Homemade Bread

I love Homemade Bread. It tastes yummy, makes the house smell great, and is definitely worth the work. That said, here are six yummy homemade bread recipes, including Mexican Chocolate-Zucchini Bread and Magic Caterpillar Peanut Butter Bread. (No caterpillars were hurt in the making of the bread!) Enjoy!

EGG CINNAMON BREAD

I've been making this for years – actually, for decades – and almost always gotten rave reviews on this recipe. It got to the point that several people have specifically requested this recipe – and, if I'm visiting, it's pretty much expected that I'll bake up a batch. This recipe makes three loaves.

Ingredients

2 envelopes yeast

1 C warm water

1-2 T honey

1 C milk (Note: 1 cup soy milk can be used in place of the milk)

1/2 C margarine (1 stick)

2 eggs, beaten

6-7 C unbleached white flour

1/4-1/2 C margarine (1 stick)

2-3 C cinnamon sugar

1/8 teaspoon salt

Directions

Stir honey into warm water. Stir in yeast. Set aside.

Heat milk until warm. Pour into large bowl and add 1/2 C margarine, cut into 4 pieces. Stir, allowing margarine to melt. Cool to room temperature. Stir in salt, yeast mixture and eggs. Add flour, 2 cups at a time until stiff. Place dough on floured towel and knead for 4-5 minutes.

Wash and dry bowl. Oil dough, place in bowl, cover with clean towel and place out of draft in a warm place. Allow to rise for 1 to 1 1/2 hours, until double.

Melt 1/4-1/2 C margarine. Grease 3 loaf pans. Punch dough down, then divide into three sections. Roll out with rolling pin, then brush with melted margarine. Spread cinnamon sugar over melted margarine, then roll all three sections into loaves. Place in pans, place clean towel over pans, and allow to rise again for 1 to 1 1/2 hours.

Remove towel, then place loaf pans into preheated 350 degree F oven. Bake for 40-45 minutes.

MAGIC CATERPILLAR PEANUT BUTTER BREAD

Years ago, I got hooked on Breaking Bread with Father Dominic on (if I remember correctly) the Food Network. Unfortunately, the show has since left the air, at least where I live. However, you might be able to check out a few episodes by Google-ing his name for the latest places that show him, or on YouTube. Check out his website, The Bread Monk, at http://www.breadmonk.com/. This recipe yields 1 loaf.

Ingredients:

1 package Fleischmann's Active Dry Yeast

1/4 cup warm water

1 cup milk

3/4 cup chunky peanut butter

1/4 cup granulated sugar

1 teaspoon salt

3 1/4 to 3 1/2 cups all-purpose flour, divided

For decoration: tubes of colored frosting, candies, gumdrops, licorice, etc.

Directions:

Sprinkle yeast over warm water in large bowl; stir to dissolve yeast. Let stand about 10 minutes, or until foamy.

Combine milk, peanut butter, sugar and salt in small saucepan. Cook over medium heat, stirring constantly, until mixture is smooth. Let cool to lukewarm, then add to yeast mixture. Stir in flour, 1 cup at a time, mixing after each addition until flour is thoroughly incorporated.

Turn out dough onto lightly floured surface. Knead 5 minutes, adding small amounts of the remaining flour as needed to keep dough manageable. Rinse and dry bowl, then lightly oil surface of dough and place dough in bowl. Cover with a dry cloth and let rise in a warm, draft-free place 1 hour.

Punch down dough. Knead briefly to expel large air bubbles. Roll dough into a rope about 24 inches long. Form rope into a large S shape on a lightly greased 18x12-inch baking sheet. Using a butter knife or dough scraper, chop rope into 3-inch sections, but do not separate completely. Cover with a cloth and let rise about 30 minutes. (The caterpillar will magically grow back together during rising and baking.)

About 15 minutes before end of rising time, preheat oven to 375 degrees. Bake loaf 25 minutes, or until top is golden brown. Let cool on baking sheet 15 minutes, then carefully transfer to a wire rack to cool completely.

Decorate cooled loaf with frosting and gumdrops or other candy. Poke holes in the sides with a wooden pick and insert sections of licorice for legs.

Note: Decorating gel doesn't work as well as frosting as a glue for the candy decorations, so make sure you pick up the right tube at the store. Any candies will work to make spots for the caterpillar's sections. Thin red licorice makes the perfect legs and antennae, unless you know your youngsters prefer the flavor of black licorice.

TEXAS MOPPIN' ROLLS

Yield: 12 rolls.

I frequently make these (from Breaking Bread with Father Dominic) to go with chili or homemade spaghetti. Definitely yummy!

Ingredients

2 packages Fleischmann's Active Dry Yeast

1 teaspoon honey

2 cups lukewarm water

1 teaspoon salt

1 1/2 teaspoons crushed red pepper

1/2 cup minced onion

1 cup shredded Monterey Jack cheese

1/2 cup shredded Cheddar cheese

6 1/2 to 7 cups all-purpose flour, divided

Directions:

Combine yeast, honey and warm water in large bowl; stir until completely dissolved. Add salt, hot red pepper flakes, onion, Monterey Jack cheese and Cheddar cheese; stir until thoroughly mixed. Add 6 cups of the flour, 2 cups at a time, mixing after each addition until the flour is completely incorporated.

Turn out dough onto a lightly floured surface. Knead 6 to 8 minutes, adding enough of remaining flour to form a fairly stiff dough. Rinse and dry the bowl, then oil surface of dough and place dough in bowl. Cover with a clean, dry cloth and let rise in a warm, draft-free place about 1 hour, or until doubled.

Punch down dough. Knead briefly to expel large air bubbles. Divide dough into 12 equal pieces. Roll each piece into a fat oval. Place rolls in a lightly greased 13x9x2-inch baking pan (three rolls across, four down). Let rise about 20 minutes, or until nearly doubled.

While rolls are rising, preheat oven to 375 degrees. Place on middle rack of oven and bake 35 to 40 minutes, or until top crust is browned. Remove rolls from pan and let cool on racks.

Note: "With so many different palates to please, our abbey cooks are usually pretty cautious about spicy seasonings. As a result, sometimes monastery food is a bit bland, so I like to create breads with strong flavors. Every time I serve these rolls, one of the brothers is sure to comment on how he expected "just another roll" and got a mouthful of pepper-and-cheese-bread-with-an-attitude. These rolls are actually pretty mild compared to a lot of Tex-Mex food, so feel free to increase the amount of crushed red pepper.

"I used ordinary dried crushed red pepper (hot red pepper flakes) for this recipe, but if you keep fresh jalapenos or other hot peppers in the fridge, by all means use them. Three 3-inch jalapenos, minced fine, provide moderate heat. You can experiment with other peppers as well." (All notes after the recipes are Father Dominic's notes.)

MEXICAN CHOCOLATE-ZUCCHINI BREAD

This comes from Deb Wise on MyRecipes. She wrote, “Got a boatload of zucchini? A loaf of so-simple quick bread is a delightful, kid-friendly way to put it to use. This decadent twist spices up classic zucchini bread with cocoa powder, cinnamon, a rich chocolate glaze, and roasted pepitas. Easy-to-make, incredibly moist, and intensely chocolatey, this Mexican Chocolate Zucchini Bread is sure to be a new favorite.”

Active Time: 15 minutes; Total Time: 2 hours 30 minutes; Yield: Serves: 10 (serving size: 1 slice)

Ingredients

3 large eggs

1 1/4 cups granulated sugar

1 cup vegetable oil

1 teaspoon vanilla extract

2 cups grated unpeeled zucchini

1 2/3 cups (about 7 1/8 oz.) all-purpose flour

1/3 cup unsweetened cocoa

2 teaspoons baking soda

1 1/2 teaspoons ground cinnamon

1 teaspoon baking powder

1 teaspoon table salt

1/2 cup chocolate chips

1/2 cup, plus 2 Tbsp. roasted and salted pepitas (shelled pumpkin seeds), divided

3 tablespoons heavy cream

1 ounce bittersweet chocolate baking bar, finely chopped

1/2 cup (about 2 oz.) powdered sugar

Directions

Preheat oven to 350°F. Coat a 9- x 5-inch loaf pan with baking spray.

Place eggs in a large bowl; lightly whisk. Add granulated sugar, oil, and vanilla; whisk until smooth. Stir in grated zucchini.

Whisk together flour, cocoa, baking soda, cinnamon, baking powder, and salt in a medium bowl just until combined. Add flour mixture to egg mixture, stirring just until combined. Stir chocolate chips and 1/2 cup of the pepitas into batter. Scrape batter into prepared pan; smooth top with spatula. Bake in preheated oven until a wooden pick inserted in center comes out clean, 55 minutes to 1 hour.

Cool bread in pan on a wire rack 15 minutes. Run a knife around the edges of pan to loosen bread. Remove bread from pan, and cool completely on rack, about 1 hour.

CHOCOLATE-RASPBERRY MUFFINS

By now, you may remember me posting about Rollin' Oats. It has two stores in the Tampa Bay (Florida) area, one in Tampa, the other in St. Petersburg. Since I live way closer to St. Pete, I frequently go to that store. It's really one of my favorite places to shop. (Hint: If you live in the area, or are visiting, I highly recommend checking it out.)

Anyway, whenever I'm in Rollin' Oats, I pick up a copy of Taste For Life. This is from the March 2021 issue of Taste For Life (page 12). Prep Time: 35 minutes, plus 30 minutes cool time; Makes 9 muffins

STIR-FRIED SPICY ASPARAGUS

This comes from David Tanis in The New York Times cooking e-newsletter. David wrote, “Holding out for regional produce may seem absurdly romantic, or a little stubborn, but there’s no denying the thrill when, after months of apples, potatoes and sturdy greens, suddenly asparagus appears in full force at the market. Finally, spring has arrived.” Time: About 15 minutes; makes 4 to 6 servings.

To view this online, click here.

Ingredients

1 1/2 pounds pencil-thin asparagus (or substitute small or medium asparagus, split lengthwise)

1 tablespoon vegetable oil

Salt and pepper

3 garlic cloves, minced

1 tablespoon grated ginger

1 serrano or other fresh hot chile, finely chopped

A large handful of basil, mint and cilantro leaves

Preparation

Snap off and discard the tough bottoms of each asparagus spear. Cut the asparagus into 2-inch lengths.

In a wok or cast-iron skillet, heat the oil until nearly smoking. Add the asparagus, season generously with salt and pepper and stir well, making sure the asparagus is coated and glistening with oil. Continue to stir-fry over high heat for about 1 minute, until the asparagus looks bright green and barely cooked. Add the garlic, ginger and chile and stir-fry for 30 seconds more.

Transfer to a serving platter and scatter leaves on top. Serve immediately.

ENGINE 2 DIET VEGETARIAN LASAGNA

This was on a long-forgotten email list. But it comes originally from a cookbook titled The Engine 2 Diet: The Texas Firefighter's 28-Day Save-Your-Life Plan that Lowers Cholesterol and Burns Away the Pounds. Personally, I'm considering picking up a copy for myself. Check it out!

Ingredients:

1 onion, chopped

1 small head of garlic, all cloves chopped or pressed

8 ounces mushrooms, sliced

1 head broccoli, chopped

2 carrots, chopped

2 red bell peppers, seeded and chopped

1 can corn, rinsed and drained

1 package Silken Lite tofu

1/2 teaspoon cayenne pepper

1 teaspoon oregano

1 teaspoon basil

1 teaspoon rosemary

2 jars pasta sauce

2 boxes whole grain lasagna noodles

16 ounces frozen spinach, thawed and drained

2 sweet potatoes, cooked and mashed

6 roma tomatoes, sliced thin

1 cup raw cashews, ground

Preparation:

Pre-heat oven to 400 degrees. Sauté the onion and garlic on high heat for 3 minutes in a wok or nonstick pan. Add the mushrooms and cook until the onions are limp and the mushrooms give up their liquid. Remove them to a large bowl with a slotted spoon. Reserve the mushroom liquid in the pan. Sauté the broccoli and carrots for 5 minutes and add to the mushroom bowl. Sauté the peppers and corn until just beginning to soften. Add them to the vegetable bowl.

Drain the silken tofu11 by wrapping in paper towels. Break it up directly in the towel and mix into the vegetable bowl. Add spices to the vegetable bowl and combine.

To Assemble:

Cover the bottom of a 9-by-13-inch casserole with a layer of sauce. Add a layer of noodles. Cover the noodles with sauce. This way the noodles cook in the oven, saving time and energy. Spread the vegetable mixture over the sauced noodles. Cover with a layer of noodles and another dressing of sauce. Add the spinach to the second layer of sauced noodles. Cover the spinach with the mashed sweet potatoes. Add another layer of sauce, the final layer of noodles, and a last topping of sauce. Cover the lasagna with thinly sliced roma tomatoes.

Cover with foil and bake in the oven for 45 minutes. Remove the foil, sprinkle with the cashews, and return to the oven for 15 minutes. Let sit for 15 minutes before serving.

Makes 10 - 12 servings of sweet potato lasagna.

CHOCOLATE GUINNESS CAKE

This comes from Nigella Lawson in The New York Times' cooking newsletter. Nigella writes, “For me, a chocolate cake is the basic unit of celebration. The chocolate Guinness cake here is simple but deeply pleasurable, and has earned its place as a stand-alone treat.” Time: 1 hour 15 minutes; one 9-inch cake or 12 servings

To view this online, click here.

Ingredients

For the Cake:

Butter for pan

1 cup Guinness stout

10 tablespoons (1 stick plus 2 tablespoons) unsalted butter

3/4 cup unsweetened cocoa

2 cups superfine sugar

3/4 cup sour cream

2 large eggs

1 tablespoon vanilla extract

2 cups all-purpose flour

2 1/2 teaspoons baking soda

For the Topping:

1 1/4 cups confectioners' sugar

8 ounces cream cheese at room temperature

1/2 cup heavy cream

Preparation:

For the cake: heat oven to 350 degrees. Butter a 9-inch springform pan and line with parchment paper. In a large saucepan, combine Guinness and butter. Place over medium-low heat until butter melts, then remove from heat. Add cocoa and superfine sugar, and whisk to blend.

In a small bowl, combine sour cream, eggs and vanilla; mix well. Add to Guinness mixture. Add flour and baking soda, and whisk again until smooth. Pour into buttered pan, and bake until risen and firm, 45 minutes to one hour. Place pan on a wire rack and cool completely in pan.

For the topping: Using a food processor or by hand, mix confectioners' sugar to break up lumps. Add cream cheese and blend until smooth. Add heavy cream, and mix until smooth and spreadable.

Remove cake from pan and place on a platter or cake stand. Ice top of cake only, so that it resembles a frothy pint of Guinness.

Taco Tuesday

It's time for another wonderful Taco Tuesday. Yum! Today's offerings include Vegetarian Taco Bake and Delicious Vegan Battered ‘Fish’ Tacos. Enjoy!

TACOS WITH SUMMER SQUASH, TOMATOES AND BEANS

This is from Martha Rose Shulman on The New York Times cooking site. Martha wrote, "Beans such as pintos, even out of a can, add substance to this summery taco filling. Goat cheese provides a creamy, rich finish."

Yield: 6 servings; Time: 30 minutes

This was featured in "Vegetarian Taco Night", and can be viewed online at https://cooking.nytimes.com/recipes/1016747-tacos-with-summer-squash-tomatoes-and-beans.

Ingredients

2 tablespoons extra-virgin olive oil

1 small red or white onion, finely chopped

Salt to taste

2 garlic cloves, minced

3/4 pound tomatoes, peeled and diced

1 1/2 pounds summer squash, cut in small dice (about 4 1/4 cups)

1 serrano chile, minced

1 1/2 cups cooked white beans, pinto beans or black beans (1 can, drained and rinsed)

1/4 cup chopped cilantro (more to taste)

12 to 14 warm corn tortillas

2 ounces goat cheese, crumbled (1/2 cup)

Salsa of your choice

Preparation

Heat olive oil in a large, heavy skillet over medium heat and add chopped onion. Cook, stirring, until tender, about 5 minutes, and add a generous pinch of salt and garlic. Cook, stirring, until garlic is fragrant, about 30 seconds, and add tomatoes. Cook, stirring often, until tomatoes cook down slightly, about 10 minutes (this could take more or less time, depending on the texture and juiciness of the tomatoes).

Stir in summer squash, chile, and salt to taste. Cook, stirring, until squash is tender but not mushy, about 8 minutes. Stir in beans and cilantro and heat through. Taste and adjust seasonings.

Heat tortillas and top with squash mixture and crumbled cheese. Serve with the salsa of your choice.

Tip

Advance preparation: You can make the filling a day in advance and refrigerate overnight. Reheat gently in a skillet.

MIGAS BREAKFAST TACOS

This comes from Genevieve Ko on The New York Times cooking e-newsletter. She wrote, "Tortilla chips in tacos may seem like overkill, but they’re not. Set into scrambled eggs that are loaded with onions and poblanos, they soften and enrich the mix while keeping some crispiness. A slice of avocado on top — along with melted cheese — adds a nice creaminess to the mix. These tacos work well with red or green salsa, so use your favorite. While these would impress at a weekend brunch, they also come together quickly on weekday mornings, and can be wrapped in foil to be eaten out of hand."

Yield: 4 to 6 servings; Time: 20 minutes

To view this online, go to https://cooking.nytimes.com/recipes/1019647-migas-breakfast-tacos.

Ingredients

6 large eggs

Kosher salt

6 corn tortillas

2 tablespoons vegetable oil

1 cup tortilla chips, broken if very large

1/2 cup diced onion

1 cup diced, seeded poblano pepper

1/4 cup chopped cilantro

2 ounces pepper jack cheese, grated (3/4 cup)

1/2 avocado, pitted, peeled and sliced

Salsa, for serving

Preparation

Beat the eggs with 1/2 teaspoon salt in a medium bowl.

Heat a large cast-iron or nonstick skillet over medium heat. Put 3 tortillas in it and turn them until warm and pliable, 1 to 2 minutes. Stack on foil and wrap. Repeat with the remaining 3 tortillas, adding them to the same stack and wrapping to keep warm and soft.

Increase the heat to medium-high. Add the oil and swirl to coat, then add the chips. Cook, stirring, until sizzling and browned in spots, about 30 seconds. Add the onion, poblano and 1 teaspoon salt. Cook, stirring, until the edges of the onion are just translucent but the vegetables are still crisp, about 2 minutes.

Drizzle the egg over the chips and vegetables. Let stand for 15 seconds until just starting to set, then stir rapidly to scramble until just set but still wet, about 30 seconds to 1 minute. Sprinkle the cilantro on top.

Remove from the heat and immediately divide among the warmed tortillas. Sprinkle with the cheese and top with the avocado and salsa. Serve immediately or wrap each taco in foil to eat out of hand.

Tip

The assembled tacos wrapped in foil will stay reasonably warm for up to 30 minutes.

VEGETARIAN TACO BAKE

This is from Casey Barber on the Today Show site. It begins, "Taco night! Those two little words bring big smiles to everyone in the family, and now there's a new way to do tacos that might be even easier than the traditional method — and it's vegetarian, too! This easy rice and beans casserole combines everything you love about tacos in a fun, scoopable package. Whether you like bowl-style Mexican meals or classic crunchy hard shells, you'll find something to love in this meal.

"Make it with leftover rice or your favorite whole grain, substitute black beans or kidney beans, or even add a freshly-chopped jalapeno if you really want to spice things up! Scoop and serve and watch the smiles."

Prep Time: 10 minutes; Cook Time: 30 minutes; Servings: 4-6

To view this online, go to https://www.today.com/recipes/vegetarian-taco-bake-t84181.

Ingredients

1 15-ounce can pinto beans or ranchero beans, drained

1 15-ounce can diced tomatoes

1 4-ounce can chopped green chiles

3 cups cooked brown or white rice (from 1 cup dried rice)

1/2 teaspoon chili powder

1/2 teaspoon salt

1/4 cup + 1/3 cup shredded Mexican cheese blend, divided (see below)

Cilantro for garnish (optional)

Tortilla chips for serving

Preparation

Preheat the oven to 375 degrees F.

Mix the beans, tomatoes, chiles, rice, chili powder, salt, and 1/4 cup cheese together in a large bowl.

Pour the mixture into a 9-inch square or round baking dish and sprinkle the remaining 1/3 cup cheese evenly over the casserole.

Bake for 30 minutes.

Garnish with cilantro, if desired, and serve with tortilla chips on the side or for scooping.

VEGETARIAN TOFU TACOS

This comes from Laurel Randolph in the Spruce Eats. For this recipe, Laurel wrote, "Tofu is an extremely versatile ingredient and a great way to cut a little meat out of your diet. If you haven't been won over to the soy side yet, these tacos could be the dish that sways you. Firm tofu is broken up and cooked with fragrant spices, and ends up mimicking ground beef and scrambled eggs at the same time. Melty cheese, crunchy slaw, and tangy salsa verde lend the tacos texture and bright flavors. If you're vegan, simply leave out the cheese or swap it for a vegan alternative.

"If you're eating these tacos for brunch, serve with breakfast potatoes and fresh fruit. If you're eating them for dinner, serve with guacamole or bean dip and chips. They're also delicious as hard-shelled tacos if you like your tacos extra crunchy."

Prep Time: 20 minutes; Cook Time: 20 minutes; Total Time: 40 minutes; Servings: 4 to 6; Yield: 8 to 10 tacos

To view this online, go to https://www.thespruceeats.com/tofu-tacos-4142107.

Ingredients

14 ounces tofu, firm, drained and cut into 1-inch cubes

2 cups coleslaw mix

3 scallions, spring onions, thinly sliced

1 tablespoon cilantro, packed, fresh, chopped

2 tablespoons lime juice

Salt, to taste

Freshly ground black pepper, to taste

1 tablespoon canola or grapeseed oil

1 small onion, diced

1 small bell pepper, diced

1 small jalapeño, finely diced

3 cloves garlic, minced

1 tablespoon tomato paste

1 teaspoon cumin

1 1/2 teaspoons chili powder

1/2 teaspoon paprika, smoked

10 small corn tortillas, or 8 medium tortillas, corn or flour

1 cup cheese, Monterey, shredded

1/2 cup salsa verde

Directions

Gather the ingredients.

Place tofu in a single layer on a double layer of paper towels and top with another double layer of paper towels. Place a heavy pan on top to press moisture out of the tofu. Let sit for 10 minutes.

Meanwhile, make the slaw. Combine the cabbage slaw mix, spring onion, cilantro, and lime juice. Season with salt and toss well.

Add canola or grapeseed oil to a large skillet and heat over medium heat. Once hot, add onion and bell pepper and sauté for 3 minutes. Add jalapeño and garlic and sauté for 1 more minute.

Add tomato paste, cumin, chili powder, and smoked paprika and cook, stirring, for 1 to 2 minutes, or until fragrant and evenly distributed.

Add tofu a handful at a time, squeezing and breaking up the tofu with your hands as you add it to the pan. Stir well and season with salt and pepper.

Cook for about 5 minutes, stirring often, and seasoning as needed. If the mixture becomes too dry, add a tablespoon of water. You want the mixture to resemble a chunky ground beef taco mix in wetness and texture. Remove from the heat.

Warm the tortillas in the oven (covered on low heat) or in a skillet in batches. Add a sprinkle of cheese followed by the tofu mixture, salsa verde, and slaw. Serve immediately.

BREAKFAST BURRITOS [VEGAN]

This is from Robin Browne on One Green Planet, and begins, "If you're looking for a hearty, protein-packed, and filling dish, you gotta try these vegan breakfast burritos. Use your favorite gluten-free tortillas and load them up with roasted garlicky potatoes, cheezy tofu, avocado lime crema, and your go-to salsa! These vegan burritos are bound to bring a smile to anyone's face."

One Green Planet is a great website that is earth-friendly, animal-friendly, and (yes) people-friendly. I highly recommend the site. Give it a look…

For this recipe, Cooking Time is 40 minutes; Serves 4

To view this online, go to https://www.onegreenplanet.org/vegan-recipe/breakfast-burritos-vegan/.

Ingredients

For the Roasted Potatoes:

4 cups cubed potatoes (roughly 1" cubes)

1 teaspoon garlic powder

2 tablespoons oil

salt and pepper to taste

For the Tofu Scramble:

7 ounces extra firm tofu

2 teaspoons oil of choice

2 cloves of garlic

2 tablespoons nutritional yeast

1/2 lemon juiced

salt and pepper

2 sprigs of green onion

For the Avocado Lime Creme:

1 ripe avocado

1 lime, juiced (1 1/2 Tbsp juice)

1 garlic clove

Other

4 large tortilla wraps

salsa of choice

Prepartion

Preheat the oven to 425ºF and line a baking sheet with parchment paper.

Cut 2-3 medium potatoes (I used Russet) into small cubes and then toss them in the oil, garlic powder, sea salt, and pepper. Bake for 20 minutes, then flip and bake for another 15-20 minutes or until golden and crispy.

While the potatoes are baking start on the tofu. I suggest pressing the tofu for a few minutes to remove the excess water. Wrap the tofu in a towel and place a heavy object on it for a few minutes. Then heat a pan over medium heat and add the oil to it.

Crumble the tofu in the pan, and further break it down using a spatula. Add in the garlic, nutritional yeast, salt, and pepper. Mix. Cook for 10 minutes or so. Toss in the green onion and set aside.

Prepare the avocado lime creme by adding the avocado, lime juice and garlic to a food processor, process until smooth. Set aside.

Begin to assemble the breakfast wraps once the potatoes are done.

It's best to heat each tortilla in the microwave for 15 seconds to soften them so that rolling the tortillas is easier and they are less likely to crack.

Add potatoes, tofu, avocado-lime creme and salsa to each wrap. You should easily have enough for 4 wraps and some potatoes left behind (but these are perfect on the side).

All these ingredients can be stored in containers in the fridge for leftovers. I suggest reheating before eating.

Monday Recipes

It's Monday, time to get the week started off. Hope your weekend was good. Somehow, it's never quite long enough, is it?

Here are six yummy vegetarian recipes to get your week started off just right, including Cannellini-Bean Pasta With Beurre Blanc and Vegetarian/Vegan Spicy Black Bean Burger. Enjoy!

CRISPY TOFU WITH CASHEWS AND BLISTERED SNAP PEAS

This is from Yewande Komolafe on The New York Times cooking newsletter. Yewande wrote, "A ginger and coconut milk reduction can coat pretty much anything that browns nicely on its own. Here, it’s pieces of pan-seared tofu, but small morsels of chicken and pork will work just as well. The soy and the teaspoons of molasses give the sauce a little caramelization, and a little shine and gloss. For a fresh side, add some blistered snap peas, tossed with sliced scallions, a little mint and a splash of rice vinegar. Snow peas, green beans, broccoli or asparagus? If it’s fresh and green, it’ll work just fine."

Yield: 4 servings; Time: 30 minutes

This was featured in "This One-Pan Meal Shows Just How Joyful Tofu Can Be", and can be viewed online at https://cooking.nytimes.com/recipes/1021200-crispy-tofu-with-cashews-and-blistered-snap-peas.

Ingredients

1 (14-ounce) block firm or extra-firm tofu, drained

3 tablespoons neutral oil, such as grapeseed, vegetable or canola, plus more as needed

Kosher salt and black pepper

3/4 pound snap peas, trimmed

1 (2-inch) piece fresh ginger, peeled and grated (about 2 tablespoons)

2 garlic cloves, grated

1 (13-ounce) can unsweetened coconut milk (light or full-fat)

1 tablespoon soy sauce

2 teaspoons molasses, dark brown sugar or honey

1/2 cup toasted cashews

1 tablespoon rice vinegar

4 scallions, trimmed and thinly sliced

1/4 cup mint leaves, torn if large

1/2 to 1 teaspoon red-pepper flakes (optional)

Rice or any steamed grain, for serving

Preparation

Slice the tofu in half horizontally, and leave on paper towels to dry any excess liquid.

In a medium skillet or cast-iron pan, heat 1 tablespoon oil over medium-high until it shimmers. Season both sides of the tofu with salt and black pepper, place in the pan and sear without moving until tofu is browned and golden on both sides, turning once halfway through, about 8 minutes total. Move the tofu to a plate.

Add 1 tablespoon oil to the pan, and add the snap peas. Cook, stirring occasionally, until blistered and just tender, about 3 minutes. Season with salt and move to a bowl.

Heat the remaining 1 tablespoon oil, add the ginger and garlic, and cook until fragrant, about 30 seconds. Pour in the coconut milk, soy sauce and molasses. Simmer, stirring frequently until the sauce reduces and its color deepens to a dark brown, about 6 to 8 minutes. It should coat a spoon without running right off. Stir in the cashews, break the tofu into 1-inch pieces and toss in the pan to coat with sauce. Remove from heat, and taste and adjust seasoning, if necessary.

Toss the snap peas with the rice vinegar, scallions, mint and red-pepper flakes, if using. Divide among plates, along with the tofu and cashews. Serve with rice or any steamed grain.

TEX-MEX CORNBREAD

This yummy recipe is from Diana Rattray, who has contributed to About.com and The Spruce Eats for years. For this recipe, she wrote, "This is a moist and delicious cornbread, perfect to serve with beans, a bowl of chili, or a hearty soup or stew. Add more or less minced jalapeño to suit your taste. A cast-iron skillet makes the best crust, but a heavy baking pan could be used if necessary."

Prep Time: 10 minutes; Cook Time: 25 minutes; Total Time: 35 minutes; Makes 8 servings

To view this online, go to https://www.thespruceeats.com/tex-mex-cornbread-3054149.

Ingredients

1/4 cup canola oil plus 1 tablespoon for the skillet

3 large eggs

1 cup plus 2 tablespoons buttermilk, 9 ounces

1 small can (8 ounces) cream-style corn, or about 1 cup

1 tablespoon finely minced onion, red or yellow

2 tablespoons finely minced jalapeño peppers

1 1/2 cups stone-ground cornmeal

1/4 cup all-purpose flour

1 teaspoon salt

2 teaspoons baking powder

1/2 teaspoon baking soda

1 cup (4 ounces) finely shredded Cheddar Jack cheese blend or a mild or sharp Cheddar cheese

Directions

Put 1 tablespoon of oil in a 10-inch cast iron skillet and put it in the oven. Heat the oven to 425 F.

In a large bowl, whisk the eggs with the remaining 1/4 cup of oil, the buttermilk, cream-style corn, minced onion, and minced jalapeño peppers.

In another bowl, combine the cornmeal, flour, salt, baking powder, soda, and cheese. Blend well.

Carefully take the hot skillet out of the oven and set it on a metal rack.

Combine the egg and buttermilk mixture and the dry mixture. Stir just until blended. Pour into the hot pan.

Return the pan to the oven and bake the cornbread for about 20 to 25 minutes, until browned and crisp around the edges.

Cut into wedges and serve.

Tips

A cast iron skillet will make the best crust, but a 9-inch baking pan can be substituted.

Use fresh jalapeño or canned, minced finely.

VEGETARIAN/VEGAN SPICY BLACK BEAN BURGER

This is from Jolinda Hackett on The Spruce Eats. She wrote, "These spicy black bean burgers with cornmeal are made with black beans and salsa for added flavor. The patty is formed by processing beans, cornmeal, salsa, and spices together. Next, just pan fry or grill as you would with a regular burger.

"The cornmeal and the whole wheat flour act as binders, so you can avoid those pesky crumbly veggie burgers. Feel free to use another binding method as well. If you've been frustrated with veggie burgers that just fall apart―it's a common issue for a lot of non-meat eaters―check out these tips for how to make the perfect veggie burger.

"This black bean burger recipe is courtesy of Bush's® Beans. It's a great veggie burger recipe that's also vegan and easy to prepare."

Prep Time: 10 minutes; Cook Time: 10 minutes; Total Time: 20 minutes; Makes 8 servings

To view this online, go to https://www.thespruceeats.com/vegetarian-and-vegan-black-bean-burgers-3378619.

Ingredients

2 (15-oz.) cans black beans (rinsed and drained)

1/2 cup whole wheat (or all-purpose) flour

1/4 cup yellow cornmeal

1/2 cup salsa

2 tsp. ground cumin

1 tsp. garlic salt

8 hamburger buns

Directions

Place beans in food processor and process them until they are fairly smooth. Add flour, cornmeal, salsa, cumin and garlic salt. Process until well combined.

Spoon the mixture into six balls on a large plate and refrigerate at least 1 hour or up to 4 hours before cooking.

Heat barbecue grill or ridged grill pan over medium heat. Coat grill or pan lightly with oil. Form each ball into a 4-inch-wide patty about 1/2-inch thick. Place the patties on the grill or in a pan and then cook until browned and heated through. This should take about 4 to 5 minutes per side.

Serve your black bean cornmeal patties on hamburger buns with your favorite toppings.

Tips

Don't use raw veggies in the burger. They contain a lot of moisture that, when heated, is released. This can lead to a soggy burger―a big no-no!

Avoid the crumble. In this spicy black bean burger recipe, we use cornmeal to keep things together and prevent the patty from breaking into pieces. Depending on your diet, adding eggs to a mixture of ground flax and water, oats, breadcrumbs or wheat germ works too.

Season the burger. Meat is flavorful and quite simply, beans aren't so much. That's why we include spices like the cumin, salsa and garlic salt. Avoid seasoning them with vinegar, Worcestershire sauce or soy sauce, as those can add too much mushy texture to the burger.

CANNELLINI-BEAN PASTA WITH BEURRE BLANC

This is from Jack Monroe and adapted by Tejal Rao in The New Yorkk Times cooking enewsletter. Tejal wrote, "This recipe, like so many great straightforward, inexpensive go-tos, starts with little more than a can of beans — then transforms it into a luxurious meal. Jack Monroe, the British food writer, uses a classic beurre blanc to do that work, simmering a splash of wine, vinegar and butter together, then tipping it into a pot of boiling beans and pasta, letting the liquid reduce to a starchy, nearly creamy consistency. If you think of beurre blanc as fancy and fussy, this simple, unexpected use for it may change your mind. You can also build on the basic recipe, adding a bunch of chopped chard or mustard greens in with the sauce, or covering the top with torn herbs."

Yield: 2 servings; Time: 35 minutes

This was featured in "How Do You Make Canned Beans Taste Luxurious? Beurre Blanc", and can be viewed online at https://cooking.nytimes.com/recipes/1020546-cannellini-bean-pasta-with-beurre-blanc.

Note: This recipe originally called for 3 cups of chicken or vegetable stock. Since I’m posting this on a vegetarian blog, I dropped the chicken part of that.

Ingredients

1 (15-ounce) can cannellini beans, rinsed

3 cups vegetable stock

1/4 cup white wine

1/4 cup white wine vinegar

1 shallot or small white onion, finely chopped

3 tablespoons unsalted butter

1 cup small pasta, like shells

Kosher salt and black pepper

Grated Parmesan, Pecorino Romano or other strong hard cheese, to finish

Preparation

Add the beans and stock to a large pot, and bring to a boil. Turn the heat down, and let simmer for 20 minutes.

While the beans cook, combine the wine, vinegar, shallot and butter in a small saucepan. Simmer over medium-low for about 15 minutes, shaking the pan as the liquid reduces to keep it from burning. Turn off the heat, and set the beurre blanc aside.

Stir the pasta into the beans and cook, stirring occasionally, until the pasta is cooked through, about 10 more minutes. Stir in the beurre blanc, and season generously with salt and pepper. Serve with a little grated cheese on top.

SIMPLE POTATO SOUP

This comes from the infamous long-since-forgotten emailing list. Makes 4 servings; Time: 30

Ingredients

1 tablespoon butter or extra-virgin olive oil

3 medium potatoes, any type, peeled and cut into small cubes

2 large leeks, well washed and chopped

Salt and freshly ground black pepper to taste

4 cups vegetable stock, preferably warmed

1/2 cup cream or milk

Directions

Place the butter or oil in a large, deep saucepan or casserole and turn the heat to medium. When the butter melts or the oil is hot, add the vegetables. Season with salt and pepper and cook, stirring, for 2 or 3 minutes.

Add the stock and cook until the vegetables are very tender, about 20 minutes. (You may prepare the soup in advance up to this point. Cover, refrigerate for up to 2 days, and reheat before proceeding.) Adjust seasoning and serve hot or puree and serve cold.

LEMON ICEBOX PIE III

This is from Heather Simpson on AllRecipes. The recipe begins, "A family favorite when a no-bake, fast pie is needed. (And family members too small to use the oven can make dessert!) Very pretty when garnished with whipped cream and mint leaves.”

This recipe makes 8 servings and can be found online here.

Ingredients

1 (9 inch) prepared graham cracker crust

2 (8 ounce) packages cream cheese, softened

1 (14 ounce) can sweetened condensed milk

2 lemons, juiced

1 teaspoon lemon zest

KATHARINE HEPBURN'S BROWNIES

This came in a recent New York Times Cooking e-newsletter. It begins, “Much like its author, this recipe is a no-fuss classic. It calls for just 1/4 cup of flour, which yields an incredibly rich and gooey brownie, and it's super easy to make. So easy, in fact, that baking a batch of these might just become part of your weekend routine.” Time: about 45 minutes; makes 12 brownies

To view this recipe online, click here.

Ingredients

1/2 cup cocoa

1/2 cup butter (1 stick)

2 eggs

1 cup sugar

1/4 cup flour

1 cup chopped or broken-up walnuts or pecans

1 teaspoon vanilla

Pinch of salt

Preparation

Heat oven to 325 degrees.

Melt butter in saucepan with cocoa and stir until smooth. Remove from heat and allow to cool for a few minutes, then transfer to a large bowl. Whisk in eggs, one at a time. Stir in vanilla.

In a separate bowl, combine sugar, flour, nuts and salt. Add to the cocoa-butter mixture. Stir until just combined.

Pour into a greased 8 x 8-inch-square pan. Bake 30 to 35 minutes. Do not overbake; the brownies should be gooey. Let cool, then cut into bars.

STRAWBERRY SORBET

This comes from Amanda Hesser in The New York Times cooking e-newsletter. The recipe begins, “This mouthwatering summer sorbet is an adaptation of one served at the River Café in London. Yes, it calls for an entire lemon (rind and all), but trust us: the sweet of the strawberries and sugar, the tart and bitter of the lemon – it all works together beautifully.”

Yield: Makes 1 1/2 quarters; Time: 10 minutes.

This was featured in “The Arsenal” and can be viewed online here.

By the way, I highly recommend The Times’ Melissa Clark’s “How to Make Ice Cream”. I dare you to check it out and not want to immediately start making ice cream!

Ingredients

1 whole lemon, seeded and roughly chopped

2 cups sugar

2 pounds strawberries, hulled

Juice of 1 to 2 lemons

Preparation

Place the chopped lemon and sugar in a food processor, and pulse until combined. Transfer to a bowl.

Purée the strawberries in a food processor, and add to the lemon mixture, along with the juice of 1 lemon. Taste and add more juice as desired. The lemon flavor should be intense but should not overpower the strawberries. Pour the mixture into an ice cream machine and churn until frozen.

FETTUCCINE WITH ASPARAGUS

This comes from Pierre Franey in The New York Times cooking e-newsletter. Pierre wrote, “Finding a 30-minute dish that's elegant enough for a dinner party is no simple task, but this warm-weather pasta is one to fit the bill. It is gleefully easy to put together. Just toss slices of blanched asparagus with a tangle of cooked fettuccine slicked with butter. Shower with grated Parmesan and serve.” Yield: 4 servings; Time: 25 minutes.

Not sure how to cook asparagus? Read ”How to Cook Asparagus”, David Tanis’s guide to cooking this wonderful vegetable. (David Tanis writes The New York Times’s City Kitchen column. Many of his recipes are posted in the Times’s cooking e-newsletter.)

To view Pierre Franey’s Fettuccine with Asparagus recipe online, click here.

Ingredients

6 fresh asparagus spears, about 1/2 pound

10 ounces fresh fettuccine or 3/4 pound dried fettuccine

2 tablespoons butter

1/8 teaspoon freshly grated nutmeg

2 tablespoons finely chopped fresh basil or parsley

1/2 cup freshly grated Parmesan cheese

Freshly ground pepper and salt to taste

Preparation

Bring a large pot of salted water to boil.

Cut off tough ends of asparagus spears. Cut each on the bias into 1-inch lengths. There should be about 1 1/2 cups. Rinse well and drain.

Add the asparagus to the boiling water and cook about 2 minutes. Remove asparagus with a slotted spoon and set aside.

Drop the fettuccine into salted boiling water. Let cook to desired degree of doneness (cooking time will range from about 2 to 2 1/2 minutes for fresh pasta to 9 minutes or more for dried). Reserve 2 tablespoons cooking water. Drain the pasta.

Heat the butter in the pot in which the pasta was cooked. Add the asparagus pieces and the fettuccine. Add salt, pepper and nutmeg. Add the reserved 2 tablespoons of cooking water and basil. Toss to blend. Serve hot with Parmesan cheese on the side.

St. Patrick's Day Food

Today is St. Patrick's Day, and it seems that everyone is Irish, even if one isn't. (For the record, I am definitely part Irish.) And however you feel about St. Patrick, it still seems like a day to celebrate. So, in honor of St. Patrick's Day, here are six recipes you can use to celebrate today, including Mashed Potatoes with Chives and Chocolate Guinness Cake. Heck, they're so good, fix these at any time of the year! Enjoy!

Note: If you'd like to check out a few more St. Patrick's Day recipes, my main food blog, Confessions of a Foodie, has several more recipes to choose from. It does start off with meat, but the rest are fine for a vegetarian. Or you can try a few of my posts from years past. While these links are several days old, they're still yummy. Enjoy!

COLCANNON

This comes from the March 2007 issue of Vegetarian Times, and begins, “This ultra-Irish dish varies from one county to the next, with some cooks using cabbage in place of kale, others using leeks or onions for extra flavor. Here, it gets a modern-day makeover with purple potatoes, garlic and shiitake mushrooms to reflect all the delicious new options found in Irish markets today. If you can’t find purple potatoes, Yukon gold, fingerling or russet varieties also work well.” Serves 6.

To view this online, click here.

Ingredients

1 lb. purple potatoes

1 lb. kale, tough stems removed

2 to 3 Tbs. olive oil

10 oz. shiitake mushrooms, sliced (about 3 cups)

3 cloves garlic, chopped (about 1 Tbs.)

1 cup unsweetened rice milk, warmed

Directions

Place potatoes in large pot, and cover with water. Bring to a boil, reduce heat to medium, and simmer 15 to 20 minutes, or until very tender. Drain, and return to pot. Heat potatoes over medium heat 1 to 2 minutes to steam off excess water, and set aside.

Meanwhile, bring large pot of salted water to a boil. Add kale, and cook 5 minutes. Drain, and set aside.

Heat oil in large skillet over medium heat. Add mushrooms and garlic, and sauté 5 to 7 minutes, or until mushrooms are soft and all liquid has evaporated. Stir in kale, and cook 1 minute more, or until hot. Season with salt and pepper. Mash rice milk into potatoes until soft, but still chunky. Fold in kale mixture, and serve.

MASHED POTATOES WITH CHIVES

I absolutely love potatoes, especially mashed. This comes from the March 2008 issue of Vegetarian Times, and begins, “It really isn’t an Irish dinner unless there are potatoes. These can be served as a side dish, or combined with a stew to make a cottage pie: Simply place the stew in a pie dish, spread the potatoes on top, and place under the broiler until the potatoes are browned.” Serves 2 in 30 minutes or less.

To view this online, click here.

Ingredients

1 lb. Yukon gold potatoes, peeled and cut into 1/2-inch slices

3/4 cup low-fat milk

1 1/2 Tbs. butter

3 Tbs. finely chopped chives

1/4 tsp. grated nutmeg

Directions

Place potatoes in medium pot and cover with 1 inch water. Bring to a boil over high heat. Reduce heat to medium, and simmer 8 to 10 minutes, or until potatoes are tender. Drain, and put potatoes through ricer or mash in medium bowl.

Heat milk and butter in small saucepan until butter is melted. Stir into potatoes along with chives and nutmeg. Season with salt and pepper.

SODA BREAD SCONES

This is from the April 2009 issue of Vegetarian Times. It begins, “Irish soda bread is just barely sweet and biscuit-like—perfect with a savory meal. It’s usually baked in a large round, but here we’ve cut it into scone-like wedges that take only 20 minutes to bake.” Serves 6 in 30 minutes or less.

Ingredients

1 tsp. ground cinnamon

2 1/2 cups white whole-wheat flour

1/2 tsp. baking soda

1/2 tsp. coarse salt

3/4 cup low-fat buttermilk or plain soymilk

3 Tbs. pure maple syrup

3/4 cup dried currants

8 tsp. raw sugar, such as turbinado, optional

Directions

Preheat oven to 450°F. Coat baking sheet with cooking spray.

Whisk together flour, cinnamon, baking soda, and salt in bowl. Whisk together buttermilk, maple syrup, and currants in separate bowl. Stir buttermilk mixture into flour mixture until soft dough forms. Transfer to floured work surface, and shape into 8-inch round. Cut round into 8 wedges.

VEGETARIAN "BEEF" AND GUINNESS STEW

Jolinda Hackett wrote for The Spruce Eats. For this recipe, Jolinda wrote, "Beef and Guinness stew, an Irish pub favorite, gets a vegetarian makeover in this recipe, using seitan instead of beef to absorb all that rich stout flavor. Yum! The flavor of the beer is very strong in this recipe, so I've suggest using half the amount of Guinness and adding an equal amount of vegetable broth if you aren't a Guinness fan."

Prep Time: 10 minutes; Cook Time: 60 minutes

Ingredients:

Approx 14 oz seitan, cut into thin strips

2 tbsp soy sauce

2 tbsp olive oil

1 tbsp steak sauce

3 tbsp butter or margarine

1 onion, diced

3 ribs celery, chopped

2 carrots, chopped

2 medium potatoes chopped into 1 inch pieces

3 cloves garlic, minced

2 12 oz bottles Guinness Stout OR 1 bottle plus 1 1/2 cups vegetable broth

2 tbsp flour

1 tbsp chopped fresh thyme

1 tsp brown sugar (optional)

Salt and pepper to taste

Preparation:

Sautee seitan in olive oil and soy sauce until slightly browned, about 5 minutes. Reduce heat, add steak sauce and stir until seitan is lightly coated. Remove from heat and aside. In a large pot, sautee onions, celery, carrots, potatoes and garlic in butter or margarine for 3-5 minutes, or until onions are slightly soft. Reduce heat and slowly add Guinness, gently stirring to combine. Add flour, thyme, sugar, salt and pepper and stir well. Add seitan and allow stew to simmer until Guinness reduces and stew thickens, about 40-50 minutes.

Add more salt and pepper if desired and enjoy!

Florida Recipes

There are certain foods that just scream where they're from. That said, here are recipes that fit Florida perfectly. Check out the Key Lime Pie Bars With Vanilla Wafer Crust, the Mango Salsa, or any of the other recipes in today's post. Enjoy!

FRESH MANGO ICE CREAM

Several years ago, I signed up for newsletters from Authentic Florida. If you haven't signed up for their newsletters, I highly recommend it (especially if you live in and/or love Florida).

This recipe was posted in the Authentic Florida newsletter on July 21, 2020, and reposted on July 15, 2021. It's definitely yummy, and is an Authentic Florida recipe. It begins, "Florida mangos are in season and Authentic Florida’s fresh mango ice cream recipe is the perfect dessert to help you cool down. Try this fresh, delicious, tropical, and refreshing dessert that does not require an ice cream machine!"

Yield: 1-1/2 gallons

To view this online, go to https://authenticflorida.com/authentic-floridas-fresh-mango-ice-cream/. (And while you're there, don't forget to sign up for Authentic Florida's newsletter.)

Ingredients

2 1/2 cups of cubed mangos (about 3 ripe medium-sized mangos)

1/3 + 3/4 cup of granulated sugar, plus extra if needed

2 1/2 Tablespoons of lime juice (1-2 limes)

1 3/4 cups of Half & Half cream

1 1/4 cups of coconut milk (1 can found in the Asian section of a grocery store)

6-8 fresh mint leaves for garnish (optional)

1 ice cream maker (optional)

Instructions

Peel the mangos and cut them into small cubes. (You’ll be cutting around a large seed.) In a medium bowl combine the cubed mango with 1/3 cup of sugar, cover, and marinate in the refrigerator for one hour (or longer if you have the time).

Next, pour the contents from the refrigerated mangoes (including the juice) in a saucepan over medium-low heat for five minutes, stirring occasionally. Remove and cool. Note: if you have leftover mango (more than 2 1/2 cups), keep the mixture refrigerated to place over the finished ice cream.

In a blender or food processor, puree the mango mixture.

Next, add the lime juice and process it again. Cover and chill for an hour.

Gently stir in the pureed mango. Taste test the mixture to decide whether it’s sweet enough and if not add 1-2 tablespoons of sugar. From this point, pour into a plastic container, cover with a tight lid, and chill in the freezer, stirring occasionally until hardened. If you have an ice cream maker, following the recommended directions. In a large bowl, combine the Half & Half and the coconut milk with the remaining 3/4 cup sugar, stirring to dissolve the sugar.

Remove from the freezer 15 minutes before serving. Top with some mint and fresh-cut mangos. Enjoy!

FLORIDA LIME PIE

This recipes is from Jane Nickerson, and adapted by Sam Sifton at The New York Times cooking e-newsletter. Sam wrote, "Jane Nickerson was the food editor of The New York Times from 1942 until 1957, when she moved with her family to Lakeland, Fla. There, she eventually became food editor of The Ledger, in Lakeland, then owned by The Times. Her successor in New York was Craig Claiborne, whose star eclipsed hers for, among other things, systemic reasons we wrestle with still. But Ms. Nickerson was a hugely influential force in American home cooking, introducing ingredients and recipes from chefs and home cooks to a nation that met her first on a wartime footing and grew to find itself on a prosperous one. In Florida, she embraced local ingredients and foodways, and in 1973 published 'Jane Nickerson’s Florida Cookbook,' an invaluable guide to the state’s appetizing abundance. Her lime pie is a little richer than the more well-known Key lime pie. I like that about it."

Yield: 1 (9-inch) pie; Time: 1 1/2 hours, plus chilling and cooling.

This yummy pie was featured in "The Unsung Influence of a Pioneering Food Journalist", and can be viewed online at https://cooking.nytimes.com/recipes/1022079-florida-lime-pie.

Note: The article that this was featured in is well worth the read, especially for anyone interested in a little history about food, recipes, cooking…the whole yummy 9-yards. (Thanks for an interesting read, Sam!)

Ingredients

For the Crust:

1 1/4 cups all-purpose flour, plus more for dusting

1/4 teaspoon kosher salt

1/2 cup very cold unsalted butter, cut into 1/2-inch cubes

3 tablespoons ice water, plus more as needed

For the Filling:

5 large egg yolks, plus 3 large egg whites, all at room temperature

1 (14-ounce) can sweetened condensed milk

2/3 cup fresh lime juice (from about 4 to 5 limes)

1 tablespoon finely grated lime zest, plus more for garnish

Whipped cream, for garnish

Preparation

Prepare the crust: In a large bowl, whisk together the flour and salt. Toss in the butter cubes serially, to keep them separate while coating them evenly in flour. Using a fork, cut the butter into the flour, continuing to toss them as you do, until they’re roughly the size of peas.

Sprinkle 3 tablespoons ice water over the flour-and-butter mixture. Using your fork, toss to incorporate, then continue to add ice water, 1 tablespoon at a time, until the dough begins to come together as you stir it. Using your hands, fold the dough over itself a few times, adding just enough water so that it holds together.

Form the dough into a disk about 1-inch thick, and wrap tightly in plastic wrap, then refrigerate for at least 2 hours or up to a couple of days.

When you’re ready to make the pie, first prepare the pie shell: Heat oven to 350 degrees. Roll out the pastry on a lightly floured surface until it is roughly 12 inches in diameter, then fit it into a 9-inch pie plate. Trim and crimp edges, then, using the tines of a fork, pierce the bottom crust 8 to 12 times. Line dough with a sheet of parchment paper, and spread evenly with pie weights. Place the pie crust on a baking sheet, and bake for about 30 minutes, or until the edges are set. You want it slightly underdone. Carefully remove the pie weights and parchment, and let cool completely on a rack. Reduce oven temperature to 325 degrees.

Make the filling: In a large bowl, use a whisk to beat the egg yolks until they are thick, then gradually beat in the condensed milk, then the lime juice. Stir in 1 tablespoon lime zest.

In a medium bowl, use a whisk to beat the egg whites until they form soft peaks, then fold them gently into the condensed-milk mixture. Pour into the cooled pie shell.

Place the pie back on the sheet pan and bake until the filling is just set in the center, about 20 minutes. It need not be completely firm because the filling thickens as it cools.

Cool the pie on a rack, then refrigerate until chilled, at least 2 hours. Serve topped with whipped cream and about 1 teaspoon grated lime zest.

ORANGE JULIUS

This comes from Kelli Foster on TheKitchn. (No, that's not a typo. If you've never checked out TheKitchn, or its sibling site, Apartment Therapy, I highly recommend checking out both. Seriously.)

Anyway, this makes 2 servings. To view the recipe online (along with a little bit about the Orange Julius), go to https://www.thekitchn.com/how-to-make-an-orange-julius-125422.

Ingredients

1 cup milk (whole, 2%, or skim)

2 teaspoons vanilla extract

1 6-ounce can frozen orange juice concentrate

1/2 cup sugar (or sugar substitutes, check package for equivalence)

1 1/2 cups ice

Equipment

Blender

Glasses

Directions

Blend the milk and vanilla: Pour the milk and vanilla in a blender and pulse until combined.

Add the frozen concentrate: Add the frozen orange juice concentrate. Blend until fully combined with the milk.

Add the sugar and ice cubes: Blend until cubes are crushed and mixture has thickened. If things end up a little thick, just add a tablespoon of water and mix once again.

Pour and enjoy: Pour the drink into glasses. Serve with a straw and sip your way to blissful happiness.

Recipe Notes

I used 2% milk, though you can also use whole or skim milk with equally delicious results.

If you don't have orange juice concentrate (or aren't into buying it), I'd suggest freezing fresh orange juice into cubes (or in an 8x8-inch pan, then break it into chunks). Without that added iciness, the overall texture of the drink will change dramatically, and adding more ice in the end just doesn't work. (You end up with a more-soupy, less-flavored version of the original.)

KEY LIME PIE BARS WITH VANILLA WAFER CRUST

This is from Samantha Seneviratne at The New York Times cooking newsletter. Samantha wrote, "Some say that a Key lime’s juice is slightly more floral than that of its more well-known cousin, the Persian lime, the kind you can find in every supermarket and corner deli. Key limes are hard to find, though, so use bottled Key lime juice or conventional lime juice in this easy recipe that's great for a crowd."

Yield: 16 servings; Time: 45 minutes, plus chilling

This was featured in "A Sweet-Tart Treat for Summer", and can viewed online at https://cooking.nytimes.com/recipes/1019472-key-lime-pie-bars-with-vanilla-wafer-crust.

Ingredients

For the Crust:

1 (11-ounce) box vanilla wafers

2 tablespoons granulated sugar

8 tablespoons unsalted butter, melted

For the Filling:

1 3/4 cup condensed milk (1 14-ounce can plus 1/2 cup)

5 large egg yolks

3/4 cup Key lime or conventional lime juice

1 teaspoon lime zest

For the Topping:

1 cup cold heavy cream

1 tablespoon confectioners’ sugar

Preparation

Heat oven to 350 degrees. Line a 9-inch square pan with parchment paper, leaving a 2-inch overhang on two sides. In a food processor, combine vanilla wafers and sugar, and pulse until you have fine crumbs. Add butter and process until evenly moistened. Transfer mixture to prepared pan and press it down into an even layer. Bake until fragrant and a shade darker, 15 to 17 minutes.

Meanwhile, prepare the filling: In a medium bowl, whisk together condensed milk, egg yolks, lime juice and lime zest.

Pour filling over crust (it’s O.K. if it’s still warm) and bake until the filling is set, about 15 minutes. Transfer to a rack to cool completely, then cover and refrigerate for at least 4 hours.

Use a sharp knife to release edges. Using the parchment overhang, carefully lift and transfer the bar to a cutting board. Just before serving, whip heavy cream and confectioners’ sugar until soft peaks form. Top bars with whipped cream and cut into 16 squares to serve.
