Wednesday Recipes

Wednesday - half-way through the work week (yay!). Here are six yummy recipes to help you through the day, including Peanut Butter Cup Pie and Tex-Mex Rice and Bean Casserole. Enjoy!

GREEN TEA, BLUEBERRY, AND BANANA SMOOTHIE

This recipe, as well as the next one (Blueberry-Lemon Scones), was found in an article on Prevention, titled “11 Recipes with Fresh Blueberries.” Click here to see the article and all twelve recipes.

SERVINGS: 1

3 tbsp water

1 green tea bag

2 tsp honey

1 1/2 C frozen blueberries

1/2 med banana

3/4 C calcium fortified light vanilla soy milk

Microwave water on high until steaming hot in a small glass measuring cup or bowl. Add tea bag and allow to brew 3 minutes. Remove tea bag. Stir honey into tea until it dissolves.

Combine berries, banana, and milk in a blender with ice crushing ability.

Add tea to blender. Blend ingredients on ice crush or highest setting until smooth. (Some blenders may require additional water to process the mixture.) Pour smoothie into tall glass and serve.

NUTRITION (per serving) 269 cal, 3.7 g pro, 3.4 g carb, 7.8 g fiber, 2.7 g fat, 0.2 g sat fat, 52.3 mg sodium

BLUEBERRY-LEMON SCONES

SERVINGS: 12

Scones

3 C all-purpose flour

1/2 C granulated sugar

Zest of 1 lemon

1 tsp baking powder

1 tsp baking soda

1/4 C cold butter, cut into small cubes

1 C buttermilk

1/4 C unsweetened applesauce

1 C fresh or frozen blueberries

Glaze

1 1/2 – 2 Tbsp fresh lemon juice

3/4 c confectioners' sugar

To Make the Scones: Heat oven to 400°F. Line 2 baking sheets with parchment. Put flour in large bowl. Reserve 1 Tbsp of the flour in small bowl. Add granulated sugar, lemon zest, baking powder, baking soda, and 1/2 tsp salt to large bowl with flour. Cut in butter with pastry blender or hands until fine crumbs form.

Combine buttermilk and applesauce. Gradually mix with dry ingredients, stirring gently to form dough. Toss berries with reserved flour in small bowl and gently fold into batter. (Mix well, but do not overwork dough.) Separate into 2 equal portions.

Flour a clean surface and your hands. Press dough into two 1"-thick rounds. Cut each round into 6 wedges.

Transfer scones to prepared baking sheets. Bake until firm to the touch and golden brown on top, 15 to 18 minutes. Cool on rack.

To Prepare the Glaze: Gradually mix lemon juice into confectioners' sugar in small bowl until just pourable in consistency. Drizzle over scones. Cover leftovers with plastic wrap for up to 3 days.

FROZEN PEANUT BUTTER CUP PIE

This comes from Diana Rattry, Southern Cooking guide for The Spruce. Diana wrote, “This awesome frozen peanut butter cup pie is the perfect dessert or weekend treat for a hot summer day. The classic graham cracker pie shell and simple cream cheese and peanut butter filling take no more than 10 to 15 minutes to prepare; just mix, freeze, and enjoy!

“To make this even easier, use a store-bought deep-dish graham cracker pie shell. An oreo or chocolate cookie crust would be an excellent choice as well.

“Freeze the peanut butter cups to make chopping them much easier.”

Prep Time: 14 minutes; Cook Time: 0 minutes; Yield: 8 servings.

Ingredients

Crust

1 3/4 cups crushed graham cracker crumbs

1/3 cup melted butter

1/4 cup brown sugar or granulated sugar

Filling

8 ounces cream cheese, softened

1 cup sweetened condensed milk using a liquid measuring cup

3/4 cup creamy peanut butter

1/4 cup confectioners' sugar

1 tub (8 ounces) frozen whipped topping, thawed

1 cup chopped peanut butter cups, frozen for easier chopping, plus more for garnish if desired

Sweetened whipped cream or whipped topping, for garnish

Warm chocolate syrup or chocolate sauce, for garnish

Directions

In a medium bowl, combine the crushed graham crackers with melted butter and 1/4 cup of brown sugar or granulated sugar. Mix well and press firmly over the bottom and up the sides of a 9-inch deep-dish pie plate. Cover and refrigerate the crust to chill for at least 1 hour.

In a large bowl, combine the softened cream cheese, sweetened condensed milk, peanut butter, and confectioners' sugar. Beat on medium speed of an electric mixer until smooth and well blended. Fold in the whipped topping until blended, and then fold in the chopped peanut butter cups.

Fill the chilled graham cracker pie shell with the peanut butter mixture.

Cover the pie tightly and freeze for at least 2 hours, or until the filling is firm.

Set the frozen pie out at room temperature for a few minutes before slicing.

Serve with a dollop of whipped cream or whipped topping and drizzle with warm chocolate sauce. Sprinkle with reserved chopped peanut butter cups, if desired.

Tips:

If possible, freeze the pie for several hours or overnight before serving.

Give the pie about 10 minutes at room temperature to soften slightly before slicing.

If desired, bake the crust in a preheated 400 F oven for 10 minutes. Cool completely and chill slightly before filling.

Make this peanut butter sauce to drizzle over the pie along with the chocolate syrup.

ITALIAN GRILLED STUFFED PEPPERS

This is from Kraft, and begins, “Discover these Italian Grilled Stuffed Peppers and bring a little bit of Italy into your kitchen! These grilled stuffed peppers are delicious!”

Ingredients

1-3/4 cups water, divided

1-1/2 cups instant brown rice, uncooked

2 cups frozen BOCA Veggie Ground Crumbles

1 small zucchini, chopped

1 tsp. dried Italian seasoning

1-1/2 cups OLIVO by CLASSICO Traditional Pasta Sauce, divided

1-1/2 cups KRAFT 2% Milk Shredded Mozzarella Cheese, divided

1 large each red, yellow and green pepper, cut lengthwise in half, seeded

Directions

Heat grill to medium-high heat.

Bring 1-1/2 cups water to boil in medium saucepan. Add rice; cover. Simmer 5 min. Remove from heat; let stand 5 min. Stir in crumbles, zucchini, seasoning and 1 cup each pasta sauce and cheese; spoon into peppers.

Place each filled pepper half on center of 12-inch-square sheet heavy-duty foil. Top with remaining sauce and cheese. Bring up foil sides. Spoon 1 Tbsp. of the remaining water onto bottom of each foil packet. Double fold top and ends to seal packets, leaving room for heat circulation inside.

Grill 20 to 25 min. or until peppers are crisp-tender and filling is heated through (160ºF).

TUSCAN-STYLE QUINOA

This is from the November 2005 issue of Runner’s World.

1 1/2 C quinoa

3 C water

2 Tbls olive oil

3 coves garlic, minced

1/2 medium red onion, chopped

6 C shredded Swiss chard

1 large tomato, diced

1/2 tsp chili pepper flakes

Salt and pepper

1/3 C Parmesan cheese

Place one tablespoon of the olive oil in saucepan, heat to medium-high, pour in quinoa to toast for four minutes. Cover with water, turn down to simmer, cook for 15 minutes until tender. Heat nonstick skillet with remaining olive oil & sauté garlic & onion until golden, about 5 minutes. Add chard & sauté until wilted. Add tomato & heat through. Fold in cooked quinoa, season with salt, pepper, & chili flakes to taste, & top with Parmesan cheese. Let stand 3-5 minutes to blend flavors.

TEX-MEX RICE AND BEAN CASSEROLE

This is from Weight Watchers. Total Time: 55 minutes; Prep: 15 minutes; Cook: 40 minutes; Serves: 6; Difficulty: Easy; Points: 5

Ingredients

1 spray cooking spray

1 cup canned yellow corn, drained, or frozen, thawed corn kernels

1 Tbsp canned green chili peppers, chopped, mild or hot

15 oz canned pinto beans, rinsed and drained

1 cup long grain cooked brown rice, fresh or day old

7/8 cup Weight Watchers Reduced fat Mexican blend shredded cheese

3/4 cup fat free sour cream

1/4 tsp chili powder

1/4 tsp table salt

1/8 tsp black pepper

2 Tbsp uncooked scallion(s), chopped (dark green part only)

Instructions

Preheat oven to 350ºF. Coat a 2-quart glass baking dish with cooking spray.

In a large bowl, combine corn, chilies, beans, rice, 3/4 cup of cheese, sour cream, chili powder, salt and pepper; stir in scallions.

Spoon mixture into prepared baking dish and bake for 30 minutes. Remove from oven and sprinkle with remaining 2 tablespoons of cheese. Return to oven and bake until cheese melts and casserole is slightly bubbly, about 10 minutes more. Let stand for 5 minutes to firm up before slicing into 6 pieces. Yields 1 piece per serving.

Notes

Change the beans or cheese to your liking: white or black beans, reduced-fat cheddar or Monterey Jack cheeses all work well.If you want to brown the cheese more, place the dish (make sure it's broiler safe) under the broiler for a minute or two.

Friday Recipes

It's Friday! Here's to weekends...And here are six recipes to help you through the weekend, including Tex-Mex Rice and Bean Casserole and Peach and Raspberry Crumble. Enjoy!

THE CAKE

This recipe was given to my mom by a friend, who worked as a lawyer for years. She was married to an Episcopal priest; both were involved in the civil rights movement.

This recipe can be found in my e-cookbook Off the Wall Cooking.

1 package (18 oz.) yellow cake mix

1 egg, unbeaten

3/4 C oil

1 package (small) vanilla pudding

3/4 C sherry

Preheat oven at 350 degrees. Put ingredients in bowl. Beat for 5 minutes. Pour into greased tube cake pan or mold. Bake for 45 minutes.

PASTA PRIMAVERA

This comes from Publix. Makes 4 servings.

This recipe originally called for 1 cup chicken or veggie broth. Obviously, I've deleted the chicken broth and am keeping it as only veggie broth.

12 ounces of dried linguine, ziti, or penne pasta

2 Tbl olive oil

5 cloves garlic, minced

2 green onions, sliced

2 medium carrots, sliced

1 medium red sweet pepper, sliced

1 medium yellow sweet pepper, sliced

1 small zucchini, chopped

1/4 tsp salt

1/4 tsp black pepper

1 C chicken or veggie broth

1 C snipped fresh basil

1/4 C finely shredded Parmesan cheese

2 Tbls pine nuts, toasted

Cook pasta according to package directions; drain. Return pasta to saucepan; cover & keep warm.

Meanwhile, in large skillet, heat olive oil. Add garlic & onions; cook for 30 seconds. Stir in carrots & sweet peppers. Cook & stir for 3 minutes. Add zucchini, salt, & pepper. Stir in chicken or veggie broth. Bring to boil; reduce heat. Simmer, covered, for 1 minute or until vegetables are just tender.

Stir vegetable mixture & basil into pasta & toss. Transfer to serving dish. Sprinkle with cheese & pine nuts. Makes 4 servings.

Per serving: Calories: 443; fat: 20 g (9 g sat. fat); chol: 38 mg; sodium: 328 mg; carbs: 51 g; fiber: 6 g; protein: 14 g.

PEACH AND RASPBERRY CRUMBLE

This is from Diabetes Self-Management

Yield: 6 servings.

Prep time: 15 minutes. Baking time: 30-35 minutes.

Butter-flavor cooking spray

1 can (15 oz) sliced peaches in juice, drained

1 package (12 oz) unsweetened frozen raspberries, thawed

1 C quick-cooking oats, uncooked

2 Tbs brown sugar

1 1/2 tsp cinnamon

3 Tbs reduced-calorie stick margarine, melted

2 Tbs honey

Preheat oven to 350 degrees. Coat 8”X8” baking pan with cooking spray. Arrange peach slices evenly in bottom of the pan. Sprinkle raspberries evenly over peaches. Set aside. In bowl, combine oats, brown sugar, and cinnamon and mix with fork, breaking up brown sugar clumps. Add margarine & honey; stir to combine. Sprinkle topping over fruit. Bake uncovered for 30 – 35 minutes, or until fruit is bubbly. Portion into 6 equal servings. Serve alone or over low-fat, no-sugar-added vanilla ice cream.

TUSCAN-STYLE QUINOA

The POINTS® Value at that time listed this as 3 points.

Servings: 8; Preparation Time: 20 min; Cooking Time: 90 min; Level of Difficulty: Moderate

Ingredients

1 sprays cooking spray

1 Tbsp butter

1 medium onion, thinly sliced

2 Tbsp all-purpose flour

2 cup fat-free skim milk

2 pound Yukon Gold potatoes, thinly sliced

1 cup low-fat shredded cheddar cheese

1 tsp table salt

1/4 tsp black pepper

Instructions

Preheat oven to 375°F. Coat a 2-quart covered baking dish with cooking spray.

Melt butter in a large pot over medium heat. Add onion and cook, stirring occasionally, until onion begins to brown, about 5 minutes. Stir in flour; add milk slowly, stirring. Add potatoes and stir to mix. Bring to a boil. Stir in 3/4 cup of cheese, salt and pepper. Pour mixture into prepared baking dish and level out surface. Bake for 1 hour, uncovered. Cover and bake until potatoes are fork-tender, about 20 minutes more.

Change oven temperature to broil. Sprinkle remaining cheese over potatoes. Broil 6 inches from the heating element until the cheese is golden brown, about 1 to 2 minutes. Allow to cool for 5 minutes before slicing into 8 pieces.

Side Dishes

With Easter this weekend, we all have our favorite main holiday dish, whether we're vegetarian or not.

But wait! What about side dishes! You know, those extras that just round out the meal.

Here are six sides that'll round out your meal very nicely, including the tasty (and easy) Gourmet Green Beans and Curried Potatoes. Enjoy!

Note: Check out last Friday's post for several more recipes to try for your sides. I highly recommend my mom's Sweet Potato Soufflé. Very yummy!

CURRIED LENTILS WITH BUTTERNUT SQUASH

This is from the October 2007 issue of Runner’s World.

1 C dry lentils

1 small butternut squash

1 Tbls olive oil

1 Tbls curry powder

1 tsp grated gingerroot

1 tsp chili powder

Salt & pepper to taste

1/4 C shredded coconut (optional)

Spray 2-quart baking dish with cooking spray and set aside. Pour lentils into deep pot and cover with cold water. Bring water to boil, reduce heat, and add raw chunks of the squash (leave skin on to add nutrients and texture to dish). Simmer until squash is soft (about 1 hour). Remove pot from heat, drain, and set aside. With tongs, pull out chunks of squash and mash roughly, skins and all, with a fork, ricer, or potato masher.

Preheat oven to 400 degrees F. In large bowl, mix drained cooked lentils and mashed squash with olive oil and all the spices (including salt and pepper). Spoon mixture into baking dish. At this point, you can cover the dish and refrigerate for a few hours or overnight. When you’re ready, bake until piping hot, about 20 minutes if you’re putting it into the oven right after mixing, or 25-30 minutes if it’s been refrigerated. Serve warm garnished with shredded coconut if you like and with a serving of wild greens, such as blanched chard. Serves two as a hearty main dish or four as a side dish.

GOURMET GREEN BEANS

This is from Publix Supermarket's April 2006 issue of Aprons

2 (12-ounce) bags fresh snipped green beans (snapped, if desired)

1 (8-ounce) package sliced baby portabella mushrooms

3/4 cup water

2 tablespoons garlic butter

1 tablespoon sesame seeds

1 teaspoon seasoned salt

Place beans, mushrooms, and water in microwave-safe bowl. Cover and microwave on HIGH 12–14 minutes, stirring once, until crisp tender.

Preheat large sauté pan on medium-high 2–3 minutes. Place butter in sauté pan and swirl to coat. Add sesame seeds and heat 1–2 minutes, stirring often, until lightly browned.

Drain beans and mushrooms and add to sauté pan. Sprinkle with seasoned salt. Reduce heat to medium, cover, and cook 6–8 minutes, stirring occasionally, until desired tenderness. Serve.

Prep Time: 15 minutes; Bake Time: 45 – 50 minutes; Serves: 8

Cooking spray

6 – 7 baking apples, peeled, cored, & sliced

1/2 C brown sugar

1/3 C chopped walnuts

1/4 C all-purpose flour

Dash of vanilla extract

1 refrigerated ready-made pie crust

2 Tbs butter, cut into pieces

Preheat oven to 350 degrees. Coat a baking sheet with cooking spray & set aside. Place apples, sugar, walnuts, flour, & vanilla extract in large mixing bowl & toss well. Transfer pie crust to baking sheet. Spoon apple mixture into center of pie crust & fold up sides of pastry to capture apples & juices. Dot with butter. Bake for 45-50 minutes or until crust is golden brown.

Per serving: 207 Calories; 2 g Protein, 27 g Carbo., 2 g fiber, 11 g total fat (3 g sat, 4 g mono, 4 g poly), 110 mg Sodium, Vitamin B1 (thiamin), E

CURRIED POTOATOES

This is from the June 2008 Vegetarian Times, page 80. The recipe begins, “Serve this dish on its own or with steamed rice.”

1 1/2 Tbs. vegetable oil

2 medium onions, diced (3 cups)

3 cloves garlic, minced (1 Tbs.)

4 large Yukon gold potatoes, peeled & cut into chunks

3 carrots, peeled & cut into 2-inch pieces (1 cup)

3 Tbs. Madras curry powder

1 15-oz. can black beans

3 medium tomatoes, coarsely chopped (1 1/2 cups)

1 cup low-sodium vegetable broth

2 jalapeno chiles, seeded and finely chopped (1/4 cup)

1 tsp. balsamic vinegar

Heat oil in large skillet over medium heat. Add onions and garlic & cook 5 – 7 minutes, or until onions are soft and translucent. Stir in potatoes, carrots and curry powder and cook 4 minutes.

Add beans and their liquid, tomatoes, broth, jalapeno chiles, vinegar an 1 cup water; season with salt and pepper. Cover and simmer 45 minutes or until potatoes are flaky amd carrots are cooked through, stirring occasionally.

Thursday Recipes

It's a rainy morning here in Florida, with a 40 percent chance of rain. (Yes, it's 40-percenting as I write this.) While it's supposed to clear up by this afternoon, it's also supposed to be cooler. (I can almost hear someone thinking, "Cooler? It's Florida!")

But no matter. Here are six yummy recipes to try in any weather, including Rosalie’s Cheesecake and Five Bean Soup. Enjoy!

FRESH VEGGIE PASTA

Ingredients

1 lb. thin spaghetti or angel hair pasta

4 medium tomatoes, chopped

1/2 small white onion, finely chopped

1 lb. shelled edamame, steamed

1/3 cup extra virgin olive oil

Salt and freshly ground black pepper

Instructions

Cook pasta according to package directions. Place tomato, onion, and edamame in large bowl. Drain pasta and add to bowl. Add oil, and salt and pepper to taste. Toss to combine. Makes 6 to 8 servings.

SPAGHETTI WITH EGGS

Ingredients

3 cups tomato sauce

4 Tbsp. butter

1 medium onion, peeled

6 large hardboiled eggs, peeled

1 lb. spaghetti

Grated Romano cheese

Instructions

In a deep, medium saucepan, heat the sauce over low heat until warmed through. Add butter and onion and stir until butter is melted and combined. Add eggs and cook over low heat. Separately, cook the pasta according to package. Drain and divide among 4 serving bowls. Discard onion and divide sauce, adding 3 egg halves to each bowl. Top with cheese and serve. Makes 4 servings.

ROSALIE'S CHEESECAKE

We lived in New York (state, not city) for a majority of my childhood (along with several years in Connecticut). This is from one of our New York neighbors.

This recipe can be found in my e-cookbook Off the Wall Cooking.

3 egg yolks

1/2 C evaporated milk

3/4 C sugar

1 1/2 tsp. vanilla

2 T unbleached flour, sifted

juice of 1/2 lemon

8 oz. (1 C) cottage cheese

3 T melted butter

3 egg whites

8 oz. cream cheese

Beat egg yolks with sugar and flour until lemon yellow.

Add cream cheese, cottage cheese and flour.

Add milk, vanilla and lemon juice. Beat all together and add melted butter during process.

Stiffly beat egg whites and fold into mixture.

Put into buttered spring form pan and bake at 350 degrees until brown, about 1 hour.

FIVE BEAN SOUP

Serves 10. Prep Time 10 minutes. Cook Time 40 minutes.

2 Tbs Eden Extra Virgin Olive Oil

3 cloves garlic, minced

1 medium onion, diced

1/4 C celery, diced

1/2 C carrots, diced

3 Tbs barley, rinsed

3 C water

1 can Eden Organic Pinto Beans

1 can Eden Organic Black Beans

1 can Eden Organic Kidney Beans

1 can Eden Organic Navy Beans

1 can Eden Organic Garbanzo Beams

1 C sweet corn, fresh or frozen

1 can Eden Organic Diced Tomatoes with Roasted Onion

1/2 tsp dried basil

1 1/2 tsp crushed bay leaf

1 tsp Eden Sea Salt – French Celtic

Heat oil in soup pot, sauté garlic & onion until onion is translucent. Add water, celery, carrot & barley, beans, corn, tomatoes & herbs. Add salt, cover & simmer 30 minutes. Serve.

GOURMET GREEN BEANS

This is from Publix Supermarket's April 2006 issue of Aprons

2 (12-ounce) bags fresh snipped green beans (snapped, if desired)

1 (8-ounce) package sliced baby portabella mushrooms

3/4 cup water

2 tablespoons garlic butter

1 tablespoon sesame seeds

1 teaspoon seasoned salt

Place beans, mushrooms, and water in microwave-safe bowl. Cover and microwave on HIGH 12–14 minutes, stirring once, until crisp tender.

Preheat large sauté pan on medium-high 2–3 minutes. Place butter in sauté pan and swirl to coat. Add sesame seeds and heat 1–2 minutes, stirring often, until lightly browned.

Drain beans and mushrooms and add to sauté pan. Sprinkle with seasoned salt. Reduce heat to medium, cover, and cook 6–8 minutes, stirring occasionally, until desired tenderness. Serve.

TUSCAN-STYLE QUINOA

This is from the November 2005 issue of Runner’s World.

1 1/2 C quinoa

3 C water

2 Tbls olive oil

3 coves garlic, minced

1/2 medium red onion, chopped

6 C shredded Swiss chard

1 large tomato, diced

1/2 tsp chili pepper flakes

Salt and pepper

1/3 C Parmesan cheese

Place one tablespoon of the olive oil in saucepan, heat to medium-high, pour in quinoa to toast for four minutes. Cover with water, turn down to simmer, cook for 15 minutes until tender. Heat nonstick skillet with remaining olive oil & sauté garlic & onion until golden, about 5 minutes. Add chard & sauté until wilted. Add tomato & heat through. Fold in cooked quinoa, season with salt, pepper, & chili flakes to taste, & top with Parmesan cheese. Let stand 3-5 minutes to blend flavors.

Saturday Post

I know, I almost never post on weekends. But I figured I might extend my posting (at least temporarily) to six days a week - at least for a couple of weeks to test it out.

Hope your weekend is going well. Here are six recipes to help you through the weekend, including Zucchini Lasagna and Rosemary Olive Oil and Orange Cake. Enjoy!

ROSEMARY, OLIVE OIL AND ORANGE CAKE

This comes from Yotam Ottolenghi in The New York Times cooking e-newsletter. Yotam wrote, “This is a very light cake, similar to a lemon drizzle but with a ton more flavor. The rosemary and orange add delicious floral notes. A fluted Bundt pan looks especially nice. Prepare the crystallized rosemary sprigs at least 6 to 8 hours (or the day before) before serving the cake, which will keep in a sealed container at room temperature for up to three days.”

Yield: 10 servings.

Ingredients

For the Crystallized Rosemary:

10 small rosemary sprigs, no more than 1 inch each in size (see note)

1 egg white, lightly whisked

2 teaspoons granulated or superfine sugar (caster sugar)

For the Cake:

About 2 tablespoons unsalted butter, softened, for greasing the pan

2 cups all-purpose flour (plain flour), more to flour the pan

3/4 cup extra-virgin olive oil

1/2 cup plus 1 teaspoon superfine sugar (caster sugar)

1 tablespoon finely grated orange zest (from about 1 1/2 oranges)

1 1/2 tablespoons packed finely chopped rosemary leaves

2 large eggs

1/2 cup sour cream

2 teaspoons baking powder

1/4 teaspoon salt

For the Orange Icing:

1 1/2 tablespoons freshly squeezed orange juice

2 1/2 teaspoons freshly squeezed lemon juice

1 3/4 cups sifted confectioners’ sugar, or 1 1/2 cups sifted icing sugar

Preparation

At least 6 hours before you plan to ice the cake, prepare the crystallized rosemary: Brush rosemary on all sides with a little of the egg white and then dip it in the sugar, so the needles are lightly coated on all sides. Set aside on a wire rack to dry. Repeat with remaining rosemary.

Make the cake: Heat oven to 325 degrees Fahrenheit. Generously grease a 9-inch/23-centimeter Bundt pan with half the butter and refrigerate for 10 minutes. Butter again, generously, and then flour it, tapping away the excess.

Put olive oil, superfine sugar, orange zest and chopped rosemary leaves in the bowl of an electric mixer fitted with the whisk attachment. Whisk on medium speed until combined, then add eggs, one at a time. Whisk for another minute, until thick, then add sour cream and mix until combined on low speed. Scrape down the sides of the bowl and the whisk.

Sift flour, baking powder and salt together into a small bowl. Add the dry ingredients to the olive oil mixture and mix until combined. Increase speed to high and whisk for 1 minute.

Scrape batter into the Bundt pan and smooth the top with a small spatula. Bake for 30 to 35 minutes, or until cake is cooked and a skewer inserted into the middle comes out clean. Remove from oven and let cool for 10 minutes before inverting onto a serving plate. (You may want to trim the cake at this stage, if it rises unevenly, to allow it to sit flat on the plate.)

Prepare the icing: In a small bowl, whisk together orange juice, lemon juice and confectioners’ sugar until smooth. When the cake has cooled, drizzle icing on top, allowing it to drip down the sides of the cake, then top with the crystallized rosemary and serve.

ZUCCHINI LASAGNA

This recipe begins, “Substituting vegetables for white carbs not only adds nutrition, but flavor.”

Ingredients

3 zucchinis

1 1/2 cups part-skim ricotta cheese

3/4 cup parmesan cheese

2 cups mozzarella cheese (divided)

1 tsp fresh oregano leaves (chopped, or 1 teaspoon dried oregano)

2 tsp chopped fresh thyme (or 1 teaspoon dried thyme)

1 tbsp fresh basil (chopped, or 1 teaspoon dried basil)

1 whole eggs

1 jar marinara sauce (sugar-free)

1/4 tsp salt

1/4 tsp pepper

Directions

Preheat the oven to 375 degrees F.

Using a mandolin or a knife, slice the zucchini lengthwise into 1/4-inch planks. Place zucchini on a baking sheet, drizzle with olive oil on front and back, then sprinkle with salt, pepper, and oregano. Roast for 20-25 minutes.

Combine in a mixing bowl the cottage cheese, parmesan, egg, and mozzarella.

Layer in a casserole pan, 1-inch marinara, 1/2 of zucchini slices, 1/2 of cheese mixture, then repeat layering being sure to end with cheese on top. NOTE: There may be marinara left over. If so, refrigerate for later use.

Cover the pan with foil, and bake for 3o minutes, or until cheese is melted and lasagna is heated through.

Remove the foil and cook for an additional 3-5 minutes. Garnish with fresh thyme leaves and basil if desired. Allow lasagna to rest for 5-10 minutes before serving.

ONION SUPREME

My dad came for a week at Christmas, 1987. He fixed this to go with Christmas dinner, along with several other veggies. The day I drove him to Tampa International to fly back to New York, we went for coffee at a shop in the airport. When I asked for a copy of this, he grabbed a paper napkin and wrote down the recipe. It’s a great way to fix onions; I’ve always had onions in things, but never as a side dish. However, this is incredibly easy, as well as fantastic.

8 – 10 potatoes

2 leeks (discard green), sliced thin

4 bunches scallions (discard green), sliced thin

2 cloves garlic, sliced thin

3-4 yellow onions, sliced thin

1 stick butter or margarine

20 small white onions

1 1/2 C half & half

Melt butter over low heat & sauté leeks, scallions, garlic & yellow onions for 45 minutes. Meanwhile, cook white onions in enough water to just barely cover. Add white onions (after 45 minutes) to skillet & pour in half & half. Cook over low heat for 10 minutes more & serve.

JEAN'S SPECIAL POTATOES

Jean and I used to spend many hours on the phone together. One afternoon, we spent the better part of 30 minutes talking about food. I told her about Dad’s Onion Supreme; she, in turn, gave me this recipe.

8 – 10 potatoes

8 oz. sour cream

8 oz. cream cheese

1/2 C butter

2 tsp. chives

Peel and cook potatoes. Whip cream cheese and add potatoes. Mix sour cream, butter and chives. Add to potato mix. Cover and chill overnight (or several hours). Put in greased 2-quart casserole & cover; bake in oven at 350 degrees for 1 hour.
