There's just something wonderful about homemade bread, including Quick Bread And Bisuits. They make the house smell wonderful, they taste wonderful, and they're perfect for almost any occasion, whether it's part of a meal, or a mid-morning or afternoon snack.
To that end, here are six quick bread and biscuits recipes to help you through the day, including Spicy Skillet Cornbread and Cinnamon Swirl Bread. Enjoy!
BLUEBERRY DROP BISCUITS
This is from the infamous long-since-forgotten emailing list. Serves 8 to 10.
Ingredients
1 cup blueberries
3 tablespoons sugar
2 cups sifted all-purpose flour
3 teaspoons baking powder
3/4 teaspoon salt
2 tablespoons cold shortening
1 cup cold milk
Directions
Butter a baking sheet. Wash drain and dry the blueberries. In a medium bowl combine the blueberries with 2 tablespoons sugar. In a separate bowl sift together the flour, baking powder and salt. Cut the shortening in to the mixture with a pastry blender. Add the milk stirring with a fork. Add the blueberries. Drop by spoonfuls 1 inch apart on the prepared baking sheet. Sprinkle the biscuits with the remaining tablespoon of sugar. Bake at 450 degrees for 12 minutes. Serve hot with butter.
CORNBREAD
This is from Betty Crocker, and begins, "Our quick Cornbread recipe is not only made from scratch but is melt-in-your-mouth good. No matter if you're serving it as a side at a barbeque, alongside chili or even as a breakfast option, you can't go wrong with homemade Cornbread. With only four simple steps, our easy Cornbread recipe is one you'll want to make again and again. This is all thanks to the golden brown, crispy edges and incredible flavor. You'll knock our Cornbread recipe out of the park."

Ingredients
1/4 cup butter (1/2 stick)
1 cup milk
1 large egg
1 1/4 cups yellow, white or blue cornmeal
1 cup Gold Medal™ all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
Directions
Heat the oven to 400°F. Spray the bottom and sides of an 8-inch square pan or 9-inch round cake pan with the cooking spray.
In a 1-quart saucepan, heat the butter over low heat until melted.
In a large bowl, beat the melted butter, milk and egg with a fork or wire whisk until well mixed. Add the cornmeal, flour, sugar, baking powder and salt all at once; stir just until the flour is moistened (batter will be lumpy). Pour batter into the pan; use a rubber spatula to scrape batter from bowl. Spread batter evenly in pan and smooth top of batter.
Bake 20 to 25 minutes or until golden brown and a toothpick inserted in the center comes out clean. Serve warm.
Expert Tips
Ground cornmeal is available in different grinds, from fairly fine to very coarse. A finer grind is good for baking a cake-like bread, while coarser grinds (like for grits or polenta that are often cooked into a spoonable hot cereal) can offer more texture and bite to our Cornbread recipe. Consider using a mixture of fine and coarse meals for a crumblier, more bread-like product.
Not all cornmeal is yellow; switch things up with a white or New Mexican blue cornmeal in our easy Cornbread recipe.
Mix a spoonful of clover honey or grated orange peel into softened butter to slather on the warm bread.
Bake the batter in a round or square baking pan or try a small cast-iron skillet, muffin tin, or in a heavy corn stick pan. Like for all quick breads, just grease the bottom of the pan or muffin cups so the bread can climb up the sides easily as it rises. For a corn stick pan completely grease the grooves so the sticks slide out without sticking.
BAKING POWDER BISCUITS
This is from the July/August 2004 issue of Vegetarian Times, page 45. It begins, "If you want to make your own baking powder, the formula is very simple: Combine 1/4 cup cream of tartar with 2 tablespoons baking soda, and sift the two together three times. Store the powder in a tightly sealed container away from sunlight. When cutting out biscuits, dont twist cutter; cut straight through dough to work surface. This recipe makes 8 biscuits."

Turn dough onto a lightly floured surface, and knead briefly but strongly, for 6 or 7 strokes. Roll out dough to a thickness of 1/2 inch. Using a floured fork, prick surface of dough all over at 1-inch intervals, taking care that fork goes through dough.
Using a 3-inch biscuit cutter, stamp out dough. Place biscuits close together on baking sheet.
Bake in center of oven for 8 to 12 minutes, or until biscuits are crusty and are a rich golden brown. Remove from oven, and serve.
SPICY SKILLET CORNBREAD
This is from the October 2007 issue of Vegetarian Times, page 62. It begins, "Diced bell pepper and a cheesy topping mean you can skip the butter when serving this colorful cornbread. Baking it in a preheated skillet or pan gives it a crunchy-chewy crust. No buttermilk on hand? Simply stir 1-1/2 Tbs. vinegar into 1-2/3 cups low-fat milk."
Makes 12 servings in 30 minutes or less

Stir together cornmeal, flour, brown sugar, baking powder, salt, baking soda, and cayenne pepper in large bowl. Whisk buttermilk and melted butter into eggs in separate bowl. Fold egg mixture into cornmeal mixture until combined. Stir in bell pepper.
Pour batter into hot skillet, and bake 10 minutes. Sprinkle cheese over top, and bake 5 minutes more, or until toothpick inserted in center comes out clean. Remove from oven, and cool 10 minutes, or until set. Cut into wedges, and serve in pan or on serving plate.
SUNSET SWEET POTATO DROP BISCUITS
This was in the October 2007 issure of Vegetarian Times, page 66. It begins, "Mashed sweet potatoes keep these biscuits tender and low in fat, plus eliminate the need for eggs or dairy. For a more elegant look, roll out the dough and cut with a 2-inch round cutter." Makes 12 servings

Ingredients
1 cup mashed cooked sweet potatoes (2 small baked sweet potatoes)
3 Tbs. vegetable oil
1 Tbs. maple syrup
1 tsp. apple cider vinegar
1/2 tsp. salt
1 cup all-purpose or whole-wheat pastry flour
2 tsp. baking powder
1 tsp. ground nutmeg
Preparation
Preheat oven to 400°F. Coat baking sheet with cooking spray.
Combine sweet potatoes, oil, syrup, vinegar, and salt in large bowl. Sift in flour, baking powder, and nutmeg.
Cut dry ingredients into sweet potato mixture with fork until mixture comes together. Stir in 2 to 3 Tbs. water, or enough to get dough to hold together.
Drop golf ball–size rounds of dough onto prepared baking sheet. Bake 15 to 17 minutes, or until tops are lightly browned and firm to the touch. Serve warm.
CINNAMON SWIRL BREAD
This was from Fr. Dominic Garramone (aka The Bread Monk). I first ran across his show, Breaking Bread with Fr. Dominic, years ago on PBS. The show has since left television (at least, as far as I can tell), but you can still check out his recipes and books on his website (above).
This recipe makes about 2 loaves.
Ingredients
Dough:
1 cup milk
1 cup sour cream
3 tablespoons solid vegetable shortening or butter
5 1/2 to 6 cups all-purpose flour, divided
1/4 cup granulated sugar
2 packages FLEISCHMANN's Active Dry Yeast
2 teaspoons salt
1 tablespoon vanilla extract
3 eggs, beaten
Filling:
2 tablespoons butter, softened
1/4 cup granulated sugar
1 tablespoon ground cinnamon
Pinch ground nutmeg
Directions
Combine milk, sour cream and shortening in a saucepan over low heat; stir occasionally until sour cream and shortening are melted and mixed in. Remove from heat. Let cool to lukewarm.
Combine 2 cups of the flour, sugar, yeast and salt in a large bowl; mix well. Blend milk mixture, vanilla and eggs into flour mixture; beat about 3 minutes. Add enough of the remaining flour to make a soft dough that pulls away from the side of the bowl.
Turn dough out onto a lightly floured surface. Knead 5 minutes, adding flour as needed to make a smooth and elastic dough. Lightly grease the surface of the dough; place dough in a greased bowl. Cover and let rise in a warm, draft-free place about 1 to 1 1/2 hours, or until doubled in bulk.
Punch down dough. Knead 2 minutes to work out the air bubbles. Divide dough into 2 equal pieces. On a lightly floured surface or pastry cloth, roll each piece of dough into a rectangle about 14 by 7 inches. Spread softened butter on dough, leaving a 1/2-inch border around the edge. Combine sugar, cinnamon and nutmeg; sprinkle over butter. Starting with the short edge, tightly roll up dough; seal the edges. Place in greased 9x5x3-inch loaf pans. Cover with a clean towel and let rise 45 to 60 minutes, or until nearly doubled.
About 15 minutes before end of rising time, preheat oven to 375 degrees. Bake bread 40 to 45 minutes, or until top is golden and bread sounds hollow when tapped.
Remove from pans and let cool on a wire rack. If desired, while loaves are still hot, brush the tops with additional butter and sprinkle with additional cinnamon sugar.
Note:
Be careful not to add too much flour, either in mixing or kneading, or the dough will be too stiff to roll out. It's better for the dough to be a bit too soft than too stiff. When sealing the edges of the loaf, brush the edge of the dough with a little milk if you have trouble getting it to stick.
I like to make this recipe in circular glass tube pans. Corning used to produce them, but I'm not sure if they're still available. I got mine at a rummage sale. They make a perfectly round slice of bread with a spiral of cinnamon in the center.

Quick Breads and Biscuits - Double-Post Tuesday
Besides being Taco Tuesday, it's also Double-Post Tuesday. Today's double post deals with Quick Breads and Biscuits, always something appreciated any time of year, but especially at the holidays. This recipe makes about 30 rolls.
Ingredients
1 package FLEISCHMANN's Active Dry Yeast
1/4 cup warm water
2 cups whole milk
1/4 cup (1/2 stick) butter
2 tablespoons granulated sugar
2 teaspoons salt
2 eggs, beaten
5 to 5 1/2 cups bread flour or all-purpose flour, divided
Directions
Sprinkle yeast over warm water in small bowl; stir to dissolve. Let stand 5 to 10 minutes, or until foamy.
Heat milk in a saucepan until lukewarm; do not boil. Add butter, sugar and milk; mix well.
Combine milk mixture, yeast mixture and eggs in large bowl of electric mixer fitted with dough hook. Add 2 cups of the flour; mix with dough hook until blended. Add 2 cups flour and mix until blended. Add 1 cup flour and mix on medium speed 2 minutes.
Remove dough from mixing bowl and place on a floured surface. Knead, adding as much of the remaining 1/2 cup flour as needed to form a smooth, elastic dough. Place dough in a greased bowl and turn to coat. Cover and let rise in a warm, draft-free place 1 to 1 1/2 hours, or until doubled.
Punch down dough. Knead 2 minutes to work out air bubbles. Let dough rest 10 minutes. Shape dough into desired rolls. (For shape variations, visit Tips & Techniques.) Place on lightly greased baking sheet. Cover and let rise about 30 minutes, or until doubled.
When dough is nearly finished rising, preheat oven to 425 degrees. Bake rolls 15 to 20 minutes, or until golden brown.

SPRING TWISTS
Years ago, when my better half and I first got cable, I was channel-surfing, something most of us have done occasionally. I ran across a baking show on PBS called Breaking Bread with Fr. Dominic, featuring Fr. Dominic Garramone. I fell in love with the show, and watched it almost every time it was on. (Unfortunately, it only ran from 1999 to 2001.)
Anywho, this recipe was featured on his show; you might even find it in one of his many cookbooks (and yes, I’m planning to pick up a copy of at least one or two of said cookbooks).
Makes 48 twists
Ingredients
Dough
3 3/4 cups all-purpose flour, divided
1 envelope FLEISCHMANN’S RapidRise Yeast
1 teaspoon salt
1/4 cup water
1 (8-ounce) container sour cream
1 cup butter or margarine
2 eggs, large
1 teaspoon vanilla extract
1 cup plus 2 tablespoons sugar
Vanilla Glaze:
2 cups powdered sugar, sifted
3 to 4 tablespoons milk
1/2 teaspoon vanilla extract
1/2 cup finely chopped almonds
Directions
In a large bowl, combine 1 1/4 cups flour, undissolved yeast, and salt. Heat water, sour cream, and butter until very warm (120 to 130 degrees). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs, vanilla and 1/2 cup flour; beat 2 minutes at high speed. Stir in remaining flour to make a stiff batter. Cover tightly with plastic wrap; refrigerate 2 to 24 hours.
Divide dough in half, returning half to refrigerator. Roll remaining dough to 12 x 8-inch rectangle; sprinkle with 3 tablespoons sugar. Fold ends of dough over center (like folding a letter). Repeat rolling, sprinkling with sugar, and folding procedure twice more. Roll dough to 12 x 6-inch rectangle. Cut into 24 strips, 6 inches long and 1 / 2-inch wide. Twist each strip 3 to 4 times; place on greased baking sheets. Repeat with remaining dough and sugar.
Bake at 375 degrees for 15 to 17 minutes or until done. Remove from sheets; cool on wire racks. Drizzle with Vanilla Glaze; sprinkle with chopped almonds.
Vanilla Glaze: In a small bowl, combine powdered sugar, milk, and vanilla extract. Stir until smooth.

Combine milk mixture, yeast mixture and eggs in large bowl of electric mixer fitted with dough hook. Add 2 cups of the flour; mix with dough hook until blended. Add 2 cups flour and mix until blended. Add 1 cup flour and mix on medium speed 2 minutes.
Remove dough from mixing bowl and place on a floured surface. Knead, adding as much of the remaining 1/2 cup flour as needed to form a smooth, elastic dough. Place dough in a greased bowl and turn to coat. Cover and let rise in a warm, draft-free place 1 to 1 1/2 hours, or until doubled.
Punch down dough. Knead 2 minutes to work out air bubbles. Let dough rest 10 minutes. Shape dough into desired rolls. (For shape variations, visit Tips & Techniques.) Place on lightly greased baking sheet. Cover and let rise about 30 minutes, or until doubled.
When dough is nearly finished rising, preheat oven to 425 degrees. Bake rolls 15 to 20 minutes, or until golden brown.
SPICY SKILLET CORNBREAD
This is from the October 2007 issue of Vegetarian Times, page 62. It begins, "Diced bell pepper and a cheesy topping mean you can skip the butter when serving this colorful cornbread. Baking it in a preheated skillet or pan gives it a crunchy-chewy crust. No buttermilk on hand? Simply stir 1-1/2 Tbs. vinegar into 1-2/3 cups low-fat milk."

Pour batter into hot skillet, and bake 10 minutes. Sprinkle cheese over top, and bake 5 minutes more, or until toothpick inserted in center comes out clean. Remove from oven, and cool 10 minutes, or until set. Cut into wedges, and serve in pan or on serving plate.
CINNAMON SWIRL BREAD
This was also from Fr. Dominic Garramone (aka The Bread Monk). I first ran across his show, Breaking Bread with Fr. Dominic, years ago on PBS. The show has since left television (at least, as far as I can tell), but you can still check out his recipes and books on his website (above).
This recipe makes about 2 loaves.
Ingredients
Dough:
1 cup milk
1 cup sour cream
3 tablespoons solid vegetable shortening or butter
5 1/2 to 6 cups all-purpose flour, divided
1/4 cup granulated sugar
2 packages FLEISCHMANN's Active Dry Yeast
2 teaspoons salt
1 tablespoon vanilla extract
3 eggs, beaten
Filling:
2 tablespoons butter, softened
1/4 cup granulated sugar
1 tablespoon ground cinnamon
Pinch ground nutmeg
Directions
Combine milk, sour cream and shortening in a saucepan over low heat; stir occasionally until sour cream and shortening are melted and mixed in. Remove from heat. Let cool to lukewarm.
Combine 2 cups of the flour, sugar, yeast and salt in a large bowl; mix well. Blend milk mixture, vanilla and eggs into flour mixture; beat about 3 minutes. Add enough of the remaining flour to make a soft dough that pulls away from the side of the bowl.
Turn dough out onto a lightly floured surface. Knead 5 minutes, adding flour as needed to make a smooth and elastic dough. Lightly grease the surface of the dough; place dough in a greased bowl. Cover and let rise in a warm, draft-free place about 1 to 1 1/2 hours, or until doubled in bulk.
Punch down dough. Knead 2 minutes to work out the air bubbles. Divide dough into 2 equal pieces. On a lightly floured surface or pastry cloth, roll each piece of dough into a rectangle about 14 by 7 inches. Spread softened butter on dough, leaving a 1/2-inch border around the edge. Combine sugar, cinnamon and nutmeg; sprinkle over butter. Starting with the short edge, tightly roll up dough; seal the edges. Place in greased 9x5x3-inch loaf pans. Cover with a clean towel and let rise 45 to 60 minutes, or until nearly doubled.
About 15 minutes before end of rising time, preheat oven to 375 degrees. Bake bread 40 to 45 minutes, or until top is golden and bread sounds hollow when tapped.
Remove from pans and let cool on a wire rack. If desired, while loaves are still hot, brush the tops with additional butter and sprinkle with additional cinnamon sugar.
Note:
Be careful not to add too much flour, either in mixing or kneading, or the dough will be too stiff to roll out. It's better for the dough to be a bit too soft than too stiff. When sealing the edges of the loaf, brush the edge of the dough with a little milk if you have trouble getting it to stick.
I like to make this recipe in circular glass tube pans. Corning used to produce them, but I'm not sure if they're still available. I got mine at a rummage sale. They make a perfectly round slice of bread with a spiral of cinnamon in the center.

Years ago, when my better half and I first got cable, I was channel-surfing, something most of us have done occasionally. I ran across a baking show on PBS called Breaking Bread with Fr. Dominic, featuring Fr. Dominic Garramone. I fell in love with the show, and watched it almost every time it was on. (Unfortunately, it only ran from 1999 to 2001.)
Anywho, this recipe was featured on his show; you might even find it in one of his many cookbooks (and yes, I’m planning to pick up a copy of at least one or two of said cookbooks).
Makes 48 twists
Ingredients
Dough
3 3/4 cups all-purpose flour, divided
1 envelope FLEISCHMANN’S RapidRise Yeast
1 teaspoon salt
1/4 cup water
1 (8-ounce) container sour cream
1 cup butter or margarine
2 eggs, large
1 teaspoon vanilla extract
1 cup plus 2 tablespoons sugar
Vanilla Glaze:
2 cups powdered sugar, sifted
3 to 4 tablespoons milk
1/2 teaspoon vanilla extract
1/2 cup finely chopped almonds
Directions
In a large bowl, combine 1 1/4 cups flour, undissolved yeast, and salt. Heat water, sour cream, and butter until very warm (120 to 130 degrees). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs, vanilla and 1/2 cup flour; beat 2 minutes at high speed. Stir in remaining flour to make a stiff batter. Cover tightly with plastic wrap; refrigerate 2 to 24 hours.
Divide dough in half, returning half to refrigerator. Roll remaining dough to 12 x 8-inch rectangle; sprinkle with 3 tablespoons sugar. Fold ends of dough over center (like folding a letter). Repeat rolling, sprinkling with sugar, and folding procedure twice more. Roll dough to 12 x 6-inch rectangle. Cut into 24 strips, 6 inches long and 1 / 2-inch wide. Twist each strip 3 to 4 times; place on greased baking sheets. Repeat with remaining dough and sugar.
Bake at 375 degrees for 15 to 17 minutes or until done. Remove from sheets; cool on wire racks. Drizzle with Vanilla Glaze; sprinkle with chopped almonds.
Vanilla Glaze: In a small bowl, combine powdered sugar, milk, and vanilla extract. Stir until smooth.
BLUEBERRY DROP BISCUITS

Cut the shortening in to the mixture with a pastry blender. Add the milk stirring with a fork. Add the blueberries. Drop by spoonfuls 1 inch apart on the prepared baking sheet. Sprinkle the biscuits with the remaining tablespoon of sugar. Bake at 450 degrees for 12 minutes. Serve hot with butter.

It's Monday again, time to get the week started. Did you get everything done over the weekend that you wanted to? I know I didn't! Well, there's always next weekend.

ROMAINE SALAD WITH AVOCADO "CAESAR" DRESSING
This comes from Vegetarian Times (July/August 2005 issue, page 58), and begins, "This salad is wonderful as is, but for a delicious variation, try adding roasted corn and roasted red peppers." Serves 6

Ingredients
Avocado "Caesar" Dressing
1 tsp. whole cumin seeds
3 Tbs. fresh lime juice
3 Tbs. extra virgin olive oil

1 clove garlic, minced

1 ripe medium-sized Hass avocado, peeled and pitted
Salad
1 Tbs. olive oil
2 6-inch corn tortillas, cut into strips
12 cups romaine lettuce, torn into bite-sized pieces (bagged or fresh)
1 medium-sized tomato, seeded and diced
Preparation
To make Avocado “Caesar” Dressing: In skillet, toast cumin seeds, stirring often, until fragrant, about 2 minutes. Using spice grinder or mortar and pestle, pulverize; set aside.
Put cumin, lime juice, oil, mustard, garlic, salt, 1/4 cup water and avocado into food processor, and purée until smooth; add water, if needed. Season with pepper and cayenne.
To make Salad: Line plate with paper towel. Heat oil in nonstick skillet over medium heat. Add tortilla strips, and cook, stirring constantly, until crisp and lightly golden, about 2 minutes. Transfer strips to paper towels, and drain. Sprinkle with salt.
Toss lettuce with tomatoes and dressing in large bowl. Transfer mixture to individual plates, and top with tortilla strips.
THAI GREEN BEAN CURRY WITH PINEAPPLE AND SWEET POTATOES
This comes from Vegetarian Times. This begins, "This Thai-inspired dish features sweet potatoes blended into the sauce and as bites in the bowl." The note adds, "Blending part of the sweet potatoes into the broth of this vegan green bean curry yields a rich, creamy base without using a lot of coconut milk."

Bake at 375 degrees for 20 to 25 minutes. Remove from sheet; cool on wire rack. Drizzle with Powdered Sugar Glaze (directions below).

SMOKE MAC & CHEESE

3 tbsp butter, divided
2 tbsp gluten-free all-purpose flour blend
1 tbsp smoked paprika
3/4 tsp ground nutmeg
2-1/2 cups whole milk
2 cups smoked Cheddar, shredded
1/4 cup breadcrumbs (gluten-free if needed)
1/4 tsp garlic powder
1/2 tsp Italian seasoning
1 lb mini penne pasta (gluten-free if needed)
Directions
Preheat the oven to 375°F.
In a medium saucepan over medium heat, melt 2 tablespoons of the butter. Add the flour and stir until the mixture turns golden, 3 to 4 minutes.
Add the paprika and nutmeg. Gradually whisk in the milk. Bring to a gentle boil and then immediately lower the heat. Simmer for about 4 minutes, stirring often, until the sauce thickens.
Once the sauce has thickened and can coat the back of a spoon, stir in the cheese and whisk until melted and smooth. Set aside.
In a small skillet over medium-high heat, melt the remaining 1 tablespoon of butter. Add the breadcrumbs, garlic powder and Italian seasoning. Stir and cook for about 2 minutes, or until golden. Transfer to a plate.
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, tender yet firm to the bite, according to the package directions (see Tips below). Drain well. Pour the cheese sauce over the pasta and toss well to coat.
Divide among six 1-1/4 cup ramekins or oven dishes. Sprinkle with the breadcrumb mixture. Alternatively, you can use a 9 x 13–inch baking dish. Bake for 10 to 12 minutes, until bubbly and golden.
Notes
Give standard mac and cheese an upgrade! This wonderfully smoky, uber-cheesy mac and cheese makes itself at home with any barbecued meat.
Smoked Cheddar gives lusciously creamy cheese sauce a bold flavor, which is further enhanced by the smoked paprika.
Fold the sauce with bite-size, al dente penne pasta and top with freshly toasted, seasoned breadcrumbs for a delicious crunch.
Tips
Undercook the pasta! If the package says 6 to 8 minutes for al dente, go for 5 to 6 minutes. This way, when baked with the sauce it won’t become overcooked and mushy.
Make sure to use a gluten-free flour blend with tapioca or cornstarch, as this helps thicken your sauce better than regular flour.
CHERRY-COLA DUMP CAKE
This yumminess comes from Betty Crocker, and begins, "Super easy to prepare: Just mix devil's food cake mix with cola and pour over cherries. Bake for one hour and voila!"

1 jar (16 oz) maraschino cherries with juice (without stems)
1 box Betty Crocker™ Super Moist™ devil’s food cake mix
1 cup cola-flavored carbonated beverage
Directions
Heat oven to 350°F. Into ungreased 13x9-inch (3-quart) glass baking dish, “dump” cherries with cherry juice.
In medium bowl, mix cake mix and carbonated beverage. “Dump” mixture over cherries.
Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool about 15 minutes before cutting and serving cake.
Expert Tips
Serve with whipped cream and additional cherries.
You could substitute cherry pie filling in place of the maraschino cherries and juice.

SMOKE MAC & CHEESE

Ingredients
3 tbsp butter, divided
2 tbsp gluten-free all-purpose flour blend
1 tbsp smoked paprika
3/4 tsp ground nutmeg
2-1/2 cups whole milk
2 cups smoked Cheddar, shredded
1/4 cup breadcrumbs (gluten-free if needed)
1/4 tsp garlic powder
1/2 tsp Italian seasoning
1 lb mini penne pasta (gluten-free if needed)
Directions
Preheat the oven to 375°F.
In a medium saucepan over medium heat, melt 2 tablespoons of the butter. Add the flour and stir until the mixture turns golden, 3 to 4 minutes.
Add the paprika and nutmeg. Gradually whisk in the milk. Bring to a gentle boil and then immediately lower the heat. Simmer for about 4 minutes, stirring often, until the sauce thickens.
Once the sauce has thickened and can coat the back of a spoon, stir in the cheese and whisk until melted and smooth. Set aside.
In a small skillet over medium-high heat, melt the remaining 1 tablespoon of butter. Add the breadcrumbs, garlic powder and Italian seasoning. Stir and cook for about 2 minutes, or until golden. Transfer to a plate.
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, tender yet firm to the bite, according to the package directions (see Tips below). Drain well. Pour the cheese sauce over the pasta and toss well to coat.
Divide among six 1-1/4 cup ramekins or oven dishes. Sprinkle with the breadcrumb mixture. Alternatively, you can use a 9 x 13–inch baking dish. Bake for 10 to 12 minutes, until bubbly and golden.
Notes
Give standard mac and cheese an upgrade! This wonderfully smoky, uber-cheesy mac and cheese makes itself at home with any barbecued meat.
Smoked Cheddar gives lusciously creamy cheese sauce a bold flavor, which is further enhanced by the smoked paprika.
Fold the sauce with bite-size, al dente penne pasta and top with freshly toasted, seasoned breadcrumbs for a delicious crunch.
Tips
Undercook the pasta! If the package says 6 to 8 minutes for al dente, go for 5 to 6 minutes. This way, when baked with the sauce it won’t become overcooked and mushy.
Make sure to use a gluten-free flour blend with tapioca or cornstarch, as this helps thicken your sauce better than regular flour.
CHERRY-COLA DUMP CAKE
This yumminess comes from Betty Crocker, and begins, "Super easy to prepare: Just mix devil's food cake mix with cola and pour over cherries. Bake for one hour and voila!"

1 cup cola-flavored carbonated beverage
Directions
Heat oven to 350°F. Into ungreased 13x9-inch (3-quart) glass baking dish, “dump” cherries with cherry juice.
In medium bowl, mix cake mix and carbonated beverage. “Dump” mixture over cherries.
Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool about 15 minutes before cutting and serving cake.
Expert Tips
Serve with whipped cream and additional cherries.

Homemade Bread
There's just something yummy about Homemade Bread: the way it smells while baking, the texture, the whole experience...
To that end, here are six yummy homemade bread recipes to help you through the day, including Browned Butter Jalapeno Cornbread and Challah. Enjoy!
EGG CINNAMON BREAD

I've been making this for years – actually, for decades – and almost always gotten rave reviews on this recipe. It got to the point that several people have specifically requested this recipe – and, if I'm visiting, it's pretty much expected that I'll bake up a batch. This recipe makes three loaves.


Ingredients
2 envelopes yeast
1 C warm water
1-2 T honey
1 C milk (Note: 1 cup soy milk can be used in place of the milk)
1/2 C margarine (1 stick)
2 eggs, beaten
6-7 C unbleached white flour
1/4-1/2 C margarine (1 stick)
2-3 C cinnamon sugar
1/8 teaspoon salt
Directions
Stir honey into warm water. Stir in yeast. Set aside.
Heat milk until warm. Pour into large bowl and add 1/2 C margarine, cut into 4 pieces. Stir, allowing margarine to melt. Cool to room temperature. Stir in salt, yeast mixture and eggs. Add flour, 2 cups at a time until stiff. Place dough on floured towel and knead for 4-5 minutes.
Wash and dry bowl. Oil dough, place in bowl, cover with clean towel and place out of draft in a warm place. Allow to rise for 1 to 1 1/2 hours, until double.
Melt 1/4-1/2 C margarine. Grease 3 loaf pans. Punch dough down, then divide into three sections. Roll out with rolling pin, then brush with melted margarine. Spread cinnamon sugar over melted margarine, then roll all three sections into loaves. Place in pans, place clean towel over pans, and allow to rise again for 1 to 1 1/2 hours.
Remove towel, then place loaf pans into preheated 350 degree F oven. Bake for 40-45 minutes.
CHALLAH
This was from Fr. Dominic Garramone (aka The Bread Monk). I first ran across his show, Breaking Bread with Fr. Dominic, years ago on PBS. The show has since left television (at least, as far as I can tell), but you can still check out his recipes and books on his website (above).
This recipe makes 1 large loaf; about 20 to 25 slices.
Ingredients
2 packages FLEISCHMANN's Active Dry Yeast
1 cup lukewarm water
1 tablespoon granulated sugar
6 to 7 1/2 cups bread flour, divided
1 1/2 cups lukewarm water
3/4 cup vegetable oil
3 eggs, beaten
1/2 cup granulated sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1 tablespoon vanilla extract
1 egg, beaten, for glaze
Directions
Combine yeast, 1 cup lukewarm water and 1 tablespoon sugar in medium bowl; stir to mix. Let stand 5 to 10 minutes, or until foamy. Stir in 2 cups of the flour; let stand about 30 minutes to let the yeast develop.
Combine 1 1/2 cups lukewarm water, oil and 3 eggs in a large bowl; mix well. Stir in 1/2 cup sugar, salt, cinnamon and vanilla. Add the yeast mixture; mix well.
Add the remaining flour, about 1 cup at a time, until you get slightly firm dough. It will be a bit softer than ordinary bread dough because of the eggs. Knead in bowl about 5 minutes. Cover and let rise in warm, draft-free place about 1 1/2 hours, or until doubled in bulk.
Punch down dough. Turn out dough onto a lightly floured surface. Knead briefly to work out the larger air pockets. Divide dough into 3 equal pieces. Roll each piece into a rope, about 24 inches long. Braid ropes to form a loaf, tucking the ends underneath. Place on a lightly greased baking sheet. Cover with a clean towel and let rise until nearly doubled in bulk. The loaf will be quite large.
About 15 minutes before loaf has finished rising, preheat oven to 375 degrees. Brush loaf all over with beaten egg. Bake in 375-degree oven about 45 minutes, or until golden brown. If your oven doesn't bake evenly, be sure to turn the pan every 10 minutes or so. Remove loaf from pan and let cool on a rack.
Note:
A large, braided loaf is one of the traditional forms of challah. One also finds it shaped as a large braid with a smaller braid on top. I generally prefer to make two smaller single braids, as may be necessary if you have a smaller oven.
OATMEAL BREAD

This recipe makes 2 loaves.

2 1/2 to 3 cups bread flour
1/2 cup oats (old fashioned or quick-cooking)
2 tablespoons brown sugar
1 envelope FLEISCHMANN'S RapidRise Yeast
1 teaspoon salt
1 teaspoon ground cinnamon
1 1/4 cups water
2 tablespoons butter or margarine
Directions
In large bowl, combine 1 cup flour, oats, brown sugar, undissolved yeast, salt, and cinnamon. Heat water and butter until very warm (120 to 130 degrees). Gradually add to dry ingredients. Beat 2 minutes at medium speed with electric mixer, scraping bowl occasionally. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 6 to 8 minutes. Cover; let rest 10 minutes.
Roll dough to 12 x 7-inch rectangle. Beginning at short end of each rectangle, roll up tightly as for jelly roll. Pinch seam and ends to seal. Place seam side down in greased 8 1/2 x 4 1/2-inch loaf pan. Cover; let rise in warm, draft-free place until doubled in size, about 50 to 60 minutes.
Bake at 375 degrees for 30 to 35 minutes or until done. Remove from pan; cool on wire rack.
BLUEBERRY DROP BISCUITS
This is from the infamous long-since-forgotten emailing list. Serves 8 to 10.
Ingredients
1 cup blueberries
3 tablespoons sugar
2 cups sifted all-purpose flour
3 teaspoons baking powder
3/4 teaspoon salt
2 tablespoons cold shortening
1 cup cold milk
Directions
Butter a baking sheet. Wash drain and dry the blueberries. In a medium bowl combine the blueberries with 2 tablespoons sugar. In a separate bowl sift together the flour, baking powder and salt. Cut the shortening in to the mixture with a pastry blender. Add the milk stirring with a fork. Add the blueberries. Drop by spoonfuls 1 inch apart on the prepared baking sheet. Sprinkle the biscuits with the remaining tablespoon of sugar. Bake at 450 degrees for 12 minutes. Serve hot with butter.
BROWNED BUTTER JALAPENO CORNBREAD
This incomes from the Spring/Summer 2019 issue of Renew by UnitedHealthcare, page 26. It begins, "Browned butter adds nutty depth and jalapeno adds a kick to this classic crowd-pleaser, made mildly sweet with honey and moist with yogurt." Makes 9 servings
Ingredients
1/4 cup better
1/3 cup honey
1 egg, lightly beaten
1 cup plain yogurt
1/2 cup milk
1 cup flour
1 cup yellow cornmeal
1 teaspoon salt
2 teaspoon baking powder
1 jalapeno, seeded and chopped
Directions
Heat oven to 400 degrees F. In a small skillet, melt butter over medium heat, swirling the pan occasionally, until the butter foams, then turns to a toasty brown color, about 2 minutes. Remove rom heat. Add 1 tablespoon of the browned butter to a 9X9 inch baking pan, swirling to coat the bottom.
In a medium bowl, combine the remaining butter, honey, egg, yogurt and milk, whisking to combine.
Add the flour, cornmeal, salt and baking powder all at once. Stir together only until combined. Stir in the halapeno. Spread batter in prepared pan.

This is from Yossy Arefi in The New York Times cooking e-newslestter. Yossy wrote, "This banana bread definitely leans toward dessert, thanks to thick swirls of chocolate-hazelnut spread. Browning the butter may seem a little fussy, but it's totally worth the time and effort. The resulting toasty warm flavor pairs perfectly with sweet bananas and the rich spread. After all, the French term for brown butter is 'beurre noisette' which literally translates to hazelnut butter."
Yield: One 9-inch loaf; Time: 1 hour 20 minutes
