Breakfast

When I was a kid, two of my friends – siblings – lived next door. I'd frequently run over to their house about 30-seconds before my mom would want me to set the table for dinner. (I may have timed it that way on purpose...)

Thursday evenings at their house was usually reserved for breakfast-for-dinner night: their dad was going to get paid the next day, the parents would take the family grocery shopping, and it was time to get rid of the extra half-empty cereal boxes, toaster waffles, etc. So the kids would be sitting around the table with boxes of cereal, a carton of milk, just chowing down on breakfast-for-dinner.

"Why can't we have breakfast for dinner?" I'd ask Mom when I got home. (This was frequently asked with a slight whine, especially if Mom had cooked fried liver for dinner.)

But no such luck.

These days, it's a little more permissible to have breakfast for dinner. To that end, here are six breakfast recipes to try out for dinner – or for breakfast – including Raspberry Cream Cheese French Toast, Pirate Eggs, and Cocoa Pancakes. Enjoy!

APPLE PEANUT BUTTER GRANOLA BARS [VEGAN]

This is from One Green Planet, an animal-friendly website. This recipe begins, "This vegan apple flapjack recipe is super easy to follow but so tasty. These are perfect for an afternoon snack or as a post dinner dessert, so you’ve got to give these a go!"

Ingredients

For the Granola Bars:

1 cup sunflower oil, (or melted coconut oil)

1/2 cup brown sugar

1/2 cup Lakanta Monk fruit sweetener (or substitute with low sugar sweetener or sugar)

1 cup ground oats (blend oats in a blender or just use wholewheat flour)

2 cups traditional oats

1/2 cup almond flour (optional- replace with ground oats or desiccated coconut instead)

1 1/2 tablespoon tahini (or smooth peanut butter)

1/4 teaspoon baking powder

1/4 teaspoon salt

2 apples, peeled and cored, 1 finely sliced and the other grated

1 teaspoon ground cinnamon

1 teaspoon vegan butter

1 teaspoon agave syrup or sugar

1 teaspoon vanilla essence

For the Drizzle:

1 tablespoon icing sugar, sifted

2 tablespoons plant milk (add more/less if needed)

1 tablespoon smooth peanut butter

Preparation

For the Granola Bars:

Preheat oven to 350°F and line a medium sized square baking tray with baking paper (mine is roughly 9x9 inch).

In a large bowl, whisk together sunflower oil (or melted coconut oil) , vanilla essence, tahini, sugar and monk fruit sweetener (if using).

In a separate bowl combine the ground oats, traditional oats, ground almonds, baking soda, and salt. Add the liquid mixture and stir to combine.

Place just over half of mixture into the prepared pan (should be roughly 3mm thickness). Even out by pressing the mixture with a metal spoon or with your fingers.Heat a sauce pan on medium heat and add the butter, cinnamon and agave syrup. Add both the chopped and grated apples. Add a few splashes of water if the pan is looking dry. Lower the heat and cover. Cook for a few minutes until the apples have softened.

Pour the apple puree on the flapjacks and evenly spread the mixture, but leave a bit of space from the edges.

Sprinkle on the remaining oat mixture and press down gently.

Bake in preheated oven for 20 minutes or until crust is golden brown.

Remove from oven and let cool completely at room temperature.

For the Peanut Butter Drizzle:

Add 1 tablespoon of plant milk to the peanut butter in a microwave safe cup and stir with a mini whisk or fork.

Microwave for a few seconds on low heat if necessary to make the peanut butter mixture runnier.

Add the peanut sauce to the sifted icing sugar in a small bowl then stir. Add another tbsp of plant milk if necessary and stir until you have a slightly runny smooth mixture.

Once the flapjacks have completely cooled, drizzle the peanut butter icing over the flapjacks with a small spoon.

Cut into squares and serve.

PARISIAN-STYLE SWEET CREPES

This comes from the September 2009 issue of Vegetarian Times, page 37. It begins, "Cafés and brasseries in the French capital sell passersby sweet crêpes slathered in butter, jam, chestnut purée, and (VT favorite) Nutella. The experience is easy to re-create at home for breakfast, Sunday supper, or a snack."

Ingredients

Crêpes

1 1/4 cups all-purpose flour

1/3 cup sugar

1/2 tsp. salt

1 large egg, lightly beaten

1 cup low-fat milk

1 tsp. vanilla extract

Fillings (optional)

Nutella

Jam

Butter

Chestnut Purée

Preparation

Whisk together flour, sugar, and salt in bowl. Whisk in egg; mixture will be shaggy. Whisk in milk 1/4 cup at a time. Whisk in vanilla. Cover, and chill 30 minutes, or overnight.

Whisk 1/4 to 1/2 cup water into batter to thin. Lightly grease 9-inch nonstick skillet with canola oil. Heat skillet over medium-high heat.

Pour 1/4 cup batter into hot skillet, tilting pan to swirl batter so it coats bottom of pan. Cook 1 to 2 minutes, or until edges begin to brown and center is dry. Flip; cook 30 seconds to 1 minute more.

Transfer crêpe to plate, and repeat with remaining batter. To serve crêpes: Reheat 1 minute in lightly greased skillet. Spread with desired fillings, fold into quarters, and serve.

PIRATE EGGS

When my sister and I were kids, my mother used to fix this for us on a regular basis, except that she called them Gypsy Eggs. Once my brother came along, though, they became Pirate Eggs. The name stuck. Most people from the Northeastern U.S. tend to call them Eggs-in-a-Hole or some variation of that. But whatever you call them, they're good.

The instructions are for one person. Adjust for the number of people you're feeding.

Ingredients

1-2 eggs

1-2 pieces of bread

margarine for the pan

Directions

Melt the margarine in the pan over medium heat. Take the bread and cut a round hole in the middle. Place bread in pan, then crack the egg and dump onto the bread so that the yolk is in the hole. If you prefer non-runny yolks (my preference), crack the yolk with the corner of a spatula. Cook on the first side for several minutes, then flip over and cook the other side. You can flip it several times until the egg looks cooked. Enjoy!

BANANA GRANOLA WITH CINNAMON, NUTMEG AND WALNUTS

This is from Jerrelle Guy in The New York Times cooking enewsletter. Jerrelle wrote, "This banana bread-inspired granola uses real mashed banana, coconut oil, cinnamon, nutmeg and toasted nuts. Keeping it simple allows the subtle banana flavor to shine through, but you can tweak the recipe by adding dried coconut flakes, sesame or pumpkin seeds, more spices, or even chocolate chips or dried fruit. Breaking the granola into large clusters halfway through baking ensures the granola cooks evenly. Allow the granola to sit for at least one hour on the counter to harden completely. Double the recipe if you’d like to stock up your freezer. It will keep at least three months there, at the ready for snacking, or can be served for breakfast, in bowls with milk and freshly sliced banana."

Yield: 2 1/2 cups; Time: 1 hour, plus cooling

Ingredients

1/2 cup/5 ounces mashed bananas (from about 1 large or 2 small ripe or overripe bananas)

1/4 packed cup dark brown sugar

1/4 cup melted virgin coconut oil

2 teaspoons lemon juice

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1/2 teaspoon kosher salt

2 cups old-fashioned rolled oats

1/4 cup walnut halves, roughly chopped

Preparation

Heat the oven to 325 degrees and line a sheet pan with parchment paper.

Add the mashed banana to a medium saucepan along with the brown sugar and coconut oil. Stir to combine. Cover and cook over medium heat for 2 to 3 minutes, or until the pot comes to a sputtering boil. (You’ll hear it popping.) Cook for another 60 to 90 seconds, swirling the pan often so the mixture doesn’t burn.

Remove the pan from the heat, allow the sputtering to subside, then stir in the lemon juice, vanilla, cinnamon, nutmeg and salt. Fold in the oats and walnuts until combined.

Spread the mixture out on the prepared sheet pan in an even layer. Using a spatula, press the oats down into a layer that is about 1/2-inch thick. Bake for 25 minutes, rotating halfway through, then remove the sheet pan from the oven and, using a butter knife, break the granola into large, 2- to 2 1/2-inch clusters on the baking sheet.

Spread the clusters evenly around the pan and bake again until the clusters are a deep golden brown, another 15 to 20 minutes, rotating and tossing halfway through so they don’t burn.

Remove the pan from the oven and allow the granola to cool for at least 30 minutes on the counter to harden slightly. Once the granola has cooled, break it up with your hands into small or medium clusters, depending on preference. Allow to cool completely, at least one more hour.

Transfer the granola to an airtight container and store at room temperature for up to a month (or in the freezer, where it’ll stay crisp for at least 3 months).

RASPBERRY CREAM CHEESE FRENCH TOAST

French Toast

12 slices bread, preferably raisin bread

4 oz. low-fat cream cheese

2 large eggs

2 cups low-fat milk

1/4 cup maple syrup

8 oz. raspberries

Raspberry sauce

1 cup granulated sugar

2 Tbs. cornstarch

8 oz. raspberries

Preparation

To make French Toast: Grease 9×13-inch baking dish. Place 6 slices bread evenly on bottom of pan, and dot with half of cream cheese. Layer remaining 6 slices on top, and dot with remaining cream cheese.

Whisk together eggs, milk, syrup and raspberries in mixing bowl. Pour egg mixture over bread. Cover baking dish with foil, and refrigerate overnight.

Preheat oven to 350F.

Bake bread 1/2 hour covered; remove foil, and bake 30 minutes more, or until bread begins to puff up and brown.

To make Raspberry Sauce: Combine sugar, cornstarch and 1 cup water in saucepan, and bring to a boil. Reduce heat to medium, and cook 3 minutes, or until thickened. Whisk in raspberries, and cook 3 minutes more, or until sauce has thickened again. Serve French Toast with Raspberry Sauce.

COCOA PANCAKES

This comes from Vegetarian Times (May 2005 issue, page 95), in an article featuring Inn Serendipity in Browntown, WI. The recipes begins, "Not only does Inn Serendipity in Browntown, WI feature hearty vegetarian breakfasts (and bedside cordials in the evening), but the owners try to meet any special dietary needs, especially those of vegans. Their vegan cocoa pancakes are among the recipes most requested by vegan and nonvegan visitors. This recipe makes 18 to 20 pancakes—and they can be prepared in just 30 minutes or less!" Makes 6 servings

Spray large nonstick skillet or griddle with cooking spray, and heat over medium heat. When hot, ladle on 1/4 cup batter for each pancake. Sprinkle pancakes with several carob chips. Cook 2 minutes, and turn when tops begin to bubble and edges start to look dry. Cook 2 minutes more, and remove to plate. Serve with maple syrup or vanilla soy yogurt and fresh fruit.

For anyone who, like me, thinks that any time is good for Breakfast, today's post is sure to please. (And yes, you can fix breakfast food any time you're in the mood.) To that end, here are six breakfast foods to get your day started (or finished), including Challah French Toast and Parisian-style Sweet Crêpes. Enjoy!

EVERYDAY PANCAKES

This is from Mark Bittman on The New York Times cooking enewsletter. For this recipe, Mark wrote, "The basic pancake is made from a simple batter of eggs, flour, milk and baking powder for leavening. You can use different types of flour if you want to experiment with whole wheat or buckwheat. And you can also add fruit to the mixture. You might also enjoy this video of the recipe, which walks through a few variations. The batter can be made from scratch in about the same time it takes to make toast. The most time-consuming part of making pancakes, of course, is cooking them. But that time is so short you should consider these an everyday convenience food, not a special-occasion feast. Cook this recipe a few times and it may become part of your weekly routine."

Preparation

Heat a griddle or large skillet over medium-low heat. In a bowl, mix together dry ingredients. Beat eggs into 1-1/2 cups milk, then stir in 2 tablespoons melted cooled butter, if using it. Gently stir this mixture into dry ingredients, mixing only enough to moisten flour; don't worry about a few lumps. If batter seems thick, add a little more milk.

Place a teaspoon or 2 of butter or oil on griddle or skillet. When butter foam subsides or oil shimmers, ladle batter onto griddle or skillet, making pancakes of any size you like. Adjust heat as necessary; usually, first batch will require higher heat than subsequent batches. Flip pancakes after bubbles rise to surface and bottoms brown, after 2 to 4 minutes.

Cook until second side is lightly browned. Serve, or hold on an ovenproof plate in a 200-degree oven for up to 15 minutes.

Ingredients

6 extra-large eggs

1 1/2 cups half-and-half or milk

1 teaspoon grated orange zest

1/2 teaspoon pure vanilla extract

1 tablespoon good honey

1/2 teaspoon kosher salt

1 large loaf challah or brioche bread

Unsalted butter

Vegetable oil

To serve:

Pure maple syrup

Good raspberry preserves (optional)

Sifted confectioners' sugar (optional)

Directions

Preheat the oven to 250 degrees F.

In a large shallow bowl, whisk together the eggs, half-and-half, orange zest, vanilla, honey, and salt. Slice the challah in 3/4-inch thick slices. Soak as many slices in the egg mixture as possible for 5 minutes, turning once.

Heat 1 tablespoon butter and 1 tablespoon oil in a very large saute pan over medium heat. Add the soaked bread and cook for 2 to 3 minutes on each side, until nicely browned. Place the cooked French toast on a sheet pan and keep it warm in the oven. Fry the remaining soaked bread slices, adding butter and oil as needed, until it's all cooked. Serve hot with maple syrup, raspberry preserves, and/or confectioners' sugar.

BREAKFAST BURRITO

2 teaspoons canola oil

1/2 small red onion, diced (1 cup)

1 red bell pepper, seeded and diced

1 cup drained, rinsed canned black beans, preferably low-sodium

1/4 teaspoon chili flakes

Salt and freshly ground black pepper

4 eggs and 4 egg whites

1/3 cup (about 1-1/2 ounce) shredded pepper Jack cheese

Nonstick cooking spray

4 (10 inch) whole wheat tortillas (burrito size)

1/4 cup reduced fat-free sour cream or 2 percent plain Greek yogurt

1/4 cup salsa

1 large tomato, (4 ounces) seeded and diced

1 small avocado (4 ounces), cubed

Hot sauce

Directions

Heat the canola oil in a large nonstick skillet over a medium-high heat. Cook the onions and peppers until onions are softened and peppers are slightly charred, about 8 minutes. Add black beans and red pepper flakes and cook until warmed through, another 3 minutes. Season with salt and pepper and transfer to a dish.

Whisk together the eggs and egg whites then stir in the cheese. Spray the skillet with cooking spray, and reheat the skillet over a medium heat. Reduce heat to low and add eggs, scrambling until cooked through, about 3 minutes. Spread each tortilla with 1 tablespoon each sour cream (or yogurt) and salsa, then layer with 1/4 of the black bean mixture, 1/4 of the scrambled eggs, some diced tomato and 1/4 of the avocado. Season, to taste, with hot sauce. Roll up burrito-style and serve.

When my sister and I were kids, my mother used to fix this for us on a regular basis, except that she called them Gypsy Eggs. Once my brother came along, though, they became Pirate Eggs. The name stuck. Most people from the Northeastern U.S. tend to call them Eggs-in-a-Hole or some variation of that. But whatever you call them, they're good.

The instructions are for one person. Adjust for the number of people you're feeding.

Breakfast

When I was a kid, two of my friends – siblings – lived next door. I'd frequently run over to their house about 30-seconds before my mom would want me to set the table for dinner. (I may have timed it that way on purpose...)

Thursday evenings at their house was usually reserved for breakfast-for-dinner night: their dad was going to get paid the next day, the parents would take the family grocery shopping, and it was time to get rid of the extra half-empty cereal boxes, toaster waffles, etc. So the kids would be sitting around the table with boxes of cereal, a carton of milk, just chowing down on breakfast-for-dinner.

"Why can't we have breakfast for dinner?" I'd ask Mom when I got home. (This was frequently asked with a slight whine, especially if Mom had cooked fried liver for dinner.)

But no such luck.

These days, it's a little more permissible to have breakfast for dinner. To that end, here are six breakfast recipes to try out for dinner – or for breakfast – including Raspberry Cream Cheese French Toast, Pirate Eggs, and Cocoa Pancakes. Enjoy!

APPLE PEANUT BUTTER GRANOLA BARS [VEGAN]

1 cup ground oats (blend oats in a blender or just use wholewheat flour)

2 cups traditional oats

1/2 cup almond flour (optional- replace with ground oats or desiccated coconut instead)

1 1/2 tablespoon tahini (or smooth peanut butter)

1/4 teaspoon baking powder

1/4 teaspoon salt

2 apples, peeled and cored, 1 finely sliced and the other grated

1 teaspoon ground cinnamon

1 teaspoon vegan butter

1 teaspoon agave syrup or sugar

1 teaspoon vanilla essence

For the Drizzle:

1 tablespoon icing sugar, sifted

2 tablespoons plant milk (add more/less if needed)

1 tablespoon smooth peanut butter

Preparation

For the Granola Bars:

Preheat oven to 350°F and line a medium sized square baking tray with baking paper (mine is roughly 9x9 inch).

In a large bowl, whisk together sunflower oil (or melted coconut oil) , vanilla essence, tahini, sugar and monk fruit sweetener (if using).

In a separate bowl combine the ground oats, traditional oats, ground almonds, baking soda, and salt. Add the liquid mixture and stir to combine.

Place just over half of mixture into the prepared pan (should be roughly 3mm thickness). Even out by pressing the mixture with a metal spoon or with your fingers.Heat a sauce pan on medium heat and add the butter, cinnamon and agave syrup. Add both the chopped and grated apples. Add a few splashes of water if the pan is looking dry. Lower the heat and cover. Cook for a few minutes until the apples have softened.

Pour the apple puree on the flapjacks and evenly spread the mixture, but leave a bit of space from the edges.

Sprinkle on the remaining oat mixture and press down gently.

Bake in preheated oven for 20 minutes or until crust is golden brown.

Remove from oven and let cool completely at room temperature.

For the Peanut Butter Drizzle:

Add 1 tablespoon of plant milk to the peanut butter in a microwave safe cup and stir with a mini whisk or fork.

Microwave for a few seconds on low heat if necessary to make the peanut butter mixture runnier.

Add the peanut sauce to the sifted icing sugar in a small bowl then stir. Add another tbsp of plant milk if necessary and stir until you have a slightly runny smooth mixture.

Once the flapjacks have completely cooled, drizzle the peanut butter icing over the flapjacks with a small spoon.

Cut into squares and serve.

This is from Jerrelle Guy in The New York Times cooking enewsletter. Jerrelle wrote, "This banana bread-inspired granola uses real mashed banana, coconut oil, cinnamon, nutmeg and toasted nuts. Keeping it simple allows the subtle banana flavor to shine through, but you can tweak the recipe by adding dried coconut flakes, sesame or pumpkin seeds, more spices, or even chocolate chips or dried fruit. Breaking the granola into large clusters halfway through baking ensures the granola cooks evenly. Allow the granola to sit for at least one hour on the counter to harden completely. Double the recipe if you’d like to stock up your freezer. It will keep at least three months there, at the ready for snacking, or can be served for breakfast, in bowls with milk and freshly sliced banana."

1/2 cup/5 ounces mashed bananas (from about 1 large or 2 small ripe or overripe bananas)

1/4 packed cup dark brown sugar

Preparation

Heat the oven to 325 degrees and line a sheet pan with parchment paper.

Add the mashed banana to a medium saucepan along with the brown sugar and coconut oil. Stir to combine. Cover and cook over medium heat for 2 to 3 minutes, or until the pot comes to a sputtering boil. (You’ll hear it popping.) Cook for another 60 to 90 seconds, swirling the pan often so the mixture doesn’t burn.

Remove the pan from the heat, allow the sputtering to subside, then stir in the lemon juice, vanilla, cinnamon, nutmeg and salt. Fold in the oats and walnuts until combined.

Spread the mixture out on the prepared sheet pan in an even layer. Using a spatula, press the oats down into a layer that is about 1/2-inch thick. Bake for 25 minutes, rotating halfway through, then remove the sheet pan from the oven and, using a butter knife, break the granola into large, 2- to 2 1/2-inch clusters on the baking sheet.

Spread the clusters evenly around the pan and bake again until the clusters are a deep golden brown, another 15 to 20 minutes, rotating and tossing halfway through so they don’t burn.

Remove the pan from the oven and allow the granola to cool for at least 30 minutes on the counter to harden slightly. Once the granola has cooled, break it up with your hands into small or medium clusters, depending on preference. Allow to cool completely, at least one more hour.

Transfer the granola to an airtight container and store at room temperature for up to a month (or in the freezer, where it’ll stay crisp for at least 3 months).

Whisk together eggs, milk, syrup and raspberries in mixing bowl. Pour egg mixture over bread. Cover baking dish with foil, and refrigerate overnight.

Preheat oven to 350F.

Bake bread 1/2 hour covered; remove foil, and bake 30 minutes more, or until bread begins to puff up and brown.

To make Raspberry Sauce: Combine sugar, cornstarch and 1 cup water in saucepan, and bring to a boil. Reduce heat to medium, and cook 3 minutes, or until thickened. Whisk in raspberries, and cook 3 minutes more, or until sauce has thickened again. Serve French Toast with Raspberry Sauce.

Breakfast

When I was a kid, two of my frieds - siblings - lived next door. I'd frequently run over to their house about 30-seconds before my mom would want me to set the table for dinner. (I may have timed it that way on purpose...)

Thursday evenings at their house was usually reserved for breakfast-for-dinner night: their dad was going to get paid the next day, the parents would take the family grocery shopping, and it was time to get rid of the extra half-empty cereal boxes, toaster waffles, etc. So the kids would be sitting around the table with boxes of cereal, a carton of milk, just chowing down on breakfast-for-dinner.

"Why can't we have breakfast for dinner?" I'd ask Mom when I got home. (This was frequently asked with a slight whine, especially if Mom had cooked fried liver for dinner.)

But no such luck.

These days, it's a little more permissible to have breakfast for dinner. To that end, here are six breakfast recipes to try out for dinner - or for breakfast - including Cocoa Pancakes and Pirate Eggs. Enjoy!

PARISIAN-STYLE SWEET CREPES

This comes from the September 2009 issue of Vegetarian Times, page 37. Pour 1/4 cup batter into hot skillet, tilting pan to swirl batter so it coats bottom of pan. Cook 1 to 2 minutes, or until edges begin to brown and center is dry. Flip; cook 30 seconds to 1 minute more.

Transfer crêpe to plate, and repeat with remaining batter. To serve crêpes: Reheat 1 minute in lightly greased skillet. Spread with desired fillings, fold into quarters, and serve.

PIRATE EGGS

When my sister and I were kids, my mother used to fix this for us on a regular basis, except that she called them Gypsy Eggs. Once my brother came along, though, they became Pirate Eggs. The name stuck. Most people from the Northeastern U.S. tend to call them Eggs-in-a-Hole or some variation of that. But whatever you call them, they're good.

The instructions are for one person. Adjust for the number of people you're feeding.

Ingredients

1-2 eggs

1-2 pieces of bread

margarine for the pan

Directions

Melt the margarine in the pan over medium heat. Take the bread and cut a round hole in the middle. Place bread in pan, then crack the egg and dump onto the bread so that the yolk is in the hole. If you prefer non-runny yolks (my preference), crack the yolk with the corner of a spatula. Cook on the first side for several minutes, then flip over and cook the other side. You can flip it several times until the egg looks cooked. Enjoy!

EGGS IN A PEPPER

Breakfast

If you've followed this blog for a while, you might be aware that my mom had qualms about having breakfast at any time other than morning. I have no such qualms. You want breakfast at breakfast time? Great! You want breakfast in the middle of the afternoon? Cool!

That said, here are six yummy breakfast recipes to help you through the day, including Pirate Eggs and Cheesy Totcho and Egg Tortilla Pockets. Enjoy!

CARAMELIZED BANANA NUT OATMEAL

This recipe will also work with steel cut or quick-cooking oats, but stay away from instant oats, as they usually contain added sodium.

Cooking and Serving Tips

To make this recipe even easier, cook up a batch of oatmeal on a Sunday to keep in the refrigerator. That way it is already cooked and ready to go in the morning—you just have to add the bananas!

To increase the protein in this recipe, cook the oats in skim milk or soy milk instead of water, or add a dollop of Greek yogurt to the finished recipe.

80 Ore-Ida™ Mini Tater Tots™ Frozen Potatoes (from 28-oz bag)

1 tablespoon Old El Paso™ Original Taco Seasoning Mix (from 1-oz package)

1 1/4 cups Old El Paso™ Shredded Mexican Style 4 Cheese Blend (5 oz)

6 eggs, beaten

1/4 cup milk

1/4 teaspoon salt

1 tablespoon butter

1 package (8 count) Old El Paso™ Tortilla Pockets, heated as directed on package

1/4 cup Old El Paso™ Jalapeño Slices

Preparation

Heat oven to 425°F. Line large rimmed baking sheet with foil or cooking parchment paper.

In large bowl, mix frozen potatoes and taco seasoning mix until thoroughly coated. Place on baking sheet, and bake 10 minutes; stir. Bake 5 to 10 minutes or until browned. Top with cheese; continue to bake for another 3 to 5 minutes or until cheese is melted.

In medium bowl, beat eggs, milk and salt slightly with fork or whisk until well blended.

In 10-inch nonstick skillet, heat butter over medium heat just until it begins to sizzle and look hot. Add egg mixture. Cook 3 to 4 minutes, stirring frequently, until eggs are thickened throughout but still moist and creamy.

Stuff tortilla pockets with cheesy potatoes, scrambled eggs and jalapeño slices.

Expert Tips

If you want to add a little extra heat to your breakfast tortilla pocket, try substituting Old El Paso™ Shredded 3 Pepper Cheese Blend for the Old El Paso™ Shredded Mexican Style 4 Cheese Blend.

To avoid losing any cheese to the bottom of the baking sheet, arrange frozen potatoes closely together before adding the cheese.

Before buying eggs, open the carton and check that the eggs are clean and uncracked. Gently move each egg to be sure it hasn't cracked and stuck to the carton. If an egg cracks on the way home, throw it away.

For the Granola Bars:

1 cup sunflower oil, (or melted coconut oil)

1/2 cup brown sugar

1/2 cup Lakanta Monk fruit sweetener (or substitute with low sugar sweetener or sugar)

1 cup ground oats (blend oats in a blender or just use wholewheat flour)

2 cups traditional oats

1/2 cup almond flour (optional- replace with ground oats or desiccated coconut instead)

1 1/2 tablespoon tahini (or smooth peanut butter)

1/4 teaspoon baking powder

1/4 teaspoon salt

2 apples, peeled and cored, 1 finely sliced and the other grated

1 teaspoon ground cinnamon

1 teaspoon vegan butter

1 teaspoon agave syrup or sugar

1 teaspoon vanilla essence

For the Drizzle:

1 tablespoon icing sugar, sifted

2 tablespoons plant milk (add more/less if needed)

1 tablespoon smooth peanut butter

Preparation

For the Granola Bars:

Preheat oven to 350°F and line a medium sized square baking tray with baking paper (mine is roughly 9x9 inch).

In a large bowl, whisk together sunflower oil (or melted coconut oil) , vanilla essence, tahini, sugar and monk fruit sweetener (if using).

In a separate bowl combine the ground oats, traditional oats, ground almonds, baking soda, and salt. Add the liquid mixture and stir to combine.

Place just over half of mixture into the prepared pan (should be roughly 3mm thickness). Even out by pressing the mixture with a metal spoon or with your fingers.Heat a sauce pan on medium heat and add the butter, cinnamon and agave syrup. Add both the chopped and grated apples. Add a few splashes of water if the pan is looking dry. Lower the heat and cover. Cook for a few minutes until the apples have softened.

Pour the apple puree on the flapjacks and evenly spread the mixture, but leave a bit of space from the edges.

Sprinkle on the remaining oat mixture and press down gently.

Bake in preheated oven for 20 minutes or until crust is golden brown.

Remove from oven and let cool completely at room temperature.

For the Peanut Butter Drizzle:

Add 1 tablespoon of plant milk to the peanut butter in a microwave safe cup and stir with a mini whisk or fork.

Microwave for a few seconds on low heat if necessary to make the peanut butter mixture runnier.

Add the peanut sauce to the sifted icing sugar in a small bowl then stir. Add another tbsp of plant milk if necessary and stir until you have a slightly runny smooth mixture.

Once the flapjacks have completely cooled, drizzle the peanut butter icing over the flapjacks with a small spoon.

Cut into squares and serve.

PARISIAN-STYLE SWEET CREPES

Whisk together flour, sugar, and salt in bowl. Whisk in egg; mixture will be shaggy. Whisk in milk 1/4 cup at a time. Whisk in vanilla. Cover, and chill 30 minutes, or overnight.

Whisk 1/4 to 1/2 cup water into batter to thin. Lightly grease 9-inch nonstick skillet with canola oil. Heat skillet over medium-high heat.

Pour 1/4 cup batter into hot skillet, tilting pan to swirl batter so it coats bottom of pan. Cook 1 to 2 minutes, or until edges begin to brown and center is dry. Flip; cook 30 seconds to 1 minute more.

Transfer crêpe to plate, and repeat with remaining batter. To serve crêpes: Reheat 1 minute in lightly greased skillet. Spread with desired fillings, fold into quarters, and serve.

PIRATE EGGS

When my sister and I were kids, my mother used to fix this for us on a regular basis, except that she called them Gypsy Eggs. Once my brother came along, though, they became Pirate Eggs. The name stuck. Most people from the Northeastern U.S. tend to call them Eggs-in-a-Hole or some variation of that. But whatever you call them, they're good.

The instructions are for one person. Adjust for the number of people you're feeding.

Ingredients

1-2 eggs

1-2 pieces of bread

margarine for the pan

Directions

Melt the margarine in the pan over medium heat. Take the bread and cut a round hole in the middle. Place bread in pan, then crack the egg and dump onto the bread so that the yolk is in the hole. If you prefer non-runny yolks (my preference), crack the yolk with the corner of a spatula. Cook on the first side for several minutes, then flip over and cook the other side. You can flip it several times until the egg looks cooked. Enjoy!
