Pasta

I can't remember a time when I didn't love Pasta. To that end, here are six pasta recipes to help you through the day, including Tofu and Spinach Stuffed Shells and Restaurant-Style Spinach Manicotti. Enjoy!

PASTA ALLA TRAPANESE (SICILIAN TOMATO PESTO)

This is from John Mitzewich (aka Chef John) at AllRecipes.

For this recipe, John wrote, "I'm excited to share my version of pasta alla Trapanese, featuring Sicily's amazing tomato pesto. I love the green Genovese-style pesto, but when super-sweet cherry tomatoes are in season, I really believe this is the best pesto."

Ingredients

1/2 cup whole roasted almonds

4 cloves garlic

1 teaspoon kosher salt, plus more to taste

1 cup grated pecorino Romano cheese, plus more to taste

1 cup packed fresh basil leaves

4 mint leaves (optional)

1/2 cup extra virgin olive oil

1 pound red cherry tomatoes or red grape tomatoes

1 pound busiate pasta, or other curly shaped pasta, such as fusilli

Directions

Bring about 2 cups of water to a boil, remove from the heat, and stir in almonds; let sit for 3 to 4 minutes. Drain, and once cool enough to handle, rub skins off with your hands; alternately; transfer drained almonds to a kitchen towel, then fold up the towel and rub almonds until skins come off.

Crush sliced garlic with kosher salt in a mortar and pestle into a smooth paste. Alternately, place garlic on a board and sprinkle kosher salt on top; use the flat side of the knife to flatten, mash, and scrape the garlic and salt mixture until it is a smooth paste.

Add peeled almonds to the jar of a blender, followed by the cheese, basil, mint, garlic paste, oil, and tomatoes. Add the ingredients in this order, so that the almonds and cheese have a chance to grind before the wetter ingredients mix in.

Begin to pulse blender on and off until almonds and cheese are ground, then continue to pulse until remaining ingredients are incorporated. Blend on high until the pesto is as coarse or smooth as you like.

Taste for salt, and adjust. Set aside while pasta is cooking.

Bring a large pot of lightly salted water to a boil. Cook busiate pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Transfer pasta into a bowl with a strainer. Reserve starchy cooking liquid.

Add about 1/3 cup of the pasta water into the bowl, and then transfer in the pesto, along with a large pinch of salt, and toss to coat. More pasta water can be added to adjust the texture. Once mixed, add another optional handful of cheese, and toss one last time. Serve immediately.

CREAMY TOMATO SPAGHETTI WITH PRESERVED LEMON

In this quick and simple pasta, fragrant lemon permeates the tomato paste, creating a beautifully aromatic (and pantry-friendly) sauce with the addition of heavy cream. Spaghetti is tossed with the sauce, which ends up subtly sweet and yet bright and tangy — a comforting weeknight twist on the always beloved tomato pasta."

Ingredients

Fine sea salt and black pepper

3 tablespoons olive oil

1/2 medium yellow onion, finely chopped

2 garlic cloves, minced or crushed in a garlic press

5 tablespoons tomato paste

1/2 preserved lemon, seeded and minced (about 2 tablespoons), plus more to taste

2 teaspoons honey, plus more to taste

1 cup heavy cream

1 pound spaghetti (or other long pasta)

Finely grated Parmesan (optional), for garnish

Preparation

Place a large pot of water over high heat, add 1 teaspoon salt and bring to a boil.

Meanwhile, heat oil in a large pan or pot over medium-low. Add the onion, garlic, tomato paste, 1 tablespoon of the minced preserved lemon, the honey, 1/2 teaspoon salt and 1/4 teaspoon pepper, and cook, stirring frequently, until fragrant and the onion starts to soften, about 5 minutes.

Mix in the cream, taste the sauce and adjust the seasoning with more preserved lemon, honey and salt as necessary. Bring to a gentle simmer, then turn off the heat and cover with a lid to keep the sauce warm.

Cook the spaghetti in the boiling water until almost al dente according to the package instructions, 6 to 7 minutes. Reserve 1 cup of the cooking water, then drain pasta.

Over medium-low heat, add the spaghetti to the sauce along with 1/2 cup of the reserved cooking water, and toss to coat. Continue to toss until the spaghetti is al dente, adding more cooking water as needed to achieve a glossy sauce that clings to the pasta, 3 to 4 minutes.

Serve warm, topped with Parmesan if desired.

ONE-POT RATATOUILLE PASTA

This is from Vivian Chan-Tam in The New York Times cooking enewsletter. For this recipe, Vivian wrote, "This one-pot dish that’s ready in 30 minutes is a weeknight dinner must make. The pasta has all the beloved flavors and vegetables of the classic summer stew, ratatouille, but made faster and fresher. Cooking the eggplant, tomatoes, zucchini and bell pepper in stages allows the flavors to be drawn out more and for the textures to vary from bite to bite. Choosing a shorter pasta shape with ridges or curves will allow even more of the summery sauce to hold on to those noodles."

2 tablespoons tomato paste

1 teaspoon Italian seasoning

1 small globe eggplant, cut into 1-inch pieces (about 5 cups)

1 medium onion, coarsely chopped

3 medium plum tomatoes, cut into 1-inch pieces

3 cloves garlic, finely chopped

Salt and black pepper

1 pound short pasta, such as rotini

2 medium zucchini, cut into 1-inch pieces

1 medium orange bell pepper, cored and cut into 1-inch pieces

2 basil sprigs

Freshly grated Parmesan (optional)

Preparation

Pour 1/4 cup oil into a large, wide pot or Dutch oven over medium. Add the tomato paste and gently fry, stirring occasionally, until slightly caramelized, 3 to 5 minutes. (The oil will become a bright shade of orange.) Add the Italian seasoning and stir until combined.

To the pot, add the eggplant, onion, half the tomatoes, all the garlic and 1 teaspoon salt. Toss until vegetables are coated with the tomato-infused oil. The eggplant will absorb most if not all the oil. Add 3 cups water, the pasta and 1 teaspoon salt. Bring to a boil, reduce heat to medium, cover and cook the pasta for half the time listed for al dente on the package directions, 4 to 6 minutes.

Remove the lid and stir well to combine pasta with the sauce. Add the zucchini, peppers, remaining tomatoes and a few grinds of black pepper. Fold to combine, and reduce heat to medium-low. Cover and cook until pasta is al dente and peppers are crisp-tender, 2 to 3 minutes. Remove lid, and turn off heat. Taste and season with salt and pepper as desired. Serve in shallow bowls and top with torn basil leaves. Drizzle with olive oil and sprinkle with Parmesan, if using.

RESTAURANT-STYLE SPINACH MANICOTTI

This is from Everyday Diabetic Recipes, and begins, "Who says you need fancy restaurants for classic Italian dishes? Our Restaurant-Style Spinach Manicotti is a lighter version of your favorite baked pasta dish, so you can still enjoy this Italian dish, in moderation of course!"

Ingredients

1 (8-ounce) package manicotti shells (14 shells)

1 small onion, diced

2 garlic cloves, minced

1/4 pound fresh mushrooms, diced

1 (32-ounce) container fat-free ricotta cheese

1 cup (4 ounces) shredded part-skim mozzarella cheese

1 egg

1 (10-ounce) package frozen spinach, thawed and squeezed dry

1-1/2 teaspoon Italian seasoning

1/2 teaspoon black pepper

2 cups light spaghetti sauce

2 tablespoons freshly grated Parmesan cheese

Directions

Cook the manicotti shells according to the package directions, omitting the salt; drain, rinse, drain again, and place in a large baking dish. Preheat the oven to 400 degrees F.

Coat a small saucepan with nonstick cooking spray. Add the onion and garlic and saute over medium heat until tender. Add the mushrooms and saute until brown.

Meanwhile, in a large bowl, combine the ricotta and mozzarella cheeses, the egg, spinach, Italian seasoning, and pepper. Add the onion mixture; mix well.

Spoon the mixture into the manicotti shells (see Note), top with the spaghetti sauce, and sprinkle with the Parmesan cheese. Cover with aluminum foil and bake for 30 to 35 minutes, or until heated through.

Note

To fill the shells, carefully place the cheese mixture in a large resealable plastic storage bag with a corner snipped off. Then you can just squeeze the filling into the manicotti shells, using the storage bag like a pastry bag. Simple, right?

MEXICAN PASTA

This is from allrecipes, and was submitted by someone named Mimi. The recipe begins, "Mexican pasta is a great vegetarian dish with a kick!"

Ingredients

1/2 pound seashell pasta

2 tablespoons olive oil

2 onions, chopped

1 green bell pepper, chopped

1/2 cup sweet corn kernels

1 (15 ounce) can black beans, drained

1 (14.5 ounce) can peeled and diced tomatoes

1/4 cup salsa

cup sliced black olives

1-1/2 tablespoons taco seasoning mix

salt and pepper to taste

Directions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

While pasta is cooking, heat olive oil over medium heat in a large skillet. Cook onions and bell pepper in oil until lightly browned, about 10 minutes.

Stir in corn and heat through. Stir in black beans, tomatoes, salsa, olives, seasoning mix, and salt and pepper and cook until thoroughly heated, about 5 minutes.

Toss sauce with cooked pasta and serve.

TOFU AND SPINACH STUFFED SHELLS

This comes from the April/May 2015 issue of Vegetarian Times, page 40. It begins, “Olive oil–poached garlic gives tofu a deep, mellow flavor, while miso and vinegar provide a cheese-like tang.” Serves 6.

Ingredients

6 oz. jumbo pasta shells

12 cloves garlic, peeled and thinly sliced

1/4 cup olive oil

1 16-oz. block firm tofu, drained, rinsed, and patted dry

2 Tbs. unpasteurized apple cider vinegar

2 tsp. lemon juice

2 tsp. white miso

5 oz. baby spinach leaves (6 cups)

1 24-oz. jar prepared pasta sauce

2 Tbs. chopped Kalamata olives, optional

2 Tbs. chopped green olives, optional

Directions

Preheat oven to 375°F.

Cook pasta shells according to package directions. Drain, rinse, and drain again, then place on clean kitchen towel to cool and dry.

Bring garlic and olive oil to a simmer in small skillet over medium heat. Reduce heat to low, and simmer 15 minutes, or until garlic is soft and golden. Remove from heat, and set aside.

Crumble tofu into bowl of food processor, and blend with vinegar, lemon juice, miso, garlic, and oil until smooth. Transfer to medium bowl.

Heat large saucepan over medium heat. Add spinach and 2 Tbs. water, and cook 3 to 4 minutes, or until leaves are wilted. Transfer to strainer, and squeeze out excess liquid. Roughly chop, and stir into tofu mixture.

Spoon 2 Tbs. filling into each pasta shell, and place in single layer in large baking dish. Cover with pasta sauce, sprinkle with olives (if using), and bake 45 minutes, or until sauce is bubbling. Let stand 10 minutes before serving.

I've loved Pasta for as long as I can remember. To that end, here are six pasta recipes to help you through the day, including Tofu and Spinach Stuffed Shells and Jamaican Rasta Pasta. Enjoy!

ONE-POT RATATOUILLE PASTA

PESTO PASTA SALAD WITH SUN DRIED TOMATOES

This is from Cara Harbstreet on Fruits & Veggies, a website I recently stumbled across. This salad can be served hot or cold, whichever strikes your fancy.

Prep Time: 5 minutes; Cook Time: 10 minutes; Servings: 8

Ingredients

1 16 oz box cellentani, rotini, or bowtie pasta

1 cup pesto sauce

1 can chickpeas

1/2 cup sun-dried tomatoes chopped

1/2 cup shredded parmesan cheese

1 head broccoli florets

1 tbsp olive oil

Salt and pepper to taste

1/2 lemon (optional)

Directions

Heat the oven to 400 degrees F. Wash and dry the broccoli, then cut into small florets. Arrange in a single layer on a baking sheet and drizzle with the olive oil. Season with salt and pepper to taste. Roast 10 minutes on high heat or until the edges begin to brown and the broccoli is cooked to your preference.

While the oven is preheating, bring a large pot of water to a boil. Once boiling, add the pasta and cook until al dente, about 8-10 minutes depending on your pasta shape.

Meanwhile, chop the sun-dried tomatoes and drain and rinse the chickpeas. Set aside until ready to combine.

Once pasta is cooked, drain and add to a large mixing bowl. Remove the broccoli from the oven and allow to cool slightly. Add to the mixing bowl with the pesto sauce, sun-dried tomatoes, and chickpeas. If using lemon, squeeze over the top, being careful not to include the seeds. Gently fold together to combine all ingredients.

Top with parmesan cheese just before serving. Serve warm, or chill until ready to serve.

ONE-POT CREAMY BROCCOLI PASTA BAKE

This is from Olivia Counter at thekitchn. For this recipe, Olivia wrote, "Craving comfort food without the mountain of dishes? Look no further — this one-pot creamy broccoli pasta bake is the answer! It’s easy weeknight comfort and a satisfying crowd-pleaser in one. Not only does it deliver on flavor, but it also uses up the entire broccoli, even the stems, to reduce food waste and sneak in extra fiber (always a plus in my book!).

"The creamy pasta sauce is perfectly rich, thanks to a combination of whole and evaporated milk. As for the broccoli, it’s cooked in two quick steps to deepen its flavor and bulk up the dish while staying tenderly crisp. Ingredients

1 pound broccoli

3 tablespoons olive oil, divided

2 teaspoons kosher salt, divided, plus more as needed

1 small yellow onion, diced (about 1 cup)

4 cloves garlic, thinly sliced

1/2 teaspoon ground mustard

1/2 teaspoon red pepper flakes (optional)

1 pound dried short, small pasta, such as elbow macaroni or small shells

2-1/4 cups water

2 cups whole milk

1 (12-ounce) can evaporated milk

8 ounces sharp cheddar cheese, shredded (about 2 cups)

Freshly ground black pepper

Instructions

Heat the oven to 375°F. Trim 1 pound broccoli. Keeping the stems and florets separate, dice the stems, then cut the florets into 1-inch pieces.

Heat 1 tablespoon of the olive oil in a Dutch oven or broiler-safe large pot over medium heat until shimmering. Add the broccoli florets and 1/4 teaspoon of the kosher salt. Cook until the broccoli brightens in color, about 3 minutes. Transfer to a plate.

Add 1 tablespoon of the olive oil to the pot. When shimmering, add the broccoli stems and 1/4 teaspoon of the kosher salt. Cook until softened and starting to brown, 2 to 3 minutes.

Add the remaining 1 tablespoon olive oil, 1 diced small yellow onion, and 1/4 teaspoon of the kosher salt. Cook, stirring often, until softened but not browned, about 5 minutes. Stir in 4 thinly sliced garlic cloves, 1/2 teaspoon ground mustard, and 1/2 teaspoon red pepper flakes if using. Cook until fragrant, about 1 minute.

Stir in 1 pound dried short pasta, 2-1/4 cups water, 2 cups whole milk, 1 (12-ounce) can evaporated milk, and the remaining 1-1/4 teaspoons kosher salt. Cover and transfer the pot to the oven. Bake, stirring halfway through to break up any clumps of pasta, until the pasta is almost tender, 18 to 20 minutes total.

Remove the pot from the oven. Heat the broiler on high. Stir 6 ounces of the shredded sharp cheddar cheese (1-1/2 cups) and the reserved broccoli florets into the pasta until the cheese is melted. Taste and season with kosher salt and black pepper as needed.

Evenly sprinkle with the remaining 2 ounces shredded cheddar cheese (1/2 cup). Return to the oven and broil uncovered until the cheese on top is melted and brown in spots, 3 to 5 minutes.

Recipe Notes

Refrigerate leftovers in an airtight container for up to 5 days. The pasta will lose some of its creaminess upon refrigeration; add a splash of milk or water during reheating to loosen the sauce.

You can freeze the finished recipe in an airtight container for up to 3 months (I like to freeze in individual portions). Reheat from frozen, adding additional milk or water to help loosen the sauce.

JAMAICAN RASTA PASTA

This comes from Gabi Odebode at the Food Network. The recipe begins, "A trio of colorful bell peppers – red, yellow and green – adds a sweet twist to this creamy, vibrant pasta that’s popular in Jamaica and beyond. The noodle of choice for rasta pasta is penne, a cut that holds the sauce well and nestles along the sliced peppers, although the first iteration of the dish, credited to Chef Lorraine Washington of Negril, used linguine. The rich sauce in this version comes from half-and-half and mozzarella, while some recipes use a combination of Parmesan and cream. Habanero of Scotch bonnet pepper adds a nice kick while allspice lends earthy warmth. The mix of fresh vegetables, Caribbean spice and a rich cream sauce bursts with flavor and makes this quick and easy dish a crowd-pleaser."

2 cups dried penne (about 8 ounces)

2 tablespoons plus 1/2 teaspoon vegetable oil or olive oil

1 small onion, sliced

2 cloves garlic, minced

1 cup sliced red bell pepper

1 cup sliced yellow bell pepper

1 cup sliced green bell pepper

2 scallions, sliced

1 habanero or Scotch bonnet pepper, diced, optional

1 teaspoon ground allspice

1 teaspoon fresh thyme

1 cup half-and-half

1/2 cup shredded whole-milk mozzarella

Directions

Bring 4 cups water to a boil in a medium pot and season generously with salt. Add the pasta to the pot, give it a stir and cook until al dente according to the package instructions. Drain the pasta, then rinse with cold water to stop the cooking. Add 1/2 teaspoon of the oil and stir to prevent the pasta from sticking.

Heat the remaining 2 tablespoons oil in a large pan over medium heat for about 1 minute. Add the onion and a pinch of salt and cook until the onion is slightly translucent, about 2 minutes. Add the garlic and cook for 30 seconds, then add the red, yellow and green bell peppers and cook until the peppers are slightly tender, about 2 minutes. Stir in the pasta, then the scallions and habanero pepper, if using; cook for another minute.

Reduce the heat to medium low, stir in the allspice and thyme and cook until the flavors bloom, about 2 minutes. Add the half-and-half and bring to a slow simmer. Add the mozzarella and continue to cook, stirring, until a creamy cheese sauce forms, about 2 minutes. Remove from the heat. Taste and add salt if needed.

Ingredients

8 ounces penne pasta

3 tablespoons olive oil

2 garlic cloves, minced

1 1/2 pounds thin asparagus, trimmed and cut into 1-inch pieces

Salt and freshly ground black pepper

2 cups (about 9 ounces) cherry tomatoes

1 cup shelled fresh peas

1/2 cup low-sodium vegetable stock

1 cup grated Parmesan

2 tablespoons chopped fresh basil leaves

Directions

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta, reserving about 1/2 cup of the pasta water.

In a large saute pan, heat the oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute. Add the asparagus, season with the salt and pepper, and cook for 3 minutes until slightly soft. Add the cherry tomatoes and peas. Cook for 2 minutes. Pour the chicken stock into the pan and bring the mixture to a simmer. Cook until the tomatoes start to burst and the stock is reduced by half, about 3 minutes.

Transfer the asparagus mixture to a large serving bowl. Add the cooked pasta and 1/2 of the Parmesan. Toss well, adding reserved pasta water, if needed, to loosen the pasta. Garnish with the remaining Parmesan and chopped basil.

CREAMY TOMATO SPAGHETTI WITH PRESERVED LEMON

Fine sea salt and black pepper

3 tablespoons olive oil

1/2 medium yellow onion, finely chopped

2 garlic cloves, minced or crushed in a garlic press

5 tablespoons tomato paste

1/2 preserved lemon, seeded and minced (about 2 tablespoons), plus more to taste

2 teaspoons honey, plus more to taste

1 cup heavy cream

1 pound spaghetti (or other long pasta)

Finely grated Parmesan (optional), for garnish

Preparation

Place a large pot of water over high heat, add 1 teaspoon salt and bring to a boil.

Meanwhile, heat oil in a large pan or pot over medium-low. Add the onion, garlic, tomato paste, 1 tablespoon of the minced preserved lemon, the honey, 1/2 teaspoon salt and 1/4 teaspoon pepper, and cook, stirring frequently, until fragrant and the onion starts to soften, about 5 minutes.

Mix in the cream, taste the sauce and adjust the seasoning with more preserved lemon, honey and salt as necessary. Bring to a gentle simmer, then turn off the heat and cover with a lid to keep the sauce warm.

Cook the spaghetti in the boiling water until almost al dente according to the package instructions, 6 to 7 minutes. Reserve 1 cup of the cooking water, then drain pasta.

Over medium-low heat, add the spaghetti to the sauce along with 1/2 cup of the reserved cooking water, and toss to coat. Continue to toss until the spaghetti is al dente, adding more cooking water as needed to achieve a glossy sauce that clings to the pasta, 3 to 4 minutes.

Serve warm, topped with Parmesan if desired.

ONE-POT RATATOUILLE PASTA

1 teaspoon Italian seasoning

1 small globe eggplant, cut into 1-inch pieces (about 5 cups)

1 medium onion, coarsely chopped

3 medium plum tomatoes, cut into 1-inch pieces

1 pound short pasta, such as rotini

2 medium zucchini, cut into 1-inch pieces

1 medium orange bell pepper, cored and cut into 1-inch pieces

2 basil sprigs

Freshly grated Parmesan (optional)

Preparation

Pour 1/4 cup oil into a large, wide pot or Dutch oven over medium. Add the tomato paste and gently fry, stirring occasionally, until slightly caramelized, 3 to 5 minutes. (The oil will become a bright shade of orange.) Add the Italian seasoning and stir until combined.

To the pot, add the eggplant, onion, half the tomatoes, all the garlic and 1 teaspoon salt. Toss until vegetables are coated with the tomato-infused oil. The eggplant will absorb most if not all the oil. Add 3 cups water, the pasta and 1 teaspoon salt. Bring to a boil, reduce heat to medium, cover and cook the pasta for half the time listed for al dente on the package directions, 4 to 6 minutes.

Remove the lid and stir well to combine pasta with the sauce. Add the zucchini, peppers, remaining tomatoes and a few grinds of black pepper. Fold to combine, and reduce heat to medium-low. Cover and cook until pasta is al dente and peppers are crisp-tender, 2 to 3 minutes. Remove lid, and turn off heat. Taste and season with salt and pepper as desired. Serve in shallow bowls and top with torn basil leaves. Drizzle with olive oil and sprinkle with Parmesan, if using.

ONE-POT CREAMY BROCCOLI PASTA BAKE

1 pound dried short, small pasta, such as elbow macaroni or small shells

2-1/4 cups water

2 cups whole milk

1 (12-ounce) can evaporated milk

8 ounces sharp cheddar cheese, shredded (about 2 cups)

Freshly ground black pepper

Instructions

Heat the oven to 375°F. Trim 1 pound broccoli. Keeping the stems and florets separate, dice the stems, then cut the florets into 1-inch pieces.

Heat 1 tablespoon of the olive oil in a Dutch oven or broiler-safe large pot over medium heat until shimmering. Add the broccoli florets and 1/4 teaspoon of the kosher salt. Cook until the broccoli brightens in color, about 3 minutes. Transfer to a plate.

Add 1 tablespoon of the olive oil to the pot. When shimmering, add the broccoli stems and 1/4 teaspoon of the kosher salt. Cook until softened and starting to brown, 2 to 3 minutes.

Add the remaining 1 tablespoon olive oil, 1 diced small yellow onion, and 1/4 teaspoon of the kosher salt. Cook, stirring often, until softened but not browned, about 5 minutes. Stir in 4 thinly sliced garlic cloves, 1/2 teaspoon ground mustard, and 1/2 teaspoon red pepper flakes if using. Cook until fragrant, about 1 minute.

Stir in 1 pound dried short pasta, 2-1/4 cups water, 2 cups whole milk, 1 (12-ounce) can evaporated milk, and the remaining 1-1/4 teaspoons kosher salt. Cover and transfer the pot to the oven. Bake, stirring halfway through to break up any clumps of pasta, until the pasta is almost tender, 18 to 20 minutes total.

Remove the pot from the oven. Heat the broiler on high. Stir 6 ounces of the shredded sharp cheddar cheese (1-1/2 cups) and the reserved broccoli florets into the pasta until the cheese is melted. Taste and season with kosher salt and black pepper as needed.

Evenly sprinkle with the remaining 2 ounces shredded cheddar cheese (1/2 cup). Return to the oven and broil uncovered until the cheese on top is melted and brown in spots, 3 to 5 minutes.

Recipe Notes

Refrigerate leftovers in an airtight container for up to 5 days. The pasta will lose some of its creaminess upon refrigeration; add a splash of milk or water during reheating to loosen the sauce.

You can freeze the finished recipe in an airtight container for up to 3 months (I like to freeze in individual portions). Reheat from frozen, adding additional milk or water to help loosen the sauce.

JAMAICAN RASTA PASTA

This comes from Gabi Odebode at the Food Network. The recipe begins, "A trio of colorful bell peppers – red, yellow and green – adds a sweet twist to this creamy, vibrant pasta that’s popular in Jamaica and beyond. The noodle of choice for rasta pasta is penne, a cut that holds the sauce well and nestles along the sliced peppers, although the first iteration of the dish, credited to Chef Lorraine Washington of Negril, used linguine. The rich sauce in this version comes from half-and-half and mozzarella, while some recipes use a combination of Parmesan and cream. Habanero of Scotch bonnet pepper adds a nice kick while allspice lends earthy warmth. The mix of fresh vegetables, Caribbean spice and a rich cream sauce bursts with flavor and makes this quick and easy dish a crowd-pleaser."

Bring 4 cups water to a boil in a medium pot and season generously with salt. Add the pasta to the pot, give it a stir and cook until al dente according to the package instructions. Drain the pasta, then rinse with cold water to stop the cooking. Add 1/2 teaspoon of the oil and stir to prevent the pasta from sticking.

Heat the remaining 2 tablespoons oil in a large pan over medium heat for about 1 minute. Add the onion and a pinch of salt and cook until the onion is slightly translucent, about 2 minutes. Add the garlic and cook for 30 seconds, then add the red, yellow and green bell peppers and cook until the peppers are slightly tender, about 2 minutes. Stir in the pasta, then the scallions and habanero pepper, if using; cook for another minute.

Reduce the heat to medium low, stir in the allspice and thyme and cook until the flavors bloom, about 2 minutes. Add the half-and-half and bring to a slow simmer. 1/2 lb. green beans, trimmed

Heat 2 Tbs. oil in very large skillet over medium heat. Add green beans, onion, garlic, and crushed red pepper, and cook, covered, 3 minutes. Add zucchini, peppers, basil, and oregano, and cook, uncovered, 5 minutes, or until vegetables are just al dente; do not overcook. Season with salt to taste.

Warm remaining 1 Tbs. oil in second skillet over medium heat. Add breadcrumbs, and sauté until golden, about 5 minutes.

Add drained pasta to vegetables, and toss to blend; sprinkle with breadcrumbs, cheese, and olive oil, and serve.

ONE-POT VEGETABLE BIRYANI

For this yumminess, Zainab wrote, "Vegetable biryani may be the underdog of biryanis since it's often overshadowed by meatier varieties. But like other formidable yet unsung dishes, this one’s adaptability helps it hold its own. 1/4 cup ghee or any neutral oil

1 dried bay leaf

2 whole star anise (optional)

4 whole cloves

4 cardamom pods

4 fresh Thai green chiles or green finger chiles, stems removed

1 medium red onion, finely chopped

1 tablespoon ginger paste or freshly grated ginger

1 tablespoon garlic paste or freshly grated garlic

1/2 teaspoon turmeric powder

2 teaspoons Kashmiri red chile powder or other ground red chile

1 plum tomato, finely chopped

1/2 cup chopped cilantro leaves

1/2 cup chopped mint leaves

1 medium carrot, peeled and thinly sliced

1 small potato, peeled and finely diced

1 cup small cauliflower florets

1/2 cup frozen green peas, thawed

1/2 cup cut green beans (fresh or frozen)

1/2 cup full-fat Greek yogurt

2 tablespoons fine sea salt

2-1/2 cups unsalted vegetable stock or water

1 teaspoon garam masala

1 tablespoon fresh lemon juice, plus 3 lemon slices

1/2 cup fresh pomegranate seeds (optional)

1/4 cup toasted or fried cashews, halved (optional)

Preparation

Rinse the rice, cover with cold water in a bowl and soak for 20 minutes. Meanwhile, heat ghee in a large pot over medium until it melts, 30 to 45 seconds. Add bay leaf, star anise, cloves, cardamom and green chiles and fry until fragrant, about 30 seconds. Add onion and fry, stirring often, until they start turning golden brown, about 5 minutes.

Add ginger and garlic and continue frying and stirring until the raw smell dissipates, about 1 minute. Add turmeric and red chile powder and stir for 30 seconds to toast (don’t let them burn). Add tomato and 2 tablespoons water. Add half of cilantro and mint. Continue stirring until the tomato starts to break down, about 5 minutes.

Add the carrot, potato, cauliflower, green peas, green beans, yogurt and salt. Cook, stirring occasionally, for 5 minutes until the ingredients are incorporated.

Drain the rice and add to the pot, along with the lemon juice and garam masala. Stir until everything is evenly mixed. Add the vegetable stock and stir. Cover and cook on medium for 5 minutes.

Uncover and stir. Add the rest of the cilantro and mint and the lemon slices. Cover and cook on low for 20 minutes. Turn off the stove and let the pot stand for 15 minutes. Fluff the rice and garnish with fresh pomegranate seeds and cashews if you like.

VEGETARIAN REUBEN SANDWICH

This yumminess is from Ali Slagle at The New York Times cooking enewsletter. Ali wrote, "The Reuben sandwich — corned beef, sauerkraut, Swiss cheese and Russian dressing on rye bread — has inspired many meat-free versions. Tempeh, seitan, vegetables and mushrooms have stood in for the corned beef, but they’re not really needed, because outsize quantities of the other traditional elements make a punchy, gooey sandwich on their own. Both sides of the buttered rye get melted Swiss. The mountain of sauerkraut doesn’t warm long enough to lose its crunch. The specks of pickles and onion in typical Russian dressing become layers in the sandwich. Salt and pepper

2 slices rye bread

2 slices Swiss cheese

1/2 tablespoon unsalted butter

1/4 cup thinly sliced white onion or shallot

1/2 cup very well drained and squeezed sauerkraut

1 dill pickle, sliced, or 2 dill pickle sandwich slices

Preparation

In a small bowl, stir together the mayonnaise, ketchup, hot sauce and coriander. Season with salt and pepper. Taste and adjust pepper and hot sauce until the dressing is just a bit too intense, as it will be tamed by the sandwich fillings.

Spread the dressing on both slices of bread. Reserve the bowl and any remaining dressing. Top each bread slice with a slice of Swiss cheese. In a large skillet, melt the butter over medium-low. Add the bread, cheese side up. Swirl the bread slices around the skillet to mop up the butter. Cover the skillet and cook until the cheese is melted and the bread is golden, 4 to 5 minutes. Meanwhile, add the onion and a pinch of salt to the reserved bowl and stir to coat in the residual dressing.

Top one slice of bread with the sauerkraut, pickles and onions. Flip the other slice on top of the fillings and press lightly to adhere. Cook for just a minute on each side until the sandwich has melded. Cut and eat warm.

TOFU-SPINACH LASAGNA

This is from PETA's website. Whether you like PETA or not, they do have good vegetarian recipes. This one makes 6 to 8 servings, and can be viewed online at https://www.peta.org/recipes/tofu-spinach-lasagne/.

Ingredients

1/2 lb. lasagna noodles

2 10-oz. packages frozen chopped spinach, thawed and drained

1 lb. soft tofu

1 lb. firm tofu

1 Tbsp. sugar

1/4 cup soy milk

1/2 tsp. garlic powder

2 Tbsp. lemon juice

3 tsp. minced fresh basil

2 tsp. salt

4 cups tomato sauce

Instructions

Cook the lasagna noodles according to the package directions. Drain and set aside.

Preheat the oven to 350 degrees F.

Squeeze the spinach as dry as possible and set aside.

Place the tofu, sugar, soy milk, garlic powder, lemon juice, basil, and salt in a food processor or blender and blend until smooth. Stir in the spinach.

Cover the bottom of a 9-inch-by-13-inch baking dish with a thin layer of tomato sauce, then a layer of noodles (use about one-third of the noodles). Follow with half of the tofu filling. Continue in the same order, using half of the remaining tomato sauce and noodles and all of the remaining tofu filling. End with the remaining noodles, covered by the remaining tomato sauce. Bake for 25 to 30 minutes.

1 teaspoon chili powder

3 cups packed fresh baby spinach leaves

1 can (15.5 oz) chickpeas, drained, rinsed

Preparation

Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish or pan with cooking spray.

Place sweet potatoes on rimmed baking sheet. Drizzle 1 tablespoon of the oil over potatoes; season with salt and pepper. Toss to coat. Bake 18 to 23 minutes or until potatoes are tender and lightly browned.

Meanwhile, in 10-inch nonstick skillet, heat remaining 1 tablespoon oil over medium heat. Add onion; cook and stir 4 to 5 minutes or until tender. Add garlic; cook 30 to 60 seconds, stirring frequently, until softened. Stir in chili powder and spinach; cook 30 to 60 seconds to wilt.

Remove from heat; pour into medium bowl. Stir in chickpeas and roasted potatoes. Let cool 5 minutes. Stir in 1 cup of the cheese.

Place tortillas on work surface. Spread heaping 1/3 cup vegetable mixture down center of each tortilla. Wrap tortillas around filling; placing seam side down in sprayed baking dish. Top enchiladas with enchilada sauce and remaining cheese.

Bake 15 to 20 minutes or until hot and cheese is melted. Let stand 5 minutes before serving. Top with remaining ingredients.

Ingredients

1/3 cup granulated sugar

2 whole cardamom pods, crushed

2 whole allspice

1 cinnamon stick

1/2 tsp. vanilla extract

3 large oranges, peeled and white pith removed, cut crosswise into 1/3-inch-thick slices

4 kiwis, peeled and cut crosswise into 1/3-inch-thick slices

2 Tbs. sliced almonds, toasted

Preparation

Combine 3/4 cup water, sugar, cardamom, allspice and cinnamon in saucepan. Stir over medium-high heat until sugar dissolves, about 5 minutes. Bring to a boil. Reduce heat to low, and cook until liquid is syrupy and slightly reduced, about 8 minutes. Remove from heat. Stir in vanilla.

Put orange and kiwi slices in shallow bowl. Pour hot syrup over fruit. Let cool to room temperature, cover and chill at least 1 hour, up to 4 hours. Sprinkle with almonds, and serve.

Pasta

I've loved Pasta as long as I can remember.

When I was a kid, my mom would let my brother, sister, and me pick out what we wanted for dinner on our birthdays. My go-to meal was almost always spaghetti.

To that end, here are six yummy pasta recipes to help you through the day, including Tofu and Spinach Stuffed Shells and Roast Veggie Pasta. Enjoy!

ONE-POT PASTA WITH RICOTTA AND LEMON

This is from Ali Slagle in The New York Times cooking enewsletter. For this yumminess, Ali wrote, "This elegant, bright pasta dish comes together in about the same amount of time it takes to boil noodles and heat up a jar of store-bought marinara. The no-cook sauce is a 50-50 mix of ricotta and Parmesan, with the zest and juice of one lemon thrown in. That’s it. To make it more filling, add peas, asparagus or spinach in the last few minutes of the pasta boiling, or stir in fresh arugula or watercress with the sauce in Step 3. It’s a weeknight and for-company keeper any way you stir it."

Kosher salt

1 pound short, ribbed pasta, like gemelli or penne

1 cup whole-milk ricotta (8 ounces)

1 cup freshly grated Parmesan or pecorino (2 ounces), plus more for serving

1 tablespoon freshly grated lemon zest plus 1/4 cup lemon juice (from 1 to 2 lemons)

Black pepper

Red-pepper flakes, for serving

1/4 cup thinly sliced or torn basil leaves, for serving (optional)

Preparation

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup pasta cooking water, then drain the pasta.

In the same pot, make the sauce: Add the ricotta, Parmesan, lemon zest and juice, 1/2 teaspoon salt and 1/2 teaspoon pepper and stir until well combined.

Add 1/2 cup pasta water to the sauce and stir until smooth. Add the pasta and continue to stir vigorously until the noodles are well coated. Add more pasta water as needed for a smooth sauce.

Divide the pasta among bowls and top with some of the sauce that’s pooled at the bottom of the pot. Garnish with grated Parmesan, black pepper, red-pepper flakes and basil, if using.

SHEET PAN MAC AND CHEESE WITH BRUSSELS SPROUTS

This is from Grace Elkus at TheKitchn. For this recipe, Grace wrote, "Here, I’m sharing my favorite iteration: sheet pan mac and cheese with Brussels sprouts. You’ll cook the noodles and make the cheese sauce while the veggies roast, then mix everything together, return it to the sheet pan, and pop it under the broiler until every bite is crispy-creamy. It’s the ultimate mash-up of two of my favorite foods — and my only regret is I didn’t think of it sooner."

Prep time: 20 minutes; Cook time: 35 minutes to 40 minutes; Serves: 4 to 6

1-1/2 teaspoons kosher salt, plus more for the pasta water

1 pound Brussels sprouts (about 15 large)

2 tablespoons olive oil

Freshly ground black pepper

12 ounces dried cavatappi pasta

4 ounces Gruyère cheese, shredded (1 cup)

4 ounces sharp cheddar cheese, preferably white, shredded (1 cup)

1 ounce Parmesan cheese, shredded (about 1/2 cup)

5 tablespoons unsalted butter, divided

1/4 cup all-purpose flour

1/2 teaspoon dry mustard

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper

3 cups whole or 2% milk

1/2 cup panko bread crumbs

Instructions

Arrange 2 racks to divide the oven into thirds and heat the oven to 425°F. Bring a Dutch oven or large pot of heavily salted water to a boil.

Meanwhile, trim and halve 1 pound Brussels sprouts (quarter if large). Place on a rimmed baking sheet (make sure to include any stray leaves). Drizzle with 2 tablespoons olive oil, and season with 1/2 teaspoon kosher salt and several grinds black pepper. Toss to combine, then arrange in a single layer cut-side down.

Place the baking sheet on the lower rack. Roast until the sprouts are crispy, tender, and browned in spots, 14 to 16 minutes. Meanwhile, cook the pasta and grate the cheeses.

Add 12 ounces cavatappi to the boiling water and cook according to package directions until al dente. Grate the following cheeses on the large holes of a box grater, keeping them separate on the cutting board: 4 ounces Gruyère cheese (about 1 cup), 4 ounces sharp cheddar cheese (about 1 cup), and 1 ounce Parmesan cheese (about 1/2 cup).

When the Brussels sprouts are ready, remove the baking sheet from the oven.

When the pasta is ready, drain and set aside. Return the pot to the stovetop, add 5 tablespoons unsalted butter, and melt over medium-low heat. Transfer 1 tablespoon into a small heatproof bowl. Add 1/4 cup all-purpose flour, 1/2 teaspoon dry mustard, 1/2 teaspoon garlic powder, and 1/4 teaspoon cayenne pepper to the remaining butter in the pot and cook over medium-low heat, whisking constantly, until fragrant and foaming, about 2 minutes.

While whisking constantly, slowly pour in 3 cups whole or 2% milk and whisk until the flour is completely dissolved. Bring just to a full simmer over medium heat, 5 to 7 minutes. Reduce the heat to low and simmer, whisking frequently, until thick enough to coat the back of a spoon, about 4 minutes.

Remove the pot from the heat. Add the Gruyère and cheddar cheeses, 1 teaspoon kosher salt, and several grinds black pepper. Whisk until smooth and the cheese is melted. Taste and season with more salt as needed (likely about 1/2 teaspoon kosher). Heat the broiler to high.

Add the cavatappi and roasted Brussels sprouts to the pot and stir until well-coated in the sauce. Transfer to the same baking sheet used to roast the Brussels and spread into an even layer.

Add 1/2 cup panko bread crumbs and the Parmesan cheese to the reserved bowl of melted butter and stir to combine. Sprinkle the pasta with the bread crumb mixture. Broil until the bread crumbs are golden-brown, 2 to 4 minutes.

Storage: Leftovers can be refrigerated in an airtight container for up to 4 days.

TOFU AND SPINACH STUFFED SHELLS

6 oz. jumbo pasta shells

12 cloves garlic, peeled and thinly sliced

1/4 cup olive oil

1 16-oz. block firm tofu, drained, rinsed, and patted dry

2 Tbs. unpasteurized apple cider vinegar

2 tsp. lemon juice

2 tsp. white miso

5 oz. baby spinach leaves (6 cups)

1 24-oz. jar prepared pasta sauce

2 Tbs. chopped Kalamata olives, optional

2 Tbs. chopped green olives, optional

Directions

Preheat oven to 375°F.

Cook pasta shells according to package directions. Drain, rinse, and drain again, then place on clean kitchen towel to cool and dry.

Bring garlic and olive oil to a simmer in small skillet over medium heat. Reduce heat to low, and simmer 15 minutes, or until garlic is soft and golden. Remove from heat, and set aside.

Crumble tofu into bowl of food processor, and blend with vinegar, lemon juice, miso, garlic, and oil until smooth. Transfer to medium bowl.

Heat large saucepan over medium heat. Add spinach and 2 Tbs. water, and cook 3 to 4 minutes, or until leaves are wilted. Transfer to strainer, and squeeze out excess liquid. Roughly chop, and stir into tofu mixture.

Spoon 2 Tbs. filling into each pasta shell, and place in single layer in large baking dish. Cover with pasta sauce, sprinkle with olives (if using), and bake 45 minutes, or until sauce is bubbling. Let stand 10 minutes before serving.

LEMON-GARLIC LINGUINE

This yumminess is from Ali Slagle in The New York Times cooking enewsletter. For this recipe, Ali wrote, "This bright and creamy pasta is a weeknight go-to that can be embellished with seared scallops, shrimp or mushrooms to make it something special. Grated garlic, lemon zest and black pepper sizzle and bloom in melted butter to which starchy pasta water is added to create a thick sauce. A hit of lemon juice at the very end keeps it punchy. Linguine, which is not as thin as spaghetti or as thick as fettuccine, works well here, but if you have another pasta shape on-hand, feel free to swap it in."

8 tablespoons unsalted butter

3 garlic cloves, peeled

1 large lemon

Black pepper

Grated Parmesan, crushed red pepper, parsley or a combination, for garnish (optional)

Preparation

Bring a large pot of salted water to a boil. Add the linguine and cook until al dente. Reserve 2 cups pasta water, then strain the noodles.

Dry the pot, then return to low heat and add the butter. While the butter melts, grate the garlic over the butter. Stir until the garlic is fragrant, 1 to 2 minutes. Finely grate the zest of the lemon into the pot to taste, and add a few grinds of black pepper. When the pepper is sizzling, add 1 cup pasta water and the cooked pasta. Increase heat to medium-high and toss vigorously. As the liquid in the pot evaporates, add another few tablespoons of pasta water. Repeat, tossing vigorously and adding pasta water, until the pasta is glossed in a thick sauce, 1 to 2 minutes.

Remove from heat, squeeze in the juice of the whole lemon, and toss to combine. Season to taste with salt and pepper. Optionally, top with Parmesan, more lemon zest (if any remains), crushed red pepper and/or parsley as you like.

ROAST VEGGIE PASTA

This comes from Bob McDonald at AllRecipes, and begins, "Wonderful rustic Italian style pasta dish! Meal can be dressed up or down with accompaniments to this tasty pasta."

Preheat oven to 350 degrees F (175 degrees C). Prepare asparagus by trimming woody base and cutting diagonally into 4 inch pieces.

In a roasting pan, combine asparagus, bell pepper, mushrooms, roasted garlic and tomato. Sprinkle with rosemary and oregano, then drizzle with olive oil. Bake in preheated oven for 15 minutes.

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Toss with Parmesan cheese, tapenade and roasted vegetables.

PENNE WITH ASPARAGUS AND CHERRY TOMATOES (SPRING)

Note This recipe originally called for chicken stock. However, since I'm posting this in a vegetarian blog, I've exchanged the chicken stock with vegetable stock.

Ingredients

8 ounces penne pasta

3 tablespoons olive oil

2 garlic cloves, minced

1 1/2 pounds thin asparagus, trimmed and cut into 1-inch pieces

Salt and freshly ground black pepper

2 cups (about 9 ounces) cherry tomatoes

1 cup shelled fresh peas

1/2 cup low-sodium vegetable stock

1 cup grated Parmesan

2 tablespoons chopped fresh basil leaves

Directions

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta, reserving about 1/2 cup of the pasta water.

In a large saute pan, heat the oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute. Add the asparagus, season with the salt and pepper, and cook for 3 minutes until slightly soft. Add the cherry tomatoes and peas. Cook for 2 minutes. Pour the chicken stock into the pan and bring the mixture to a simmer. Cook until the tomatoes start to burst and the stock is reduced by half, about 3 minutes.

Transfer the asparagus mixture to a large serving bowl. Add the cooked pasta and 1/2 of the Parmesan. Toss well, adding reserved pasta water, if needed, to loosen the pasta. Garnish with the remaining Parmesan and chopped basil.

It's Monday, time to get the week started. Today's post deals with Pasta (one of my favorite food groups), and includes Primavera Pasta with Breadcrumb Topping and Baked Spaghetti. Enjoy!

ONE-POT ORZO WITH TOMATOES, CORN AND ZUCCHINI

This is from Lidey Heuck in The New York Times cooking enewsletter. For this yumminess, Lidey wrote, "This recipe is inspired by the tail end of summer, when fresh produce and herbs abound but the heat waves are finally starting to relent. And while this dish makes a wonderful stage for the season’s produce at its peak, it can also turn sad-looking February vegetables into a sauce that makes it feel like summer. The trick is to sauté the tomatoes slowly, until they’ve collapsed and become deeply sweet and fragrant. The orzo cooks right in the sauce, which cuts down on the dishes and allows the pasta to absorb the flavor as it cooks. If you prefer a larger pasta shape, stick to the traditional method of boiling pasta for best results, and save some pasta water to help loosen the sauce."

1-1/2 teaspoons kosher salt, plus more for seasoning

Black pepper, to taste

1 medium zucchini (about 8 ounces), halved lengthwise, seeded and 1/2-inch diced

3 garlic cloves, minced

2 pints cherry tomatoes, halved

1/3 cup torn fresh basil leaves, plus more for serving

1/4 teaspoon red-pepper flakes, plus more to taste

2 tablespoons balsamic vinegar

1 tablespoon tomato paste

1-1/4 cups orzo

Kernels from one ear of corn (about 1/2 cup)

1 cup torn or medium-diced fresh mozzarella (about 5 ounces)

1/4 cup grated Parmesan

Preparation

Heat olive oil in a large (12-inch) skillet, for which you have a lid, set over medium. And the onions, lightly season with salt and pepper, and cook, stirring occasionally, until tender, about 8 minutes. Turn the heat to medium-low, add the zucchini and garlic, and cook for 2 more minutes, stirring often.

Add the tomatoes, basil, red-pepper flakes, 1 teaspoon salt and black pepper to taste. Cook, stirring occasionally, until the tomatoes have completely collapsed, 12 to 15 minutes. Add the balsamic vinegar and tomato paste and cook for 2 more minutes, stirring occasionally.

Add 2-1/2 cups water and bring to a simmer over medium heat. Add the orzo, corn, and 1/2 teaspoon salt, mix well, and turn the heat to low. Cover and simmer for 10 to 12 minutes, stirring and scraping the bottom of the pan 3 or 4 times, until the pasta is cooked. The pasta should look “saucy” as it cooks; if at any point it looks dry, add another 1/4 cup water.

Off the heat, add the mozzarella and Parmesan and stir gently until just combined. Top with fresh basil and more red-pepper flakes if desired, and serve hot.

Cook pasta shells according to package directions. Drain, rinse, and drain again, then place on clean kitchen towel to cool and dry.

Bring garlic and olive oil to a simmer in small skillet over medium heat. Reduce heat to low, and simmer 15 minutes, or until garlic is soft and golden. Remove from heat, and set aside.

Crumble tofu into bowl of food processor, and blend with vinegar, lemon juice, miso, garlic, and oil until smooth. Transfer to medium bowl.

Heat large saucepan over medium heat. Add spinach and 2 Tbs. water, and cook 3 to 4 minutes, or until leaves are wilted. Transfer to strainer, and squeeze out excess liquid. Roughly chop, and stir into tofu mixture.

Spoon 2 Tbs. filling into each pasta shell, and place in single layer in large baking dish. Cover with pasta sauce, sprinkle with olives (if using), and bake 45 minutes, or until sauce is bubbling. Let stand 10 minutes before serving.

2 cups/8 ounces shredded low-moisture mozzarella

Preparation

Step 1

Heat the oven to 350 degrees and grease a 9-by-13-inch baking dish with butter. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions until 1 minute shy of al dente.

Step 2

While the water comes to a boil, heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium. Add the onion and cook, stirring occasionally, until tender, 6 to 8 minutes. Add the garlic, thyme, oregano, red-pepper flakes, 1-1/2 teaspoons salt and a few grinds of black pepper, and cook until fragrant, about 1 minute.

Step 3

Add the beef and cook, breaking up the meat with a wooden spoon, until browned, about 5 minutes. Turn off the heat and stir in the marinara sauce and basil. Drain the spaghetti, add it to the sauce and toss well.

Step 4

In a small bowl, combine the ricotta, 1/2 cup of the Parmesan, the egg and 1/4 teaspoon salt. Mix with a fork until smooth.

Step 5

Transfer half the pasta and sauce to the prepared baking dish and smooth it into an even layer. Dollop the ricotta mixture onto the pasta in large spoonfuls, then sprinkle 1 cup of the mozzarella on top. Add the rest of the pasta and sauce to the pan, again smoothing it into an even layer.

Step 6

Cover the pan with aluminum foil and bake for 40 minutes. Sprinkle the remaining 1 cup mozzarella and the remaining 1/4 cup Parmesan on top, then bake, uncovered, until the mozzarella has melted, 5 to 10 minutes more.

Step 7

Cool for 5 minutes, then serve with more chopped basil, a pinch of dried oregano and more red-pepper flakes, if desired. Slice the baked spaghetti into large squares and serve hot or warm.

Meanwhile, bring large pot of salted water to boil; add green beans, and parboil 3 minutes. Transfer beans to colander and rinse under cold running water to stop cooking.

Heat 2 Tbs. oil in very large skillet over medium heat. Add green beans, onion, garlic, and crushed red pepper, and cook, covered, 3 minutes. Add zucchini, peppers, basil, and oregano, and cook, uncovered, 5 minutes, or until vegetables are just al dente; do not overcook. Season with salt to taste.

Warm remaining 1 Tbs. oil in second skillet over medium heat. Add breadcrumbs, and sauté until golden, about 5 minutes.

Add drained pasta to vegetables, and toss to blend; sprinkle with breadcrumbs, cheese, and olive oil, and serve.

Tofu

Tofu is probably one of the most versatile foods around. While it tends to be bland, it can be incorporated into many dishes, taking on the flavors of the other ingredients.

To that end, here are six tofu recipes to help start your week off, including Vegan Chinese Kung Pao Tofu and Coconut Red Curry with Tofu. Enjoy!

TOFU AND SPINACH STUFFED SHELLS

This comes from the April/May 2015 issue of Vegetarian Times, page 40. It begins, “Olive oil–poached garlic gives tofu a deep, mellow flavor, while miso and vinegar provide a cheese-like tang.” Serves 6.

6 oz. jumbo pasta shells

CHOCOLATE MOUSSE



I saw something similar to this a few years back and tweaked it a little. For anyone who is sure that he or she won't like tofu, this may be the game-changer.



Ingredients

1 10-12 ounce tub of silken tofu

12 ounce bag of chocolate chips

2 - 3 tablespoons milk (you can use soy milk, if you prefer)

1 tsp vanilla

1 tablespoon maple syrup

Directions

Melt chocolate chips along with the milk over low to medium heat, stirring constantly.

Place silken tofu, melted chocolate chips, vanilla, and syrup into blender. Blend on a medium setting, pulsing if needed to combine.

Pour into 4 bowls or small cups, and let cool for 10 minutes or so.

Dig in! Yum!

BAKED VEGETABLE MEDLEY

This is from the January 2003 issue of Vegetarian Times, page 22. It begins, “The crust for this vegetable-filled pie may be made from ready-made, store-bought dough that you roll out and fit into a pie plate. Or, for a no-fuss meal, start with a premade frozen pie crust. This is a meal-in-a-slice, calling only for a light dessert of fruit and nuts.” Serves 4 in 30 minutes or less.

Ingredients

One 9-inch unbaked frozen pie shell

2 Tbs. olive oil

1 large leek, thinly sliced

1 tsp. minced garlic

1/2 bunch kale, shredded

2/3 cup chunky seasoned tomato sauce

1-1/2 cups artichoke hearts, drained

6 oz. smoked tofu, cut into thin strips

1 cup grated low-fat mozzarella cheese

Directions

Preheat oven to 375F. Reserve strips of leek for garnish.

Bake pie shell until golden, about 10 minutes, or according to package directions. Remove from oven, and set aside. Increase oven temperature to 450F.

Heat olive oil in large skillet over med-ium heat. When hot, sauté leek and garlic for about 5 minutes. Add kale and tomato sauce, stirring often, and cook until kale wilts and leeks are translucent. Add artichoke hearts.

Fill baked pie shell, and arrange tofu pieces decoratively on top. Sprinkle grated cheese over top, and bake 5 minutes more. Increase oven temperature to broil, and heat until cheese browns, about 1 minute.

VEGETABLE TOFU CURRY

This yumminess is from Genevieve Ko in The New York Times cooking enewsletter. For this recipe, Genevieve wrote, "This one-pot vegetarian meal comes together quickly and leftovers keep for days. Creamy coconut milk is made up of fat and liquid from pressed coconut meat and this recipe delivers its full range of flavors. When you melt the solids from a can of coconut milk and keep cooking until the liquid evaporates, the oil eventually separates out and delivers toasty nuttiness. Here, onion — any kind — tenderizes in that tasty fat, and curry powder becomes more fragrant in it. Tofu soaks up the curry sauce while vegetables steam over the mixture, then everything gets stirred together. Experiment with whatever vegetables you have on hand, cooking them until tender."

2 broccoli heads, 8 ounces green beans or 2 cups frozen peas, or a combination

1 (14- to 16-ounce) container firm tofu

1 (13.5-ounce) can coconut milk

1 medium onion, chopped

Salt and pepper

1 tablespoon curry powder, plus more to taste

Cooked rice or other grains or noodles, for serving

Hot sauce, for serving (optional)

Preparation

If using broccoli, trim the ends of the stems and discard, then cut the stems off near the base of the florets. Cut off the thick peel around the stems, then cut the stems into 1/2-inch slices. Cut the broccoli crowns into small florets. Drain the tofu and cut into 1-inch cubes.

Open the can of coconut milk and spoon off an inch or so of the hard white solid part into a large saucepan with a lid. (If the milk is all liquid, add a few spoonfuls.) Turn the heat to medium-high. When the solids melt, add the onion and broccoli stems, if using, and sprinkle with salt and pepper. Cook, uncovered, stirring occasionally, until the onion is translucent, 5 to 7 minutes. The coconut milk liquid should have evaporated, so the onions should be sizzling in coconut oil and the milk solids should be brown and smell toasty. Scrape up any bits sticking to the bottom.

Turn the heat down to medium-low, add the curry powder and stir until evenly mixed, about 10 seconds. Add the remaining coconut milk, stir and bring to a simmer. Add the tofu and spread the cubes in an even layer, then top with the broccoli florets or other vegetables, sprinkle with salt and cover with the lid. Cook until the vegetables are just tender but still bright green, 5 to 7 minutes.

Gently stir so the vegetables are also coated in sauce. Taste and stir in more curry powder, salt and pepper if you’d like. Serve hot over rice or other grains or noodles, with hot sauce if you want.

COCONUT RED CURRY WITH TOFU

This is from Melissa Clark in The New York Times cooking enewsletter. Melissa wrote, “This simple weeknight red curry relies on jarred or canned red curry paste for flavor, which you can find at larger supermarkets and specialty markets. Transfer leftover canned curry paste to a jar, top it with a little oil and store in the refrigerator for up to a month. Or freeze for longer storage. Feel free to substitute other vegetables for the mushrooms and snow peas, though you might have to increase the cooking time slightly if using something dense like carrot or cubed winter squash.”

2 shallots or 1 small onion, minced

2 garlic cloves, minced

1 Thai chile or 2 serrano peppers, seeded and thinly sliced

2 tablespoons chopped cilantro stems

8 ounces cremini mushrooms, quartered

1/2 teaspoon sea salt, more to taste

3 tablespoons prepared red curry paste

1 cup unsweetened coconut milk

2 teaspoons Asian fish sauce

Zest and juice of 1 lime

1 cup snow peas

Basil and/or cilantro leaves, for garnish

Brown or white rice, for serving

Preparation

Cut tofu into 1-inch slabs and place on paper towel-lined baking sheet. Cover with another layer of paper towels and place another baking sheet on top. Let sit for 20 minutes. Cut into 1-inch cubes.

Heat oil in a large skillet over medium high heat. Add ginger, shallots, garlic, chile and cilantro stems, and sauté until tender, about 5 minutes. Add mushrooms and sauté until golden brown and tender, about 5 minutes. Season with salt. Stir in curry paste and cook 2 minutes. Pour in coconut milk, scraping up any curry paste with a wooden spoon. Add fish sauce, lime zest and juice. Add tofu cubes and snow peas. Simmer until the sauce thickens slightly and the snow peas are tender, 7 to 10 minutes, stirring frequently. Taste and add more salt and/or fish sauce if needed.

Serve warm with brown rice and a scattering of torn basil and/or cilantro leaves on top.

VEGAN CHINESE KUNG PAO TOFU

This is from Jolinda Hackett, who wrote for The Spruce Eats. Jolinda wrote, “Never had kung pao tofu before? Looking for something new to try for a vegetarian dinner tonight? Try this vegetarian Chinese dish!

“Although this traditional Chinese food dish is usually made with chicken, you can use tofu to create a very similar vegetarian and vegan version of traditional kung pao chicken using all the same Chinese ingredients and seasonings, including sesame oil, red pepper flakes, onion, lime and hot sauce. This vegetarian kung pao tofu recipe also calls for lots of healthy Chinese veggies including snow peas, bok choy, cabbage, and mushrooms.

“Serve this Szechuan-style Chinese kung pao tofu recipe over rice.

“Need this recipe to be gluten-free as well as vegan? Double-check that your is gluten-free, and use tamari in place of the soy sauce.”

3 tbsp vegetable broth

1 tbsp lime juice

1 pound firm or extra firm tofu, cut into bite-sized cubes

1 tbsp sesame oil + 2 tbsp

1 onion, diced

1 red bell pepper, diced

1/4 tsp red pepper flakes

1/2 cup sliced mushrooms

1 tbsp fresh ginger, minced

1 small bok choy, chopped

1/4 cup vegetable broth

1/2 cup snow peas

1/2 small purple cabbage, sliced thin

1 tbsp fresh chopped parsley

1 tsp hot sauce

Salt and pepper to taste

Directions

Prepare your tofu. Like most vegetarian tofu recipes, this tofu recipe will taste best if you press the tofu first. This allows the tofu to absorb more of the flavorings and seasonings which you add to it.

Once your tofu is ready, combine the 3 tbsp vegetable broth, lime juice, soy sauce, 1 tbsp sesame oil and the tofu in a small bowl. Allow to marinate for at least 30 minutes, mixing occasionally to coat the tofu well.

Pre-heat oven to 375 F. Grease a baking sheet or cover with foil and bake tofu for 15 minutes, turning once.

In a large skillet or wok over medium-high heat, saute the onion, bell pepper, red pepper flakes, mushrooms and ginger in 2 tbsp sesame oil for 3 to 5 minutes, stirring frequently. Add bok choy and vegetable broth and cook for 3 to 5 more minutes. Add cabbage and snow peas.

Reduce heat to low and add tofu and remaining ingredients, cooking just until combined and heated through. Serve over rice.
