice to individual glass and pour iced tea in each through a strainer to remove bits of herbs and fruit. Stir and enjoy.

ORANGE DREAM SHAKES

This absolutely divine drink comes from Publix. Makes 4 servings, total time: 10 minutes.

Ingredients

3–4 large oranges, for juice

3 tablespoons orange blossom honey

1 cup ice cubes

3 cups vanilla ice cream

Directions

Squeeze oranges for juice (1 1/2 cups).

Add to blender (in this order): juice, honey, ice cubes, and ice cream. Process until smooth; serve.

KEY LIME PIE MILKSHAKES

If you've ever visited or lived in Florida for any length of time, you've no doubt heard of Key Lime Pie. If you're fortunate, you've had a slice or two of the stuff. (If you're really fortunate, you've discovered a restaurant or two that serve great Key Lime Pie.)

One of the many pies sold in many Publix stores throughout Florida is Key Lime Pie. Like many other grocery stores throughout the country, Publix also offers recipes that can be made at home from ingredients found in store. This recipe is one of those, and is definitely worth the effort. (The most difficult part will be waiting the 30 minutes while the pie slices freeze and the ice cream thaws a little in the blender.)

While making this (and waiting that 30 minutes), you might want to listen to this 60 minutes special documentary about Jimmy Buffett.

This recipes makes 4 servings, and takes a total of 35 minutes (active time is 5 minutes).

Ingredients

3 slices Bakery Key Lime Pie

4 cups vanilla ice cream

1 cup whole milk

1/4 cup Key Lime juice

Graham crackers, for serving (optional)

8 tablespoons whipped topping, for serving

Lime for zest, for serving (optional)

Directions

Freeze pie 30 minutes (or until firm). Place ice cream in blender and let stand 30 minutes.

Add milk and lime juice to blender, then blend until smooth. Add pie slices to milkshake. Pulse 3–4 times until combined.

Crush graham crackers (if using). Divide shakes among serving glasses. Garnish with whipped topping, graham cracker crumbs, and lime zest (if desired). Serve.

ORANGE JULIUS

This comes from Kelli Foster on TheKitchn. (No, that's not a typo. If you've never checked out TheKitchn, or its sibling site, Apartment Therapy, I highly recommend checking out both. Seriously.)

Ingredients

1 cup milk (whole, 2%, or skim)

2 teaspoons vanilla extract

1 6-ounce can frozen orange juice concentrate

1/2 cup sugar (or sugar substitutes, check package for equivalence)

1 1/2 cups ice

Directions

Blend the milk and vanilla: Pour the milk and vanilla in a blender and pulse until combined.

Add the frozen concentrate: Add the frozen orange juice concentrate. Blend until fully combined with the milk.

Add the sugar and ice cubes: Blend until cubes are crushed and mixture has thickened. If things end up a little thick, just add a tablespoon of water and mix once again.

Pour and enjoy: Pour the drink into glasses. Serve with a straw and sip your way to blissful happiness.

Recipe Notes

I used 2% milk, though you can also use whole or skim milk with equally delicious results.

If you don't have orange juice concentrate (or aren't into buying it), I'd suggest freezing fresh orange juice into cubes (or in an 8x8-inch pan, then break it into chunks). Without that added iciness, the overall texture of the drink will change dramatically, and adding more ice in the end just doesn't work. (You end up with a more-soupy, less-flavored version of the original.)
