Quick Breads and Muffins

There's something wonderful about homemade bread, whether the taste, the way its scent fills the house, the feeling of making something this yummy.

What if you don't have the time or energy to make yeast bread, though, with its rising time (usually at least twice)? That's where Quick Breads and Muffins fit in. They tend to make the house smell wonderful, they taste great, and are usually appreciated by those around you.

Here are six quick breads and muffins to try your hand at. Check out the Irish Whole Wheat Soda Bread, the Southern-Style Cornbread, or any of the other yummy recipes in today's post. Enjoy!

CHOCOLATE-RASPBERRY MUFFINS

By now, you may remember me posting about Rollin' Oats. It has two stores in the Tampa Bay (Florida) area, one in Tampa, the other in St. Petersburg. Since I live way closer to St. Pete, I frequently go to that store. It's really one of my favorite places to shop. (Hint: If you live in the area, or are visiting, I highly recommend checking it out.)

Anyway, whenever I'm in Rollin' Oats, I pick up a copy of Taste For Life. This is from the March 2021 issue of Taste For Life (page 12). Prep Time: 35 minutes, plus 30 minutes cool time; Makes 9 muffins

Ingredients

1/4 cup coconut flour

1/4 cup unsweetened cocoa powder

1/4 tsp salt

1/2 tsp baking soda

4 large eggs

1/4 cup oil, plus additional for greasing pan

1/2 cup honey

1 tsp vanilla extract

1/2 cup fresh or frozen raspberries

Directions

Preheat oven to 350°. Grease 9 of the muffin cups in a muffin pan.

In a large bowl, combine coconut flour, cocoa powder, salt, and baking soda.

In a medium bowl, whisk together eggs, oil, honey, and vanilla extract. Mix wet ingredients into dry ingredients until fully incorporated. Gently fold in raspberries.

Scoop approximately 1/4 cup of batter into each greased muffin cup.

Bake approximately 20 minutes, until a cake tester inserted into center of muffin comes out clean. Cool muffins in pan for 1/2 hour.

CLASSIC SOUTHERN BUTTERMILK CORNBREAD

This yummy recipe is from Diana Rattray, who has contributed to About.com and The Spruce Eats for years. For this recipe, she wrote, "Cornbread differs in flavor and texture depending on what part of the country you are in. Southern cornbread is unsweetened and more crumbly than the sweet cake-like recipes from the North; it's also cooked in a very hot cast-iron skillet, while Northern cornbread is typically made in a baking dish. This cornbread recipe is for the classic buttermilk cornbread you'll find throughout the South. There's generally no sugar added to Southern cornbread, which makes it an ideal side dish for a savory meal. Serve it fresh from the oven, cut into wedges, with beans or collard greens or a big bowl of chili. It can also be used to make a delicious cornbread stuffing. If you want to go "old school," crumble some of this cornbread into a mug and enjoy it with a few splashes of buttermilk."

Ingredients

1/4 cup melted shortening, divided

2 cups white or yellow cornmeal

1/4 cup all-purpose flour

2 1/2 teaspoons baking powder

1/2 teaspoon baking soda

3/4 teaspoon salt

1 1/4 cups buttermilk

1 large egg

Butter, for serving, optional

Directions

Gather the ingredients.

Preheat the oven to 425 F. Position the rack in the center of the oven.

Brush about 1 tablespoon of melted shortening in a 9- to 10-inch cast-iron skillet and put the skillet in the oven

In a large bowl, combine the cornmeal, flour, baking powder, baking soda, and salt. Whisk to blend thoroughly.

In another bowl, whisk together the buttermilk, egg, and the remaining 3 tablespoons of melted shortening.

Add the buttermilk mixture to the dry mixture and stir just until blended. Carefully remove the hot cast iron pan from the oven and set it on a metal rack. Pour the batter into the sizzling shortening in the hot skillet.

Return the skillet to the oven, reduce the oven temperature to 375 F, and bake for 20 to 24 minutes, until golden brown.

Cut the cornbread into wedges and serve hot with a pat of butter, if desired.

How to Serve Southern Cornbread

Southern buttermilk cornbread is delicious served alongside soups, stews, chili, beans, or greens. Many people like to crumble their cornbread in a glass and fill it with cold milk. You can also turn a pan of cornbread into a great dressing to go with chicken, pork, or turkey.

Tips

If you find the cornbread is too crumbly, increase the amount of flour (decreasing the cornmeal proportionally); the additional gluten will help to keep the mixture together.

For the optimal cornbread, splurge on a quality stone-ground cornmeal, which will offer more flavor and an interesting, varied texture.

Recipe Variations

For a little extra flavor, add some bacon drippings or duck fat to the cast iron skillet.

Although it will break from tradition, if you prefer a sweeter cornbread, add a few tablespoons of sugar or honey to the batter.

SOUTHERN-STYLE CORNBREAD

This yummy recipe also comes from Diana Rattray. For this recipe, she wrote, "Cornbread is a staple in the South. It is absolutely essential with bean dishes, black-eyed peas, greens, hearty stews, and, of course, country-style ribs. It's a cheap, filling dish that's easy to make from scratch and better than any boxed mix. Throughout the years, Southerners have enjoyed cornbread in many different ways, from fritters to corn pone and spoon bread to hush puppies. Despite all of those options, many believe that the best Southern cornbread is baked in a cast-iron pan so it gets a crispy crust.

"Southern-style cornbread rarely contains sugar, though some regions and many people do like to sweeten their cornbread a bit. To add sugar or not can be a hot topic of debate, and it's an optional ingredient in this recipe. If you have Northerners and Southerners to cook for, you might have to look for compromise. Or make two pans!

"This cornbread recipe doesn't require buttermilk. It's richer than most because it's made with three eggs, and using a combination of cornmeal and flour ensures it won't get too dry or crumbly."

1 tablespoon vegetable shortening

2 cups yellow cornmeal

1 1/2 cups all-purpose flour

2 teaspoons kosher salt

2 teaspoons baking powder

1 teaspoon baking soda

2 tablespoons granulated sugar

3 large eggs, beaten

2 cups milk

1/4 cup unsalted butter

Directions

Gather the ingredients. Preheat oven to 425 F.

Put the shortening in a 10-inch cast-iron skillet and place in the oven to preheat while making the batter.

In a mixing bowl, combine the cornmeal, flour, salt, baking powder, baking soda, and sugar.

In another bowl, whisk together the eggs, milk, and butter.

Combine with dry ingredients and stir until all ingredients are moistened. The batter will be similar to a thick pancake batter.

Carefully, with heavy oven mitts, lift the skillet out of the oven and turn to coat the bottom and sides with the melted shortening.

Pour the cornbread batter into the skillet and return it to the oven.

Bake for about 20 to 25 minutes, until browned. A toothpick inserted in the center should come out clean. Serve and enjoy.

Tips

Baking powder starts acting quickly, so have the oven preheated and the skillet ready before you combine the wet and dry ingredients. As soon as the batter is combined, pour it into the skillet and get it into the oven.

If you don't have a cast-iron skillet, a greased 8-inch or 9-inch baking pan may be substituted.

This same recipe can be used to make cornbread muffins. Be sure to grease and flour the muffin pan thoroughly.

Recipe Variations

Replace the sugar with honey or cane syrup if you like.

The salt may be reduced to 1 teaspoon.

Add 1 cup of well-drained, cooked corn kernels to the batter.

Brown about 1/2 pound of crumbled sausage in the skillet. Add the cornbread batter and bake. As soon as the cornbread comes out of the oven, run a knife around the edge to loosen and invert it onto a plate.

Add 1 to 2 cups of Mexican-style cheese and green chile peppers for Tex-Mex flavor.

What's the Difference Between Southern and Northern Cornbread?

It's difficult to generalize recipes because every cook has their own way of making popular dishes. However, there tend to be some regional preferences when it comes to cornbread. One of the most controversial is the sugar, though Northern cornbread also tends to be more cake-like and less crumbly because it uses more flour. Southern cornbread often skips the sugar, includes more cornmeal, and is baked in a piping hot cast-iron pan for that signature crispy crust on the bottom and sides.

What's the Best Fat to Grease the Skillet?

One key to great Southern cornbread is the fat that greases the skillet. Vegetable shortening is just one option. You can use the same amount of oil as long as it has a high smoke point that can handle the oven's temperature. Canola and vegetable oils are good choices. To give the cornbread even more flavor, use bacon grease (some people insist it's the only way to go):

Dice 3 or 4 strips of bacon and cook it in the skillet. Use 1 tablespoon of bacon grease instead of the oil or shortening and replace some of the butter with the rest. Add the cooked diced bacon to the batter, if you like.

Why Does Cornbread Get Crumbly?

Cornbread is inherently crumbly to some degree, particularly Southern-style cornbread. A few factors may produce really dry cornbread that simply falls apart, though. Over baking will dry it out, so be sure to check for doneness with a toothpick. Another consideration is if a recipe has too much cornmeal and not enough (or no) flour or eggs. Fortunately, this recipe includes those three elements in proportions that result in tender, not-too-crumbly cornbread.

IRISH WHOLE WHEAT SODA BREAD

Yield: Makes 1 Round Loaf

Ingredients

2 cups whole wheat flour

1 cup all-purpose flour

1 tablespoon granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1-1/2 cups buttermilk

Directions

Preheat oven to 400 degrees F. Lightly grease a baking sheet.

In large bowl, stir together whole wheat flour, flour, sugar, baking powder, baking soda & salt. Add buttermilk all at once, stirring with a fork to make a soft, but slightly sticky dough.

With lightly floured hands, form dough into a ball. On a lightly floured surface, knead the dough gently for 8 to 10 times. Pat the dough into a 6-inch thick round, with a slightly flattened top.

Place dough on prepared baking sheet. With a shape knife or pizza cutter, score the top in the shape of a cross or large X. Bake in preheated oven for 35 to 45 minutes. Remove from baking sheet onto cooling rack immediately. Dust top with rice flour. Serve warm from the oven.

Streusel Topping

1/3 cup rolled oats

1/4 cup flour

1/4 cup firmly packed brown sugar

1 tsp. ground cinnamon

1/4 cup unsalted butter

Batter

1 1/4 cups all-purpose flour

1 cup rolled oats

1/2 cup firmly packed brown sugar

2 tsp. baking powder

1/4 tsp. baking soda

1/2 tsp. ground cinnamon

1/2 tsp. salt

1 cup milk

5 Tbs. butter, melted

1 egg

1 tsp. vanilla extract

1 medium apple, peeled and finely chopped (3/4 cup)

Preparation

Preheat oven to 350F. Grease 12 standard (1/3 cup) muffin cups, or spray with cooking spray.

To make Streusel Topping: Stir together oats, flour, brown sugar and cinnamon. Cut butter into small pieces, and rub it into oat-flour mixture until texture resembles granola. Set aside.

To make Batter: Stir together flour, oats, brown sugar, baking powder, baking soda, cinnamon and salt in mixing bowl. Whisk together milk, butter, egg and vanilla in separate bowl. Fold wet ingredients into dry ingredients just until batter comes together. Stir in apple pieces. Spoon into muffin cups. Top each with a heaping tablespoon of streusel.

Bake 18 to 20 minutes, or until golden brown and a toothpick inserted in center of muffin in middle of pan comes out clean. Let cool in pan 10 minutes, then unmold muffins onto a wire cooling rack.

LOW-FAT APRICOT-PECAN MUFFINS

This comes from Vegetarian Times (May 2005 issue, page 81), and begins, "Apricots and pecans combined make positively yummy muffins, especially when served right out of the oven because the pecans taste best hot. These muffins keep well for up to 3 days and also freeze well. Makes 24 muffins."

1 cup boiling water

1 1/2 cups dried apricots, chopped

2 cups unbleached all-purpose flour

1 cup whole wheat flour

1 cup granulated sugar

1 Tbs. baking powder

1 tsp. baking soda

1/2 tsp. salt

1 cup chopped pecans

1 cup orange juice

2 large eggs, beaten, or 1/2 cup egg substitute

1/4 cup almond oil or canola oil

Preparation

Preheat oven to 375F. Line two 12-cup muffin tins with baking liners, or spray with cooking spray.

Pour water over apricots, and set aside to soften. When soft, remove from water.

Sift flours, sugar, baking powder, baking soda and salt into bowl. Add pecans. Stir juice, eggs and oil into softened apricots. Add to dry ingredients, and mix just enough to moisten. Do not overmix. Fill muffin cups two-thirds full.

Bake 20 to 25 minutes, or until beginning to brown. Remove from oven, and serve hot.

KATHARINE HEPBURN'S BROWNIES

This was in New York Times Cooking e-newsletter. It begins, “Much like its author, this recipe is a no-fuss classic. It calls for just 1/4 cup of flour, which yields an incredibly rich and gooey brownie, and it's super easy to make. So easy, in fact, that baking a batch of these might just become part of your weekend routine.” Time: about 45 minutes; makes 12 brownies

Ingredients

1/2 cup cocoa

1/2 cup butter (1 stick)

2 eggs

1 cup sugar

1/4 cup flour

1 cup chopped or broken-up walnuts or pecans

1 teaspoon vanilla

Pinch of salt

Preparation

Heat oven to 325 degrees.

Melt butter in saucepan with cocoa and stir until smooth. Remove from heat and allow to cool for a few minutes, then transfer to a large bowl. Whisk in eggs, one at a time. Stir in vanilla.

In a separate bowl, combine sugar, flour, nuts and salt. Add to the cocoa-butter mixture. Stir until just combined.

Pour into a greased 8 x 8-inch-square pan. Bake 30 to 35 minutes. Do not overbake; the brownies should be gooey. Let cool, then cut into bars.

NO CHURN ICE CREAM

This comes from GE Appliances’ email list. It begins, “No one will believe that this ultra-creamy ice cream is so easy to make. No fancy ice cream machine required.”

Ingredients:

14-ounce can sweetened condensed milk

2 teaspoons vanilla extract

Pinch fine sea salt

2 cups heavy cream, chilled

Directions:

In a small bowl, whisk the sweetened condensed milk, vanilla and salt until thoroughly combined; set aside.

In a large metal bowl, whip the cream with a hand mixer on high speed until stiff peaks form, about 2 minutes. Fold about 1 cup of the whipped cream into the condensed milk mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended.

Pour into a chilled 9-by-5-by-3-inch metal loaf pan, cover with plastic wrap and freeze until solid and scoopable, about 3-4 hours.

Chef’s Notes:

For best results, chill both the metal bowl and loaf pan before starting this recipe.

Try adding in additional ingredients after the ice cream has set for a few hours. Crushed up chocolate sandwich cookies, toasted nuts or chopped up candy bars are all great additions. Stir them in and place the ice cream back in the freezer until firm.

VEGETABLE SHEPHERD'S PIE

This came from the Food Network's Magazine several years ago.

Prep Time: 25 min; Cook Time: 41 min; Level: Easy; Serves: 4 servings

Ingredients

6 medium Yukon gold potatoes, peeled and diced

Kosher salt

2 tablespoons extra-virgin olive oil

1 large onion, diced

3 large carrots, cut into 1/2-inch chunks

2 stalks celery, cut into 1/2-inch chunks

1 bunch baby turnips, halved or quartered if large

6 cloves garlic, minced

Freshly ground pepper

1/2 bunch fresh parsley, leaves chopped (stems reserved)

1 1/2 tablespoons Worcestershire sauce

5 tablespoons unsalted butter

3/4 cup chopped veggie burgers or vegetarian protein crumbles

2/3 cup milk or half-and-half

Grated parmesan cheese, for sprinkling (optional)

Directions

Preheat the broiler. Cover the potatoes with water in a pot; season with salt, cover and boil until the potatoes are fork-tender, 15 minutes.

Meanwhile, heat the oil in a stovetop casserole dish or shallow enamel pot over medium-high heat. Add the onion, carrots, celery, turnips and garlic. Season with salt and pepper and cook until the vegetables brown, 8 minutes. Add 1 1/2 cups cooking liquid from the potatoes to the casserole dish. Lower the heat and scrape up any browned bits with a wooden spoon. Tie the parsley stems with twine and add to the casserole. Cover and simmer until the vegetables are tender, 8 minutes. Stir in the Worcestershire sauce, 2 tablespoons butter and the chopped veggie burgers and warm through, 5 minutes. Remove the parsley stems and stir in the chopped parsley. Keep warm.

Drain the potatoes and mash with the remaining 3 tablespoons butter and the milk; season with salt and pepper and spoon over the casserole. Sprinkle with parmesan, if desired. Broil until golden brown, 5 minutes.

EASY WHOLE WHEAT VEGETARIAN SPINACH LASAGNA

This is from Jolinda Hackett on The Spruce Eats. Jolinda wrote, “Easy whole wheat vegetarian lasagna with spinach baked in the oven with three kinds of cheeses. What's not to love? This is the perfect classic spinach lasagna recipe for the whole family!

“Make your vegetarian lasagna just a bit healthier by using this recipe, which calls for whole wheat lasagna noodles and spinach. Even though it uses whole wheat noodles, this Italian spinach lasagna is incredibly rich and creamy as it uses plenty of mozzarella, Parmesan, and low-fat cottage cheese. Of course, you don't have to use whole wheat lasagna noodles if you prefer the regular kind.

Ingredients

1 8-ounce package whole wheat lasagne noodles, cooked slightly (al dente)

1 9-ounce package frozen raw spinach (well thawed and drained)

1/2 cup grated Parmesan cheese

3 eggs

3 cups low-fat cottage cheese

3 cups pre-made or store-bought pasta sauce

3 cups grated low-moisture part skim mozzarella cheese

Directions

Pre-heat the oven to 325 degrees F.

In a medium mixing bowl, beat the eggs then add the cottage cheese and Parmesan cheese. Spray a 13 x 9-inch glass baking dish with non-stick cooking spray or a homemade olive oil spray.

Put one layer of the slightly cooked lasagna noodles flat across the bottom of the baking dish. Add about half of the spinach, pressing down lightly and evenly over the noodles. Top with another layer of lasagna noodles. Top this layer of noodles with the cottage cheese mixture then add the remaining spinach. Then add the last of the lasagna noodles laid evenly on top of spinach.

Once you've layered everything, spread the pasta sauce evenly over the top and sprinkle the whole thing with mozzarella cheese. Press down lightly.

Cover baking dish with foil, using foil sprayed with cooking spray and keeping foil off the center of the lasagna. Secure sides tightly over baking dish.

Bake about 1 hour 15 minutes in oven. To lightly brown the top, remove foil for a few minutes at the end of baking time.

Allow to sit for 10 to 15 minutes before serving.

JALAPENO BROCCOLI

Ingredients

1 teaspoon salt, optional

1 head broccoli, trimmed and separated into spears

1 tablespoon balsamic vinegar

2-3 tablespoons olive oil

2 fresh jalapeno peppers, thinly sliced (with or without seeds, depending on desired hotness)

1/4 cup toasted pine nuts

Few sprigs fresh coriander or parsley, chopped

Directions

Bring a pot of water to the boil and add optional salt. Add the broccoli spears and boil over high heat for 3 to 5 minutes (depending on desired tenderness).

Drain and transfer broccoli to bowl of ice cold water for 30 seconds. Drain and lay out the cooked spears decoratively on a presentation plate. Drizzle evenly with balsamic vinegar.

In a small frying pan, heat olive oil over medium heat for 30 seconds. Add sliced jalapeno peppers (with seeds, if using) and stir-fry for 2 to 3 minutes until softened.

Take peppers with all the oil from the pan, and distribute evenly over the broccoli. Garnish with pine nuts and herbs.

ORANGE RICOTTA BARS

5 tablespoons unsalted butter

8 ounces ricotta cheese

1/2 cup granulated sugar

Zest from 1 orange (save a pinch for the glaze)

Juice from half of that orange

2 large eggs

1 teaspoon vanilla or almond extract

1 3/4 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

For the glaze:

2 tablespoons milk

Pinch of orange zest

1 cup confectioners' sugar, more if needed

1 teaspoon vanilla extract

Pinch of salt

Fresh mint, for garnish

Orange slices, for garnish

Preheat oven to 350 degrees. Spray a square baking pan (I used a 9- by 9-inch pan) with cooking spray.

Melt the butter in a microwave-safe bowl; should take between 20 and 30 seconds. Add to a large mixing bowl. Add the sugar, orange zest and juice, and mix. Add the eggs and vanilla extract, and whisk until the batter is smooth.

Add in the flour, baking powder and salt, and gently mix until everything is incorporated. Pour batter into the pan and bake for 40 minutes. You can start checking after 30-35 minutes, but mine took the full 40. The bars will be slightly brown around the edges, but don't let them get too brown. Make sure a toothpick or knife inserted into the center of the bars comes out clean.

Remove from oven and let cool in the pan for 15 minutes. After 15 minutes, gently run a knife or spatula around the edge of the pan to loosen bars, then flip pan over carefully so the bars wiggle out. Let bars cool on a baking rack for another 15 to 30 minutes, or until cool to the touch.

Meanwhile, make the glaze: Mix all glaze ingredients in a small bowl, whisking to thoroughly combine. If very thin, add more confectioners' sugar. You want it somewhat runny; it won't be thick like frosting.

When the bars are cool, cut into 10 to 12 squares. Gently spread about 1 tablespoon of glaze on each square (it will be drippy; that's okay). Top each one with a fresh mint sprig and orange slice. Serve immediately, or refrigerate but let come to room temperature before serving.

CHILI-LIME MUSHROOM TACOS

My mother loved mushrooms, so I’m sure she would have loved this, as well as the Mushroom ChicharrĂ³n Tacos.

This comes from Taste of Home, and begins with this note from Greg Fontenot (The Woodlands, Texas), "I used to make this dish with beef, but substituting with portobella mushrooms turned it into my family's vegetarian favorite. It's quick, nutritious, low fat and tasty."

Ingredients

4 large portobello mushrooms (about 3/4 pound)

1 tablespoon olive oil

1 medium sweet red pepper, cut into strips

1 medium onion, halved and thinly sliced

2 garlic cloves, minced

1-1/2 teaspoons chili powder

1/2 teaspoon salt

1/2 teaspoon ground cumin

1/4 teaspoon crushed red pepper flakes

1 teaspoon grated lime zest

2 tablespoons lime juice

8 corn tortillas (6 inches), warmed

1 cup shredded pepper jack cheese

Directions

Remove stems from mushrooms; if desired, remove gills using a spoon. Cut mushrooms into 1/2-in. slices.

In a large skillet, heat oil over medium-high heat; saute mushrooms, red pepper and onion until mushrooms are tender, 5-7 minutes. Stir in garlic, seasonings, lime zest and juice; cook and stir 1 minute. Serve in tortillas; top with cheese.

Health Tip: Making these tacos with lean ground beef adds almost 4 grams of saturated fat per serving. That’s a good reason for a meatless taco Tuesday!

POTATO TACOS

Potato Tacos? Sure, why not? This also comes from Vegetarian Times, and begins, "These tasty tacos are spicy! Feel free to reduce the amount of chipotle if you prefer milder flavor." Serves 2.

Ingredients:

1 tsp. vegetable oil

1/2 medium onion, diced

1/2 small red bell pepper, diced

1 small clove garlic, minced

1/2 canned chipotle chili in adobo sauce

1/2 tsp. ground cumin

1 medium potato, baked and diced

1 to 2 tsp. fresh lemon juice

1 Tbs. chopped fresh cilantro

2 whole wheat tortillas, warmed

Instructions:

In large nonstick skillet, heat oil over medium-high heat. Add onion, bell pepper and garlic and cook, stirring often, until almost tender, 3 to 4 minutes.

Add chipotle, cumin and oregano and stir 30 seconds. Add potato, toss well to coat and heat through. Stir in lemon juice and cilantro and remove from heat. Season with salt and freshly ground pepper to taste.

Divide potato mixture among tortillas and serve hot, garnished with condiments as desired.

TACOS WITH ROASTED POTATOES, SQUASH AND PEPPERS (RAJAS)

This comes from Martha Rose Shulman in The New York Times cooking e-newsletter. Martha wrote, "You can turn the heat up or down on this taco, depending on your taste for spiciness. Season the potatoes, onions and squash before roasting. A comforting filling that you can heat up or tone down, depending on your taste for spicy. If you like heat, use a preponderance of poblanos and Anaheims for your peppers; if not, use more bell peppers. I season the potatoes, onions and squash with cumin and chili powder before I roast them, and serve the tacos with a cooked salsa ranchera." Yield: Serves 4; Time: 40 minutes.

Ingredients

1 pound potatoes, such as Yukon golds, cut into 1-inch chunks

Salt to taste

1 teaspoon lightly toasted cumin seeds, ground

1 teaspoon mild chili powder

2 tablespoons extra-virgin olive oil

1/2 pound summer squash, preferably a dense squash like Ronde de Nice, cut into 1-inch chunks

1 medium red onion, cut in half lengthwise and sliced in half-moons

1 pound mixed sweet and hot peppers (such as a mix of poblanos and bell peppers), roasted, peeled, seeded and cut in thin 2-inch strips

8 warm corn tortillas

1 recipe salsa ranchera (without chipotles)

3 ounces goat cheese (about 3/4 cup crumbled)

Preparation

Preheat oven to 425 degrees. Line 2 baking sheets with parchment. Place potatoes on one baking sheet and toss with salt to taste, 3/4 teaspoon each of the ground cumin and chili powder, and 1 tablespoon of the olive oil. Spread in an even layer.

Place squash and onion slices on other parchment-covered baking sheet and toss with the remaining olive oil, salt to taste, cumin and chili powder.

Depending on the size of your oven, roast vegetables together or separately on the middle rack. Roast potatoes for 20 to 25 minutes, stirring after 10 minutes, or until lightly browned and tender all the way through. Remove from oven and transfer to a large bowl. Roast squash and onions for about 15 minutes, stirring after 10 minutes, until tender and lightly colored. Remove from oven and add to bowl with potatoes. Add pepper strips (rajas) and toss together. Season to taste with salt, and add more chili powder if desired. Keep warm.

Spoon filling onto warm tortillas and add a generous spoonful of salsa. Top with goat cheese and serve.

BANANA CHOCOLATE TACOS

Chocolate? Bananas? On tacos? Sure, why not? This one is from the May 2016 issue of Runner’s World, and begins, “This taco is a smart dessert choice as research shows dark chocolate can improve brain functioning. Each bite also has the carbs needed to restock your muscles after a spirited run. Plus, ricotta is rich in whey protein to make it easier to build stronger muscles.”

Ingredients

1 cup part-skim ricotta cheese

2 Tbsp. almond butter

1 Tbsp. maple syrup

1–2 tsp. orange zest

1 tsp. vanilla extract

2 oz. chopped dark chocolate

1/2 tsp. cinnamon

4 small bananas, sliced into 1/2" pieces

4 small (6") whole-wheat tortillas, heated according to package

1/4 cup unsweetened toasted coconut flakes

Instructions

Stir together ricotta, almond butter, syrup, orange zest and vanilla.

Place chocolate in a microwave-safe bowl and heat on high in 20-second intervals, stirring between each interval, until chocolate is melted. Stir in cinnamon.

Spread ricotta mixture on tortillas and top with banana. Drizzle chocolate sauce over top and sprinkle on coconut flakes. Serves 4.

1 cup sliced button mushrooms

1/2 cup diced green bell pepper

1/2 cup shredded carrots

1 cup soy crumbles, such as Lightlife Gimme Lean

4 6-inch corn or flour tortillas, warmed

2 Tbs. chopped red onion

1/3 cup grape tomatoes, halved

1/2 cup shredded Romaine lettuce

1/2 cup shredded cheddar cheese

1 Tbs. pickle relish, optional

Instructions:

To make BBQ Sauce: Combine all ingredients in bowl.

To make Tacos: Heat oil in nonstick skillet over medium heat. Add mushrooms, bell pepper, and carrots, and cook 3 minutes, or until vegetables are softened, stirring halfway through. Add soy crumbles and 2 Tbs. BBQ Sauce. Cook 8 minutes, or until soy crumbles are browned.

Fill tortillas with soy crumble mixture. Top with red onion, tomatoes, lettuce, cheese, and relish, if desired. Serve with BBQ Sauce.

Directions

Monday Recipes

Is it really Monday already? Where did the weekend go? Well, there's always next weekend to look forward to.

In the meantime, we still need to eat. Here are six yummy vegetarian recipes to help you through the day, including Winter Vegetable Medley with Paella-Style Orzo, Baked Risotto With Greens and Peas, and Vegetarian Skillet Chili Topped with Cornbread. Enjoy!

BAKED ACORN SQUASH WITH POLENTA

This is from Eden Foods, and is a wonderful way to deal with acorn squash.

Serves: 4; Prep Time: 25 minutes; Cook Time: 50 minutes

Ingredients

2 medium acorn squash, halved, seeds removed

1 Tbsp Eden Safflower Oil, for oiling the squash skin and baking pan

1 Tbsp Eden Extra Virgin Olive Oil, for sautéing vegetables

1/3 cup onion, minced

2 cloves garlic, minced

1/4 cup celery, minced

1 cup Edensoy Unsweetened

2 cups water

1/2 tsp Eden Sea Salt

1/4 tsp Eden Black Pepper

1 cup organic yellow corn grits (polenta), coarsely ground variety

1/4 tsp dried sage, or dried poultry seasoning

1 pinch dried thyme

1 pinch dried rosemary

1/3 cup sunflower seeds, dry pan roasted

2 or 3 drop Eden Tamari or Shoyu Soy Sauce, for season sunflower seeds

1/4 cup fresh parsley, minced

Directions

Preheat the oven to 400°. Lightly oil the squash skin and the inside and top of the cut acorn squash with safflower oil. Lightly oil a baking pan. Bake for 55-60 minutes or until tender when poked with a fork or knife.

While squash bakes, make the polenta. Heat up the olive oil in a medium saucepan and sauté the onions and garlic for 2 to 3 minutes. Add the celery and sauté 2 minutes. Add the Edensoy, water, sea salt and pepper. Bring to a boil. Whisk in the polenta, stirring constantly, and bring to a boil. Reduce the flame to medium-low and simmer for 20 minutes or until thick. Remove from the heat.

Rinse the sunflower seeds and dry roast about 7 to 10 minutes over medium heat until slightly brown. Add soy sauce and stir to mix. Remove from heat.

Stir the sage, thyme and rosemary into the polenta. Add extra pepper or sea salt if desired.

Remove the squash from the oven. Fill each squash half with polenta. Sprinkle the sunflower seeds over the polenta. Garnish with parsley. Return to the oven and bake for another 15 to 20 minutes or until the topping begins to brown slightly. Remove and place on a serving platter.

CANNELLINI-BEAN PASTA WITH BEURRE BLANC

This is from Jack Monroe and adapted by Tejal Rao in The New Yorkk Times cooking enewsletter. Tejal wrote, "This recipe, like so many great straightforward, inexpensive go-tos, starts with little more than a can of beans — then transforms it into a luxurious meal. Jack Monroe, the British food writer, uses a classic beurre blanc to do that work, simmering a splash of wine, vinegar and butter together, then tipping it into a pot of boiling beans and pasta, letting the liquid reduce to a starchy, nearly creamy consistency. If you think of beurre blanc as fancy and fussy, this simple, unexpected use for it may change your mind. You can also build on the basic recipe, adding a bunch of chopped chard or mustard greens in with the sauce, or covering the top with torn herbs."

Note: This recipe originally called for 3 cups of chicken or vegetable stock. Since I’m posting this on a vegetarian blog, I dropped the chicken part of that.

Ingredients

1 (15-ounce) can cannellini beans, rinsed

3 cups vegetable stock

1/4 cup white wine

1/4 cup white wine vinegar

1 shallot or small white onion, finely chopped

3 tablespoons unsalted butter

1 cup small pasta, like shells

Kosher salt and black pepper

Grated Parmesan, Pecorino Romano or other strong hard cheese, to finish

Preparation

Add the beans and stock to a large pot, and bring to a boil. Turn the heat down, and let simmer for 20 minutes.

While the beans cook, combine the wine, vinegar, shallot and butter in a small saucepan. Simmer over medium-low for about 15 minutes, shaking the pan as the liquid reduces to keep it from burning. Turn off the heat, and set the beurre blanc aside.

Stir the pasta into the beans and cook, stirring occasionally, until the pasta is cooked through, about 10 more minutes. Stir in the beurre blanc, and season generously with salt and pepper. Serve with a little grated cheese on top.

WINTER VEGETABLE MEDLEY WITH PAELLA-STYLE ORZO

This recipe, from Vegetarian Times, begins, "Good-quality saffron is the key to this dish." Makes 4 servings

2 3/4 cups low-sodium vegetable broth

2 cloves garlic, minced (2 tsp.)

1 tsp. Italian seasoning

1/2 tsp. saffron threads

1 14.5-oz. can fire-roasted whole tomatoes, drained, liquid reserved, and tomatoes halved

2 Tbs. olive oil

1 yellow bell pepper, cut into 16 pieces

1 cup orzo pasta

1/4 cup frozen peas

2 cups large cauliflower florets

8 green onions, each cut into thirds

1 cup large broccoli florets

Directions

Bring broth to a simmer in saucepan. Stir in garlic, Italian seasoning, saffron, and tomato liquid. Season with salt and pepper, if desired, and keep hot.

Coat large skillet or 8-qt. Dutch oven with cooking spray, add oil, and heat over high heat. Add tomatoes, sear 2 to 3 minutes, or until browned and dry, and transfer to plate. Add bell pepper, sear 2 to 3 minutes, and transfer to same plate.

Sprinkle orzo into skillet, and stir 30 seconds. Stir in broth and peas, and reduce heat to medium. Arrange cauliflower florets on top of orzo in pot. Arrange green onions, tomatoes, and bell pepper pieces around cauliflower; cover, and simmer without stirring, 11 minutes. Scatter broccoli over vegetables, remove pot from heat, and let stand, covered, 10 minutes, or until orzo has absorbed all liquid and broccoli is crisp-tender.

BAKED RISOTTO WITH GREENS AND PEAS

This comes from Kay Chun on The New York Times cooking site. Kay wrote, "This easy baked risotto eliminates the constant stirring required in traditional risotto recipes. It’s laden with vegetables, namely kale and spinach, but other leafy greens like Swiss chard or collard greens would work equally well. If you happen to have some extra asparagus, sub it in for the peas. This risotto makes a great starter or side dish, but you can also turn it into a vegetarian main course by using vegetable or mushroom stock in place of the chicken broth, and topping it with sautĂ©ed mushrooms, a fried egg or crispy tofu slices. Leftovers can be refrigerated for two days and reheated with more broth, or repurposed into crunchy rice cakes or arancini. Simply form into patties or balls, coat in bread crumbs and shallow-fry until golden and crunchy."

4 ounces green or lacinato kale (about 1/3 bunch), stems separated and thinly sliced, leaves stacked and cut into 1/4-inch-thick ribbons (about 4 packed cups)

3 1/2 cups low-sodium chicken broth

4 ounces baby spinach (about 4 packed cups)

1 cup frozen peas, thawed

3/4 cup grated Parmesan (3 ounces), plus more for garnish

3 tablespoons unsalted butter

1 tablespoon lemon juice

Preparation

Heat oven to 375 degrees. In a large Dutch oven, heat oil over medium. Add onion and cook, stirring occasionally, until softened, about 3 minutes. Add garlic and stir until fragrant, 1 minute. Add rice, season with salt and pepper, and stir until coated in oil and lightly toasted, 2 minutes.

Add kale, season with salt and pepper, and stir until wilted, 30 seconds. Add broth and bring to a boil over high heat.

Cover and bake until almost all of the liquid is absorbed and rice is tender, about 20 minutes.

Stir in spinach and peas until spinach is wilted. Add Parmesan, butter and lemon juice, and stir until well blended and saucy. (Liquid will continue to absorb as risotto sits.) Season with salt and pepper. Serve in bowls and top with more Parmesan.

VEGETARIAN SKILLET CHILI TOPPED WITH CORNBREAD

This recipe, from The Food Network, begins, "A hearty chili made with butternut squash and fluffy cornbread come together in this single-skillet meal. Serve with extra sour cream and pickled jalapenos on the side for topping."

Chili:

2 tablespoons vegetable oil

1 pound (about 4 cups) store-bought diced butternut squash, cut into 1/2-inch cubes

Kosher salt and freshly ground black pepper

3 cloves garlic, thinly sliced

1 medium onion, finely chopped

4 tablespoons chili powder, or to taste

2 teaspoons ground cumin

3 cups low-sodium vegetable stock

Two 14.5-ounce cans diced tomatoes with chiles, drained

One 14.5-ounce can kidney beans, drained and rinsed

1 tablespoons sugar

5 ounces (about 6 cups lightly packed) baby spinach

Cornbread Topping:

3/4 cup fine cornmeal

3/4 cup all-purpose flour

3/4 teaspoon baking soda

3 tablespoons sugar

Kosher salt

1/2 cup whole milk

1/4 cup sour cream, plus more for serving

1 large egg

3 tablespoons unsalted butter, melted

3/4 cup shredded Cheddar (about 3 ounces)

Pickled jalapenos, for serving

Directions

For the chili: Heat the oil in a 12-inch cast-iron skillet over medium-high heat. Add the squash and a pinch of salt and black pepper and cook, stirring occasionally, until the squash is tender and browned in spots, about 8 minutes. Remove the squash from the pan and set aside.

Reduce the heat to medium. Add the garlic and onion and cook, stirring often, until the onion is soft, about 8 minutes. Add the chili powder (use less if you like milder chili) and cumin and cook until fragrant, about 1 minute. Add the vegetable stock, tomatoes, beans, sugar and cooked squash and bring to a simmer. Cook until all of the vegetables are tender and the sauce has thickened, about 30 minutes. (If the liquid reduces to less than three-quarters of the way up the sides of the squash, stir in a little water.) Stir in the baby spinach by the handful until all is incorporated and wilted.

For the cornbread topping: Meanwhile, position a rack in the center of the oven and preheat to 400 degrees F. Whisk the cornmeal, flour, baking soda, sugar and 1 teaspoon salt together in a medium bowl. Whisk the milk, sour cream and egg together in another bowl. Add the wet ingredients to the dry ingredients, whisking until well combined. Stir in the melted butter and Cheddar. Drop spoonfuls of the batter on top of the chili, leaving space in between. (The batter will not completely cover the chili.)

Bake until the cornbread is golden brown and springs back when touched and the chili is hot and bubbly, about 18 minutes. Serve with more sour cream and pickled jalapenos.

ITALIAN GRILLED STUFFED PEPPERS

This comes from Kraft and begins, “Discover these Italian Grilled Stuffed Peppers and bring a little bit of Italy into your kitchen! These grilled stuffed peppers are delicious!”

Ingredients

1-3/4 cups water, divided

1-1/2 cups instant brown rice, uncooked

2 cups frozen BOCA Veggie Ground Crumbles

1 small zucchini, chopped

1 tsp. dried Italian seasoning

1-1/2 cups OLIVO by CLASSICO Traditional Pasta Sauce, divided

1-1/2 cups KRAFT 2% Milk Shredded Mozzarella Cheese, divided

1 large each red, yellow and green pepper, cut lengthwise in half, seeded

Directions

Heat grill to medium-high heat.

Bring 1-1/2 cups water to boil in medium saucepan. Add rice; cover. Simmer 5 min. Remove from heat; let stand 5 min. Stir in crumbles, zucchini, seasoning and 1 cup each pasta sauce and cheese; spoon into peppers.

Place each filled pepper half on center of 12-inch-square sheet heavy-duty foil. Top with remaining sauce and cheese. Bring up foil sides. Spoon 1 Tbsp. of the remaining water onto bottom of each foil packet. Double fold top and ends to seal packets, leaving room for heat circulation inside.

Grill 20 to 25 min. or until peppers are crisp-tender and filling is heated through (160ºF).

RED CURRY LENTILS WITH SWEET POTATOES AND SPINACH

This comes from Lidey Heuck at The New York Times cooking e-newsletter. Lidey wrote, "In this vegetarian main inspired by Indian dal, lentils are cooked with an aromatic blend of Thai spices — fresh ginger, turmeric, red curry paste and chile — then simmered in coconut milk until fall-apart tender. Browning the sweet potatoes before cooking them with the lentils brings out their sweetness, balancing the heat from the chile and curry paste, while baby spinach tossed in just before serving adds fresh flavor. Serve over steamed white or brown rice, or with toasted flatbread on the side."

1 (13-ounce) can full-fat coconut milk

1 (4- to 5-ounce) bag baby spinach

1/2 lime, juiced

Fresh cilantro leaves, for serving

Toasted unsweetened coconut flakes, for serving (optional)

Preparation

In a Dutch oven or pot, heat 2 tablespoons olive oil over medium-high. Add the sweet potatoes and cook, stirring occasionally, until browned all over, 5 to 7 minutes. Transfer the browned sweet potatoes to a plate and set aside.

Add the remaining 1 tablespoon olive oil to the pot and set the heat to medium-low. Add the onion and cook, stirring occasionally, until translucent, 4 to 6 minutes. Add the curry paste, garlic, ginger, chile and turmeric, and cook until fragrant, about 1 minute.

Add the lentils, stock, salt and browned sweet potatoes to the pot and bring to a boil over high. Lower the heat and simmer, uncovered, stirring occasionally, until the lentils are just tender, 20 to 25 minutes.

Add the coconut milk and simmer, stirring occasionally, until the liquid has reduced and the lentils are creamy and falling apart, 15 to 20 minutes.

Add the spinach and stir until just wilted, 2 to 3 minutes. Off the heat, stir in the lime juice and season with salt to taste.

Divide among shallow bowls and top with cilantro and coconut flakes, if using.

LEMON BLUEBERRY SORBET

This begins, “Lemon verbena enhances the lemon flavor of this blueberry sorbet. The rum is optional. The recipe calls for frozen blueberries, so you can make it year-round.”

Ingredients

2/3 cup granulated sugar

1/3 cup whole lemon verbena leaves

1 bag frozen blueberries (14 to 16 ounces)

1/3 cup fresh lemon juice

2 Tablespoons lemon-flavored rum (optional)

Directions

Put sugar and lemon verbena in food processor and process 30 seconds. Add frozen blueberries and process 1 minute.

With the processor on, pour lemon juice and rum, if using, through feed tube; process until smooth.

Serve sorbet immediately, or transfer to a covered bowl and keep in freezer (soften slightly before serving, if necessary).

QUESO

Alexa wrote, "Queso, a popular Tex-Mex dip made with processed American cheese and canned tomatoes, was inspired by chile con queso, a Mexican dip of melted cheese and chiles that made its way to the United States in the 1930s and ’40s. As the two-ingredient Americanized adaptation gained popularity, supermarkets began placing Ro-tel canned tomatoes near shelf-stable Velveeta cheese, and queso became mainstream. Purists will argue that any ingredient beyond American cheese and spicy diced tomatoes is unnecessary, but you can customize this recipe by adding any combination of black beans, scallions, cilantro, garlic, cumin, red-pepper flakes, oregano, lime zest or juice."

TORTILLA LASAGNA

This is from the January/February 2012 issue of Vegetarian Times, page 48. It begins, "This easy, crowd-pleasing dish is also a kid favorite. Toasting the tortillas before building the lasagna keeps them from getting soggy as the dish bakes. Feel free to mix things up with different beans, cheeses, or vegetables between the layers." 6 8-inch fat-free flour tortillas

1 Tbs. olive oil

1 small onion, chopped (1 cup)

2 Tbs. chili powder

2 tsp. ancho chile powder

2 cloves garlic, minced (2 tsp.)

2 cups strained tomatoes, such as Pomì, divided

1 1/2 cups cooked black beans, or 1 15-oz. can black beans, rinsed and drained

1 medium chayote, peeled and diced, or 2 medium zucchini, diced (1 1/2 cups)

1/2 cup fresh or frozen corn kernels

1 1/2 cups grated Monterey Jack or pepper Jack cheese

Preheat oven to 350°F. Toast tortillas on 2 baking sheets in oven 5 minutes, or until light brown, turning once.

Heat oil in saucepan over medium heat. Add onion, and sauté 5 minutes, or until soft. Stir in chili powder, ancho chile powder, and garlic, and cook 30 seconds. Add 11/2 cups strained tomatoes, beans, chayote, corn, and 1/2 cup water, and season with salt and pepper, if desired. Cover, and cook 10 minutes, or until chayote is tender.

Coat 2-inch-deep x 8-inch round baking dish with cooking spray. Spread 1/4 cup strained tomatoes in bottom of pan. Set 1 toasted tortilla in pan; top with 3/4 cup bean mixture and 1/4 cup cheese. Repeat layering 4 more times. Top with last tortilla, and spread remaining 1/4 cup strained tomatoes over top. Sprinkle with remaining 1/4 cup cheese. Bake 30 to 45 minutes, or until casserole is bubbly and cheese has melted. Let stand 10 minutes before cutting into 8 wedges.

1 teaspoon olive oil

2 medium tomatoes, chopped (about 1-1/2 cups)

ZUCCHINI CASSEROLE

This is from VeryWellFit, and begins, "Vegetable casseroles are a great way to enjoy fresh produce from the farmers market or make use of a bumper crop. But they can also be loaded with cream and cheese making for a very heavy and high-caloric dish.

"To make this zucchini casserole recipe healthier, instead of adding cream to the sauce it is enriched with tomatoes, onion, garlic, and herbs. The zucchini is then topped with just a bit of cheese. 1 tablespoon olive oil

1/3 cup onion (chopped, about 1/2 of a medium onion)

3 cloves garlic (chopped)

3/4 pound tomatoes (fresh or canned—about a 1-pound can of whole tomatoes, drained)

1 teaspoon Italian herbs (or oregano)

Salt and pepper

1 pound zucchini (approximately 2 medium)

1 cup Italian cheese mixture (grated, packaged, or your own mix including mozzarella, Parmesan, and provolone)

Preparation

Heat oven to 400 F.

Heat the olive oil in a medium saucepan. Sauté the onion in the oil for 2 to 3 minutes, then add the garlic and cook for another 30 to 60 seconds, until the garlic is fragrant.

Cut each tomato into 3 to 5 pieces and add to the oil, along with the herbs, salt, and pepper.

Cook over medium heat until the liquid is mostly gone (but not dry), stirring occasionally—you should end up without about 1 cup of the mixture. This should take about 5 to 10 minutes.

Meanwhile, cut the zucchini into slices approximately 1/4 inch thick. These can be either round slices, or lengthwise. Take the largest slices and line the bottom of a 9x9-inch or 8x8-inch pan, or a similarly-sized round pan.

Spread about 1/4 of the tomatoes on top of the zucchini (don't even try to spread evenly; it won't work), followed by 1/4 cup of the cheese.

Continue layering the sauce, zucchini, and cheese. It should come out to 4 layers, but if it only makes 3, just try to divide things relatively evenly. Don't put the final layer of cheese on yet.

Bake for 20 minutes. Top with the rest of the cheese, and lower the temperature to 375F. Bake for about 20 minutes, or until the cheese is golden brown.

Ingredient Substitutions and Cooking Tips

If you'd like to cut down on the fat even more, substitute low-fat or fat-free cheese. Just keep in mind that when you remove the fat, you also lessen the cheeses' melt-ability.

It's almost the end of the week; one more day...

In the meantime, we still have to eat. Here are six yummy vegetarian recipes to help you through the day, including Sheet-Pan Baked Feta With Broccolini, Tomatoes and Lemon and Vegetarian Skillet Chili Topped w/Cornbread. Enjoy!

PUMPKIN ICE CREAM FREEZE

This is from the infamous long-since-forgotten emailing list. Serves 8

Ingredients

1 1/4 cups ginger snap cookies, crushed, about 25 cookies

1/4 cup sugar

1/4 cup butter, melted

1 quart vanilla ice cream

1 cup canned pumpkin

1 cup brown sugar

1 teaspoon vanilla

1 teaspoon nutmeg

1/4 teaspoon ground ginger

Directions

Mix the first 3 ingredients, holding back 1/4 cup of the crumbs, in a bowl. Press the mixture into a 8x5 inch baking dish and set aside.

Combine the remaining ingredients in a large bowl and pour over the crust. Freeze overnight.

Serve with the reserved crumbs on top and maybe add some chopped nuts.

AUTUMN VEGETABLE MINESTRONE

Ingredients

2 14.5 oz cans vegetable broth

1 18 oz can crushed tomatoes – undrained

3 medium carrots -- chopped (1 1/2 cups)

3 small zucchini -- cut into 1/2" slices

1 medium yellow bell pepper -- cut into 1/2" pieces

8 medium green onions -- sliced (1/2 cup)

2 cloves garlic -- finely chopped

2 cups shredded cabbage

2 teaspoons dried marjoram

1 teaspoon salt

1/4 teaspoon pepper

1 cup uncooked instant rice

1/4 cup chopped fresh basil

Directions

Mix all ingredients except rice and basil in a 3-1/2 to 6 quart slow cooker. Cover and cook on low heat setting for 6 to 8 hours or until vegetables are tender. Stir in rice. Cover and cook on low heat setting for about 15 minutes or until rice is tender.

Preheat the oven to 350°F. Lightly spray a 12-cup muffin pan with cooking spray.

In a large bowl, sift the flour, baking powder, baking soda, nutmeg, and salt.

In a separate large bowl, whisk together the stevia sweetener, oil, vanilla, egg, and yogurt. Add the dry ingredients. Stir together until the mixture is just moistened but no flour is visible. Gently fold in the blueberries, reserving 24 to 36 blueberries to garnish the tops.

Spoon the batter into the muffin cups. Using the reserved blueberries, sprinkle 2 or 3 berries on top of each muffin.

Bake for 25 to 30 minutes, or until a wooden toothpick inserted into the center comes out clean.

Transfer the pan to a cooling rack. Let cool completely.

VEGETARIAN SKILLET CHILI TOPPED WITH CORNBREAD

This recipe, from The Food Network, begins, "A hearty chili made with butternut squash and fluffy cornbread come together in this single-skillet meal. Serve with extra sour cream and pickled jalapenos on the side for topping."

5 ounces (about 6 cups lightly packed) baby spinach

Cornbread Topping:

3/4 cup fine cornmeal

3/4 cup all-purpose flour

3/4 teaspoon baking soda

3 tablespoons sugar

1/2 cup whole milk

1/4 cup sour cream, plus more for serving

1 large egg

3 tablespoons unsalted butter, melted

3/4 cup shredded Cheddar (about 3 ounces)

Pickled jalapenos, for serving

Directions

For the chili: Heat the oil in a 12-inch cast-iron skillet over medium-high heat. Add the squash and a pinch of salt and black pepper and cook, stirring occasionally, until the squash is tender and browned in spots, about 8 minutes. Remove the squash from the pan and set aside.

Reduce the heat to medium. Add the garlic and onion and cook, stirring often, until the onion is soft, about 8 minutes. Add the chili powder (use less if you like milder chili) and cumin and cook until fragrant, about 1 minute. Add the vegetable stock, tomatoes, beans, sugar and cooked squash and bring to a simmer. Cook until all of the vegetables are tender and the sauce has thickened, about 30 minutes. (If the liquid reduces to less than three-quarters of the way up the sides of the squash, stir in a little water.) Stir in the baby spinach by the handful until all is incorporated and wilted.

For the cornbread topping: Meanwhile, position a rack in the center of the oven and preheat to 400 degrees F. Whisk the cornmeal, flour, baking soda, sugar and 1 teaspoon salt together in a medium bowl. Whisk the milk, sour cream and egg together in another bowl. Add the wet ingredients to the dry ingredients, whisking until well combined. Stir in the melted butter and Cheddar. Drop spoonfuls of the batter on top of the chili, leaving space in between. (The batter will not completely cover the chili.)

Bake until the cornbread is golden brown and springs back when touched and the chili is hot and bubbly, about 18 minutes. Serve with more sour cream and pickled jalapenos.

ITALIAN GRILLED STUFFED PEPPERS

This comes from Kraft and begins, “Discover these Italian Grilled Stuffed Peppers and bring a little bit of Italy into your kitchen! These grilled stuffed peppers are delicious!”

Place each filled pepper half on center of 12-inch-square sheet heavy-duty foil. Top with remaining sauce and cheese. Bring up foil sides. Spoon 1 Tbsp. of the remaining water onto bottom of each foil packet. Double fold top and ends to seal packets, leaving room for heat circulation inside.

Grill 20 to 25 min. or until peppers are crisp-tender and filling is heated through (160ºF).

SHEET-PAN BAKED FETA WITH BROCCOLINI, TOMATOES AND LEMON

This comes from Yasmin Fahr on The New York Times cooking site. Yasmin wrote, "When baked, feta gains an almost creamy texture, similar to goat cheese but with feta’s characteristic tang. In this easy vegetarian sheet-pan dinner, broccolini (or broccoli), grape tomatoes and lemon slices roast alongside the feta until the broccolini crisp, the tomatoes burst and the lemon rinds soften. (Remember, broccolini has a tender, delicious stalk so only the bottom 1/2-inch needs to be trimmed.) Serve this dish over a pile of orzo for a complete meal. If you like, cut the broccolini, feta and lemon into bite-size pieces and toss with the orzo."

1 lemon, 1/2 cut into thin rounds and the remaining 1/2 left intact, for serving

3 tablespoons olive oil, plus more for serving

1 teaspoon ground cumin

1/2 teaspoon red-pepper flakes

Kosher salt and black pepper

2 (6- to 8-ounce) blocks feta, cut into 1-inch slices

Cooked orzo or farro, for serving

1/2 cup fresh basil or cilantro leaves and fine stems, roughly chopped (optional)

Preparation

Heat the oven to 400 degrees with a rack set in the lower third. On a sheet pan, combine the broccolini, tomatoes, onion and lemon slices with the olive oil and toss. Add cumin and red-pepper flakes, season with salt and pepper, and toss again until evenly coated. Nestle the feta slices into the vegetables. (It’s OK if they break apart a little.)

Roast 15 to 20 minutes, stirring halfway through but leaving the feta in place, until the broccolini is charred at the tips, the stems are easily pierced with a fork and the tomato skins start to blister and break down.

Serve over orzo or farro. Drizzle with olive oil and serve with the remaining lemon half for squeezing. Top with fresh herbs, if using.

Meatless-balls

Meatballs are popular, both in pasta recipes (think Spaghetti and Meatballs) and sandwiches, and are a good source of protein.

But what do you do if you love meatballs, but you're a vegetarian? Think Vegetarian "Meatballs". Today's post has six vegetarian meatballs (meatless-balls), and include Vegetarian Swedish Meatballs and Simple Vegan Meatballs. Enjoy!

MEATLESS-BALL SUBS

Ingredients

1 package Meatless Balls (see note)

1 26 oz. Jar spaghetti sauce

4 hoagie rolls

cheese slices

Directions

Place spaghetti sauce and meatless balls into a good-sized saucepan. Stir, and cook over medium-low to medium heat, stirring occasionally.





Open hoagie rolls, add cheese, cover with meatless balls and sauce.



Makes 4 meatless ball subs.

Note: I use Veggie Patch Meatless Meatballs, though really, you can use any brand you like. I had used another brand for a number of years, but unfortunately, I can no longer find that particular brand anywhere now. Whatever brand you buy is fine, as well as the jarred spaghetti sauce.

VEGETARIAN SWEDISH MEATBALLS

This is from Kay Chun in The New York Times cooking e-newsletter. Kay wrote, "Cremini mushrooms, chickpeas and bulgur wheat mimic the texture of ground meat in this vegetarian version of the classic Swedish meatball dish. Seasoned generously with allspice and nutmeg and blanketed in a velvety mushroom gravy, they are excellent served over egg noodles or mashed potatoes — or spooned onto a toasted hero (add sliced tangy pickles to balance out the richness). Leftover cooked meatballs can be frozen and reheated in a 425-degree oven until warmed through, about 15 minutes."

Yield: 2 dozen meatballs; Time: 50 minutes.

Ingredients

For the Meatballs:

2 tablespoons bulgur wheat

4 cremini mushrooms, stemmed and quartered

1 (15-ounce) can chickpeas, rinsed (about 1 1/2 cups)

1/3 cup plain bread crumbs

1/4 cup sour cream

1 large egg

1 1/2 teaspoons kosher salt

3/4 teaspoon ground allspice

1/2 teaspoon black pepper

1/2 teaspoon onion powder

1/2 teaspoon freshly ground nutmeg

Canola oil, for greasing

For the Gravy:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 1/2 cups mushroom stock (or vegetable stock)

1 tablespoon sour cream

1 tablespoon finely chopped fresh parsley

1 teaspoon Dijon mustard

Kosher salt and freshly ground black pepper

Preparation

Make the meatballs: Heat oven to 375 degrees. Bring 1/4 cup water to a boil in a small saucepan. Add the bulgur, remove from heat, cover and let sit until tender, 15 minutes. Drain, pressing to remove excess water. Cool.

Meanwhile, in a food processor, pulse mushrooms until finely chopped with some pea-size pieces remaining (do not purée); transfer to a large bowl. Repeat with the chickpeas: Pulse, then add them to the large bowl. Add the bread crumbs, sour cream, egg, salt, allspice, pepper, onion powder, nutmeg and the cooled bulgur and mix until well blended. Form into 1 1/4-inch meatballs (about 2 teaspoons each; you should have about 24). Arrange on a greased baking sheet and bake, turning halfway, until golden, 18 to 20 minutes.

Make the gravy: While the meatballs bake, in a large nonstick saucepan, melt butter over medium heat. Add flour and cook, whisking constantly, until smooth and lightly golden, 2 minutes. Add stock and bring to a simmer. Cook, whisking, until thickened, 2 minutes. Whisk in sour cream, parsley and mustard; season to taste with salt and pepper (you should have about 1 cup gravy). Add meatballs and simmer, spooning sauce over meatballs, until nicely coated, about 2 minutes more. Serve warm.

MEATLESS MEATBALLS IN MARINARA SAUCE

1/2 cup panko bread crumbs

1/4 cup minced onion

1/4 cup chopped parsley leaves and tender stems

3 garlic cloves, grated or minced

1 tablespoon tamari or soy sauce

1 1/2 teaspoons kosher salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon dried oregano

Pinch of red-pepper flakes (optional)

1 1/2 pounds plant-based vegan ground beef (such as Beyond Meat)

Extra-virgin olive oil, for drizzling

3 cups marinara sauce, homemade or store-bought

Parmesan (optional, or use vegetarian Parmesan if you prefer), for garnish

Preparation

In a large bowl, combine bread crumbs, onion, parsley, garlic, tamari, salt, pepper, oregano and red-pepper flakes, if using, and mix well. Add plant-based beef, and blend with your hands until well mixed. Cover mixture and chill for at least an hour or up to 24 hours. (It’s easiest to form the meatballs when the mixture is very cold.)

Heat the broiler. Form 28 meatballs, each about 1 1/4 inches in diameter. Transfer meatballs to one or two rimmed baking sheets, and drizzle with olive oil.

Broil meatballs until golden and firm, 7 to 10 minutes. Meanwhile, heat marinara sauce in a pot. Serve meatballs with sauce on top, showered with cheese if you like and drizzled with a little more olive oil.

SIMPLE VEGAN MEATBALLS

This recipe starts off with Dana telling about doing laundry while in college, then going to her dad's to do laundry so that she could have some of her dad's cooking while her laundry washed and dried.

"If your dad is anything like mine, he’s all about simple, hearty meals," she wrote.

"Spaghetti was one of his specialties. A little pasta, a lotta sauce, and a considerable amount of meatiness.

"In fact, one evening (whilst doing laundry), I had two platefuls then promptly passed out on his couch from sheer exhaustion. My father proceeded to fold all of my clothes for me and wake me up with a kiss on the forehead reminding me it was time to go home.

For Meatballs

1/2 cup white onion (minced)

3 cloves garlic (minced)

1 batch flax egg

8 ounces tempeh* (or as recipe is written, sub 1 heaping cup rinsed and drained chickpeas for similar result)

1/3 cup vegan parmesan cheese

2 tsp Italian seasonings (or 1/2 tsp each dried basil and oregano)

1/4 cup fresh parsley (optional)

1/2 cup vegan bread crumbs (gluten-free for GF eaters // or sub almond meal)

2 Tbsp your favorite marinara or tomato sauce

Olive oil (for sautéing)

Salt & pepper (to taste)

For Coating

1/3 cup vegan bread crumbs (gluten-free for GF eaters)

1/3 cup vegan parmesan cheese

Instructions

Preheat oven to 375 degrees F (190 C) and prepare flax egg in a small dish.

In a large, deep skillet, sautĂ© onion and garlic in 1/2 Tbsp olive oil (as original recipe is written // adjust if altering batch size) over medium heat until soft and translucent – about 3 minutes. Set aside.

Add tempeh to food processor and pulse to break down. Then add sautĂ©ed garlic, onion, and remaining ingredients (except olive oil) and mix, scraping down sides as needed. You want it to form into a moldable “dough.”

Taste and adjust seasonings as needed. The tempeh will come across as a little bitter, but once coated, baked and served with marinara it’s not nearly as apparent.

NOTE: Depending on how salty your vegan parmesan cheese is, you may need to add a little salt and pepper at this point. However, I didn’t find it necessary.

Scoop out 1 Tbsp amounts of dough and roll into balls. At this time, heat the same skillet you used earlier to medium heat.

Mix remaining bread crumbs and parmesan cheese together in a shallow dish. Add tempeh balls one or two at a time and roll to coat.

Add enough olive oil to form a thin layer on the bottom of your hot skillet, then add your coated tempeh balls in two batches, as to not crowd the pan. Brown for about 5 minutes total, shaking the pan to roll them around to brown all sides.

Add browned meatballs to a baking sheet and add to the oven to bake for about 15 minutes, or longer if desired for a crispier result.

At this time, prep any pasta your want to serve with your meatballs, as well as your favorite marinara sauce (I love this pizza sauce).

Once meatballs are deep golden brown and fairly firm to the touch, remove from oven.

To serve, top cooked pasta with meatballs and pour over marinara sauce. Top with another sprinkle of vegan parmesan cheese and fresh parsley. Leftovers will keep in the fridge for up to a few days, though best when fresh.

CHEF JOHN'S MEATLESS MEATBALLS

1/2 cup bread crumbs

1/4 cup chopped flat-leaf (Italian) parsley, packed

2 eggs, divided

1 teaspoon salt

freshly ground black pepper to taste

1 pinch cayenne pepper, or to taste

1 pinch dried oregano

3 cups pasta sauce

1 tablespoon very finely shredded Parmigiano-Reggiano cheese, or to taste

1 tablespoon chopped flat-leaf (Italian) parsley, or to taste

Directions

Heat olive oil in a skillet over medium-high heat. Add mushrooms to the hot oil, sprinkle with salt, and cook and stir until liquid from mushrooms has evaporated. Stir butter into mushrooms, reduce heat to medium, and cook and stir mushrooms until golden brown, about 5 minutes.

Stir onion into mushrooms and cook, stirring often, until onion is translucent, 5 minutes. Remove skillet from heat and stir garlic into mushroom mixture until fragrant, about 1 minute. Transfer mixture to a mixing bowl.

Mix oats into mushroom mixture until thoroughly combined. Gently stir 1 ounce Parmigiano-Reggiano cheese into mixture. Add bread crumbs, 1/4 cup parsley, and 1 egg; season with salt, black pepper, cayenne pepper, and oregano. Mix together with a fork until crumbly. Stir in remaining 1 egg. Mixture should hold together when pressed.

Cover bowl with plastic wrap and refrigerate at least 4 hours. For best flavor and texture, refrigerate overnight.

Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with a silicone baking mat or parchment paper.

Form mixture into small meatballs using a 2-tablespoon scoop. Roll meatballs lightly between your hands until smooth, if desired; arrange meatballs on prepared baking sheet.

Bake in the preheated oven until meatballs are lightly golden brown, 12 to 15 minutes.

1 tablespoon tamari

1/2 cup walnuts

1 1/2 cups cooked brown rice

1/2 teaspoon chili powder

1/2 teaspoon onion powder

1/2 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1 cup panko bread crumbs

6 soft sub buns or sliced soft baguette

2 cups jarred or homemade marinara sauce

1/2 cup chopped fresh basil

Several handfuls of arugula, optional

Parmesan (skip if vegan) or vegan parmesan cheese, optional

Instructions

In a large skillet, heat 1/2 teaspoon of olive oil over medium heat. Add the onion and cook until soft, about 2 minutes. Add the mushrooms, pinches of salt and pepper, and cook until browned and soft, 5 to 8 minutes. Add 1/2 cup of the black beans, garlic, the balsamic vinegar and tamari sauce, and cook for 2 minutes or until everything is well browned and soft. Remove the mixture from the heat and let cool slightly.

In a food processor, pulse the walnuts. Add the mushroom mixture and pulse 2 to 3 times until just combined. Do not puree or the mixture will be too mushy. Add the remaining 1/2 cup of black beans and pulse briefly. Transfer the mixture to a large bowl and stir in the brown rice, chili powder, onion powder, salt and pepper. Mix until combined. Taste and adjust seasonings.

Preheat the oven to 400°F and line a large baking sheet with parchment paper. Spread the panko breadcrumbs onto a plate. Form the mixture into 18-1 1/2 inch balls and gently roll in the crumbs, using the breadcrumbs to pat the mixture into cohesive balls. Place on the baking sheet and refrigerate for 20 minutes or overnight.

Drizzle generously with olive oil and bake for 35 to 40 minutes, carefully flipping halfway through.

Heat the marinara sauce in a skillet and add the meatballs. Heat until just warmed through and serve immediately on the buns with arugula, basil, and parmesan cheese, if desired. (Tip: don’t let the meatballs sit in the sauce for too long or they will start to fall apart).
