“Seize the moment. Remember all those women on the Titanic who waved off the dessert cart.” - Erma Bombeck. (Found in Women's Lip: Outrageous, Irreverent and Just Plain Hilarious Quotes, edited by Roz Warren, page 42.)
Back in November 2016, I started another blog, Quote of the Day. While looking for quotes, this one from Erma Bombeck – my mom's favorite humorous columnist – jumped out as for a dessert post on one of my food blogs. I might post a few more on occasion.
It seems most of us occasionally want something snacky. I know I do! With that in mind, here are today's six dessert recipes to help you through the day (and for “whenever”), including Rhubarb-Strawberry Refrigerator Cake (which always reminds me of Mom) and Chocolate Truffles. Enjoy!
BLACKBERRY CHEESECAKE SQUARES
This is from Ree Drummond of The Food Network’s The Pioneer Woman.
Total:4 hr 5 min; Active: 30 min; Yield: 15 squares; Level: Easy
Ingredients
Crust:
Cooking spray, for spraying foil
One 11-ounce box vanilla wafers
1/2 cup pecans
1 stick (1/2 cup) butter, melted
Filling:
Three 8-ounce packages cream cheese
1 1/2 cups sugar
1 1/2 teaspoons vanilla
4 eggs
1/2 cup sour cream
Topping:
4 cups blackberries
1 cup sugar
1 tablespoon cornstarch
Directions
Preheat the oven to 350 degrees F.
For the crust: Line a 9-by-13-inch rectangular baking pan with foil and spray with cooking spray.
Place the vanilla wafers and pecans into the bowl of a food processor and pulse until the mixture becomes crumbs. Add the melted butter and pulse again until combined. Pour the mixture into the prepared pan and press the crumbs into the bottom of the pan. (If they come up the sides, that's okay!)
For the filling: Beat the cream cheese, sugar and vanilla together in a medium bowl with an electric mixer until smooth. Add the eggs one at a time, beating after each addition. Add the sour cream and mix again.
Pour the filling into the crust, smooth the top and bake for 50 minutes. Turn off the oven, open the oven door and allow the pan to sit in the open oven for 15 minutes. Remove and set aside to cool.
For the topping: Add the blackberries, sugar and 1/4 cup water to a saucepan or skillet. Bring to a boil over medium-high heat and cook until the juices thicken slightly, 4 to 5 minutes.
In a small bowl, make a slurry by stirring together the cornstarch and 2 tablespoons water until smooth. Add the slurry to the berries, return to the boil and cook for another 1 to 2 minutes. Turn off the heat and cool the mixture.
Pour the blackberries over the cheesecake and place the pan into the fridge to cool and set for at least 2 hours (several hours is better).
When ready to serve, remove the cheesecake from the pan by lifting the edges of the foil. Slice into 15 pieces with a long serrated knife.

MARBLED PEANUT BUTTER BROWNIES
I'm not sure where this recipe is from; I have a sneaking suspicion it's from the infamous long-since-forgotten-emailing-list.
Makes 24 squares; Prep time: 15 minutes; Bake time: 30 minutes
No-Stick Cooking Spray
2/3 cup All-Purpose Flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup firmly packed brown sugar
1/2 cup Creamy Natural Peanut Butter
1/4 cup butter, softened
2 eggs
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips, melted and cooled
Preheat oven to 350 degrees.
Spray an 8x8-inch baking pan with no stick cooling spray; set aside.
In a mixing bowl combine the flour, baking powder and salt; set aside.
In the bowl of an electric mixer combine brown sugar, peanut butter and butter; beat until light and creamy. Add eggs and vanilla extract; beat until fluffy. Stir in flour mixture just until blended. Spread in prepared pan.
Drizzle melted chocolate over batter. Use a small sharp knife to swirl the mixtures together and marbleize. (Note: do not over-mix or swirls will blend)
Bake 30 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack; cut into 24 bars.
RHUBARB-STRAWBERRY REFRIGERATOR CAKE
My family spent several years in northeast Connecticut. When I was 15, my parents bought a new house in South Woodstock (we'd lived in Thompson).
One of the new house's charms was a good-sized garden; a large patch of rhubarb threatened to overrun the entire garden. While Dad claimed most of the garden (as “John’s Pea Patch”), Mom decided that the rhubarb was hers. This is one of the many rhubarb desserts we had that year.
This recipe, as well as the next one (Chocolate Truffles), can be found in my e-cookbook Off the Wall Cooking.
6 C rhubarb, cut in 1/2” pieces
1 tsp. vanilla
3 dozen lady fingers, split
1/2 C sugar
whole fresh strawberries
2 pks. (3 oz. each) strawberry gelatin
2 C heavy cream, whipped
Combine rhubarb, sugar and 1 C water in saucepan. Bring to boil. Boil 6 – 8 minutes until soft. Drain 1 C syrup and save. Put rhubarb and remaining syrup in blender. Make pulp (3 1/2 C). Bring pulp to boil. Pour over gelatin and stir until dissolved. Chill until slightly thickened but not firm. Fold in whipped cream. Add vanilla. Line 9” springform pan (3” deep) with ladyfingers. Alternate layers of rhubarb mix and ladyfingers, ending with rhubarb. Chill overnight, or until firm. Top with glaze and strawberries.
Glaze: Mix reserve syrup and 1/4 C sugar. Bring to boil & stir in 1 1/2 T cornstarch. Blend with small amount of water. Boil and cook, stirring until thickened and clean. Add a few drops of red food coloring. Cool.
CHOCOLATE TRUFFLES
I got this from my oldest son and daughter-in-law for Christmas, 2002. They are so good…These, the buck-eyes, and a pot of coffee…Heaven…
This recipe can be found in my e-cookbook Off the Wall Cooking.
8 oz. fine semi-sweet chocolate, broken into small pieces
1 C heavy cream
cocoa powder for dusting (see note)
Put the cream & chocolate into a pan & heat on low until the chocolate has melted. Stir the mixture until smooth & glossy, then pour into a bowl & chill in the fridge for several hours or overnight. Take spoonfuls of the mixture and, wearing gloves, roll between your hands into a ball. Place each truffle into a tray of SIFTED cocoa powder and shake around until well coated.
NOTE: Mary adds: “I’ll warn you, this process is very messy but WELL worth it. Also, some chopped pecans to roll them around in was really good. I’m sure you can think of all sorts of cool variations; I bet some grated orange peel or ginger would be good, too…” Also, “for the cayenne ones, I used a mixture of cocoa, cinnamon and cayenne.”
Very yummy, very addicting.

SWEET POTATO SOUFFLE
This is my mom’s recipe. Mom used to make this for holiday meals or if she was fixing ham for Sunday dinner. There was seldom any leftover soufflé.
Not to worry: since this is a vegetarian blog, I'm not going to suddenly post meat here. I'm just sharing a memory for decades past. Feel free to fix it whenever you want something a little festive.
This recipe, as well as the one for Chocolate Truffles, can be found in my e-cookbook Off the Wall Cooking.
4 – 5 sweet potatoes
1 egg
1 small can pineapple
1 C nuts
2 T orange juice concentrate
1/2 tsp. salt
Cinnamon
dash pepper
1/2 C brown sugar
9 large marshmallows
Peel & dice sweet potatoes, place in pan of water, and cook until tender. Mash & add other ingredients except marshmallows. Put in square pan, cut in 9 squares & place 1 marshmallow in each square. Bake at 350 degrees for 10 minutes.

ONE-POT MAC ’N’ CHEESE
This is from The Food Network, and begins, “This one-pot wonder has humble beginnings: just milk and macaroni. As the pasta cooks, the starch released helps thicken the milk to make the perfect base for a sauce. The cheeses and seasonings are stirred in at the very end, and everything comes together magically.”
Total: 20 min; Active: 10 min; Yield: 6 servings; Level: Easy
To view this online, go to http://www.foodnetwork.com/recipes/food-network-kitchen/one-pot-mac-n-cheese.
Ingredients
4 cups whole milk
3/4 pound elbow macaroni (about 3 cups)
8 ounces mild Cheddar, shredded (about 3 cups)
3 ounces part-skim mozzarella, shredded (about 1 cup)
2 ounces cream cheese, cut into small pieces
2 tablespoons unsalted butter, cut into small pieces
1 teaspoon Dijon mustard
Large pinch cayenne pepper
Large pinch freshly grated nutmeg
Kosher salt
Directions
Put the milk and macaroni in a medium saucepan. Bring the milk to a boil over medium heat, stirring frequently to keep the macaroni from clumping, then cook, stirring frequently, until the macaroni is tender and the milk has thickened to the consistency of heavy cream, 4 to 5 minutes. Remove the saucepan from the heat, add the Cheddar, mozzarella, cream cheese, butter, mustard, cayenne, nutmeg and 1 1/2 teaspoons salt, and stir until smooth, thick and creamy. Serve hot. (The dish will thicken as it cools; thin it out with a little hot water if desired.)
Cook's Note
Be sure to buy blocks of cheese and shred it yourself. The pre-shredded cheese that comes in bags is often tossed with starchy cellulose, which can give this mac 'n' cheese a clumpy texture.

CHOCOLATE TRUFFLES
I got this from my oldest son and daughter-in-law for Christmas, 2002. They are so good…These, the buck-eyes, and a pot of coffee…Heaven…
This recipe (as well as the Buck-Eyes) can be found in my e-cookbook Off the Wall Cooking.
8 oz. fine semi-sweet chocolate, broken into small pieces
BUCK-EYES
My mom made these and passed them out for Christmas presents in 1989. It’s amazing that any of them made the trip home; they are incredibly good.

Melt chocolate chips and paraffin in top of double boiler.
With toothpicks in each peanut butter ball, dip ball into melted chocolate, leaving spot on top of peanut butter balls undipped, then place on wax paper to harden. Try not to eat in one sitting!

Thursday Recipes
Here are six vegetarian recipes to help you through the day, including Chocolate Truffles and Vegetarian Red Curry Tofu with Green Peas. Enjoy!
This recipe, as well as the next one (Chocolate Truffles), can be found in my e-cookbook Off the Wall Cooking.
4 – 5 sweet potatoes
1 egg
1 small can pineapple
1 C nuts
2 T orange juice concentrate
1/2 tsp. salt
Cinnamon
dash pepper
1/2 C brown sugar
9 large marshmallows
Peel & dice sweet potatoes, place in pan of water, and cook until tender. Mash & add other ingredients except marshmallows. Put in square pan, cut in 9 squares & place 1 marshmallow in each square. Bake at 350 degrees for 10 minutes.
CHOCOLATE TRUFFLES
I got this from my oldest son and daughter-in-law for Christmas, 2002. They are so good…These, a batch of buck-eyes, and a pot of coffee…Heaven…
This recipe (as with the Sweet Potato Souffle) can be found in my e-cookbook Off the Wall Cooking.
8 oz. fine semi-sweet chocolate, broken into small pieces
1 C heavy cream
cocoa powder for dusting (see note)
Put the cream & chocolate into a pan & heat on low until the chocolate has melted. Stir the mixture until smooth & glossy, then pour into a bowl & chill in the fridge for several hours or overnight. Very yummy, very addicting.
ONION SUPREME
My dad came to visit for a week at Christmas, 1987. He fixed this to go with Christmas dinner, along with several other veggies. The day I drove him to Tampa International to fly back to New York, we went for coffee at a shop in the airport. When I asked for a copy of this, he grabbed a paper napkin and wrote down the recipe. It’s a great way to fix onions; I’ve always had onions in things, but never as a side dish. However, this is incredibly easy, as well as fantastic.
This recipe can be found in my e-cookbook Off the Wall Cooking.
2 leeks (discard green), sliced thin
3 – 4 yellow onions, sliced thin
1 stick butter or margarine
4 bunches scallions (discard green), sliced thin
20 small white onions
1 1/2 C half & half
2 cloves garlic, sliced thin
Melt butter over low heat and sauté leeks, scallions, garlic and yellow onions for 45 minutes. Meanwhile, cook white onions in enough water to just barely cover. Add white onions (after 45 minutes) to skillet and pour in half & half. Cook over low heat for 10 minutes more & serve.
GOURMET GREEN BEANS
This is from Publix Supermarket's April 2006 issue of Aprons
2 (12-ounce) bags fresh snipped green beans (snapped, if desired)
1 (8-ounce) package sliced baby portabella mushrooms
3/4 cup water
2 tablespoons garlic butter
1 tablespoon sesame seeds
1 teaspoon seasoned salt
Place beans, mushrooms, and water in microwave-safe bowl. Cover and microwave on HIGH 12–14 minutes, stirring once, until crisp tender.
Preheat large sauté pan on medium-high 2–3 minutes. Place butter in sauté pan and swirl to coat. Add sesame seeds and heat 1–2 minutes, stirring often, until lightly browned.
Drain beans and mushrooms and add to sauté pan. Sprinkle with seasoned salt. Reduce heat to medium, cover, and cook 6–8 minutes, stirring occasionally, until desired tenderness. Serve.

MINI PEANUT BUTTER ICE CREAM SANDWICHES
This was in an old Weight Watchers email. The Weight Watchers PointsPlus was 3 per serving.
2 oz low fat cream cheese, softened
1/4 cup powdered sugar
1/4 cup creamy peanut butter
1 1/2 cup lite whipped topping
1 pinch salt
24 items chocolate wafers (about 5 1/2 oz total)
In a medium bowl, using an electric mixer, beat together cream cheese, sugar and peanut butter until smooth. Add whipped topping; beat until just combined. Spoon a rounded 1 1/2 tablespoons peanut butter filling on top of a wafer cooker; place a second wafer on top. Set on a baking sheet and repeat with remaining ingredients; freeze until firm. Yields 1 ice cream sandwich per serving.
VEGETARIAN RED CURRY TOFU WITH GREEN PEAS
This comes from Jolinda Hackett, The Spruce’s vegetarian expert. Jolinda wrote, “This Thai inspired recipe for a basic vegetarian (and vegan!) red curry sauce with vegetables will go best served over steamed white rice, though you could always eat it plain as a curry soup dish. I'm personally not a big fan of green curry, though I suppose you could try a green curry paste instead of red in this recipe, if you'd like. I'd probably omit the fresh cilantro, in that case.
“Though the recipe calls for tofu, carrots, peas and baby corn (my personal favorite!) you can use just about any vegetable you have on hand, and adjust the cooking time accordingly if needed. A note about store-bought red curry pastes: be sure to read the ingredients to make sure it is vegetarian (a few brands will contain some sort of fish). I usually use Thai Kitchen brand red curry paste, which is easy to find, vegetarian, vegan, and gluten-free.

Ingredients
3 tbsp fresh basil, coarsely chopped
1 tbsp vegetarian red curry paste (make sure it's vegetarian)
1 14 ounce can coconut milk
1 carrot, sliced thin
1/2 cup green peas
1/2 cup baby corn, chopped
1 block firm or extra firm tofu, well pressed
2 tbsp chopped fresh cilantro
1 tsp brown sugar
juice from one lime
Directions
Like most vegan tofu recipes, this one will taste best if you press the tofu first. Not sure how to do that? See this easy step-by-step guide: How to press tofu.
After your tofu is well-pressed, chop it into about 3/4-inch (bite-sized) chunks.
In a medium-sized saucepan, combine the basil, vegetarian red curry paste and coconut over medium high heat, stirring well to mix curry paste.
Add the remaining ingredients, including the sliced carrot, green peas, baby corn and pressed and chopped tofu.
Bring the mixture to a slow simmer.
Cover the pot and allow your curry to cook for about 10-12 minutes, or until the veggies are tender, but not overcooked.
Serve your vegan Thai red curry over rice if desired. Or, pair it with a healthier whole grain, such as quinoa or kaniwa for the extra protein boost.

Desserts!

Cool.

Desserts
“I want something snacky!” How many times have we heard that? How many times have we said that? If you're like me, many times, on both counts. Here are six desserts to try out. Enjoy!
PAVLOVA WITH MANGO, RASPBERRIES, AND WHIPPED YOGURT CREAM
From the June 2013 issue of Vegetarian Times, page 73; Serves 10
The recipe starts with, "Crackly-dry on the outside and moist on the inside, a Pavlova is a virtually foolproof “cake.” Even if something does go wrong, the lavish cream and fruit topping will hide any flaw."
Toppings
2/3 cup chilled heavy whipping cream
1/3 cup plain 2% Greek yogurt
2 Tbs. sugar
1 large, ripe mango, peeled and diced (2 cups)
1 6-oz. container raspberries
Pavlova
1 cup sugar
1 1/2 tsp. cornstarch
1/2 cup large egg whites (about 4 eggs)
1 tsp. fresh lime juice or lemon juice
1 tsp. vanilla extract
To make Toppings: Beat cream, yogurt, and 1 Tbs. sugar in medium bowl until stiff. Combine mango, raspberries, and remaining 1 Tbs. sugar in separate bowl. Cover, and chill until ready to serve.
Position oven rack just below center, and preheat oven to 250°F. Trace 9-inch-diameter circle onto sheet of parchment paper. Turn parchment over onto large rimmed baking sheet; circle should show through.
To make Pavlova: Combine 1 Tbs. sugar and cornstarch in small bowl. Beat egg whites, lime juice, and vanilla with handheld electric mixer in medium bowl until soft peaks form. Gradually beat in remaining 15 Tbs. sugar. Increase mixer speed to medium-high; beat 4 minutes, or until meringue is thick and satiny, and path remains when spoon is drawn through. Beat in cornstarch mixture.
Scrape meringue into center of circle on parchment. Spread meringue to fill circle, building edges slightly higher than center. Bake Pavlova 1 hour and 15 minutes, or until outside is dry but center is still soft (crust will give when poked). Turn off oven, leave door closed, and cool 1 hour in oven. Slide metal spatula under Pavlova to loosen, and transfer to cake plate using a tart pan’s removable bottom for support.
Spread yogurt cream thickly over Pavlova, leaving 1-inch border uncovered. Top with fruit mixture.

VEGAN PUMPKIN PIE CUSTARD
I'm not sure where this recipe came from; possibly from some old email list that I was on? Serves 8
1 1/2 cups of soymilk
4 Tbls cornstarch
1 1/2 cups of solid-pack canned pumpkin or cooked pumpkin
1/2 cup sugar (preferably raw or Turbinado) or other sweetener
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground ginger
1/8 tsp ground cloves
Preheat oven to 375 degrees.
In a large bowl, whisk together the soymilk and cornstarch until smooth. Stir in pumpkin, sweetener, salt, cinnamon, ginger and cloves. Pour into either 8 large ramekins for individual servings, or a 9" Pyrex baking dish.
Bake for 45 to 50 minutes or until firm. Start checking custard at 45 minutes to prevent over baking. Filling should be set, but the center still a bit jiggly.
Cool before cutting.
FABULOUS VEGAN FUDGE CAKE WITH BITTERSWEET ICING
From the September 2012 issue of Vegetarian Times. This recipe serves 8, and starts off, “I’ve tried vegan cake recipes in the past, but didn’t like the sour taste of the vinegar that is usually used to activate the leavening,” says single mom and café manager Shelly Platten. “I tinkered with some recipes that didn’t use vinegar to come up with a fudgy, satisfying cake.”
